Physicochemical properties and storage stability of blueberry fermented by lactic acid bacteria (블루베리 유산균 발효물의 이화학적 특성 및 저장안정성)

  • The physicochemical properties and storage stability of blueberries fermented by lactic acid bacteria were investigated. The viable cell count of lactic acid bacteria slowly increased to 5.96 log CFU/mL after 72 hr of fermentation. The pH decreased whereas titratable acidity increased after fermentation. The contents of total anthocyanin (31.52 mg/100 g) and cyanidin-3-glucoside (C3G) (5.41 mg/100 g) after 72 hr of fermentation were higher than those of non-fermented blueberries (16.10 mg/100 g and 2.21 mg/100 g, respectively). The L and a value decreased, and the b and ${\Delta}$E value increased. The total polyphenol and flavonoid contents of fermented blueberries (2.21 g/100 g and 0.91 g/100 g, respectively) were higher than those of non-fermented blueberries (1.13 g/100 g and 0.49 g/100g, respectively). The DPPH radical scavenging activity and superoxide radical scavenging activity of the fermented blueberries were 30.74%, and 52.76%, respectively. The ferric reducing antioxidant power of the fermented blueberries ($256.42{\mu}M/g$) was higher than that of non-fermented blueberries ($191.52{\mu}M/g$). Anthocyanin and C3G content was stable in fermented blueberries after 42 days of storage. The results suggest that blueberries fermented by lactic acid bacteria have the potential to be functional materials in the food industry.

  • The effects of pH and L-cysteine HCI on the growth and stability of Biofidobacterium breve were studied. Significantly higher population was obtained by culturing at pH $6.0{\sim}6.5$ than at any other pH. The cultures that had been grown at pH $5.5{\sim}6.0$ were more stable during storage than those grown at other pH. The number of B. breve that had been grown at pH 5.5 and 6.0 remained as $2.4{\times}10^6ml/\;and\;1.4{\times}10^6ml,$ respectively, after 25 days of storage at $4^{\circ}C$. The ${\beta}$-galactosidase activity of B. breve grown at pH 5.5 and 6.0 was reduced only to $78{\sim}85%$ of the control after the same storage condition, whereas the culture grown at pH 7.0 exhibited a signficant decline in population and ${\beta}$-galactosidase activity during $4^{\circ}C$. The growth of B. breve was promoted by 0.05% L-cysteine HCI, and cells grown in MRS with $0.05{\sim}0.10%$ L-cysteine HCI were more resistant to hydrogen peroxide. With respect to the effect to the effect of osmoprotectants on the survival of B. breve subjected to freeze-drying, addition of 2 mM betaine of 2 mM trehalose increased the growth rate of cells grown under osmotic stress and also made the organism more osmotolerant. Furthermore, the betaine or trehalose increased the survivability of the cells after freeze-drying.

Quality Stability and Antioxidant Activity of Red Ginseng Stored for Long Periods (장기저장 홍삼의 품질안정성과 항산화효과)

  • Samples of red ginseng. which had been manufactured and packaged by the Korea Monopoly Corporation. were stored at ambient temperatures $(12-28^{\circ}C)$ and humidities $(55-68\%)$ for one to nine years to examine their overall quality stability and. in particular. antioxidant activity. The approximate compositions. contents of various solvent extracts. and TLC and HPLC patterns of ginsenosides in the samples which are otherwise susceptible to oxidation. were stable as judged by the changes of the TLC and GLC patterns of the lipids and fatty acids. It was also found that polyunsaturated fatty acids such as linoleic (C18: 2) and linolenic acid (C18: 3) present in the samples had been very stable during the long storage periods. The intensity of the brown color of the red ginseng samples increased significantly with storage time. The pH of the aqueous extracts of the samples also increased slightly during storage. The coloration changes seem to indicate that extensive browning reactions had occurred during storage. The reducing powers of aqueous and ethanol extracts and antioxidant activity of ethyl acetate extracts also increased with storage time. The increase in reducing powers and antioxidant activity appeared to be directly attributable to the increased amounts of non-enzymatic browning reaction products formed progressively during the long storage periods. Therefore. it seems that those antioxidative compounds. which will be progressively formed in red ginseng through non-enzymatic browning reactions during the manufacturing process and long-term storage. will not only contribute to their overall quality stability but also have some significant relationship with their antiaging pharmacological effects.

