Assessment of Dietary Fiber Intake in Korean College Students (한국대학생의 식이섬유 섭취실태조사)

  • 본 연구에서는 남자대학생 80명을 대상으로 총 식이섬유 및 조섬유와 영양소 섭취상태를 비교 분석하였다. 남자대학생들의 평균 총 식이섬유 섭취량은 $20.54\pm5.82g으로$ 외국의 잠정적 권장량의 범위(20~30g)에는 들었으나 권장량의 하한치를 약간 상회하는데 그쳤다. 조섬유의 1일 평균 섭취량은 $8.43\pm5.56g으로$ 1일 식이섬유 섭취량의 약 41%에 해당하였으며 그 외 열량 및 다른 영양소의 평균 섭취량은 한국인 영양권장량과 비슷하거나 다소 더 높은 것으로 나타났다. 총 식이섬유 섭취량과 에너지 및 단백질, 당질, 그리고 조섬유의 섭취량 간에는 유의적인 상관관계를 보였으며, 당질이 가장 높은 상관계수(r=0.7232, p<0.001)를 보였다. 또한 조사 대학생들의 총 식이섬유 섭취량과 식품군별 섭취량과의 상관관계수를 보인 것은 채소류 (r=0.6548, p<0.001)였으며 그 다음은 곡류(0.5913, p<0.001)였으며 그 다음은 곡류(0.5913, p<0.001), 해조류(0.3300, p<0.01)였다. 조사 대학생들의 식이섬유 섭취량 중 총식이섬유 급원으로 가장 많이 섭취한 식품은 쌀과 김치였으며, 각각 총 식이섬유 섭취량의 11.98%와 7.64%에 기여하였다. 그 외 학생들이 많이 섭취한 라면, 고춧가루, 냉면, 빵, 콩나물, 밀가루, 깍두기, 무 등이 주요한 식이섬유 급원으로 나타났다. 본 연구의 남자대학생들의 식이섬유 섭취량은 외국의 잠정적 권장량의 범위(20~30g)에 속하였으나 충분한 양을 섭취하고 있는 것은 아니었으며, 오히려 경제수준의 향상으로 인한 식습관의 변화에 민감하게 반응하는 젊은 세대들인 조사대학생들의 장래 식이섬유 소비량은 더욱 감소할 것으로 추정된다. 그러므로 식이섬유 급원식품의 섭취를 증가시키는 방안이 모색될 필요가 있다. 따라서 성인기에 식이섬유 부족으로 나타나는 각종 질병의 위험을 예방하기 위해 정백비 위주의 식사를 지양하고 총 식이섬유 함량이 높은 해조류의 섭취를 널리 교육시키는 것이 바람직할 것으로 사료된다. 또한 보다 광범위하고 체계적인 대상자 선정을 통하여 식이섭취조사가 이루어져 식이섬유 섭취패턴을 연구할 필요가 있다.

Long-term Changes of Shoreline at the East Coast in South Korea 2 - South East Coast (우리나라 동해안 해안선의 장기적 변화 2 -남부 동해안)

  • This study grasped long-term changing tendency of shoreline during lately about 30 years in five region of South East coast, and analyzed long-term changing tendency of East coast shoreline and the factors that synthesized studies of Central and South East coast. As a result of calculating of shoreline variations using DSAS, each shoreline of Mangyangjeong and Josa region regressed mean 28.9m and 6.4m, but each shoreline of Goraebul, Daejin and Bonggil region progressed mean 25.0m, 10.6m and 18.8m. Synthesizing changing tendency of East coast shoreline, 1) progressive and regressive zones of shoreline in all regions seem to repeat. 2) looking at shoreline of south zone adjacent to lately constructed or extended breakwater progressed, because it is thought due to effect of a longshore current flowing north. 3) zones using beach relatively tends to regress shorelines. 4) progress and regress of shoreline in zones including estuary of stream are various features as change of deposit supply from a upstream region.

Effect of Beach Curvature on Wave Fields in Coastal Area with Submerged Breakwaters (잠제 설치 연안역의 파동장에 미치는 해안곡률의 영향)

  • The aim of this study is to examine the effect of beach curvature on wave fields in coastal area with Submerged Breakwaters using the 3D numerical model that is able to simulate directly interaction of WAve Structure Sandy beach (LES-WASS-3D). At first, the adopted model was validated through the comparison with an existing experimental data and showed fairly nice agreement. And then, the numerical simulations have been performed to investigate the effect of according to the variation of beach curvature. Based on the numerical results, the wave height, mean surface elevation, mean flow around submerged breakwaters and longshore distributions of run-up height have been discussed in relation to the variation of beach curvature.

