An experimental archaeological study on the Baekjae iron smelting furnace and its production process (백제 제철로 및 제철기술의 복원을 위한 실험 고고학적 연구)

  • A Jincheon Seokjangri B23 furnace was reconstructed and iron smelting experiment was performed to investigate an ancient Baekjae iron production process. The work mainly described in this paper is the $1^{st}$ and $2^{nd}$ experiments among the several experiments carried out at Jungwon National Research Institute of Cultural Heritage. Iron ore(magnetite) and oak charcoal were used as a source and a foot bellow was used for air supply. Common results of the experiments are masses of iron, slag and charcoal formed in the furnace. Most iron lumps were formed nearby the tuyere rather than the area of tapping hole. Metallographic and chemical analysis shows that the iron lumps can be used for either forge or cast depending on their carbon content. Low Fe content and glassy texture of the inner slags suggest that the operation environment was quite reducing. Based on the results of the iron smelting experiments, measurements and analysis, various information was obtained regarding physical-chemical and metallurgical processes of the ancient iron smelting process. It is firmly believed that its undisclosed contents can be revealed more in depth with continual reconstitution experiments.

Anti-corrosion properties for cross section of Mg films on galvalume steel coated by PVD process (PVD법에 의해 Mg 코팅된 갈바륨 도금강판의 단면부 내식특성)

  • 갈바륨 도금강판은 알루미늄의 우수한 차폐 특성과 내열성, 열 반사성을 가지며 아연의 희생방식 특성을 겸비하여 동일 부착량의 용융 아연도금 및 알루미늄 도금강판에 비해 우수한 내식성을 나타낸다고 알려져 있다. 또한 이것은 표면이 미려하고 경제성이 높아 건자재 용도로 현재까지도 세계적으로 널리 이용되고 있다. 여기서 지칭하는 바륨 도금강판(galvalume steel)은 아연과 알루미늄 도금강판의 장점을 접목하기 위해 55 Al-43.4 Zn-1.6 Si (wt.%)로 구성되어 개발된 3원계 성분의 합금도금강판이다. 한편, 최근에는 강재의 내식성을 향상시키기 위한 다양한 연구 결과에 의해 Zn-Al-Mg의 3원계 합금도금강판도 개발되어 사용되고 있다. 이것은 기존의 아연도금 강판 보다 10배 정도의 우수한 내식성을 나타내는 것으로 보고되고 있다. 특히, 이것은 도금된 평판부의 내식성은 물론 절단된 도금 단면부의 내식성도 매우 우수하다고 알려져 있다. 그러나 상기한 갈바륨 도금강판의 경우에는 도금된 표면부에 비해 단면부의 내식성이 상대적으로 취약한 것으로 알려져 있다. 따라서 본 연구에서는 갈바륨 도금강판의 내식성을 종합적으로 향상시키기 위하여 이 갈바륨 도금강판 상에 PVD 스퍼터링법에 의해 Mg 코팅막의 제작을 시도하였다. 여기서 Mg 코팅막은 후처리 된 갈바륨 도금강판 상에 Ar 공정압력 2 및 20 mTorr 조건 중 1.5 및 $3{\mu}m$ 두께로 제작하였다. 또한 제작한 코팅막에 대해서는 모폴로지 관찰(SEM) 및 결정구조 분석(XRD)을 하였고, 분극측정, 염수분무 시험(SST) 및 복합부식 시험(CCT)에 의해 표면 및 단면부의 내식성평가를 수행하였다. 또한 여기서는 염수분무 및 복합부식 시험 후의 시험편도 채취 하여 표면 및 단면부위에 대한 원소조성 분석(EPMA)과 결정구조 분석(XRD)을 실시하였다. 이상의 실험 결과에 의하면, 본 실험에서 제작한 Mg 코팅막은 그 두께가 두꺼울수록 표면 Mg 결정립의 크기가 증가하였고, 그 부식속도가 증가하는 경향을 나타내었다. 또한 여기서는 공정압력이 높은 조건에서 제작한 막일수록 Mg(002)면 피크 강도가 감소하고 Mg(101)면 피크의 배향성이 증가하였다. 그때 그 막의 내식성은 향상되는 경향을 나타내었다. 그리고 종합적으로 염수분무 및 복합부식 시험 결과에 의하면 Mg이 코팅된 갈바륨 도금강판은 기존 갈바륨 도금강판 보다 내식성이 현저히 향상되었다. 특히, 단면부 내식성의 경우에는 기존 대비 5배 이상 향상되는 경향을 나타내었다. 여기서 단면부 내식특성 분석을 위한 EPMA 원소조성 분석 결과에 의거하면, 부식 초기에는 마그네슘의 부식생성물에 의해 단면부가 치밀하게 보호되고 있음을 확인할 수 있었다. 그 이후에는 부식이 지속적으로 진행됨에 따라 갈바륨 도금층에서 용출된 알루미늄 및 아연 성분이 마그네슘과 함께 치밀한 부식생성물을 형성하여 단면부를 차폐함에 따라 단면부의 내식성이 크게 향상된 것으로 생각된다. 이러한 부식생성물의 결정구조 분석 결과에 따르면, 염수분무와 복합부식 시험에서는 공통적으로 MgO, $Mg(OH)_2$ 이외에도 Simonkolleite상 등이 형성되었다. 또한 건-습 반복 부식시험인 복합부식시험 후에는 $Mg_5(CO_3)_4(OH)_24H_2O$(Hydromagnesite)상 등이 형성됨을 확인할 수 있었다. 즉, 본 실험에서 후처리된 갈바륨 도금강판 상에 제작한 마그네슘 코팅막의 경우에는 상기와 같은 다양한 부식반응에 의해 표면 및 단면부에 형성된 Mg계 부식생성물과 $Zn_5(OH)_8Cl_2H_2O$(Simonkolleite)상에 의해서 표면은 물론 단면부 내식성이 크게 향상된 것으로 사료된다.

