Permeation Rate of Salt and Sugar into Cabbage Pickles and Sensory Changes During Storage (배추 피클에서의 염과 당의 침투속도 및 저장 중 발생하는 관능변화에 대한 연구)

  • The rate of salt and sugar into pickled cabbages was determined, and physicochemical characteristics, such as sensory, texture, and pH, of vinegar pickled cabbages during storage were examined at different storage temperatures and vinegar concentrations. The rate of salt and sugar penetration was faster in smaller size and on leaves rather than the stem of cabbage. Also, higher salt and sugar concentration and higher storage temperatures led to increase in salt and sugar permeation rate. As a result of sensory test, lower storage temperature is the most suitable, and 6% vinegar concentration was the mostly appropriate. Hardness and cohesiveness were decreased significantly at the initial $1^{st}$ week storage time, but storage temperature did not show any significant effect. Addition of vinegar contents enhanced the hardness, but decreased cohesiveness. The pH was lowered with increasing vinegar content, indicated most significant factor on pickled cabbage. In general, salt and sugar contents rather than storage temperature have greater influence on permeation rate, and especially, addition of vinegar affects the texture of pickled cabbage.

  • 우리나라에서는 대하천정비사업을 통해 주요 국가하천마다 보와 제방을 신설 및 보축하여 홍수의 방어 및 예방에 힘을 기울이고 있으며, 근래에는 이러한 정비사업이 완료되어 가고 있는 상황이다. 제방에 대한 정비사업의 내용은 보축 및 신설이 주를 이루나, 제내지의 성토와 제외지의 보강 및 저수로의 준설 등도 함께 수행되었다. 이러한 정비사업의 영향으로 지하수 및 하천의 흐름양상은 정비사업 전과는 다르게 변화 될 것으로 추정되며, 이는 제방 안정성에 영향을 줄 수 있는 중요한 문제로 판단된다. 따라서, 이와 같은 지하수 및 하천흐름의 변화양상이 제방의 안정성에 얼마나 영향을 미칠 수 있는지 정량적으로 분석할 필요가 있을 것으로 보인다. 특히, 대하천정비사업으로 지반누수를 방지하기 위한 제내지 성토나 퇴사제거를 위한 하천준설 등이 수행되면서 제방의 외적인 환경들이 많이 변하게 되었으나 이에 대한 정량적인 연구들이 거의 수행되지 않은 것으로 판단된다. 따라서, 본 연구에서는 낙동강과 회천 합류부에 위치한 율지제를 대상으로 이곳에 설치된 간극수압계의 데이터와 2차원 침투해석 프로그램인 SEEP/W를 이용하여 제내지와 제외지 표고변화에 따른 파이핑 안정성을 분석하였다. 그 결과 제내지 표고가 상승하면 파이핑 안전율이 증가하고 표고가 하강하면 안전율은 감소하는 것으로 나타났다. 한편, 제외지의 표고변화는 제방안정성에 거의 영향을 주지 않으며 오히려 하천수위의 영향을 지배적으로 받는 것으로 판단된다. 따라서, 제방안정성을 확보하기 위해서는 기초지반의 경우, 제내지측을 상승시키고 하천수위를 하강하는 것이 효과적일 것으로 판단된다.

Characteristics of Pore Structure and Chloride Penetration Resistance of Concrete Exposed to Freezing-Thawing (동결융해 작용을 받은 콘크리트의 공극구조 및 염화물 침투저항 특성)

  • Concrete structures are commonly exposed to freezing-thawing condition. This freezing-thawing action changes the pore structure of concrete, and it can reduce the durability of concrete. In this study, the change of the internal pore structure and durability of concrete due to freezing-thawing action are investigated. According to results, the excellent durability records were reported by the existing evaluation methods for all mixes. However, the pores, 50~100nm size in diameter, are increased in concrete specimens exposed to freezing-thawing action, and the chloride penetration resistance was significantly reduced. The linear relationship between pore structure and chloride penetration resistance was shown in water cured concrete. Meanwhile, the linear relationship was decreased when concrete is exposed to freezing-thawing condition. It is desirable to review the criterion of durability evaluation for concrete specimens exposed to freezing-fthawing and chloride attack condition, simultaneously.

