Quality Characteristics of Soy Ice Cream Prepared with Fermented Soybean Powder Base and Oligosaccharide and Its Blood Glucose Lowering Effect (대두분말 발효 베이스와 올리고당으로 제조한 콩아이스크림의 품질특성과 혈당개선능)

  • The purpose of this study was to improve the quality characteristics of soy ice cream supplemented with oligosaccharide, and to test its blood glucose lowering effect. Boiled soybean powder was compared to parched soybean powder and to milk, as an ingredient. The soybean powder base was prepared by incubating with fructooligosaccharide (FOS) and apple juice, along with Lactobacillus acidophilus and L. bulgaricus at $30-40^{circ}C$ for 24 hr. With the fermentation process, the fishy smell of the soybean was removed and the taste improved. The overrun and melt-down values of the boiled soybean ice cream were significantly higher than those of the parched soybean ice cream, although they were significantly lower than those of the milk ice cream. The sensory characteristics of the soy ice cream prepared with the fermented base of boiled soybeans were significantly improved, as compared to those of the ice cream made using parched soybeans, but they were not significantly different from those of the milk ice cream. The blood glucose level at 120 min after ingestion of the ice cream prepared with FOS and the fermented base of boiled soybean powder was significantly lower than that occurring with the milk ice cream made with sugar.

Effects of Bifidobacteria and oligosaccharides on the quality attributes of frozen soy yogurts (비피더스균과 올리고당이 frozen soy yogurt의 품질특성에 미치는 영향)

  • This study was carried out to evaluate the quality attributes of frozen soy yogurts prepared by freezine soy yogurts, which are made of different types of Bifidobacteria (B. bifidum, B.breve, B. infantis) and oligosaccharides (fructooligosaccharides, galactooligosaccharides, isomaltooligosaccharides) containing $\alpha$-chymotrypsin treated soy protein isolate were evaluated in terms of overrun, melt-down quality, changes in the total number of Bifidobacteria after freezing, and sensory evaluation. The quality attributes of soy yogurts were also evaluated in terms of changes in the number of viable cells of Bifidobacteria in soy yogurts after incubation at 37$\^{C}$, pH 3.0 for 90 min, water holding capacity, and viscosity. The overrun of frozen soy yogurts fermented by B. bifidum showed the hiehest value but those fermented by B. infantis showed the lowest, while the melt-down quality of soy yogurts were vice versa. The total numbers of Bifidobacteria after freezing for 30 min in ice cream maker showed more than 10$\^$9/ CFU/ml. In sensory evaluation, all $\alpha$-chymotrypsin treated frozen soy yogsurt showed little beany flavor. In sour, sweet, and bitter tastes and mouth feel, the frozen soy yogurts fermented by B. bifidum evaluated better but those fermented by B. infantis evaluated worse. Also in the overall quality, the frozen soy yogurts fermented by B. bifidum were evaluated desirable but those fermented by B. infantis were evaluated undesirable. The water holding capacity and viscosity of soy yogurts fermented by B. bifidum showed the highest values but those fermented by B. infantis showed the lowest values. The total numbers of Bifidobacteria of all soy yogurts decreased from 10$\^$9/ CFU/ml to 10$\^$8/ CFU/ml after incubation at 37$\^{C}$, pH 3.0 for 90 min.

Biological Stream Health and Physico-chemical Characteristics in the Keum-Ho River Watershed (금호강 수계에서 생물학적 하천 건강도 및 이화학적 특성)

  • The objective of this study was to evaluate biological health conditions and physicochemical status using multi-metric models at five sites of the Keum-Ho River during August 2004 and June 2005. The research approach was based on a qualitative habitat evaluation index (QHEI), index of biological integrity (IBI) using fish assemblage, and long-term chemical data (1995 ${\sim}$ 2004), which was obtained from the Ministry of Environment, Korea. For the biological health assessments, regional model of the IBI in Korea (An,2003), was applied for this study. Mean IBI in the river was 30 and varied from 23 to 48 depending on the sampling sites. The river health was judged to be "fair condition", according to the stream health criteria of US EPA (1993) and Barbour et al. (1999). According to the analysis of the chemical water quality data of the river, BOD, COD, conductivity, TP, TN, and TSS largely varied epending on the sampling sites, seasons and years. Variabilities of some parameters including BOD, COD, TP, TN, and conductivity were greater in the downstream than in the upstream reach. This phenomenon was evident in the dilution by the rain during the monsoon. This indicates that precipitation is a very important factor of the chemical variations of water quality. Community analyses showed that species diversity index was highest (H=0.78) in the site 1, while community dominance index was highest in the site 3, where Opsariichthys uncirostris largely dominated. In contrast, the proportions of omnivore and tolerant species were greater in the downstream reach, than in the upstream reach. Overall, this study suggests that some sites in the downstream reach may need to restore the aquatic ecosystem for better biological health.

