Effect of Psyllium Husk, Pectin and Cellulose on the Lipid Concentrations and Hemobiochemical Enzymes in Rats (차전자피, 펙틴 및 셀룰로스 함유 식이를 급여한 흰쥐의 지질농도 및 임상생화학적 지표 효소에 미치는 영향)

  • This study investigated the effects of different kinds of dietary fibers, cellulose, psyllium husk, pectin and the Psyllium husk Plus Pectin, on the lipid concentration and hernobiochemical enzyme activity in male Sprague-Dawley rats. The experimental groups were divided into four groups : the cellulose group, the psyllium husk group, the pectin group and the psyllium husk Plus Pectin group. Dietary fiber was supplemented at 10% (w/w) levels in the diet. Body weight gain, food intake and relative tissue seight were not significantly different among the dietary groups. Concentrations of triglyceride and phospholipid of serum in the psyllium husk and the pectin groups were significantly lower than those of the cellulose and the psyllium husk plus pectin groups. Concentration of total cholesterol of serum in the psyllium husk plus pectin group was lower than other dietary groups. However, concentrations of triglyceride and phospholipid of liver in the psyllium husk and the pectin groups were significantly higher than those of the cellulose and the psyllium husk plus pectin groups. The hemobiochemical Parameters, total protein, albumin, glutamic pyruvic transaminase, glutamic oxaloacetic transaminase, alkaline phosphatase, lactate dehydrogenase and blood urea nitrogen in serum of the psyllium husk group were lower than other dietary groups. These results showed that dietary psyllium husk could have lowering effects on serum triglyceride concentration without any side effect of hemobiochemical enzyme activity in rats.

Quality Characteristics and Amino Acid Content of Cookies with GABA-Enhanced Brown Rice (GABA 함량이 증가된 현미 첨가 쿠키의 품질특성과 아미노산 함량)

  • This study is conducted to investigate the quality characteristics of cookies containing different levels (0%, 20%, 40%, 60%) of brown rice powder with enhanced levels of GABA (${\gamma}$-amino butyric acid). The pH of cookie dough was higher in cookies containing brown rice powder. A proximate composition analysis showed that the moisture content was increased with the addition of the brown rice powder, yet there was no significant difference in the crude protein and crude fat contents among the added groups. The ash content was the highest in the 60% added group. The spread factor of the control cookie was higher than that of cookies containing 40% and 60% brown rice powder. The incorporation of brown rice powder in cookies lowered the lightness and yellowness values, but increased the redness value. The hardness of the cookies was lower in 40% and 60% added groups than that of the controls. The GABA content in the brown rice added groups was higher than that of the control cookie, and increased as brown rice powder increased. A consumer acceptance test revealed that there was no significant difference in the overall preference scores among the cookies. From these findings, it is suggested that the cookies with brown rice powder up to 60% added can be developed as goods.

Effect of Degree of Milling on Physicochemical Properties of Rice Flour and Rice Noodles (도정도에 따른 쌀가루 및 쌀국수의 품질 특성)

  • The objective of this study was to investigate the physicochemical properties of rice flour at different degrees of milling (DOM) and their influence on cooking, color, textural, and sensory properties of rice noodles. Higher DOM flour resulted in higher value of lightness and lower value of yellowness. Transition temperatures of rice flour were not significant, whereas the enthalpy of gelatinization increased with an increase in milling degree. Rice noodles were prepared with rice flours of DOM, and their quality and sensory properties were investigated. Cooking properties of rice noodles were not affected by DOM; however, color values were affected by DOM. In textural properties, values of hardness and chewiness of rice noodles were significantly reduced with an increase in milling degree. The sensory scores for overall acceptability, appearance, and texture were highest in higher DOM noodles (DOM 10% and DOM 12%).

