A Study on Organizational Commitment and 6 Sigma in Foodservice Business (외식업의 6시그마와 조직몰입에 관한 연구)

  • An implementation of 6 sigma in foodservice management was introduced from 2000. However they could not achieve full advantages of 6 sigma management because of short period of implementation time, and the critical problem is employees' complaints and their oppositions. The purpose of this study is to analyze the relationship of 6 sigma and organizational commitment in the foodservice industry. In this study, we found that organizational commitment improve with the implementation of 6 sigma. 6 sigma's essential factors have influenced on the organizational commitment.

  • By study on the paterns of intake according to regulation of neal among men and women in seoul, Eating habits′ improvement in quality can be encouraged. The study shows that the more regular meal the group have, the fewer they eat out and less instant food they have. Additionally, they are less likely to have an unbalanced diet, and make "kimchi" in their own way, and keep and follow their own menu. Also, this group leads a rregular life and takes a 3 - minute walk. In nutrition, they have taken lessons about nutrition, and know a need of those lessons. So they practice what they learn better compared other groups.

We will study about realities and weakness of the domestic distribution industry, also check how to cope with, especially the Government and enterprise, these difficulties for the development of the domestic distribution industry.

해동피(海桐皮)와 갈근(葛根)을 이용한 닭고기 개발에 대한 연구

  • 본 연구는 기존의 삼계탕재료에 해동피와 갈근의 축출액을 넣어서 조리를 하여 특성변화와 기호도를 검토하고자 4주령(28일)의 부로일러 종 50수 각 처리구당 해동닭 15수, 삼계탕 15수, 일반닭 15수씩 총 3개 처리구에 배치하여 상품개발을 위한 실험결과를 요약하면 다음과 같다. 영양분석에서 단백질은 해동닭이 작게는 10.07%~11.08%까지 높게 분석되었고 지방은 해동닭이 삼계탕보다는 0.04% 더 많으며 일반닭보다는 4.65%나 작았다. 특히 적육(Red-meat)에서는 다른 흰살(White-meat) 고기의 닭고기에서는 우리인체에 중요한 작용을 하는 생체의 성장기능, 번식기능과 치료효과의 동맥경화증, 혈전억제 효과가 있다고 하는 불포화지방산(Omega-polyunsaturated fatty acide, 3, 6)( $\omega$-3, 6)을 함유하고 있어 지속적인 식도락가의 사랑을 받을 것으로 예측된다. 회분함량도 상대적으로 많으며 수분도 조리의 특성상 증발하지 못한 관계로 그대로 있어 수분과 조리로 인하여 손실되는 영양상태를 그대로 유지할 수가 있었다. 관능테스트에서는 <그림2-1, 2, 3>과 <표 2-10>에서 분석결과를 보듯이 제일 중요한 점은 고객의 기호도라 볼 수 있겠다. 시각적인 면만 약간 개선된다면 정말로 말할 수 없을 정도로 흡족한 상품이라 할 수 있겠다. 해동닭이 후각 90%, 맛 97%, 조직도 83%, 만족도 97%를 보면 그 누가 훌륭한 상품이라고 하지 않겠는가 하는 아쉬움을 가지며 시각적인 면도 해동피, 갈근, 황기, 인삼, 밤, 마늘, 대추, 은행, 생강, 고추 등 고객의 관심도가 높은 의 한약재료가 들어가는 것을 안다면 그리 문제가 되지 않는다고 보며 단지 문제가 있다면 우리 국민 의식이 가공식품에 대한 인식전환과 시기적인 환경, 국민소득 12,000불대의 시대에 맞는 상품이기를 바란다.

  • This study examines the effect of culinary employees' emotional labor on their emotional dissonance and turnover intentions and bow the emotional labor and emotional dissonance affect their turnover intentions and burnout to provide useful information and suggestions for the foodservice and hotel culinary training and on-site. The results are summarized as follows. First, as the emotional labor of workers such as representation of the act, conduct in-depth and emotional departure grew higher, they showed the higher perception of emotional dissonance. However, their spontaneous activities tended to decrease their emotional dissonance. Second, as the result of verifying the relationship between emotional dissonance and burnout, the higher emotional dissonance, the deeper burnout. Finally, the culinary workers' emotional dissonance influenced their turnover intention.

