  • This study investigated changes in the quality and antioxidant activity of soy sauce with added Saccharina japonica powder (FSP). Soy sauce was prepared with acid-hydrolyzed soy sauce, brewed soy sauce, honey, ginger, garlic, dried red pepper, ${\gamma}$-aminobutyric acid (GABA)-enriched sea tangle fermented in lactic acid, and 1% or 3% S. japonica powder by soy sauce volume. The color, pH, microbiology, amino nitrogen, free amino acids, antioxidant activity, and sensory qualities of the soy sauce were evaluated. There were no significant differences in the general characteristics or antioxidant activity. However, the addition of FSP to the soy sauce enhanced the delicate flavor. Furthermore, soy sauce containing FSP had higher levels of GABA (50 mg/100 mL), a biofunctional ingredient. Therefore, the development of seasoning soy sauce with enhanced functionality seems possible.

  • This study aims to find out how taste recognition differs between two groups of culinary arts students. We conducted a questionnaire survey on minimum sensitivity and minimum tastiness for four basic tastes. The first group consisted of 40 students in their first year, and the second group consists of 56 students in their second year and third year. The survey shows that both groups preferred medium saltiness, and the second group was more favorable to sweetness than the first group. The sweet and the pungent tastes were more favored than sourness and less favored than bitterness by both groups of subjects. The amount of the sample required for minimum tastiness shows that the freshmen had a higher sensitivity than the sophomore and junior students. Contrary to a common belief that people who have more experience in cooking would have a more sensitive taste, this study shows that taste sensitivity does not always accord with cooking experience. Rather, it depends on individual differences and current health status. Further research should be needed for various sensory test method and more kitchen experienced people who has more working years after graduate college.

  • This study was conducted for the university students who majored in culinary arts. The effects of students' certifications on class and school life satisfaction and their effects on preparation employment were examined. The results showed that the students with the certifications had a high level of satisfaction in the class satisfaction, but they also had high stress in the school life. In other words, it seemed that the stress was increased in parallel with the school life in obtaining the certificate. In the case of qualification for preparation employment, the certification affects the preparation for employment even for the culinary arts majors. As for the number of certificates and passions, the change was found from 3 certifications, lower in 4, but again in 5. These results suggest that the certification initially increases enthusiasm, but when it reaches a certain level, it reaches its limit and it rises again after passing the interval. Also, students who graduated from cooking related high school showed high passion compared to those who did not.

  • The purpose of this study is to investigate the priority order in the factors influencing college choice of students who are majoring in culinary art in Chungcheong-do. For the study, we set the decision-making factors of upper hierarchies and nineteen bottom hierarchies based on the literature review and employed the analytical hierarchical process(AHP). As a result, the first considering factor among 4 upper hierarchies for college choice was the educational environments of the department(0.378). The next came in the order named as follows: college and university grade(0.263), the educational environments of colleges or universities(0.244), recommendation(0.115). The first considering factor among the educational environments of the department was the aptitude for the major(0.323). The first considering factor in college and university grade was the entrance competitive rate(0.397). The first considering factors among the educational environments of the colleges or universities were scholarships and tuition fees(0.325). The first considering factor in recommendation was the recommendation of a high school teacher(0.295). The survey questionnaire evaluated their attitudes by ATBEQ (Attitudes towards Business Ethics Questionnaire), using a seven-point scale and the data were analysed by frequency, t-test, ANOVA and reliability analysis. The average value of ATBEQ was investigated with attitudes towards ethics (3.48${\pm}$0.79), application of the ethics to business (4.24${\pm}$0.71), business profit making (4.18${\pm}$0.71), businessman (4.29${\pm}$0.67) and practice of business ethics (3.16${\pm}$0.79). The female, undergraduate and younger students showed significantly higher scores of attitudes towards business ethics (higher ethical attitude) than the male, graduate and older students, respectively. There are some similar results between Korean and Israeli students, while western students (America, Australia and Turkey) showed different attitudes with Korean students.

  • The purpose of this study is to investigate the effect and difference of hotel chef's peer pressure on self-efficacy and collective efficacy, and to examine the relationship between job satisfaction and job performance. For the study, questionnaires were distributed to 6 hotels in Seoul and Busan, and 285 valid copies were analyzed using SPSS 25.0 and AMOS 25.0. In the relationship between variables, collective efficacy was found to have a greater effect on peer pressure among collective efficacy and self-efficacy. And it was found that among self-efficacy, self-efficacy had a greater effect on job satisfaction, and this was collective efficacy due to peer pressure. It is judged that this is due to the professional characteristics and characteristics of the chef, where individual work and skills are important. Also, job satisfaction was found to have a positive effect on job performance. In conclusion, we suggested that these two dimensions of efficacy should be studied together and used in human care programs.