Effects of Moisture Content and Screw Speed on Physical Properties of Extruded Soy Protein Isolate (수분함량과 스크루 회전속도에 따른 압출성형 분리대두단백의 물리적 특성)

  • The objective of this study was to determine the effects of moisture content and screw speed on the physical properties of extruded soy protein isolate (SPI). Expansion index, water absorption index, texture, integrity index, color, and nitrogen solubility index of extruded SPI were analyzed to determine the relationship with extrusion conditions. Extrusion conditions were moisture content (40, 50, and 60%) at a fixed die temperature ($140^{\circ}C$) and screw speed (250 rpm). The other extrusion conditions were screw speed (150, 250, and 330 rpm) at a fixed moisture content (55%) and die temperature ($140^{\circ}C$). Specific mechanical energy (SME) input decreased as moisture content increased from 40 to 60%. However, SME input increased as screw speed increased from 150 to 330 rpm. Expansion ratio and piece density decreased as moisture content and screw speed increased, and specific length increased as moisture content and screw speed increased. The extruded SPI at 40% moisture content had higher water absorption index, texture, and color differences than those of the extruded SPI at other moisture contents (50 and 60%). however, the extruded SPI at 40% moisture content had lower integrity index and cutting strength than those of the extruded SPI at other moisture contents (50 and 60%). In conclusion, the physical properties of extruded SPI were more affected by moisture content than screw speed.

Study on microbiological safety of simple processed agricultural products (유통 단순가공 농산물의 위생지표세균 및 식중독균 오염실태 조사연구)

  • The purpose of this study was to explore methods for efficient management of the quality and safety of simple processed agricultural products in Busan. We tested 258 samples of simple processed agricultural products for distribution of aerobic bacteria and coliforms, and identified food-borne pathogens. The average aerobic bacterial and coliforms counts were 7.1 and 4.1 log CFU/g in simple processed vegetables, 6.8 and 3.5 log CFU/g in dried vegetables, and 6.2 and 2.9 log CFU/g in simple processed fruits. Additionally Staphylococcus aureus, Salmonella spp., Campylobacter jejuni/coli and Listeria monocytogenes were not detected in any samples. However, Bacillus cereus, Clostridium perfringens and E. coli were detected in 41 samples (16.3%), 2 samples (0.8%), and 4 samples (1.6%), respectively. This analysis revealed that none of C. perfringens and E. coli isolates harbored pathogenic toxic genes. However, all of B. cereus isolates carried at least 1 toxin gene.

