  • Propolis is a sticky resinous substance that is formed by the combination of honeybee secretions and resin of plants, which serves to protect from bacteria and viruses. This study aims to evaluate the efficacy of propolis extract from Korea (KPE), China (CPE), and Brazil (BPE) through antioxidant, antibacterial, whitening, and anti-inflammatory tests, and to examine their potential as cosmetic materials. KPE, CPE, and BPE showed significant antioxidant activities on flavonoid/polyphenol content and free radical scavenging activity. The antibacterial effect of propolis on skin flora was determined by measuring the minimal inhibitory concentration (MIC). KPE showed better antibacterial efficacy than CPE and BPE in C. acnes (KPE, CPE, and BPE: (62.5, 250, and 500) ㎍/mL, respectively). Furthermore, KPE inhibited the melanin synthesis in human epidermal melanocytes and production of nitric oxide and PGE2 induced by lipopolysaccharide (LPS) in mouse macrophages, which showed better than did CPE or BPE. Taken together, the propolis extracts can be applied to antioxidant, antibacterial, and anti-inflammatory ingredient for cosmetics, while KPE showed superior potential in antibacterial, anti-inflammatory, and whitening efficacies.

  • Nutritional composition, including total phenolics, tannins and nutrient components, of acorns of Q. actissima, Q. serrata, Q. variabilis and Q. mongolica were analyzed. Acorns were collected from each tree species, which were grown in a seed orchard. Contents of both total phenolics and tannins in acorns of Q. serrata were higher than those of Q. actissima (p<0.05). Interestingly, Q. serrata contained the highest amount of water soluble tannins (71 mg/g dw) and the lowest levels of water insoluble tannins (8.1 mg/g dw) among 4 oak species, resulting that acorns of Q. serrata had the lowest proportion of insoluble tannins. Among 4 oak species tested, Q. mongolicav acorns contained the highest levels of both total dietary fiber (TDF) and ascorbic acid, while the content of beta-carotene in Q. mongolicav was 52-fold lower than that in Q. variabilis ($520{\mu}g/100g$). Our result showed that nutritional composition of acoms was significantly different between oak species, indicating that tastes or nutritional values might be different as well among major oak species in Korea.

  • This study analyzed ancient documents and established petrological database through extensive field investigation of provenance sites to presume stone source areas of the Seoul City Wall. By summarizing the ancient documents, the rampart stone was mostly supplied from a stony mountain adjacent to the City Wall in the early Joseon period, whereas the stone was provided from fixed quarry outside the City Wall in the late Joseon period. As a result of the petrological investigation based on quarries recorded in the ancient documents, pinkish granite and leucogranite were distributed as a whole, and the granitoid rocks are similar in mineralogical compositions and geochemical behavior characteristics. However, the pinkish granite with magnetic-series show that the magnetic susceptibility increased from the north slope of Namsan Mountain to Bulamsan Mountain. The leucogranite with ilmenite-series mainly occurred along the boundary between granite and gneiss from Yongmasan Mountain to Inwangsan Mountain. Consequently, the important petrological indicators for presumption of stone source areas are the rock color and the magnetic susceptibility. In addition to the petrological features, the reliability for provenance interpretation should improve considering stone quantities in the quarries, transportation distance and technical skills.

  • This study was conducted to analyze the sensory profiles of commercial rice cookies and snacks in the market and to provide fundamental data on the development of rice cookies and snacks. The sensory characteristics of 10 kinds of Korean commercial rice cookies and snacks were evaluated using a sensory test and were analyzed via quantitative description analysis (QDA) and principal component analysis (PCA), depending on their rice contents and processing methods. The rice cookies and snacks with less than 30% rice contents and that were fried were preferred, and their grainy attribute was related to the preference for them. Then 27 kinds of commercial rice cookies and snacks from three countries, Japan, the U.S.A. and China, were also evaluated and compared with those from Korea. While the Korean commercial rice cookies and snacks were sweet, grainy and crispy, those of Japan were not sweet and instead, were salty and crispy.

  • Most stone monuments in Korea are made from the granitoids found extensively throughout the nation. To identify the provenance of the stone materials, this study carried out comprehensive analyses of the occurrence, physical properties, mineralogy, and chemical composition of Stupa for National Preceptor Wongong at Geodonsa Temple and Five-story Pagoda at Cheonsusa Temple, both located in the Gangwon region. Their features were compared with those of granite from Wonju City near the sites of the two monuments. Stupa for National Preceptor Wongong is composed purely of two-mica granite, whereas Five-story Pagoda was made from both two-mica and biotite granites. The occurrence and magnetic susceptibility of the two granite monuments generally coincide with those of granite from Wonju. When selecting materials for the restoration of stone monuments, it is deemed necessary to carry out a field survey on granite in areas adjacent to the locations of the stone monuments subject to restoration.