  • 제트류는 복잡한 흐름 중 하나로 다양한 크기의 에디가 다양한 운동량을 가지고 있다. 이러한 제트류를 구현하기 위해서는 난류 운동 에너지 등 제트류의 특성을 잘 반영하여야 한다. 제트를 구현하기 위해서는 수리학적 모델, 현장 실험 등 많은 방법이 있으며, 본 연구에서는 상대적으로 공간, 시간적 비용이 적게 드는 수치해석 방법을 사용하여 연구를 진행하였다. 대표적인 수치해석방법에는 DNS(Direct Numerical Simulation), LES(Large Eddy Simulation), RANS(Reynolds Averaged Navier Stokes) 등이 있다. RANS는 시간 평균 흐름 특성만 산출하며 제트의 복잡성을 재현하는 데 한계가 있어, 본 연구는 DNS와 LES 모델을 이용하여 제트류를 구현하는 것에 초점을 맞추었다. DNS는 해당 격자에서 발생하는 모든 에디를 직접 해석 때문에 난류 모델링이 필요하지 않지만, 많은 수의 그리드가 필요하여 수치해석 시 소요시간이 긴 편이다. LES는 대규모 에디는 직접 해석하지만 일정 크기 이하의 소용돌이를 해석하기 위해서 모델이 필요하다. 따라서 서브 그리드 모델에 따라 약간 다른 결과를 보인다. 이러한 문제점을 해결하기 위해 본 연구에서는 LES의 기존 서브 그리드 모델을 사용하지 않고 신경망 모델로 학습한 DNS 결과를 활용하는 방법을 제안한다. 우선 DNS와 LES 모델을 사용하여 에너지 스펙트럼을 비교하여 서브 그리드 모델이 시작하는 파수를 찾는다. 이후 특정 파수 아래의 작은 에디를 모사할 적절한 신경망 모델을 결정하여 DNS의 작은 에디를 신경망 알고리즘이 모사할 수 있도록 학습시킨다. 이후 기존 서브 그리드 모델을 사용하지 않고 학습된 신경망 알고리즘을 사용한 LES 모델이 모사한 제트류와 실제 DNS 모델을 사용한 제트류를 비교 및 평가한다.

Quality Evaluation of Take-out Services at Restaurants in Chungbuk Province (충청북도지역 외식업체의 테이크아웃서비스 품질특성 분석)

  • The purpose of this research was to evaluate the quality of take-out services at restaurants in Chungbuk Province. A questionnaire survey by 450 customers who had experience in take-out service at the restaurants was conducted and 378 completed questionnaires were available for statistical evaluation. Statistical analyses were made of raw data by SAS V8.2. The scale for analyzing the importance and performance of the service quality was composed of 5-point Likert scales. The main results of this study are as follow: The quality attributes of take-out service were rearranged into four factors in terms of food, sanitation, access and service. The importance score was higher than performance score. IPA showed that 'freshness of food material', 'cleanliness and hygiene in food', 'sanitation of facilities', 'neatness of employees' and 'price in food' was included in 'focus here' area. There was significantly positive correlation between factors such as food, sanitation, access, service and overall customer satisfaction (p<.001); between factors and repurchasing intentions (p<.001); and between customer satisfaction and repurchasing intentions (p<.001). According to multiple regression analysis, 26.27% of the variance in respondents' overall satisfaction score and 9.21% of the variance in respondents' repurchasing intention score could be explained by factors such as food, sanitation, access and service.

The Study on the Seasonal Variation of Microbial Community in Kyeonggi Bay, Korea II. Nano-and Microzooplankton (경기만 수역에서 미세생물 군집의 계절적 변동 연구 II. 미소형 및 소형 동물플랑크톤)

