Effect of Sorbitol on the Physicochemical and Microbial Characteristics of Chiffon Cake (소비톨 첨가 시폰 케이크의 품질 특성 연구)

  • Sucrose in chiffon cakes was replaced with different levels of sorbitol (0, 30, 50, 70, and 100%), and the effects on the physical properties and storage stability of the cakes were measured. The specific gravity and viscosity of the batter, as well as the volume and moisture content of the cakes, decreased with increasing sorbitol content. The hardness of the cakes slightly decreased as the amount of sorbitol increased, whereas the lowest cohesiveness was observed in the cakes with equal amounts of sucrose and sorbitol. Storage for one day slightly increased the hardness of the cakes and decreased their cohesiveness. Although the amount of mold and total microbial count increased with increasing storage days at room temperature, the replacement of sucrose with 70 or 100% sorbitol was effective in suppressing microbial growth. In sensory tests, the formulation with 70% sorbitol substitution in the chiffon cakes was the most acceptable.

Genotoxicological Safety Evaluation of X-ray Irradiated Four Foods (X-선 조사식품 4종의 유전독성학적 안전성 평가)

  • This study evaluated the genotoxic effects of 30 kGy of X-ray irradiation to four foods (chicken, egg powder, dried green onion, and black pepper). In bacterial reversion assay with Salmonella Typhimurium TA98, TA100, TA1535, and TA1537, the X-ray irradiated foods did not show a significantly increased number of revertant colonies in the presence or absence of the S9 metabolic activation system. In chromosomal aberration tests with Chinese hamster ovary (CHO) cells, the X-ray irradiated foods showed no increase in the frequency of chromosomal aberrations. In in vivo mouse micronucleus assay, the X-ray irradiated foods did not show any increase in the frequency of polychromatic erythrocytes with micronuclei. These results indicate that 30 kGy of X-ray irradiation to four foods (chicken, egg powder, dried green onion, and black pepper) showed no genotoxic effects under these experimental conditions.

  • This study was carried out to evaluate the genotoxicity of imported oranges irradiated with ionizing energy (0.5 and 1 kGy).   • Gamma irradiation at 30 kGy was applied to cereal powders to evaluate their possible genotoxicity. The genotoxicity of 30 kGy-irradiated cereal powders was evaluated by Salmonella typhimurium reversion assay, chromosomal aberration test and in vivo micronucleus assay. The result were negative in the bacterial reversion assay with S. typhimurium TA98, IA100, TA1535 and TA1537. No mutagenicity was detected in the assay with and without metabolic activation. In chromosomal aberration tests with CHL cells and in vivo mouse micronucleus assay, no significant difference in the incidences of chromosomal aberration and micronuclei was observed between non-irradiated and 30 kGy-irradiated cereal powders. These result indicate that cereal powders irradiated at 30 kGy did not show any genotoxic effect under these experimental conditions.

비례위험모형분석을 위한 한글멀콕스(HMULCOX)

  • 다변량 발병시간자료는 각 개개 환자에게 있어 합병증이 발생되거나 혹은 유사 환자군(집락) 내의 발병시간이 상관되어진 생의학자료에서 흔히 볼 수 있다. HMULCOX는 그런 자료를 분석하기 위한 한글 통계 패키지 가운데 하나이다. 이 프로그램은 관련된 발병시간들이 독립이 아닐때에도 COX 비례 위험 모형의 주변확률분포를 계산해 준다. 주어진 조건으로는 주변확률모형의 기본위험율은 일정한 상수, 흑은 변수라도 관계없다. 또한 치료실패율의 치료변수들(공변량)의 효과에 대해 다양한 통계적 추론이 가능하다. 기본적으로 주변확률분포접근법으로 설계되었지만 HMULCOX는 여러 가지 추론 방법을 선택하는 데 일반적으로 충분하다. 이 프로그램으로 2개의 예를 들어 실행하겠다.

  • Purpose: This study is a repetitive comparative analysis of a qualitative case study that carried out a home visiting oral health education program. Method: This study conducted an interview survey through medical examination by interview before and after the home visiting oral health education and measured some pathogenic microorganism counts in the denture. Results: There was a positive change in the self oral care ability of the elderly at home after home visiting oral health education, including the behavior of self management of dentures, and some pathogenic microorganism counts in the dentures. Conclusion: The home visiting oral health education of home care service centers can improve oral health care for the elderly at home.

