소규모 업소용 HACCP 표준 관리 기준

  • ${\bigcirc}$ 본 업소는 어묵류(튀김어묵, 찐어묵, 구운어묵)을 생산하는 식품제조 가공업소로서 총 5명의 인원이 어묵류 15개 제품을 생산하여 매출액은(약 00원)이며 주도 대형 유통판매업소에 판매하고 있다. ${\bigcirc}$ 본 업소의 어묵은 연육, 농산물 등과 식품첨가물을 배합 성형 후 가열 등의 공정을 거쳐 생산된 제품으로, 원료 취급과정에서의 오염이나 불충분한 가열, 교차오염 등으로 식중독균(병원성대장균, 황색포도상구균 등)과 원료 및 제조과정에서 이물(금속 등)이 혼입될 수 있으며, ${\bigcirc}$ 이로 인한 주요클레임 발생사례는 최근 3년간 관계당국으로부터 대장균군 검출 3건, 소비자클레임 2건이 있었다. - 연도별 주요 클레임내용은 '08년도에는 대장균군 검출 3건, '09년도 튀김어묵에서 날벌레 이물 검출 1건, '10년도에는 찐어묵에서 철수세미 1건 이었다. ${\bigcirc}$이러한 위해발생을 사전에 예방하기 위해 중점관리해야 하는 공정은 가열공정으로 판단되며, 금속등의 이물혼입 또한 중점적으로 관리할 필요성이 있다. ${\bigcirc}$ 본 업소에서 생산하는 어묵류(튀김어묵, 찐어묵, 구운어묵)는 가열공정에서의 가열온도와 시간을 각각 설정하여 CCP 1로 관리하고 있으며, 품온이 $85^{\circ}C$이상으로 유지될 수 있도록 2시간마다 모니터링하고 한계기준 이탈여부를 기록하도록 하고 있다. ${\bigcirc}$또한 금속검출공정을 CCP 2로 관리하여 2mm${\varphi}$ 이상의 금속이물 혼입여부를 상시 확인하고 있으며, 금속검출기의 정상 작동여부를 4시간마다 모니터링하고 기록하도록 하고 있다. ${\bigcirc}$종합적인 공정 및 일반위생관리를 위해 개인위생 상태 냉동, 냉장고 온도 확인 등 총 29개 항목에 대하여 정기적 점검(매일 17, 주간 4, 월간 4, 분기 1, 연간 3)을 실시하고 있으며, ${\bigcirc}$따라서 지속적인 모니터링을 통해 미흡사항의 원인으로 파악하고 문제점 제거를 위해 체계적이고 지속적인 관리가 필요하다.

Studies on the Prolonging of Kimchi Fermentation by Adding Chitosan (키토산을 이용한 김치의 숙성지연에 관한 연구)

  • This study was conducted to prolong the edible period of Kimchi by adding high molecular chitosan(MW 800,000) and the product was evaluated for acid production(pH, titratable acidity), number of total viable cell, lactic acid bacteria, coli-form bacteria and sensory property during Kimchi fermentation at 10$^{\circ}C$. Kimchi added with the chitosan showed a retarded decrease in pH and increase in titratable acidity. Total microbial count and lactic acid bacteria of Kimchi added with chitosan(0.3%) were about 1.3 log(cfu/g) lower than those of control throughout the fermentation of 6 to 9 days. After 15 days of fermentation, coliform bacteria of all control and samples were decreased as 1.6∼2.3 log (cfu/g) level. Kimchi samples which were added with 0.1 % chitosan and fermented at 10$^{\circ}C$ for 6 days showed not only effective in prolonging the edible periods but also better sensory scores in acceptability.

냉동수산식품 HACCP 관리 기준

Microbiological Evaluations on the Facilities and Utilities of Korean Restaurants (한식당 설비와 기구의 미생물 평가)