Effects of Person-Organization Fit and Person-Job Fit on Occupational Commitment, Organizational Commitment, and Turnover Intentions of Cooks (조리사의 개인-조직 적합성과 개인-직무 적합성이 직업 몰입, 조직 몰입, 이직 의도에 미치는 영향)

  • The purpose of this study is to investigate the effects of person-organization fit and person-job fit on occupational commitment, organizational commitment and turnover intentions among cooks in the foodservice industry. Data were collected by a total of 210 cooks at restaurants in the Seoul and Kyunggi area. The analysis of AMOS was used to test the causal model. The results indicate that the person-organization fit was positively related to occupational commitment and organizational commitment. The person-job fit was also found to correlate positively with occupational commitment and organizational commitment. Occupational commitment was positively related to turnover intentions while organizational commitment was negatively related to turnover intentions. Implications of the results and limitations of the study were discussed.

The Effects of Hotel Culinary Employee's Job Embeddedness on Job Satisfaction, Career Commitment and Turnover Intention (호텔 조리종사자의 직무착근도가 직무만족, 경력몰입 및 이직의사에 미치는 영향)

  • This study made frequency analysis, factor analysis, reliability analysis, correlation analysis, and regression analysis using SPSS 18.0 for 225 culinary employees working for super deluxe hotels in Busan and Ulsan areas in order to analyze the effects of job embeddedness on job satisfaction, career commitment and turnover intention. Results are as follows: first, as a result of testing the effects of hotel culinary employee's job embeddedness on job satisfaction, it was found that fitness, sacrifice, and links have positive (+) effects on job satisfaction. Second, it was found that fitness and sacrifice of a hotel culinary employee's job embeddedness have positive (+) effects on career commitment. Third, this study showed that fitness and sacrifice have negative (-) effects on turnover intention. Fourth, it was found that job satisfaction has a negative (-) effect on turnover intention. Fifth, it was found that career commitment has a negative (-) effect on turnover intention. These findings indicate that the higher hotel culinary employee's job embeddedness is, the less their intention to change jobs becomes by increasing job satisfaction and career commitment.

  • This study investigates the satisfaction of the culinary students during their studies in Rhode Island State (R1) in the United States. This research will prepare and give guidance to those who wish to study abroad. For this research, interviews and surveys were conducted and along with total of 68 copies of questionnaire were collected from to the Korean culinary students in the RI from Sep. 2007 to Mar. 2008. The analysis of the data was based on a Likert scale. Findings showed that most students chose to study abroad in their major felt satisfied with their school facilities. The research also indicated that where few challenges, such as language barrier and cultural differences. The inconveniences were with language problems and progress gradually into cultural challenges. In this respect, culinary students need to have more linguistic preparation and as well as to learn the importance of multiculturalism and globalization. Successful study abroad requires both personal and academic preparation. Teacher and parents should give supports and provide the fundamental skills that the students need to have a productive experience.

  • A total of 9 different names of dried beef were found in the literatures. They were classified in to 4 groups according to their processing method and shape: San pc(about 1cm thick beef salted and dried), Pyun po(ground beef with the seasoning, make small size or large size, dried), Yak po(thin beef or ground beef in the seasoning, dried), Jang po(thin beef in the seasoning, dried until half, again in the seasoning, dried). Most of the po was prepared with beef but phesant was also used for preparation Po in salt, seasame oil, black powder and soy sauce amomg the 19 kinds of seasoning, and chopped pinenut among 3 kinds of decorating were commonly used.

A Study on Research Trends of "The Korean Journal of Culinary Research" ("한국조리학회지" 수록논문의 연구동향 분석)

  • This research has been conducted to provide the fundamental data for foodservice & culinary research by analyzing 1,054 papers in 'The Korean Journal of Culinary Research' from 1995 through 2012 regarding year, theme, material, and subject. The released papers are 58.6 a year and almost 50 percent of related papers have been published, considering that 511 papers have been released for the recent five years. The research theme was first classified into four following areas such as foodservice, culinary, food and so forth. Then it was subdivided under 65 items on 19 subject matters. Most of the studies are related to foodservice area(595 papers, 56.4%), followed by culinary area (250 papers, 23.7%), food area(105 papers, 10.0%) and other areas (104 papers, 9.9%). For the topics used in foodservice research, most papers investigated the marketing area(170 paper, 28.6%). In culinary and food-related research, papers dealt with confectionary and bread (67 papers, 23.3%), sauce dressing (38 papers, 13.2%), vegetable fruit (36 papers, 12.5%), fermented food (35 papers, 12.5). In regard to the analysis of research subjects, institutions, and companies, 140 papers(38.2%) conducted hotel-related research, followed by 106 restaurant-related papers (29%) and forty-three papers(11.8%) on foodservice enterprises and franchises. Based on this analysis, most of the theses in 'The Korean Journal of Culinary Research' have been published in the area of foodservice (56.4%). In comparison, the theses in the area of culinary and food are associated with the name of the journal and only 33.7 percent of papers have been released. For these reasons, the name of the journal would rather be renamed 'The Korean Journal of Foodservice and Culinary Research'.