  • To investigate seasonal variation and structure of the microbial community in Kyeonggi Bay, abundance and carbon biomass of nano-and micrzooplankton were evaluated in relation to size fractionated chlorophyll-a concentration, through the monthly interval sampling from December 1997 to November 1998. Communities of nano-and microzooplankton were classified into 4 groups such as heterotrophic nanoflagellate(HNF), ciliates, heterotrophic dinoflagellates(HDF) and zooplankton nauplii. Abundance and carbon biomass of HNF ranged from 380 to 4,370 cells ml-1(average 1,340$\pm$130 cells ml-1) and from 0.63 to 12.4 $\mu\textrm{g}$C 1-1(average 4.35$\pm$0.58 $\mu\textrm{g}$C 1-1), respectively. Abundance and carbon biomass of ciliates ranged from 331 to 44,571 cells ml-1(average 3,526$\pm$544 cells ml-1) and from 1.3 to 119.7 $\mu\textrm{g}$C 1-1(average 13.7$\pm$3.0 $\mu\textrm{g}$C 1-1), respectively. Abundance and carbon biomass of HDF ranged from 88 to 48,461 cells 1-1(average 9,034$\pm$2,347 cells 1-1) and from 0.05 to 54.05 $\mu\textrm{g}$C 1-1(average 6.9$\pm$2.4 $\mu\textrm{g}$C 1-1), respectively. Abundance and carbon biomass of zooplankton nauplii ranged from 5 to 546 indiv. 1-1(average 83$\pm$15 indiv. 1-1) and from 0.17 to 43.2 $\mu\textrm{g}$C 1-1(average 6.3$\pm$1.2 $\mu\textrm{g}$C 1-1), respectively. Eash component of microbial biomass was not different from tidal cycle except tintinnids group. Depth integrated nano-and microzooplankton biomass ranged from 124 to 1,635 mgC m-2(average 585$\pm$110 mgC m-2) and was highest in March and May. The relative contribution of each component to the nano-and microzooplankton showed difference according to seasons. Community structure of nano-and microzooplankton was dominated by planktonic ciliate group. During the study period, carbon biomass of nano-and microzooplankton was strongly positively correlated with size fractionated chlorophylla-a. It implied that prey-predator relationship between microzooplankton and phytoplankton was important in the pelagic ecosystem of Kyeonggi Bay.

Studies on Marine Heterotrophic Protists in Masan Bay, Korea (마산만에서 부유원생동물의 연구)

  • In Korea the study of marine heterotrophic protists started in the late 1980s, and since the early 1990s many studies have been conducted in various marine environments. In this article, studies on the distribution and abundance of protists and the biotic interactions(bacteria-protists, phytoplankton-protists) conducted in Korean coastal waters are reviewed, and a field study is reported and discussed. The field study in Masan Bay was carried out from February 2004 to November 2005 at seven selected stations representative of the bay. During the study, the mean abundance of heterotrophic bacteria and the mean concentration of chlorophyll-a were $2.1{\times}10^6\;cells\;mL^{-1}$ and $9.8{\mu}g\;L^{-1}$, respectively. Heterotrophic protists consisted of heterotrophic dinoflagellates, heterotrophic nanoflagellates(excluding dinoflagellates) and ciliates, and their abundances were means of $7.9{\times}10^4\;cells\;L^{-1}$, $1.2[\times}10^3\;cells\;mL^{-1}$, and $4.0{\times}10^4\;cells\;L^{-1}$, respectively. Generally, the chlorophyll-a concentra+CZ14tions and the abundances of heterotrophic bacteria and protists were higher in the inner zone of the bay, where there are high concentrations of organic matters, than in the middle and outer zones. Using the grazing rates of heterotrophic nanoflagellates on bacteria previously reported in this area, it can be calculated that about 69% of bacterial producton was removed by HNF grazing activity. About 24% of initial chlorophyll-a concentration was removed by microzooplankton grazing activity. In conclusion, this study suggests that in Masan Bay heterotrophic protists control the growth of bacteria and phytoplankton, and heterotrophic protists represent an important link of bacterial & microalgal biomass to higher trophic levels.

Caffeinated Food Consumption Patterns and Level among High School Students in Yongin Region (용인지역 고등학생의 카페인 함유 식품의 소비 패턴 및 소비 수준)

  • Previous studies of the caffeine consumption pattern were limited primarily to beverages containing caffeine. Therefore, this study examined the caffeine consumption patterns and levels in beverages and foods containing caffeine among high school students (n=310) in the Yongin region. The participants included 171 boys (55.2%) and 139 girls (44.8%). The daily mean caffeine intake of the respondents was 41.27 mg (0.651 mg/kg) and 36.47 mg (0.696 mg/kg) in boys and girls, respectively. Among the caffeinated food groups, coffee had the highest caffeine intake group in both boys (18.95 mg) and girls (26.28 mg). Girls consumed large amounts of caffeine in the form of Americano-style coffee (20.04 mg), whereas boys consumed more canned coffee (6.77 mg) than girls (2.43 mg, P<0.01). Carbonated soft drinks were the second most prevalent source of caffeine intake in both groups, even though boys (14.29 mg) consumed larger amounts of caffeine than girls (5.85 mg, P<0.001). Multiple regression analysis investigating the major contributing food group to daily total caffeine intake also showed that the highest standardized coefficient was in coffee regardless of gender (boys 0.492, P<0.001 and girls 0.944, P<0.001), followed by carbonated soft drinks and energy drinks. Approximately 95% of high school students consumed normal levels of caffeine, whereas 3.5% of boys and 5.8% of girls consumed excessive amounts based on the standard limit of Korea Food and Drug Administration (<2.5 mg/kg/d) for adolescents. The daily mean caffeine intake of the excess group was 5.38 mg/kg and 6.96 mg/kg in boys and girls, respectively. Consequently, safe daily caffeine intake needs to be determined throughout continuous national management guidelines and nutritional education.

