Functional Components of Barley Bran with Different Particle Sizes and Cultivars (품종 및 입도별 보리 맥강의 기능성분 함량)

  • This study evaluated the functional components of barley bran with different particle sizes and cultivars (Dahan, Hinchalssalbori, Heukgwang, Huknuri, and Boseokchal). Barley bran divided into fractions I (<60 mesh), II (60~100 mesh), and III (>100 mesh) was collected as pearling by-products produced by an industrial process consisting of consecutive barley pearlers. Total ${\beta}-glucan$ contents of all cultivars were especially highest in fraction II. Total arabinoxylan was the highest in barley bran from Boseokchal in fraction II. Total polyphenol contents were the highest in bran from Boseokchal and Hinchalssal in fraction II, and contents ranged of 5.61~7.00 and 4.24~6.58, respectively. Total flavonoid contents of all cultivars were especially highest in fraction II. 2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activities ranged from 2.78~7.53 mg L-ascorbic acid (AA) eq/g and 2.24~4.83 mg AA eq/g, respectively. ABTS and DPPH radical scavenging activities were the highest in barley bran from Dahan in fraction II. In this study, fraction II showed enriched functional components and has the best particle size range for enriched antioxidant activities. These results provide useful data for selection of appropriate cultivars and particle size of bran to achieve high quality barley processing.

Effect of Nitrogen Top Dressing Levels on Productivity, Feed Value, and Anthocyanin Content of Colored Barley (질소 추비량이 유색 보리의 생산성, 사료가치 및 안토시아닌 함량에 미치는 영향)

  • his experiment was carried out to evaluate the effects of nitrogen top dressing levels on the growth, feed value, and anthocyanin content for developing functional feed of colored barley. A colored barley cultivar, Boanchalbori, was tested in this experiment. Nitrogen top dressing levels was six (0, 20, 40, 60, 80, 100%) and top dressing time was a regeneration time. In case of productivity, heading data was get behind and dry matter rate was significant decreased with higher nitrogen top dressing levels (p<0.05). Fresh yield, dry matter yield and TDN yield was increased with higher nitrogen top dressing levels, but not significant. In case of feed value, crude protein content was significant increased with higher nitrogen top dressing levels (p<0.05), and higher in the order of spike, whole and leaf culme of the plant. Percent NDF and ADF was decreased with higher nitrogen top dressing levels in leaf culme, but no difference in spike and whole (p<0.05), and higher in the order of leaf culme, whole and spike of the plant. TDN was increased with higher nitrogen top dressing levels in leaf culme, but no difference in spike and whole (p<0.05), and higher in the order of spike, whole and leaf culme of the plant. Total anthocyanin content was significant decreased with higher nitrogen top dressing levels in leaf culme and whole (p<0.05), and higher in the order of leaf culme, whole and spike of the plant. Specially, cyanidin-3-glucoside (C3G), delphinidin (Del), malvidin-3-glucoside (M3G) and malvidin (Mal) show a significant decrease. So there are an accumulation of anthocyanin in the culm, and standard nitrogen top dressing levels dressing on the regeneration time for produces high anthocyanin content of the colored barley.

Functional Components of Different Varieties of Barley Powder with Varying Degrees of Milling (품종과 도정도에 따른 보릿가루의 기능성분 함량)

  • This study investigated the changes in functional components of barley powder produced from different grain varieties (Dahan, Hinchalssalbori, Heukgwang, Huknuri and Boseokchal) and varying milling degrees (27, 23, 19, and 15%). Total polyphenol contents increased with a decrease in the milling degree, with content ranges of 0.97-1.40, 1.19-1.66, 1.22-1.77, 1.30-1.93, and 1.46-2.12 mg/g, respectively. Total flavonoids content also increased with a decrease in the milling degree. The total polyphenol and flavonoids contents were the highest in barley powder from Huknuri and Boseokchal grains. Total dietary fiber, arabinoxylan, and GABA contents increased with a decrease in the milling degree. As the milling degrees decreased, ${\beta}$-glucan contents, which was the highest in Hinchalssalbori and Boseokchal, decreased with ranges of 4.98-7.29, 5.26-7.03, 4.84-7.17, 4.84-700, and 4.66-6.33 mg/100 g, respectively. These results provide useful data for selection of an appropriate variety and milling degree to achieve a high quality in barley processing.

