Effects of Cooking Methods with Different Heat Intensities on Antioxidant Activity and Physicochemical Properties of Garlic (열처리 조리방법이 마늘의 항산화 활성과 이화학적 특성에 미치는 영향)

  • Garlic was subjected to eight different cooking methods (raw, boiling, steaming, microwave cooking, deep-frying, oven-roasting, pan-frying, and pan-roasting) utilized for typical Korean cuisine. Garlic was analyzed for antioxidant activities and physicochemical properties to elucidate effects of cooking. Garlic cooked at higher temperatures showed significantly lower lightness and higher yellowness (P<0.001). In particular, deep-frying and pan-frying resulted in lowest lightness and soluble solid content, indicating that non-enzymatic browning reactions were more facilitated. Compared with raw garlic, all cooked garlic tended to have lower thiosulfinates, presumably due to decomposition into polysulfides and/or leaching into cooking water and oil. Microwave cooking retained organic acids, total reducing capacity, and flavonoids, which can be attributed to low microwave intensity and shorter cooking time under which heat-labile bioactive components might have undergone less decomposition. Cooking significantly increased metal-chelating activity (P<0.001). In addition, oven-roasting and pan-roasting enhanced total reducing capacity and flavonoid content, indicating that thermal treatments increased the extractability of bioactive components from garlic. However, boiling, deep-frying, and pan-frying, in which garlic is in contact directly with a hot cooking medium, reduced antioxidant activities. Deep-frying resulted in largest reduction in DPPH radical scavenging activity of garlic, which correlated well with reduction of total reducing capacity and flavonoid content. The results show that the antioxidant activity of garlic could be affected by cooking method, particularly heat intensity and/or direct contact of the cooking medium.

  • 그래핀은 저차원계 구조에서 기인하는 뛰어난 전기적, 물리적, 기계적 성질을 지니고 있어 실리콘 기반 기술을 대체할 전계 효과 트랜지스터 이외에도 투명전극, 초고용량 커패시터, 전계방출 디스플레이 등 다양한 응용분야에 적용 가능하다. 최근에는 이러한 응용 연구분야에서 그래핀과 탄소나노튜브 각각의 단점을 최소화하고 장점을 극대화하기 위한 그래핀-탄소나노튜브 혼성 나노구조에 대한 연구들이 진행되고 있는 추세이다. 이전 연구들에서 환원된 그래핀 산화물(Reduced Graphene Oxide, RGO)을 이용한 그래핀-탄소나노튜브 혼성 나노구조가 제작되었는데, 이는 RGO의 제작과정에서 복잡한 공정과 긴 합성과정이 요구될 뿐 아니라, 복합 물질에서 탄소나노튜브의 밀도 제어가 어렵다는 단점을 지닌다. 또한 현재까지 제작된 그래핀-탄소나노튜브 혼성 나노구조의 경우, 열 화학기상증착법으로 합성된 다층(few-layers)의 그래핀과 탄소나노튜브 혼성 나노구조를 제작하였다 [1-6]. 본 연구에서는 우수한 전기적 특성을 가진 단층(monolayer)의 그래핀을 열 화학기상증착법으로 합성한 후, 그래핀 위에 단일벽 탄소나노튜브를 성장시킴으로써 그래핀-탄소나노튜브 혼성 나노구조를 제작하였다. 합성된 그래핀-탄소나노튜브의 구조적 특징은 주사 전자 현미경과 라만 분광기 측정을 통해 확인하였고, 촉매의 표면 형상 및 화학적 상태는 원자힘 현미경과 X선 광전자 분광법을 통해 확인하였다. 또한 그래핀 기반의 전계 효과 트랜지스터의 경우, 상온에서 그래핀은 우수한 전하 이동도를 가지며 웨이퍼 스케일에서 제작하기 쉬우나 밴드 갭이 없으므로 높은 Ion/Ioff를 가지는 그래핀 기반의 트랜지스터를 만드는 것이 과제이다. 반면 탄소나노튜브는 큰 에너지 갭을 가지고 있으므로 높은 Ion/Ioff를 구현하는 소자 제작이 가능하다. 그리하여 제작된 그래핀-탄소나노튜브 혼성 나노구조의 소자 제작을 통해 전기적 특성을 조사하였다.

  • Tridentate Schiff base ligands, $SIPH_2$, $SIPCH_2$, $HNIPH_2$, and $HNIPCH_2$ were prepared by the reactions of salicylaldehyde and 2-hydroxy-1-naphthaldehyde with 2-aminophenol and 2-amino-p-cresol. Ni(II) complexes of those ligands were synthesized. The structures and properties of ligands and their complexes were studied by elemental analysis, $^1H$-NMR, IR, UV-visible spectra, and thermogravimetric analysis. The mole ratio of Schiff base to the metal of complexes was found to be 1:1. Ni(II) complexes were contemplated to be hexa-coordinated octahedral configuration containing three water molecules. The redox process of ligands and complexes in DMSO solution containing 0.1 M TBAP as supporting electrolyte was investigated by cyclic voltammetry and differential pulse voltammetry with glassy carbon electrode. The redox process of the tridentate Schiff base ligands was totally irreversible. The redox process of Ni(II) complexes were quasi-reversible and diffusion-controlled as one electron by one step process Ni(II)/Ni(I). The reduction potentials of the Ni(II) complexes shifted in the positive direction in the order [$Ni(II)(HNIP)(H_2O)_3$]>[$Ni(II)(SIP)(H_2O)_3$]>[$Ni(II)(SIPC)(H_2O)_3$]>[$Ni(II)(HNIPC)(H_2O)_3$] and their dependence on ligands were not so high. Consequently the [$Ni(II)(HNIPC)(H_2O)_3$] complex among the synthesized Ni(II) complexes was found to be most stable in the DMSO solution.