Changes in Some Physical Properties of Kimchi during Salting and Fermentation (김치의 절임 및 숙성과정중 물리적 성질의 변화)

  • The viscosity of salt solution and Kimchi juice and salt penetration and hardness of Chinese cabbage were investigated during brining and fermentation at $4-35^{\circ}C$. The rate of salt penetration during brining increased as the temperature and salt concentration increased from 5% to 15% while the effect of temperature on the salt penetration rates(%/hr) was rather reduced as salt concentration increased. The hardness of the cabbage measured by puncture test showed a rapid initial decrease during salting and the viscosity of brine changed little. Fermentation of Kimchi resulted a little increase in viscosity of Kimchi juice while the hardness of the cabbage decreased rapidly as pH reduced to pH 4.2-4.3 and then increased a little thereafter.

An Equation to Estimate Steady-State Seepage Rate of Rockfill Dam (사력댐의 정상상태 침투량 예측식)

  • In this study unsaturated seepage analysis of 8 large rockfill dam managed by Korea Water Resources Corporation, were carried out, and the seepage rate of rockfill dam was analyzed by changing reservoir water level, shape, saturated and unsaturated seepage properties of core zone to present an equation to estimate steady-state seepage rate of rockfill dam. This equation considers unsaturated seepage flow and is applicable to domestic large scale Rockfill dam with the height of more than 50m. Estimated values by the proposed equation are greater than those by the method of Sakamoto (1998), which does not consider unsaturated seepage flow. The difference of estimated values increases with the lower reservoir water level and decreases with the higher reservoir water level. We can be sure that the comparison between the measured seepage rate and the estimated seepage rate by the proposed equation for the existing rockill dam was well-matched. The proposed equation is close to the actual phenomenon compared with the existing equations (Sakamoto, 1998; Chapuis and Aubertin, 2001) because it is based on the results of unsaturated seepage analysis of dams, has upstream and downstream slopes in the range of 1Vertical: (0.2~0.3)Horizontal.

Influence of Mineral Admixtures on the Resistance to Sulfuric Acid and Sulfate Attack in Concrete (콘크리트의 황산 및 황산염 침투 저항성에 미치는 광물질 혼화재의 영향)

  • It has been well known that concrete structures exposed to acid and sulfate environments such as sewer, sewage and wastewater, soil, groundwater, and seawater etc. show significant decrease in their durability due to chemical attack. Such deleterious acid and sulfate attacks lead to expansion and cracking in concrete, and thus, eventually result in damage to concrete matrix by forming expansive hydration products due to the reaction between portland cement hydration products and acid and sulfate ions. Objectives of this experimental research are to investigate the effect of mineral admixtures on the resistance to acid and sulfate attack in concrete and to suggest high-resistance concrete mix against acid and sulfate attack. For this purpose, concretes specimens with three types of cement (ordinary portland cement (OPC), binary blended cement (BBC), and ternary blended cement (TBC) composed of different types and proportions of admixtures) were prepared at water-biner ratios of 32% and 43%. The concrete specimens were immersed in fresh water, 5% sulfuric acid, 10% sodium sulfate, and 10% magnesium sulfate solutions for 28, 56, 91, 182, and 365 days, respectively. To evaluate the resistance to acid and sulfate for concrete specimens, visual appearance changes were observed and compressive strength ratios and mass change ratios were measured. It was observed from the test results that the resistance against sulfuric acid and sodium sulfate solutions of the concretes containing mineral admixtures were much better than that of OPC concrete, but in the case of magnesium sulfate solution the concretes containing mineral admixtures was less resistant than OPC concrete due to formation of magnesium silicate hydrate (M-S-H) which is non-cementitious.