  • The current study investigated the effects of [6]-gingerol, a ginger phytochemical, on the expression of autophagy-related genes and the activation of antioxidative enzymes in the pancreas of mice with cerulein-induced acute pancreatitis. The following were studied: pancreatic edema, ${\alpha}$-amylase activity in serum, expression of autophagy genes, activities of antioxidative defense enzymes, such as superoxide dismutase (SOD) and glutathione peroxidase (GSH-Px), and the production of lipid peroxidation (LPO). The results revealed that cerulein-induced edema in the pancreas and ${\alpha}$-amylase activity in the cerulein group significantly increased compared with that of the control. However, that of the [6]-gingerol pretreated group was significantly decreased compared with that of the cerulein-alone injected group (positive control). There was no significant difference compared with that of control. The expression of autophagy-related proteins, including Beclin-1 and cleaved microtubule-associated protein 1 light chain 3, were significantly increased in the positive control but significantly decreased in the [6]-gingerol-pretreated group. Furthermore, the activities of SOD and GSH-Px in the positive control were decreased compared with those of the control. However, those of the [6]-gingerol pretreated group were significantly increased compared with those of the cerulein-alone group. The mRNA levels and antioxidant enzyme activities were similar. The production of LPO in the cerulein with and without [6]-gingerol groups was increased by 133.1% and 26.3%, respectively, compared with that of the control, whereas that of the [6]-gingerol-pretreated group was significantly decreased by 48.5% compared with that of the positive control. Therefore, [6]-gingerol may be a strong candidate in reducing autophagy and LPO production and in enhancing antioxidative enzyme activities to help prevent acute and chronic pancreatitis.

  • Caffeine is one of the most well known stimulants which can potentially increase mental performance, release fatigue and decrease depression. Green beans from different soils and climates contain different levels of caffeine, and as well as extracted coffee with different roasting and extracting methods. An investigation looking at pH, acidity, extractable solid and caffeine contents was assessed according to roasting and extracting conditions of various coffee beans. Brazilian coffee beans did not show much variation in pH with respect to roasting and extracting temperature, however, acidity increased in low roasting and extracting temperatures. This was however most prominently observed in Ethiopian and Indonesian coffee beans. The large expansion of coffee bean cells renders them highly porous to the passage of water, consequently extracted solids were found to increase with increasing temperature. This was especially apparent in Columbian coffee which had the highest extracted solids. The amount of caffeine extracted from coffee beans also increased with the higher temperature extraction. The Indonesian and Vietnam robusta coffee varieties showed the highest caffeine content.

  • To investigate the mating system of clones in the seed orchard of Japanese red pine, parameters of mating system, such as outcrossing rates, number of potential pollen contributors, and degree of pollen contamination, were estimated in the seed orchard of Japanese red pines on the basis of DNA data including 4 nSSR and 6 cpSSR markers. Estimates of outcrossing rates were ranged from 94.9 to 100% with an average of 98.9% on the basis of the analysis of cpSSR haplotypes. They were ranged from 90.3% to 100% with an average of 95.9% on the basis of the analysis of nSSR genotypes. However, cross checking of both DNA markers revealed that the seeds presumed to be products of self pollination were turned out to be generated by pollination between mother tree and other tree (i.e., 100% of cumulative outcrossing rate). Estimates of pollen contamination ranged from 43.6% (Gangwon-10) to 56.4% (Gangwon-12) with the average of 48.9%. On the basis of pooled cpSSR haplotype of each seed, maximum number of 21 pollen contributors were verified from the seeds reproduced by Kyungbuk-38. Minimum number of 13 pollen contributors were verified in Gangwon-10. Mean of 16.2 pollen contributors were verified from a total of 5 mother trees. In conclusion, considering pretty high outcrossing rates between clones within a seed orchard, it may be expected that a fairly good genetic potential of the seeds, produced in '77 plot of the seed orchard of Japanese red pines at Anmyeon island, may be guaranteed. Observed results from the analysis of mating system of Japanese red pines in a '77 plot of the seed orchard may also provide useful information for the establishment and management of the seed orchard of the progressive generation.