Zooplankton Abundance in Korean Waters (한국근해 동물성 부유생물의 주요군의 양적 분포)

  • Plankton samples used for the present study were collected by the NORPAC net during the CSK cruises in the Korean waters in March and August, 1967. Regional and seasonal variations in the zooplankton biomass (wet weight, mg/㎥) were noticed in the Korean waters. In March the highest biomass, 130mg/㎥ on the average, occurred in the southern part of Japan Sea, but the lowest biomass of less than 50mg/㎥ occurred in the Yellow Sea and the western sea of Cheju Island Contrally, in August, the average biomass of 120mg/㎥ was measured in the Yellow Sea, the western sea of Cheju Island and the coastal waters of southern Korea, while the biomass of Japan Sea was the lowest of the regions surveyed. In comparison with the zooplankton biomass, total number of zooplankton per cubic meter of water strained also showed regional and seasonal fluctuations. In general, variations in the number of zooplankton specimens follows the same trend as in the biomass. The largest number, up to 800mg/㎥ on the average, occurred in the southern part of Japan Sea in March and the lowest number, less than 200mg/㎥ occurred in the Yellow Sea and the western sea of Cheju Island. In August, as shown by the biomass fluctuations, the largest number of zooplankton 850mg/㎥ on the average occurred in the Yellow Sea, the western sea of Cheju Island and the coastal region of southern Korea. But the lowest number of less than 500mg/㎥ was found in the Japan Sea. Among the various groups of zooplankton examined, the following were dominant components of the zooplankton population: Copepoda, Chaetognatha, Siphonophora, Euphausiacea, Cladocera, Appendicularia, and Amphipoda. The zooplankton conposition was significantly differed between the Japan Sea and Yellow Sea. Copepods which usually occupied over 66% in the Japan Sea and thd Korean Strait samples occupied only 42% of the catches in August, while cladocerans and chaetognaths were relatively abundant, i. e., 15 and 18% of the total organisms. The most dominant species of copepods and chaetognaths were Paracalanus parvus, Oithona similis, Acartia clausi, Calanus helgolandicus, Sagitta enflata, S. bedoti, S. elegans and S. crassa.

Status of serving labeling of home meal replacement-soups and stews, and evaluation of their energy and nutrient content per serving (가정간편식-국·탕·찌개류의 인분표시 및 영양표시 실태와 1인분 제공량 당 열량 및 영양성분 함량 평가)

  • Purpose: In this study, the serving size of home meal replacement (HMR)-soups (Guk, Tang) and stews (Jjigae) available in the Korean market was investigated, and an evaluation of the nutrition per serving was conducted based on the nutrition labeling. Methods: The market research was conducted from March to August 2021 on products sold on the internet, convenience stores, supermarkets, and hypermarkets. A total of 370 products were investigated and classified into 3 types: Guk (n = 129), Tang (n = 132), and Jjigae (n = 109). Results: An analysis of the survey revealed that 72.9% of Guk, 71.2% of Tang, and 79.8% of Jjigae had labels with servings per container, and 89.2% of Guk, 91.7% of Tang, and 99.1% of Jjigae had labels with nutrition facts. The nutritional evaluation per serving of Guk, Tang, and Jjigae was conducted for 259 products (87 Guk, 86 Tang, and 86 Jjigae) having labels containing both the servings per container and nutrition facts. The average serving size of Tang was 367.6 g, which was significantly higher than Guk (325.3 g) and Jjigae (305.1 g) (p < 0.001). The calorie content of Jjigae (171.4 kcal) and Tang (162.3 kcal) was significantly higher than Guk (90.8 kcal) (p < 0.001), and the protein content was the highest in Tang (16.3 g) (p < 0.001). The sodium content per serving of Jjigae (1,479.0 mg) was significantly higher than Guk (1,073.3 mg) and Tang (959.8 mg) (p < 0.001). The percent daily value per serving of all three types was less than 10% on average for calories and 15-30% for protein, whereas for sodium showed an average of around 50% (48-74%). Conclusion: The serving size and nutritional value per serving of the HMR-soups and stews found in this study can be used as basic data to establish the reference serving size.