  • Seawater intrusion phenomenons of coastal area happen by natural or artificial factor. For example, density difference of seawater and fresh water, surface of the water change by tidal current, pumping, aggregate picking from mouth of a river, large scale reclamation in water area business etc. This research analyzed effect that groundwater TDS changed by pumping.As a result, it was expose that TDS density increases by sudden inflow of seawater when do pumping up more than $200m^3/day$. Finally, We are expected to prevent calamity by seawater intrusion in coastal area through this study and propose optimum pumping amount to use groundwater safety.

도시화가 진행된 경기도 지역의 수문시계열 자료분석

  • 최근 수자원의 공급중심에서 효율적 이용으로의 정책변화에 따라 도시화에 따른 지하수위 및 하천수위에 대한 연구는 더욱 중요시되고 있다. 현재 도시화로 인한 땅속으로 침투되지 못하고 유출되는 강우는 도시화 이전인 1962년의 5배가 넘는 수준이다. 1962년 당시엔 40%에 이르던 빗물 침투율도 23%로 떨어져 물 부족 가능국가이면서도 강우 침투율은 저조하다. 이것은 도시화의 심화로 인한 시가지의 확대, 토지이용 고밀도화로 인한 불투수층 증가에서 비롯된 것으로서 지하수가 메마르고 토양이 건조해져 매년 평균 지하수위는 하강하고 있고 이것은 하천수위의 하강과 밀접한 관계가 있다. 본 연구에서는 경기도지역을 대상으로 도시화가 진행된 지역의 수문시계열 자료들을 수집하고 분석하였다. 수문시계열자료로서는 지하수위, 하천수위자료를 수집하였고, 토지피복도를 참고하여 시가지 증가율을 확인하였다. 도시화가 진행된 도심지역 내 지하수위 관측소를 중심으로 하천수위 중 자료에 문제가 없는 곳을 선정하였다. 선정된 지역 중 5개 지역에서 지하수위의 하강 및 하천수위의 하강이 관측되었다. 각 지역마다 연평균 하천수위 연평균 지하수위, 토지피복도를 도시하고, 토지피복도의 변화에 따른 불투수층확산지역의 지하수위와 하천수위의 변화를 분석하였다. 대부분의 지역에서 시가지 증가율에 따른 불투수층이 증가함에 따라 지하수위와 하천수위는 하강하고 있었다. 그러므로 도시화가 진행되면서 지하수위와 하천수위에 수문학적으로 부정적인 영향을 준다고 설명할 수 있고 여기에 최근 한국의 기후변화가 수자원에 미치는 영향도 고려한다면 수위하강은 더욱 가속화 될 것이다.

Experimental Study for Consolidating Materials of the Excavated Wooden Coffin (출토 목관재 보존을 위한 강화처리제 연구)

  • For the conservation of wooden coffin from King Muryeong's Tomb we examined weight change, shrinkage rate, color changes, and permeation expansion according to the permeation pretreatment chemicals by producing experimental samples with similar physical properties. The result shows Dammar 2 %(in xylene) as the most excellent treatment for protecting deformation by contraction and strengthening materials which are also maintaining its original colors of wood. Therefore, we could get strengthening conservation treatments of dried wooden coffin materials by using Dammar.

Change in rheological properties of radish during salting (염 절임동안에 일어나는 무조직의 유변학적인 변화)

  • The amounts of salt diffused into radish after immersing in various concentrations of salt solution at different temperatures were measured and the changes of radish texture by the salt diffusion were estimatedwith the viscoelastic constants of a 3 element solid model determined by a stress relaxation test. While the amount of salt diffused throught radish was increased with increasing the salt concentration and soaking temperature, the istantaneous stress, equilibrium elastic solid and viscoelastic constants of radish were decreased. Also the degree of stress relaxation and equilibrium elastic solid approached the same or zero values, as salt concentration was further increased. Viscoelstic constants as well as salt diffusion were more influenced by lower salt concentration with increased temperatures.