Preparation of Fermented Milk Added with Powder of Opuntia ficus-indica var. saboten and Its Sensory Characteristics (백년초 분말을 첨가한 발효유 제조 및 관능적 특성)

  • The effects of Opuntia ficus-indica var. saboten powder on the growth of lactic acid bacteria (LAB) were investigated in order to explore the possibility of manufacturing fermented milk containing the powder. Differences in pH, acidity, LAB counts, viscosity, and sensory evaluation were measured. Also the effects of dietary supplementation on the growth of piglets were evaluated by feeding fermented milks containing 0.1%, 0.2%, 0.5%, and 1.0% Opuntia ficus-indica var. saboten powder. Levels of pH, titratable acidity, viable LAB counts and viscosity were significantly different by the addition of the powder. When fermented milks containg 0.1%, 0.2%, 0.5% and 1.0% Opuntia ficus-indica var. saboten powder were kept at $4^{\circ}C$ for 30 days, viable LAB counts remained high after 30 days of storage. The effects of dietary supplementation of 0.2% Opuntia ficus-indica var. saboten fermented milk were investigated by examining piglet growth rate and fecal ammonia gas release. The piglets were fed 100g/herd of the fermented milk for 14 days. Average daily body weight gain was significantly (p<0.05) improved (110%) with dietary supplementation of the fermented milk, compared to a control group. More over, fecal ammonia gas emissions were reduced by dietary supplementation of the Opuntia ficus-indica var. saboten fermented milk. Sensory evaluation results showed that the samples containing 0.1% and 0.2% Opuntia ficus-indica var. saboten powder had the most parameters similar to those of the control.

Effects of Egg Gel Formation According to Mixing Ratio of Sugar Sources, NaCl and Sucrose (당 종류 및 NaCl과 Sucrose 배합비에 따른 계란찜의 겔 형성 효과)

  • This study investigated the changes in textural characteristics that occurred by adding maltose syrup, dextrin, and sucrose to whole egg gels, by assessing coagulation after cooling. It also examined the optimal NaCl and sucrose concentrations for whole egg gels sensory evaluations, and then studied how the addition of sucrose effected gel formation and textural characteristics under optimal NaCl concentration. The additions of maltose syrup, dextrin, and sucrose, presented some color changes. The greater the addition of maltose syrup or dextrin, the lower the L, a, and b values of the whole egg gel and whole egg liquid, and ultimately the color turned dark bluish green. With increasing additions of sucrose, maltose syrup, and dextrin, the viscosity of the whole egg liquid increased slightly. In terms of the mechanical texture characteristic of the gel, the texture was most elastic with the 0.8% addition of sucrose, and hardness decreased by increasing the ratio of added sucrose. Increasing amounts of maltose syrup resulted in less hardness and SF. And for dextrin, the SF increased up to 2.5 and then decreased, and hardness decreased with increasing amounts of dextrin. Based on sensory evaluations, the 0.8% addition of NaCl was significantly preferred(p<0.05), in terms of salty taste. The overall preference scores indicated that the whole egg gel made with 0.3% sucrose and the optimal NaCl concentration(0.8%) was most preferred, and each sample was significant(p<0.05). Under the optimal 0.8% NaCl concentration increasing the sucrose concentration resulted in a darker egg gel color, in terms the L value. SF, NF, and hardness, which are mechanical texture parameters, were when 0.8% sucrose and the optimal NaCl concentration of 0.8% were added to whole egg liquid, in preparing the whole egg gel.