Field Assessment of Sanitation Management for School Foodservice Suppliers in the Seoul Area (서울지역 학교급식 식재료 납품업체 위생관리 실태 평가)

  • The purpose of this study was to identify the sanitation management items of school foodservice suppliers that require improvement, by assessing their sanitation practices with food commodities. Our field assessment was performed using a total of 20 vendors supplying agricultural products, meat products, seafoods and processed products; all were located in the Seoul and Gyeonggi areas. The assessment tool for sanitation management was composed of 93 checklist items and was used to evaluate seven different categories; the facility and environment, management of the facility and equipment, food materials management, process control, water management, personal hygiene management, and laboratory instrument management. A score of two was given for "satisfactory", one for "fair", and zero for "unsatisfactory". The overall average supplier score was 1.7/2.0 (85.8%). The score of the seafood vendors was highest at 1.9 (95.4%), while the lowest score of 1.3 (65.7%) occurred with the processed product suppliers. Among the sanitation management categories, water management was scored at 2.0, while inspection management was lowest at 1.4. The subcategories indicating needed improvements for the processed product suppliers were raw materials, storage, transport and recall. For the agricultural product suppliers it was preparation management. furthermore, one item within the laboratory instrument management category was unsatisfactory for both the agricultural and processed product suppliers. In conclusion, these results can be used to develop sanitation management procedures for suppliers, as well as by administration agencies to evaluate and guide those suppliers.

Changes in Chemical Composition of glutinous rice during steeping and Quality Properties of Yukwa (찹쌀의 수침 중 이화학적 특성변화와 유과의 품질특성)

  • This study was carried to investigate the changes in physical and chemical properties during preparation of Yukwa. Protein content of glutinous rice was decreased during soaking time and acid and pH values were increased while contents of lipid and ash were not changed. Particle size distribution showed thate average particle size of 7 days soaking treatment smaller than those of 3 days and starch damage of glutinous rice flour was increased during soaking time. The major flavor components after soaking were found ethyl ester acetic acid, ethanol, 2-butan -ol, 2-methyl 1-propanol, 1-butanol, 3-methyl 1-butanol and 1-pentanol, propanoic acid. Content of acetic acid and butanoic acid were rapidly increased during soaking time. Results for ratio of storage modulus(G') and loss modulus(G') in glutinous rice flour dough indicated $tan{\delta}$ was increased for a while and decreased as frequency increased. G' value was very similar with G' value after steaming which means rubber-like property while G' and G' value were changed after during storage time. Treatment at $-20^{\circ}C$ had the highest hardness for cutting degree of dough. There was no difference in color value between different water contents. Hardness of Bandegi (sheet) was decreased as water content increased and the highest popping value was obtained at 18% of water contents. Adding 3% soaked bean had higher redness value of Yukwa and lower value in yellowness.

Validation of PCR and ELISA Test Kits for Identification of Domestic Animal Species in Raw Meat and Meat Products in Korea (국내 유통 식육 및 식육가공품에서 축종감별을 위한 PCR 및 ELISA 검사법 검증)

  • In this study, two commercial PCR and ELISA test kits were examined for identification of eight animal species (beef, pork, chicken, duck, turkey, goat, lamb, and horse) from raw meat and meat products in Korea. The detection limit in RAW meat ELISA kit$^{(R)}$ on three types of meat samples blended with beef, pork and chicken, demonstrated that all meat species were differentiable down to 0.2%. RAW meat ELISA kit$^{(R)}$ on animal species resulted in differentiation rate of 94.5% for beef, 93.3% for pork, 90% for lamb, and 100% for chicken, duck, turkey, goat, and horse. In contrast, Powercheck Animal Species ID PCR kit$^{TM}$ resulted in 100% specificity at 0.05% limit of detection for all meat species. The detection limit of Cooked Meat ELISA kit$^{(R)}$ on mixed meat samples heat-treated with different temperatures and times, resulted in 0.1% for all heat-treated mixed meat except for chicken at 1.0%. Additionally, ELISA kit on sixty meat products resulted in specificity of 31.8% for ham, 13.6% for sausages, and 12.5% for ground processed products, and relatively low rate for more than 2 types of mixed meats. On the contrary, meat species differentiation using PCR kit showed higher percentage than that using ELISA kit$^{(R)}$: 50.0% for ham, 41.7% for sausages, and 28.6% for ground processed meat. Futhermore, PCR kit on 54 dried beef meats detected pork genes in 13 products whereas ELISA kit showed negative results for all products. Hence, the possibility of cross-contamination during manufacturing process was investigated, and it was found that identical tumblers, straining trays, cutters and dryers were used in both beef and pork jerky production line, suggesting the inclusion of pork genes in beef products due to cross-contamination. In this study, PCR and ELISA test kits were found to be excellent methods for meat species differentiation in raw meat and heat-processed mixed meat. However, lower differentiation rate demonstrated in case of meat processed products raised the possibility of inclusion of other species due to cross-contamination during manufacturing process.
