Effect of Packaging Method on the Storage Stability of Boiled-Dried Anchovy (건멸치의 저장안정성에 미치는 포장방법의 영향)

  • Changes in quality characteristics of boiled-dried anchovy during storage under different packaging conditions for 6 months were studied. For the packaging trials, kraft paper (KP), kraft paper laminated with 0.03 mm polyethylene film (KP/PE) and 0.1 mm polyethylene film with nitrogen gas substitution ($N_2$ gas) were employed. In case of KP, the reaction of thiobarbituric acid, browning rate of lipid oxidation and Hunter color values of L, a and b were remarkably higher than those packaged in KP/PE or $N_2$ gas. Judging from organoleptic evaluation boiled-dried anchovy could be preserved in acceptable condition for 6 months at $5^{\circ}C$in all packaging cases and, at room temperature, 3 months in KP and 4 months in KP/PE or $N_2$ gas. From the standpoint of quality stability by packaging methods, it was concluded as good in sequence as $N_2$, gas, KP/PE and KP. The results suggest that the quality of boiled-dried anchovy be well preserved by packaging with inert gas ($N_2$ gas) or impermeable material to vapors and oxygens.

Effect of shelf-life extension of birch sap using high pressure processing (초고압 기술이 자작나무 수액의 저장성 향상에 미치는 영향)

  • Effects of high pressure processing on physicochemical and microorganisms properties in birch sap were investigated using variable high pressure processing conditions. The viable cell counts of untreated birch sap was 4.0 log CFU, whereas high pressure processed sap were not detected. In birch sap was treated with 450 to 550 MPa, microorganisms were not detected during storage period, and physicochemical properties as well as color were slightly changed. The more processing time and pressure, its quality variations were more stable and then its optimum processing condition was determined with 120 sec at 550 MPa. The microorganisms and physicochemical properties of treated birch sap were investigated during storage at $5^{\circ}C$ and $10^{\circ}C$ for 45 and 28 days. Changes of physicochemical properties of treated birch sap were smaller than those of the untreated, but viable cell count were not detected during storage period. As for pH, $^{\circ}Brix$, and turbidity result of birch sap, quality shelf life of control and treatment were 4 and 24 days, respectively. Especially, ${\Delta}E$ value of instrumental color was untreated birch sap 4 days similar with the high pressure processed it for 28 days. These results indicated that the high pressure processing can be used as an effective method to improve the shelf life of birch sap.

Improvement of Storaging Ability of Waxycorn by Retort Pouch Technique (레토르트 파우치 방법에 의한 찰옥수수의 저장성 향상)

  • Retort pouch is widely used in food industry for a long-term preservation and safe food production. By applying retort pouch technique to waxycorn storage, the quality of waxycorn could be maintained and the storage expense could be saved during storage. Water activities(Aw) of retort waxycorn were below 0.80 except blanching treatment, and it is known that microbial propagation is subdued below 0.80. Commercial value of waxy corn was deteriorated when it was frozen quickly at $-40^{\circ}C$ before treating Retort due to obscurity of chromatocity, while the color change was not noticeable when it was treated with Retort at $121^{\circ}C$ for 10min. For all treatments, very small amounts of free sugar were detected, however, there were no significant differences between treatments. As storage period was longer, shelf lifes of waxy corn in control and waxy corn treated with blanching were more shortened when waxy corn was stored at $15,5^{\circ}C$ before Retort, while waxy corn with boiling treatment was not significantly different compared with that in storage in freezer.

A Self-Description File System for NAND Flash Memory (낸드 플래시 메모리를 위한 자기-서술 파일 시스템)

  • Conventional file systems for harddisk drive cannot be applied to NAND flash memory, because the physical characteristics of NAND flash memory differs from those of harddisk drive. To address this problem, various file systems with better reliability and efficiency have also been developed recently. However, those file systems have inherent overheads for updating the file's metadata pages, because those file systems save file's meta-data and data separately. Furthermore, those file systems have a critical reliability problem: file systems fail when either a page in meta-data of a file system or a file itself fails. In this paper, we propose a self-description page technique and In Memory Core File System technique to address these efficiency and reliability problems, and develop SDFS(Self-Description File System) newly. SDFS can be safely recovered, although some pages fail, and improves write and read performance by 36% and 15%, respectively, and reduces mounting time by 1/20 compared with YAFFS2.

예비발효 및 압출조리 전처리가 쌀-대두분 혼합액의 유산균 발효에 미치는 영향

  • 쌀을 기질로 하는 유산균 음료 발효에서 Bacillus와 효모의 혼합배용을 이용한 고체상태 예비발효와 extruder를 이용한 압출조리 전처리가 유산균의 생육을 증진하는 효과에 대하여 검토하였다. Bacillus laevolacticus 와 Saccharomyces cerevisiae의 혼합배양을 쌀과 탈지 대두분의 혼합물에 접종하여 고체 상태로 45$^{\circ}C$에서 배양한 후 자가발열형 단일촉압출성형기를 통하여 처리함으로서 살균과 조직의 변화를 도모하였다. 이렇게 처리된 물질을 분산액으로 만들어 Lactobacillus plantaum 과 Leuconostoc mesenteroides 혼합배양을 접종하여 유산발효시켰다. 예비발효와 압출조리에 의하여 유산균의 증식속도와 산생성이 증가하였으며 가용성 고형분의 함량이 크게 증가하였고 분산 안정성이 향상되었고 관능적 기호도 증가하였다.