Changes in the Quality Characteristics of Muskmelon Treated with Different Concentrations of 1-MCP During Storage (1-Methylcyclopropene(1-MCP) 처리농도에 따른 머스크멜론(Cucumis melo L.)의 품질특성 변화)

  • Changes in the quality characteristics of muskmelon were analyzed by treating samples with 500, 1,000, and 1,500 ppb 1-MCP every 4 days and then storing the samples at $10^{\circ}C$. The weight losses of the MCP treated samples were lower than those of the control, while there were no differences in the concentrations among treatments. The firmness was maintained at a higher value in 1-MCP treated samples than the control during the storage period and showed the highest value in the 1,000 ppb treatment. The L-values (brightness of samples) in the 500 and 1,000 ppb treatments were kept constant during the storage period, while that of the control showed a decreasing trend after four days of storage. The bvalues and yellowness, were decreased after showing an increasing trend in both treatments and the control as the storage period passed. The respiration rates of 1-MCP treated samples were lower than the control, with the lowest value being observed in the 1,000 ppb treatment. The texture observed upon sensory evaluation was higher and freshness was maintained longer in the 1,000 ppb treatment. Therefore, 1,000 ppb 1-MCP was considered to be the most effective concentration for treatment of muskmelon.

Effects of quarantine doses of e-beam irradiation on the physicochemical and sensory characteristics of paprika (전자선 검역처리선량이 파프리카의 품질 및 관능특성에 미치는 영향)

  • The aim of this study was to evaluate the quality characteristics of fresh red paprika treated by electron-beam irradiation at quarantine doses. The initial microbial loads were low with $10^4$ and $10^2$ colony-forming units/g for total aerobic bacteria and coliform, respectively; however, a dose of 1 kGy resulted in load reduction of 1 log cycle. A dose level of more than 1 kGy caused significant decreases in the hardness and carotenoid content parameters. An applied dose level of less than 2 kGy did not affect vitamin C content; however, a decrease of 87-90% was observed after 40-day storage. Samples treated with 2 kGy showed significantly lower acceptance compared to the control, with lower sensory evaluation scores for color and texture. Therefore, e-beam irradiation at dose range of 0.4 and 1 kGy was found to be appropriate for quarantine applications for microbiological control and quality maintenance of paprika.

Quality Characteristics of Sponge Cake Added with Laminaria japonia Powder (다시마 분말 첨가 스펀지 케이크의 품질 특성)

  • This study was performed in order to investigate the quality characteristics of sponge cake made with Laminaria japonia powder. To evaluate the physical and sensory analysis, Laminaria japonia powder was added to wheat flour in various ratio (3, 5, 7, 9%, w/w). The specific gravity and loss rate increased with the addition of Laminaria japonia powder. The crude protein and ash levels in the sponge cakes increased linearly with the addition of 0~9 g of Laminaria japonia powder/100 g of wheat flour. For the crumb color values, lightness (L) and yellowness (b) decreased with the addition of Laminaria japonia powder, whereas redness (a) significantly increased (P<0.05). In the texture analysis, the hardness, gumminess and chewiness were increased; however, the cohesiveness and resilience were reduced by the addition of Laminaria japonia powder. When the sensory characteristics were evaluated, 5% Laminaria japonia sponge cake showed the highest sensory properties, except for color. Therefore, the results suggested that 5% Laminaria japonia sponge cake could be helpful in improving the physical quality as well as the taste.

Modified Atmosphere Storage for Extending Shelf Life of Oyster Mushroom and Shiitake (환경가스조절 저장방법을 이용한 느타리버섯과 표고버섯의 유통기간 연장)

  • In order to study the effect of modified atmosphere storage on extending shelf life of mushrooms, oyster mushroom and Shiitake were wrapped with polyethylene film (PE, $50\;{\mu}m$), and stored at $0.5^{\circ}C$. Mushrooms packed with conventional hardboard box (4kg) lost marketability within $5{\sim}6$ days due to weight loss, shrinkage, browning, spore formation and/or mycellium growth. PE-packing could prevent or retard the deterioration of the mushrooms in the aspects of appearance, texture, discoloration, and microbial contamination. This situation can be best characterized by the reduced respiration rate resulted from the elevated level of carbon dioxide and the reduced level of oxygen in the bag. Although the appearance of the oyster mushroom was maintained for one month, its shelf life was limited to 15 days because of tissue softening. Discoloration of the pileus of shiitake mushroom appears to be the most important factor to determine its marketability. For example, extension of shelf life of Dongo was limited to 15 days, principally due to the browning of the pileus. Shelf life of Hawgo whose color of the pileus changed little over the experimental period, however, could be extened to more than one month.