The reduction potential of the Co(II) complexes was shifted to the positive direction in the order [Co(Ⅱ)$(HNIPC)(H_2O)_3$]>[Co(Ⅱ)$(HNIP)(H_2O)_3$]>[Co(II)$(SIPC)(H_2O)_3$]>[Co(Ⅱ)$(SIP)(H_2O)_3], and their dependence on ligands were not so high.

  • 고체산화물 연료전지(Solid Oxide Fuel Cell이하 SOFC)는 연료가 갖는 화학에너지를 연소과정 없이, 공기와 H2, CO, CH4와 같은 환원성 가스를 공급받아 $600{\sim}1000^{\circ}C$에서 전기화학적 반응을 통하여 직접 전기를 얻는 방식이다. SOFC는 $700^{\circ}C$ 이상의 고온에서 고체산화물이 연료와 공기가 반응하여 전기와 열을 동시에 생산하기 때문에 carnot cycle의 제한을 받지 않아 발전효율이 40% 이상으로 고효율이고, NOx 및 SOx를 배출하지 않아 무공해이며, moving parts가 없어 소음이 나지 않고, 건설과 증설이 지역이나 기후 조건에 제약 없이 용이하고, 다양한 용량이 가능하며, 고가의 백금 촉매를 사용하지 않으며, 수소, 석탄가스, 천연가스 등의 연료를 사용할 수 있는 장점이 있음, 또한 다향한 형태로 제작할 수 있으며 전해질이 고체에서 전해질 손실 및 보충에 문제가 없고 타 연료전지에 비해 개질기가 필요 없어 발전시스템이 간단하고 경량화가 가능하다. 전사법은 paste를 제작하여 전사용지에 Screen printing하여 건조 후 coating하는 방법으로 기존의 여러 coating 방법보다 제작이 용이하고 소재의 크기, 두께조절이 간편하며, 구성층의 표면조도나 굴곡에 대응이 용이한 방법이다. 본 실험에서는 paste 제조, 전사법을 이용하여 Anode, AFL, Electrolyte, CFL, Cathode전사지를 제작하고 이를 세라믹 평관형 지지체에 변수로 두께 조건별 Coating 한 후 $1400^{\circ}C$ 소결을 진행하여 SEM 분석으로 미세구조 관찰, 출력특성 및 Impedance을 확인하였다.

  • Differential-pulse cathodic stripping voltammetry was applied to the Sn(II)-cupferron complex in 0.1 M acetate buffer solution (pH 4.20). Effects of solution pH, ligand concentration, accumulation potential, and accumulation time on the reduction peak current for the adsorptive complex of Sn(II)-cupferron were investigated. Interferences by other metal cations that affected on reduction peak current were also discussed. The detection limit was 3.1${\times}$10-9 M (0.37 ppb) of Sn(II) with 60 seconds accumulation time. The relative standard deviation (n=8) for 5${\times}$10-8 M Sn(II) was 3.0%.

  • In this study, niobium powder was made from potassium heptafluoroniobite($K_2NbF_7$) using sodium(Na) as a reductant and KCl, KF as a diluent based on the hunter metallothermic reduction method. The excesses of reductant were varied from 0%, 3%, 5% and 7%. When 7% excess of sodium was used, the un-reacted sodium remained in the reacted product. The niobium powder has been achieved by reducing 50 g of $K_2NbF_7$ with 5% sodium excess in a charge at a reduction temperature of $850^{\circ}C$. The proportion of fine fraction decreased appreciably and the yield of niobium powder improved from 65% to 85% with the increase of sodium excess. The average particle size of niobium powder is improved from 0.2 microns to 0.3 microns in the 5% excess sodium.

Characteristics of Kimchi Added with Anchovy Sauce from Heat and Non-heat Treatments (가열 및 비가열 처리 액젓을 첨가하여 제조한 김치의 특성 비교)

  • The principal objective of this study was to understand the quality characteristics of kimchi added with anchovy sauce from heat and non-heat treatments. The kimchi made through such treatments contained 1.1% or 1.3% of salinity and 4.05 or 4.16 of pH. Generally, the kimchi with anchovy sauce from non-heat treatment contained higher Ca and Fe values than the one with anchovy sauce from heat treatment did. However, P, Zn, Na values were higher in the kimchi with anchovy sauce from heat treatment. Also, measurement of total-microbial, Lactobacillus sp. and Leuconostoc sp. from kimchi after filtration of anchovy sauce from heat treatment showed $5.2{\times}10^6$, $1.3{\times}10^8$, and $2.1{\times}10^8$ CFU/mL, respectively. In addition, kimchi after filtration of anchovy sauce from non-heat treatment showed $8.3{\times}10^6$, $2.5{\times}10^7$, and $1.6{\times}10^7$ CFU/mL, respectively. The present results help understand chemical compositions of kimchi and encourage its application for the food industry and cooking.

  • A closed solar collector drying system by water exchange was evaluated for the drying of ginseng. The thermal efficiency of solar collector, drying efficiency, drying characteristics and product quality were investigated. The drying period was reduced by one-thirds in comparison with typical method. The maximum and minimum thermal efficiency of the solar collector during drying period were 14.42%, and 4.73%, respectively. The drying efficiency of solar collector and control system showed 28.34%, and 13.45%, respectively; net drying efficiency being 14.8%. The drying rate curve of red ginseng showed only falling rate period, and its equation was $Y=50.7023t.^{-0.4138}$ The brown color intensity of red ginseng was higher in solar collector drying system than in typical method, and reductivity by diphenyl picryl hydrazil solution in red ginseng extract showed similar result to brown color intensity.