A Study on the Moisturizing Effect and Preparation of Liquid Crystal Structures Using Sucrose Distearate Emulsifier (슈크로오스디스테아레이트를 사용한 액정구조의 생성과 보습효과에 관한 연구)

  • This study is to make the liquid crystalline structure using sucrose distearate (Sucro-DS) emulsifier to create the hydrophilic type oil-in-water (O/W) emulsion, the droplets of the emulsion having a structure of a multi-lamellar structure. We have studied the physicochemical properties of Sucro-DS using those techniques. And it has been studied in the emulsion performance. In order to form the liquid crystalline structure applying 3 wt% of Sucro-DS, 5 wt% of glycerin, 5 wt% of squalane, 5 wt% of capric/caprylic triglyceride, 3wt% of cetostearyl alcohol, 1wt% of glyceryl mono-stearate, 78 wt% of pure water in mixture having the lamellar structure of stable multi-layer system was found to formed. By applying them, they were described how to create an unstable active material encapsulated cream. Further, the moisturizing cream was studied using this technique. It reported the results to the skin improvement effect by the human clinical trials. The pH range to produce a stable liquid crystal phase using a Sucro-DS was maintained in 5.2~7.5. In order to increase the stability of the liquid crystal, it was when behenyl alcohol containing 3 wt%, the hardness at this time was 13 kg/mm,min. Viscosity of the same amount was 25,000mPas/min. After a test for the effects of the emulsions, the concentration of 6 wt% Sucro-DS is that was appropriate, the particle size of the liquid crystal was 4~6mm. It was observed through a microscope analysis, reliability of the liquid crystal changes for 3 months was found to get stable at each $4^{\circ}C$, $25^{\circ}C$ and $45^{\circ}C$. In clinical trial test, before applying a moisturizing effect it was $13.4{\pm}7%$. Moisturizing cream liquid crystal was not formed in $14.5{\pm}5%$. Therefore, applying than ever before could see the moisture about 8.2% was improved. On the other hand, it was the moisturizing effect of the liquid cream is $19.2{\pm}7%$. The results showed that 43.3% improvement than that previously used. Applications fields, Sucro-DS emulsifier used liquid cream, lotion, eye cream and a variety of formulations can be developed, as well as the cosmetics industry is expected to be wide fields in the application of the external preparation for skin emulsion technology in the pharmaceutical industry and pharmaceutical industry.

  • Centrifugal pump is a facility that transfers energy to fluid through centrifugal force, which is usually generated by rotating the impeller at high speed, and is a major process facility used in many LNG production bases such as vaporization seawater pump, industrial water and fire extinguishing pump using seawater. to be. Currently, pumps in LNG plant sites are subject to operating conditions that vary depending on the amount of supply desired by the customer for a long period of time. Pumps in particular occupy a large part of the consumption strategy at the plant site, and if the optimum operation condition is not available, it can incur enormous energy loss in long term plant operation. In order to solve this problem, it is necessary to identify the performance deterioration factor through the flow analysis and the result analysis according to the fluctuations of the pump's operating conditions and to determine the optimal operation efficiency. In order to evaluate operation efficiency through experimental techniques, considerable time and cost are incurred, such as on-site operating conditions and manufacturing of experimental equipment. If the performance of the pump is not suitable for the site, and the performance of the pump needs to be reduced, a method of changing the rotation speed or using a special liquid containing high viscosity or solids is used. Especially, in order to prevent disruptions in the operation of LNG production bases, a technology is required to satisfy the required performance conditions by processing the existing impeller of the pump within a short time. Therefore, in this study, the rotation difference of the pump was applied to the ANSYS CFX program by applying the modified 3D modeling shape. In addition, the results obtained from the flow analysis and the curve fitting toolbox of the MATLAB program were analyzed numerically to verify the outer diameter correction theory.