Quality and Storage Characteristics of Low Salted Onion and Five Cereals-Doenjang (저염 양파 오곡된장의 품질 및 저장 특성)

  • The quality and storage characteristics of low salted onion and five cereals-doenjang (DFO) were investigated. At the DFO, soybean koji ($57{\sim}62%$), onion (3%) and salt (8%) were mixed with equal amount of rice, barley, glutinous millet and glutinous indian millet ($10{\sim}30%$), and water ($7{\sim}12%$). The storage of DFO was done by vacuum packing in polypropylene tube, and sterilized at $121^{\circ}C$. The fermentation and storage was conducted for 60 days at $25^{\circ}C$ at each condition. Control doenjang (GD) was the salinity of 16% soybean doenjang that was not sterilized and packed in plastic containers for storage. During the fermentation, pH of DFO was lower than GD. The pH maintained stability during the storage, and revealed to be lowered, as the proportion of mixed cereals was higher. During the fermentation of DFO, the brix degree revealed to be higher than GD and maintained s1ability during the storage. During the fermentation and storage, the amino nitrogen content of DFO was ranged $400{\sim}470mg%$ by showing higher content than GD and maintained stable content during the storage. During the fermentation, the activities of protease and ${\beta}$-amylase were maintained to be high at DFO, but the activities during the storage were high at GD. The color $L^*$ value of DFO during fermentation and storage maintained higher values than GD, but $a^*$ value revealed lower pattern. Total free amino acids of DFO was ranged $1,918{\sim}2,290mg%$ which was higher than GD that recorded 1,291 mg%. When the sensory evaluation was conducted for DFO that was fermented and stored for 60 days, the DFO mixed with $20{\sim}30%$ of cereals resulted to have more savory taste, flavor, and sweeter than GD, and overall acceptability for color and overall taste was high.

  • The construction of underground structures such as oil and food storage caverns are recently increasing in our country. The stability of those underground caverns are greatly influenced by their shape and size. In this study therefore, the effect that the shape of an underground cavern have on its stability were analyzed in terms of safety factor. To this end, caverns with 5 different shapes were investigated and sensitivity analyses were performed based on rock class, overburden, and lateral earth pressure coefficient. The proper amount of shotcrete and rockbolt as supports of a cavern was also assumed based on the shape and site of the cavern and rock conditions. This study is expected to be helpful in designing and evaluating the stability of caverns in future.

천연 항균복합제재에 의한 농산물 식품원료의 선도유지효과

  • 현재까지 미생물의 증식을 억제하는 보존제로는 인공합성품이 많이 알려져 이들이 주로 상업적으로 사용되고 있으나 그 안정성이 경우에 따라 문제되고 있으며 근래소비자의 건강 지향적 욕구가 증대됨에 따라 인공합성품의 기피현상이 두드러지고 있다. 따라서 이들 천연 항균물질의 개발과 이용은 인공 합성보존제의 대처라는 의미와 소비자기피현상을 유발시키지 않으면서 각종 가공식품의 저장성향상 및 저온 유통식품의 안정성확보라는 견지에서 그 중요성이 있다. 본 실험에서는 식품의 미생물 작용에 의한 변질의 저해 효과가 뛰어난 식물성천연항균제품(Botanical antimicrobial agents-Citrus product : 이하 BAAC라 칭함)에 천연보조제(Ginseng extract, Aloe, 매실추출물)를 첨가하여 Paper disk 법에 의한 항균성 검사를 실시한 결과 Ginseng extract를 첨가한 경우 생육저해환이 가장 크고 뚜렷하게 나타났다. 따라서 BAAC에 보조제(Ginseng extract)를 첨가하여 제조 된 천연 항균복합제재(이하 BAAG라 칭함)를 우유에는 각 농도별로 첨가하여 4$^{\circ}C$의 냉장상태와 2$0^{\circ}C$의 상온에서 저장하였고, 계란과 콩나물의 경우는 침지 처리한 후 꺼내어 상온에서 저장하면서 각각 주사전자현미경 관찰, 대장균수, 총균수의 변화, 외관상의 변화에 미치는 영향을 무처리 대조구와 비교하면서 조사하였다. 아울러, 계란의 경우는 조단백함량의 변화도 관찰하였다. 주사전자현미경 촬영사진의 결과 분석을 통하여 BAAG를 처리한 균체 세포는 세포막 및 세포벽 기능이 파괴되어 세포내용물이 균체외부로 유출되어 균체의 생육이 억제되며 성장을 저해 또는 사멸시키는 것으로 나타났다. 대장균수는 우유, 달걀 및 콩나물의 모든 처리구에서 BAAG의 첨가에 의해 성장이 억제되었으며 농도가 증가시킬수록 균증식 억제 효과가 뚜렷하였으며, 총균수도 압도적으로 낮은 간을 보여주었다. 달걀의 조단백함량의 변화는 BAAG를 처리하지 않은 무처리 대조구에 비하여 침지 처리한 경우가 조단백 변화가 크지 않았다. 즉, BAAG의 침지 처리한 경우, 저장기간 14일이 경과 한 후에 10%정도의 수준으로 감소한데 반하여, 무처리구인 대조구의 경우, 23%수준으로 감소 증도가 증가하였다. 외관상의 변화와 상품 가치를 측정한 결과는 달걀의 경우, 14일이 경과후에는 무처리 대조구에서 흰자위의 감소와 노른자위와의 경계가 뚜렷하지 못하여 상품으로서의 가치가 크게 떨어진 상태였다. 우유의 경우에는 4$^{\circ}C$와 2$0^{\circ}C$에 저장된 대조구에서는 각각 3일과 12일경과 후 강한 부패취와 아울러, 표피의 갈변정도가 심하되어 관능적으로 부패상태를 인지할 수 있었다. 콩나물의 경우도 저장3일 경과 후에 부패취와 함께 점질성 갈변물질이 생성되었다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 농산물 식품원료에 적용하여 선도유지 기간을 연장할 수 있는 효과를 기대할 수 있었다.