  • The domestic demand of natural gas has increased continuously due to the sudden rise of oil price and regulations on greenhouse gas to global warming. In order to improve the supply security of natural gas market in Korea, the agreement on supply of pipeline natural gas (PNG) in Russia was signed between Gazprom and Korea Gas Corporation in 2008. If the supply plan of Russian natural gas is realized, underground storage facilities would be required in order to balance supply and demand of natural gas because the gas demand is concentrated in the winter. This study investigated the safety of the storage facility in quantitative way considering several design parameters such as gas pressure, depth of the storage cavern, rock condition and in-situ horizontal stress ratio. Two dimensional stress analyses were conducted using axi- symmetry condition to examine the behavior of cavern depending upon suggested design parameters. Results showed that the factor of safety, defined as the ratio of 'shear strength'/'shear stress', was largely affected by the depth, rock class and gas pressure but was insensitive to the coefficient of lateral pressure(Ko).

A Design of SSD Dedicated RAID System for Efficient Resource Management (효율적인 자원관리를 위한 SSD 전용 RAID 시스템 설계)

  • Enterprise storage systems that require high data reliability are applying RAID (Redundant Array of Independent Disks) systems to recover from data loss and failure. In particular, RAID 5 ensures space efficiency and reliability by distributing parity across multiple storage devices. However, when storage devices have different capacities, RAID is built based on the smallest capacity storage device, resulting in wasted storage space. Therefore, research is needed to solve this resource management problem. In this paper, we propose a method for RAID grouping of each independent NAND flash memory block in a RAID consisting of SSD (Solid State Disk) with external SSDs as well as internal SSDs. This method is divided into a policy for delivering block information inside SSDs to the RAID system and a policy for RAID grouping of physical addresses delivered from the RAID system. This method allows us to maintain a RAID that does not waste resources when SSDs of different capacities are grouped into RAID5. Finally, we demonstrate the effectiveness of the proposed method through experiments.

Colorant Extracting and Its Storage Stability from Sorghum (수수에서의 색소 추출과 저장 안정성)

  • Extraction Efficiency of colorants from sorghum and its storage stability were examined according to the various extracting and storage conditions in this study. The obtained results were as follows ; The absorbance values of extracted colorants were increased with increasing extract time and temperature. The extraction at pH 4 extract was most efficient among the various pH conditions. In the juice extractor system, the amount of extracted colorant was more in distilled water pre-treatment than pH 5, but it was more in pH 5 in the long time pre-treatment above 20 hour. The color of extract solutions changed through variation of the pH. Its color changed from light yellow to heavy yellow finally red ton by pH increasing. The Methionine addition gave an effect on the storage stability of colorant solution and then had better storage stability. And so it delayed the color change up to storge period 18th day and the stabilizing effect was revealed in order of Methionine 10mmol-addition>20mmol-addtion>non-addtion.

Effect of stigmasterol in liposome bilayer on the stabilization of encapsulated ascorbic acid (리포솜 이중층의 stigmasterol이 포집된 ascorbic acid의 안정성에 미치는 영향)

  • The effect of stigmasterol (SS), a phytosterol, in the liposome bilayer on the stability of encapsulated ascorbic acid (ASA) was evaluated. Liposomes, consisting of phosphatidylcholine (PC) and SS, and ASA were encapsulated by the dehydration/rehydration method. The average particle size of the liposome increased with increasing SS content. SS significantly increased the stability of encapsulated ASA. For example, ASA remaining in the liposomes of 100:0, 90:10, and 70:30 (PC:SS, w/w) ratios was 34.12%, 49.88%, and 58.58%, respectively, after storage for 8 days at 4℃, while only 7.66% ASA remained in the buffer under the same conditions. These results indicated that SS in liposomes increased the stability of encapsulated ASA.

옻(Rhus verniciflua) 추출물을 이용한 육가공 제품의 지질 산화 안정성에 관한 연구

  • 현재 우리의 식습관은 식물성 식습관을 벗어나 동물성 식품의 이용 비중이 점차 증가하고 있으며, 따라서 육가공품의 소비가 증가하고 있는 추세이다. 대부분의 육가공품이 장기간 보존을 함에 따라 여기에 보존료를 첨가하고 있어 위생상 문제점을 야기하고 있다. 이에 항산화 능력이 뛰어난 옻을 이용한 육가공 제품을 제조하여 제품의 품질과 밀접한 관련성이 있는 지질의 안정성을 분석하였다. 일반돈육, 옻 추출물을 사료에 첨가하여 사육한 돈육, 일반 돈육에 옻 추출물을 2%, 4% 및 8% 첨가시켜 각각 육제품을 제조하여 4$^{\circ}C$에서 60일간 저장하였다.