  • Tabu search (TS) is a useful strategy that has been successfully applied to a number of complex combinatorial optimization problems. By guiding the search using flexible memory processes and accepting disimproved solutions at some iterations, TS helps alleviate the risk of being trapped at a local optimum. In this article, we propose TS-based heuristics for solving a class of clustering problems, and compare the relative performances of the TS-based heuristic and the simulated annealing (SA) algorithm. Computational experiments show that the TS-based heuristic with a long-term memory offers a higher possibility of finding a better solution, while the TS-based heuristic without a long-term memory performs better than the others in terms of the combined measure of solution quality and computing effort required.

내산소성 비피더스균의 분리와 생육 특성 1. 내산소성 비피더스균의 분리와 동정

  • 건강한 성인의 분변으로 부터 호기적인 평판배지에서의 생육이 가능한 비피더스균을 선별 분리하는 조건과 상기 분리주의 특성을 규명한 결과는 다음과 같다. 1.5%의 탈섬유소 말혈액을 첨가한 BLB Agar Medium에 인체 분변을 호기적으로 표면 배양하여 내산소성 비피더스균 변이주를 분리하였다. 상기 분리주는 BLB Agar Medium 평판배지에 호기적으로 배양 했을때 $1.1\;{\times}\;10^9$ cfu/ml 이상의 높은 균수를 유지하였다. 2. 상기의 내산소성 비피더스균 분리주를 BLB Agar Medium 에 호기적으로 배양했을때 0.5mm, 연유갈색, 원형, 융기상의 윤택한 집락을 형성하였으며 현미경 검경 결과 Y 자형 분지상과 V자형 만곡간균상, 팽윤상 등의 전형적인 비피더스균 형상으로 나타냈다. 3. 탄수화물 발표실험 결과 상기의 내산소성 비피더스균 분리주는 Bif. adolescentis 로 동정되었으며 F6PPK GKA효소 활성 함께 매우 높은 ${\alpha}$-Galactosidase, $\beta$ - Galactosidase, ${\alpha}$-Galactosidase, 효소 활성을 나타냈다. 한편 아무것도 첨가하지 않은 순수한 우유 중에서의 발효성 및 호기적인 생육능이 매우 양호하였다.

  • 이 연구의 목적은 여성의 리듬운동 참가와 신체이미지 및 자아존중감의 관계를 규명하는데 있다. 본 연구는 2009년 서울 경기도 지역 2009년 서울 경기도지역에 소재하고 있는 스포츠센터, 일반동호회, 지역동호회, 댄스학원, 일반인을 대상으로 리듬운동에 참여하고 있는 20~50대 성인여성을 모집단으로 설정한 다음, 집락무선표집법을 이용하여 300명을 추출 하였다. 결론은 다음과 같다. 첫째, 리듬운동 참가여성은 비참가여성에 비해 신체이미지 및 자아존중감을 더 긍정적으로 평가한다. 둘째, 리듬운동 참가기간은 체형, 만족, 유연성요인에 영향을 미치고 있으며, 참가강도는 체형과 근력요인에 영향을 미친다. 셋째, 리듬운동참가기간은 자아존중감에 영향을 미치며, 참가빈도는 부적 영향을 미치는 것으로 나타났다. 넷째, 여성의 리듬운동 참가정도는 신체이미지 그리고 자아존중감에 인과적 영향을 미친다.

Applicability of Cluster Analysis and Discriminant Analysis (집락분석과 판별분석의 활용성연구)

  • Cluster analysis is a primitive technique in which no assumptions are made concerning the data structure. And the number of groups is known a priori discriminant analysis provides an information how well N individuals are classified into their own groups. In this study, clustering, which is any partition of a collection of data points, generated by the application of eight hierarchical clustering methods was re-classified by discriminant analysis. Then correct classification ratios were obtained for the application of discriminant analysis through each clustering method and the direct application of discriminant analysis. By comparing the correct classification ratios, the applicability of cluster analysis and discriminant analysis considered.