  • Frozen sardine meat paste for fish sausage was prepared to obtain the basic data on improving the quality of sardine sausage, and its gel formation ability was compared with meat paste from raw sardine. In addition, its quality stability was studied during frozen storage. For the preparation of frozen sardine meat paste, the addition of 4% of sorbitol and 0.3f of polyphosphate to the fish meat appeared effective to keep the processing suitability and storage stability. Also, the gel formation ability of the frozen sardine meat paste was not inferior to that of raw sardine paste.

  • In order to Process rapid fermented anchovy with low salt contents, processing condition of rapid fermented anchovy by proteolytic bacteria, and its chemical composition and quality stability during storage were examined. Culture was performed(pH 7.0, $40^{\circ}C$, 45strokes/min) for 15hrs after the addition of 1% of NaCl, 1% of sodium erythorbate and 20m1 of B. licheniformis p-5 cultures($3.2{\times}10^4cells/ml$) to 100g of raw anchovy, and then low salt fermented anchovy as final product was made by adding of several(3% of NaCl, 4% of KCI, 4% of ethyl alcohol(w/v), 0.5% of ginger, 0.5% of garlic powder) for stability and flavor enhancement. During 60days of storage, histamine contents was adequate in a food sanitation aspect, and microflora decreased sharply while volatile basic nitrogen increased slowly. Free amino acids are the major part in unique fermented anchovy taste. The volatile fatty acids is the most important component in the anchovy's flavor. From the results of experiments, it was supposed that rapid fermented anchovy processed with proteolytic bacteria was suitable.

  • Basic optimal extraction condition and stability data were determined for prediction of usefulness of olive leaf as functional food material. Solid contents of olive leaf extracts increased with increasing extraction temperature and ethanol content, and was the highest (38%) under $85^{\circ}C$, 80% ethanol, and 5 hr treatment conditions, Total phenol contents and electron-donating abilities of olive leaf extracts also increased with Increasing ethanol content, and were the highest under $25^{\circ}C$, 80% ethanol, and 1 hr treatment conditions, then slightly decreased during storage at $25,\;55,\;and\;85^{\circ}C$. Olive leaf extract showed high stability under acidic storage condition, while low under alkalic condition.

Effect of Dietary Clay Mineral on Meat Quality of Hanwoo (Korean Cattle) Bull Beef during Refrigerated Storage (점토 광물질의 급여가 비거세 우육의 저온저장 중 품질에 미치는 영향)

  • The effect of dietary clay mineral on meat quality in M. longissimus of Hanwoo (Korean cattle) bull beef during refrigerated storage (4$^{\circ}C$) was investigated. Experimental groups were divided into control (basal diet) and CT-1.25% (basal diet + 1.25% clay mineral) groups. There was no significant differences in proximate and fatty acid compositions between control and CT-1.25% groups. The pH of control group was significantly (p<0.05) changed during storage, but CT-1.25% group was little affected by storage time. CIE a* (redness), chroma (C*) values and R630-R580 were significantly (p<0.05) decreased during storage for both groups. In particular, those values decreased more rapidly in the control group. The rate of metmyoglobin accumulation during storage increased more rapidly in the control group. Therefore, discoloration in the control group was more accelerated compared to the CT-1.25% group. TBARS (thiobarbituric acid reactive substances) which represents lipid rancidity were significantly (p<0.05) lower in CT-l.25% group than in the control. Water-holding capacity (WHC) was significantly (p<0.05) increased during storage for both groups, and CT-1.25% group had significantly (p<0.05) higher WHC than control group. Consequently, feeding of clay mineral (1.25%) was effective in increasing meat color stability and WHC, and retarding lipid oxidation than did control group.