Effect of Top Dressing and Harvest Time on Growth, Feed Value, and Anthocyanin Content of Colored Barley (추비시기와 수확시기에 따른 유색보리의 사료가치 및 안토시아닌 함량)

  • This experiment was carried out to evaluate the effects of top dressing of nitrogen and harvest time on the growth, feed value and anthocyanin content for developing functional feed of colored barley. A colored barley cultivar, Boanchalbori, was tested in this experiment. Top dressing was applied at seven separate growth stages, regeneration time (RT), and intervals of 20, 30, 40, 50, 60, and 70 days after RT, and harvested at different time from 20 days after heading (DAH) to 40 DAH with 10 days interval in split plot design with three replications. Plant height was increasing with earlier top dressing, but not affected by harvest time. Percent dry matter was increasing with earlier top dressing and later harvests. Protein content was increased with later top dressing and harvests, but percent NDF, ADF and TDN was not significant. Total anthocyanin content was increased with earlier top dressing, included increasing C3G (cyanidin-3-glucoside) and delphinidin. The C3G and delphinidin were detected from 25 DAH and P3G (pelargonidin-3-g1ucoside), cyanidin and perlagonidin from 30 DAH. Their contents were increased significantly as harvest was delayed. This experiment provides some interesting results with respects to optimum top dressing and harvest time for the functional feed production of the colored barley.

  • Antineoplastic activities against human gastric and colon carcinoma cell lines were measured in seventeen methanol extracts of seventeen food and medicinal crops using the MTT(3-[4.5-dimethyl thiazol-2-yl)-2.5-diphenyl tetrazolium bromide) method. Three extracts(Hodeum vulgare, Schizandra chinensis and Zea mays)from seventeen tested crops have been reported to have antineoplastic effects. The extracts obtained from remaining fourteen tested crops failed to show significant cytotoxic effect at the concentration of less than $230{\mu}g/ml$(50% inhibitory concentration).

Instant Gruel from Colored Barley and Oats for Improving Diabetic Conditions (유색보리와 귀리를 이용한 당뇨환자용 즉석죽의 당뇨 개선효과)

  • The abilities of instant gruel manufactured with colored barley and oats to improve diabetic conditions were investigated using diabetes-induced mice and rats. Mice or rats were divided into a diabetic control group and one experimental group (seven animals per group). The control groups were fed without instant gruel and experimental groups were fed basal diets supplemented with 10% instant gruel for 8 weeks. The streptozotocin (STZ)-induced diabetic rats experimental group showed a significant decrease in food intake compared to the control group. Both Type II diabetic mice and STZ-induced diabetic rats experimental groups showed higher increases in body weight than the control groups. The blood glucose levels of the experimental groups ($352{\pm}12.2$ mg/dL in Type II diabetic mice; $296.4{\pm}13.2$ mg/dL in STZ-induced diabetic rats) were lower than the untreated control groups ($426.0{\pm}15.4$ mg/dL in Type II diabetic mice; $514.0{\pm}17.6$ mg/dL in STZ-induced diabetic rats). The serum insulin levels of Type II diabetic mice increased by 38.3% in the experimental group ($12.8{\pm}1.1$ ng/mL) compared to the control group ($7.9{\pm}0.5$ ng/mL). The immunohistochemical density of insulin-secreting cells and glucagon-like peptide-1 (GLP-1)-secreting cells in the pancreas were significantly higher in the experimental groups than the control groups for Type II diabetic mice and STZ-induced diabetic rats. Therefore, we conclude that instant gruel manufactured with colored barley and oats stimulates the secretion of insulin and decreases blood sugar by activating insulin-secreting cells in the pancreatic islets of diabetic animals.