  • The microbiological examinations were conducted for the hygienic evaluation on three Korean restaurants during summer season in Busan, Korea. Total one hundred and sixty swabbed samples using sponge were collected from the surface of facilities and utensils at restaurants and total and coliform counts were measured. Also thirty- six air samples were collected at inside of three restaurants for measuring total, coliform, Staphy-lococcus and mold and yeast counts. All collected samples kept in an ice-packed box were transported to the laboratory and analyzed. The results demonstrated that most swabbed samples were highly contaminated with microorganisms and coliforms. The degree of contamination depended on the sampling sites. Averages of total counts of surface swab samples were ranged from not detectable to 2.14$\times\10^{9}$/200 $cm^{2}$, while those of coliforms from not detectable to 8.34$\times\10^{7}$/200 $cm^{2}$/200 $cm^{2}$. Microorganisms also detected from most agar strips of air samples for total, coliform, Staphylococcus and mold and yeast counts. The severely contaminated sites were floor, trench, water bottle, plastic drainer, rubber gloves, shelves, and unsealed wet towel. Those sites should be focused and controlled according to control Points of sanitation standard operating Procedures. Also, periodic microbiological examination in addition to visual examination should be applied on those highly contaminated sites for reducing risk of foodborne disease outbreak at restaurants

Analysis of Microbiological Contamination Levels of Cabbage and Fresh-cut Produce on Difference Area toward Climate in Korea (우리나라 기후대별 양배추 및 신선편이제품의 오염도 분석)

  • The purpose of this study was to evaluate microbiological contamination of fresh-cut produce salads and raw cabbage toward climate change. Total aerobic bacteria, coliform and Escherichia coli were monitored to get the contamination levels and E. coli O157:H7, Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes and Salmonella spp. to detect pathogens with risk of foodborne disease from samples. Collection of 360 samples (180 fresh-cut produce salads and 180 raw cabbage), including 60 samples from each area after setting 3 areas depending on annual temperature and annual rainfall. As a result, total aerobic bacteria and coliform group were different was performed areas in raw cabbage but there was no difference between areas in fresh-cut produce salads. In addition foodborne pathogens including E. coli were not isolated from fresh-cut produce salads.

Microbiological Study using Monitoring of Microorganism in Salt-Fermented Fishery Products (젓갈류에서의 위생지표 미생물 및 식중독균 모니터링을 통한 미생물학적 연구)

  • In this study, microbial investigation is accomplished for 554 Jeot-kal samples(102 of Jeot-kal, 448 of Seasoned Jeot-kal and 4 of Sik-khe, respectively) that corresponds with Coliform-bacteria, Escherichia coli, Aerobic live bacteria as hygienic indicator microorganisms, and Staphylococcus aureus, Vibrio parahaemolyticus as Food-borne pathogenic microorganisms, Based on the methods in Korea Food Code, reliable data are obtained as follows; in 31.9% rate of the samples, Coliform bacteria are verified in the extent of $0{\sim}20,000$ CFU/g as 2.3 logCFU/g. Especially, Seasoned Jeot-kal(37.7%,2.3 logCFU/g) are detected to 6 and 2 folds higher than those of Jeot-kal, 5.9% and 1.4 logCFU/g. Likewise, Escherichia coli is detected from 9 samples only in Seasoned Jeot-kal, that includes seasoned squid, seasoned octopus, seasoned roe of pollack, seasoned large-eyed herring and seasoned hairtail. Aerobic live bacteria are also detected in the range of $0{\sim}8.9{\times}10^8CFU/g$. Against salinity, E. coli are detected in samples only less than 10% salinity. Concomitantly, aerobic live bacteria count is decreased to $5.5{\sim}3.6$ log CFU/g upon the salinity is increased up to 25%. However, S. aureus and V. parahaemolyticus are not detected in 554 samples, presumptively referring Jeot-kal products are somehow free from such food-borne pathogens. As the results above, we deliberately consider that the sanitary control in Jeot-kal, which be necessarily fermented- as well as non-microbially inactivated should be ensured in near future and also suggest an effectual microbial standard corresponding to the Negativity in E. coli for Jeot-kal products.

Bacterial Distribution of Salt-Fermented Fishery Products in Seoul Garak Wholesale Market (서울시내 수산시장에 유통중인 젓갈류의 세균 분포)

  • It was performed to survey bacterial distribution on 72 salted fermented fishery products in Seoul Garak wholesale market from April to May in 2002. In average values of biological aspects, salts were 17.2%, in microbiological aspects (Unit: CFU/ml, bacterial cell count 4,900, coliforms 44, Vibrio spp., 160, Staphylococcus spp., 3,000 respectively. Of 93 isolated cells, coliforms were 35.5% (33/93), Vibrio spp. 8.6% (8/93) and Staphylococcus spp. 12.9% (12/93). E. cloacae was the highest (15/33) in coliforms, V. alinolyticus were the most (each 5/8) in Vibrio spp., In case of Staphylococcus spp., S. lentus was the best (5/12).