Effect of Aqueous Phase Composition on the Stability of a Silica-stabilized Water-in-oil Emulsion (유화제로서 실리카를 이용한 유중수형 에멀젼의 안정성에 미치는 수상부 조성의 영향)

  • The extent of silica flocculation can be modified by varying the silica concentration, aqueous phase pH, salt and polvmer concentration. High volume fraction W/O emulsion stabilized by hydrophobic silica was established with various aqueous phase conditions for cosmetic application. By increasing the silica concentration up to $1.0\;wt\%,$ the size of droplet decreased. A high silica concentration increased the viscosity of continuous oil phase by network formation, which resulted in target size of droplet. The stability of W/O emulsion is improved as increasing the aqueous phase pH. At low and intermediate pH, the emulsions became more stable by adding salt $(0.083\;mol\;dm^{-3}\;MgSO_4).$ At high PH, the presence of salt caused significant destabilization. The gelation behavior of the emulsion indicates that the effect of salt on silica-stabilized emulsion is derived from an electrostatic attraction. The addition of xanthan gum in aqueous phase increased the mono-dispersity of the W/O emulsion by making water more hydrophobic and hindering the recombination of droplets. In conclusion, these results indicate that very stable emulsifier-free, finely dispersed W/O emulsion can be achieved for cosmetic application by changing the aqueous phase composition.

Environmental Factors Affecting the Start and End of Cicadae Calling - The Case Study of Hyalessa fuscata and Cryptotympana atrata - (매미과 울음 시작 및 종료에 영향을 미치는 환경요인 - 참매미, 말매미를 대상으로 -)

  • The purpose of this study was to identify the environmental factors that affect the beginning and end of calling by Hyalessa fuscata and Cryptotympana atrata, which are dominant cicada species in the central urban areas of Korea. The study area was Banpo Apartments in Seoul. The research period included two months, being from the end of July to the end of August 2015. We analyzed the start and end time of cicada calling, and on average H. fuscata started calling at 5:21 am and C. atrata started at 7:40 am. The average end time of calling was 6:31 pm for H. fuscata and 7:51 pm for C. atrata. From the scatter plot and box plot results, H. fuscata started calling at 05:00 am, whereas C. atrata consistently stopped calling at 20:00 pm compared to H. fuscata. Multiple regression analysis of the start and end time of cicada calling showed that sunrise time was a factor affecting the start of H. fuscata calling. The end time of H. fuscata calling was affected by sunset time and total cloud cover. The starting time of C. atrata calling was mostly affected by temperature and sunrise time. The effect of temperature was greater than that of sunrise time. The end time of C. atrata calling was strongly affected by sunset time, whereas peak temperature was also shown to affect the end time. From the above results, sunrise and sunset are thought to be the critical factor affecting the start and end time of H. fuscata calling. Therefore, H. fuscata started calling with sunrise, and the end time was also affected by sunset. Temperature was the factor most affecting the start of C. atrata calling and sunset was identified as the factor affecting the end time. Therefore, the start time of C. atrata calling shows variation with daily temperature changes, and C. atrata stop calling simultaneously with sunset.

Temporal and Spatial Characteristics of Sediment Yields from the Chungju Dam Upstream Watershed (충주댐 상류유역의 유사 발생에 대한 시공간적인 특성)

  • A physically based semi-distributed model, SWAT was applied to the Chungju Dam upstream watershed in order to investigate the spatial and temporal characteristics of watershed sediment yields. For this, general features of the SWAT and sediment simulation algorithm within the model were described briefly, and watershed sediment modeling system was constructed after calibration and validation of parameters related to the runoff and sediment. With this modeling system, temporal and spatial variation of soil loss and sediment yields according to watershed scales, land uses, and reaches was analyzed. Sediment yield rates with drainage areas resulted in $0.5{\sim}0.6ton/ha/yr$ excluding some upstream sub-watersheds and showed around 0.51 ton/ha/yr above the areas of $1,000km^2$. Annual average soil loss according to land use represented the higher values in upland areas, but relatively lower in paddy and forest areas which were similar to the previous results from other researchers. Among the upstream reaches, Pyeongchanggang and Jucheongang showed higher sediment yields which was thought to be caused by larger area and higher fraction of upland than other upstream sub-areas. Monthly sediment yields at the main outlet showed same trend with seasonal rainfall distribution, that is, approximately 62% of annual yield was generated during July to August and the amount was about 208 ton/yr. From the results, we could obtain the uniform value of sediment yield rate and could roughly evaluate the effect of soil loss with land uses, and also could analyze the temporal and spatial characteristics of sediment yields from each reach and monthly variation for the Chungju Dam upstream watershed.