Combined Treatment with Gamma Irradiation and Sodium Dichloroisocyanurate to Control Leaf Blight and to Preserve Cut Lilies (절화 백합 잎마름병 방제 및 품질 보존을 위한 감마선 150 Gy와 Sodium Dichloroisocyanurate 병용처리)

  • For the purpose of practical application of gamma irradiation for export lily without the ionic energy damage, 150 Gy gamma ray was suggested as the safe level on cut lilies, the oriental cultivar Siberia (white) and Sorbonne (pink). The combined treatments of 150 Gy gamma ray and sodium dichloroisocyanurate (NaDCC) at 0, 40, 100, and $200{\mu}g/l$, were tried to control lily leaf blight caused by Botrytis elliptica. Incidences of petal blight on the two oriental lilies at control were 93%-95%, whereas those at the combined treatments of 150 Gy and $100{\mu}g/l$ or higher of NaDCC were 76%-83%. However, severity of petal blight was not reduced by the combined treatments. Gamma irradiation at 150 Gy did not change the cut lily quality such as improve cut lily longevity of vase-life compare with the control. In addition, fresh weight, chlorophyll contents, and the color of pink petals of Sorbonne were not changed by 150 Gy of gamma irradiation. Therefore, we recommend the combined treatment of 150 Gy gamma irradiation and $100{\mu}g/l$ NaDCC for the standard operating procedure on cut lily for export quarantine to control leaf blight.

Quality Characteristics of Sponge Cake Added with Leek(Allium tuberosum Rottler) Powder (부추 첨가 스폰지 케이크의 품질 특성 연구)

  • This study was performed to investigate the quality characteristics of sponge cake made with leek(Allium tuberosum Rottler) powder. In order to evaluate the physical and sensory properties of different cake, the leek powder was added to wheat flour at various ratios(3, 5, 7, 9%, w/w). The specific gravity of bread dough tends to increase with the addition of leek powder. The moisture levels of the sponge cakes made with leek powder were higher than that of the control. Crumb color values, lightness(L) and redness(a) decreased by leek powder addition, while yellowness(b) was significantly increased (p<0.05). In texture analyses, hardness, cohesiveness, springiness and gumminess decreased with the addition of leek powder. In sensory evaluations, the 3% leek powder sponge cake showed higher sensory property scores than others(p<0.05).

Food Quality of Muffin with Germinated Brown Rice Soaked in Mycelial Culture Broth of Phellinus linteus (상황버섯균사체 배양액 침지 발아현미를 첨가한 머핀의 식품학적 특성)

  • The purpose of this study was to examine the qualities of optimized muffins with germinated brown rice soaked in mycelial culture broth of Phellinuslinteus (GBRP) using response surface methodology. Firstly, general compositions of optimized muffins with GBRP were higher than that of control and total sugar contents were similar. However, the total free amino acid and constitutional amino acid contents except for GABA were lower than those of control. Starch hydrolysis in control was higher than in optimized muffins with GBRP, whereas protein digestibility and protein efficiency ratio were not. The weights of optimized muffins with GBRP were higher than that of control (p<0.01), whereas height (p<0.01) and pH (p<0.001) were similar. The hardness (p<0.05) and chewiness (p<0.05) of optimized muffins with GBRP were higher compared to control; adhesiveness, springiness, and gumminess were similar, but cohesiveness (p<0.01) was not. The flavor (p<0.05) and taste (p<0.01) of optimized muffins with GBRP were higher than those of control; appearance, texture and overall acceptability were similar, but color (p<0.05) was not. The total polyphenol contents (p<0.01), DPPH radical scavenging activity (p<0.01), and superoxide dismutase-like activity (p<0.05) of optimized muffins with GBRP were higher than those of control, but nitrite scavenging activity was similar.