Analysis of phenotypic characterization of segregation population developed by crossing in Flammulina velutipes (팽이버섯(Flammulina velutipes) 교잡분리집단의 형태학적 특성 분석)

  • This study was conducted to obtain a growth correlation of basal information from the development of disease resistant Flammulina velutipes cultivars through back-crossing between the strains of wild-type brown monokaryon 4019-20 and the derivative of commercial quality white monokaryons 3. The two strains were selected to back-cross for further enhancing their latent attributes and growth characteristics. The parents of 4019-$20{\times}M3$ back-crossed to reproduce $F_1$, M3-Sn. Using $F_1$, M3-Sn procured and isolated into 94 monokaryon strains. Further examination of growth characteristics carried out by back-crossing between M3 and $BC_1F_1$ from M3-n dikaryon. Monokaryon exhibited an irregular growth pattern and demonstrated to be sluggish development in the sawdust medium. However $BC_1F_1$(M3-n) dikaryon strains confirmed mostly regular growth pattern and demonstrated ordinary growth in the sawdust medium. The fruitbody of $BC_1F_1$ confirmed as light-brown colour to be the dominant gene. The colour distributions of fruitbody, $BC_1F_1$, resulted as follows; 7% of dark brown, 25% of brown, 27% of light brown, 16% of ivory and 25% of white. The ratio of the other color to white showed 3 to 1 which suggested two major genes were related to fruitbody color.

Quality and Antioxidant Characteristics of Commercially Available Mixed Grains in Korea (국내 유통 혼합잡곡 제품의 품질 및 항산화 특성)

  • This study was undertaken to evaluate the quality characteristics and antioxidant characteristics of commercially available mixed grains in Korea. The quality characteristics of mixed grain products studied were the mixing ratio, water binding capacity, water solubility, swelling power, and pasting characteristics. The antioxidant characteristics assessed the total polyphenol, flavonoid contents, DPPH and ABTS radical scavenging activities. The mixing ratio of commercially available mixed grain products consisted of 5~25 kinds of grains, with maximum products containing 15-grain products. The water binding capacity, water solubility, and swelling power in commercially available mixed grain products were 99.83~122.83%, 6.91~39.26% and 7.76~86.92%, respectively. The peak, trough, breakdown, final and setback viscosity were $31.53{\pm}20.17RVU$, $25.24{\pm}13.22RVU$, $6.29{\pm}7.43RVU$, $50.27{\pm}25.84RVU$ and $18.74{\pm}8.68RVU$, respectively. Total polyphenol and flavonoid contents were $817.14{\sim}2,524.29{\mu}g\;GAE/g$ and $106.36{\sim}1,099.09{\mu}g\;CE/g$, respectively. The DPPH and ABTS radical scavenging activities were 31.91~151.70 mg TE/100 g and 28.09~119.92 mg TE/100 g, respectively. Products with high phenol content and radical scavenging activity were found to contain greater proportion of brown rice, colored rice, barley and soybean.

Quality and Antioxidant Characteristics of Cooked Rice with Various Mixed Grains in Korea (혼합잡곡 첨가 취반 밥의 품질 및 항산화특성)

  • This study evaluated the quality characteristics, polyphenolic compounds, and radical scavenging activity of cooked-rice added to commercially available mixed grains. L-value of cooked-rice with various mixed grains decreased compared to that of cooked-white rice; however, a- and b-values increased. Hardness and elasticity of cooked-rice added to various mixed grains were significantly lower in the pressure cooker compared to the electric cooker. There was no significant difference in adhesiveness and stickiness between rice from the electric cooker and pressure cooker. Total polyphenol and flavonoid contents of cooked-rice added to various mixed grains were significantly increased. The average total polyphenol content of cooked-rice added to various mixed grains cooked in an electric cooker and pressure cooker were $16.50{\pm}3.86$ and $15.88{\pm}3.52mg$ gallic acid equivalent /100 g, and flavonoid contents were $1.58{\pm}0.00$ and $1.55{\pm}0.02mg$ catechin equivalents/100 g, respectively. The average of 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity was $9.27{\pm}2.62$ and $8.72{\pm}2.41mg$ trolox equivalent (TE)/100 g, and 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activity was $22.89{\pm}4.60$ and $23.07{\pm}4.49mg$ TE/100 g for cooked-rice added to various mixed grains cooked in an electric cooker and pressure cooker, respectively. Phenol content and radical scavenging activity of cooked rice was in proportion to the amount of added grains, such as brown rice, colored rice, barley, soybean, and sorghum.