Microbe and Quality Changes of Ready-to-Eat Lettuce during Storage at Different Temperatures (신선편이 양상추의 온도별 저장 중 미생물과 품질변화)

  • Microbe and quality changes of vacuum-packaged ready-to-eat lettuce were analyzed. While the vacuumpackaged lettuce after chlorine sanitizer were stored at $5^{\circ}C$, $15^{\circ}C$, and $25^{\circ}C$ for 7 days, viable numbers of total aerobic bacteria (TAB), coliform, E. coli, food-borne pathogens and lactic acids bacteria (LAB) were counted with gas production and sensory evaluation. Before the storage, only TAB of 2 log CFU/g and coliform of 1 log CFU/g were detected and LAB was not detected. TAB, coliform and LAB increased by 1 log CFU/g at $5^{\circ}C$ for 7 days without any detection of the pathogens. Sensory evaluations for off-flavour and crispness dropped to half the best value at 5 day storage. TAB and coliform increased by 3 log CFU/g and 2 log CFU/g, respectively, but LAB grew very actively by 4 log CFU/g under anaerobic environment and only B. cereus were detected after enrichment of the lettuce at $15^{\circ}C$ for 3 days. The evaluations for off-flavour and crispness were half the best value for 3 days. However, TAB and coliform increased by 3 log CFU/g, 1 log CFU/g, and 4 log CFU/g, respectively only at 1 day storage under $25^{\circ}C$. Also B. cereus were detected after enrichment and the sensory evaluation were half the best value within 1 day storage. Therefore, preservation at the lowest temperature possible is required for growth inhibition of the bacteria contaminated in the lettuce. Interestingly, LAB among them grew most actively under the anaerobic condition and the adulteration of lettuce might be closely related with the growth of LAB.

Studies on the Bacteriological Properties of Loin Ham during Curing Period (염지경과에 따른 Loin Ham의 세균학적 특성에 관한 연구)

  • In order to examine related bacteria on the maturation of cured loin ham, bacteria isolated during curing periods from ham, which counted coliform group, psychrotrophic and halo-tolerant bacteria. The results are as follows; The isolated bacteria from ham during the curing period were Staphylococcus spp. 24 strains, Bacillus spp. 21 strains, Lactobacillus spp. 10 strains, Coryneform 2 strains. Microbacterium spp. 2 strains and Gram negative rods 8 strains. Micrococcus spp. were identified M. varians 12 strains and M. luteus 3 strains, and Streptococcus spp. identified S. faecium 14 strains, S. lactis 2 strains. Lactobacillus spp. were isolated L. Plantarum 4 strains, L. brevis and L. casei 1 strains. In the case of cured ham, the number of coliform group and psychrotrophic bacteria were decreased but halo-tolerant bacteria were increased for 10 days of curing period. On the brine solution. the number of coliform group, psychrotrophic and halo-tolerant bacteria were increased for 10 days. 4 days and 20 days, respectively.

Analysis of Microbial Contamination of Sprouts and Fresh-cut Salads in a Market (유통중인 즉석섭취 새싹채소와 샐러드의 세균오염 분석)

  • Although bacterial outbreaks from ready-to-eat foods have increased, little information is available on microbial quality of sprouts in markets. Fifty sprouts and 30 salads were collected from wholesale markets. Total aerobic count (TAC), coliform, Escherichia coli, and some pathogens were detected. TAC for sprouts was 7.95 log CFU/g and 6.70 for salads, indicating that sprouts were more contaminated by 1 log CFU/g than that of salads. The numbers of coliform were 6.69 log CFU/g for sprouts and 5.42 for salads. E. coli was detected in 16 of 50 sprout samples at 2.38 log CFU/g and eight of 30 salads at 2.21 log CFU/g. Bacillus cereus was detected in 29 of 50 sprout samples and 16 of 30 salads, and the counts were mostly <3 log CFU/g. Salmonella, Staphylococcus aureus, Listeria monocytogenes, Campylobacter jejuni, and Clostridium perfringens were not detected. Therefore, although pathogens may not be a high risk for these foods, the high TAC and E. coli contamination require improved production and distribution methods, particularly for sprouts.
