  • To improve functional properties and enhance application of FPC in food industry, modified salmon FPC with enzyme treatment was produced and its general properties were investigated. Salmon FPC has over $84\%$ of protein and less than $0.18\%$ of lipid. Solubilities of FPC extracted with IPA and ethanol were very poor as less than $3\%$ in every pH range. In case of enzyme : substrate ratio of 1 : 100, degree of hydrolysis significantly increased until 4 hours and then slightly increased. No considerable differences were observed in general components of hydrolysates. Results of SDS-PAGE showed one unique band in each case and their molecular weight was less than 6,500. The flow properties of hydrolysates showed newtonian flow. Whiteness of hydrolysates were higher than that of salmon FPC as $5\~7$. There was no significant differences in the amount of peptide, but that of free amino acid slightly increased from 0.17 to 0.21 mg/ml.

Improvement on Fish Odor of Extracts from Salmon Frame Soaked in Soybean Milk (두유 전처리에 의한 열수추출 연어 Frame 엑스분의 비린내 개선)

  • For the use of extracts from salmon frame as a basic material of Gomtang-like products, various methods (soaking into soybean milk, adding anchovy, and adding spices) for masking fish odor into extracts from salmon frame were examined and the food component characteristics were also compared with commercial Gomtang. According to the results of volatile basic nitrogen, transmission at 660 nm and sensory evaluation of extracts, soaking treatment, which is the soaking of salmon frame into soybean milk, was the most efficient method among the various methods for masking fish odor into extracts from salmon frame. There was no difference in the proximate composition between extracts from salmon frame soaked (FS) and unsoaked (C) into soybean milk. The FS was not detected in heavy metals, such as chromium, lead and cadmium. The taste value of FS (16.26) was higher than that of C and the major amino acids were glutamic acid and aspartic acid. Total amino acid content of FS (3.08 g/100 mL) was also higher than those of C (2.95 g/100 mL) and commercial Gomtang (1.70 g/100 mL), and the major amino acids were glycine, proline, glutamic acid and arginine. The calcium and phosphorus contents of FS/500 mL accounted for 21.7% and 18.5%, respectively, of the recommended daily allowance of mineral for adult.

  • 복합명사로부터 적절한 색인어를 추출하는 것은 한국어 정보검색 시스템의 성능 향상에 중요한 역할을 한다. 본 논문에서는 복합명사로부터 색인어 추출을 하기 위해 복합명사 구문 구조 분석 결과를 활용한다. 단일명사가 3개 이상 결합된 복합명사의 경우 각 단일명사의 구문적 관계를 파악하여 적절한 괄호치기를 한 후 색인어를 추출하면 보다 좋은 결과를 얻을 수 있다. 이러한 복합명사 구문 구조 분석을 위해 말뭉치로부터 구조적 중의성이 없는 연어 관계의 완전 복합명사와, 서술성 명사와 공기하는 명사쌍을 추출한 결과를 이용한다. 또한 서술성 명사는 이와 공기하는 명사와 결합되어 복합명사를 이를 가능성이 많고, 복합명사의 형태로 인식되어야만 정확한 의미 파악이 가능하다. 서술성 명사와 공기하는 명사를 파악하여 복합명사를 추출하기 위해서 부분 파서로 공기쌍을 찾아 복합명사 후보를 생성한 후, 이 후보 가운데 적합한 복합명사만을 선택하기 위해 말뭉치에서 추출한 완전 복합명사 사전을 통해 검증한다. 이러한 방법으로 서술성 명사에서 복합명사 형태의 색인어를 추출한다.

  • 이온교환 크로마토그라피와 젤 여과법으로 연어알에서 carotenoprotein을 충분히 정제하였다. CHCls/MeOH (211)용매로 지질 성분을 추출한 후, Sephadex G-25로 정제하고 silicic acid 컬럼으로 분획하여 중성지질, 당지질, 인지질 그리고 콜레스테롤의 량을 각각 정량하였다. T.L.C.와 HPLC로 개별 성분을 분리, 정량한 결과 중성지질은 tripalmitate와 cholesteryl oleate로 구성되었고, 당지질은 esterified steryglycoside와 소량의 cerebroside, 인지질은 p.c, co, lp.c 및 p.e로 구성 되었음을 밝혔다. 결합당 성분으로서는 galactose만이 검출되었다. 지방산은 palmitate와 oleate가 대부분이었으며, 6종류의 sterol성분을 분리 확인하였다. 지질과 결합된 단백질의 아미노산도 분석하여 이들로부터 carotenoprotein의 본성을 추론하였다.

Food Component Characteristics of Fish Frames as Basic Ingredients of Fish Gomtang (생선 곰탕의 추출소재로서 Fish Frame의 식품학적 특성)

  • The food components of fish (skipjack tuna, yellowfin tuna, bluefin tuna, conger eel, salmon, Spanish mackerel, armored weasel-fish) frames and their hot-water extracts were investigated to explore their possibilities as resources for fish Gomatang. According to the results of volatile basic nitrogen and heavy metal, bluefin tuna and salmon frames were below the safety limits suggested by Codex Code. Thus, bluefin tuna and salmon frames appeared to be safe as basic ingredients for fish Gomtang. The major components of all hot-water extracts from fish frames were nitrogenous component. According to the results of extractive nitrogen and sensory evaluations of hot-water extracts from fish frames, the salmon frame was a good raw material as a basic ingredient of fish Gomtang. The calcium and phosphorus contents of hot-water extracts from salmon frame were 18.0 mg/100mL and 33.1 mg/100mL, respectively.

  • 본 논문에서는 대량의 말뭉치에서 추출된 잠재의미에 기반하여 단어간 유사도를 측정하고 이를 영한 기계 번역에서의 역어선택에 적용한다. 잠재의미 추출을 위해서는 latent semantic analysis(LSA)와 probabilistic LSA(PLSA)를 이용한다. 주어진 단어의 역어 선택시 기본적으로 연어(collocation) 사전을 검색하고, 미등록 단어의 경우 등재된 단어 중 해당 단어와 유사도가 높은 항목의 정보를 활용하며 이 때 $textsc{k}$-최근접 이웃 방법이 이용된다. 단어들간의 유사도 계산은 잠재의미 공간상에서 이루어진다. 실험에서, 연어사전만 이용하였을 경우보다 최고 15%의 성능 향상을 보였으며, PLSA에 기반한 방법이 LSA에 의한 방법보다 역어선택 성능 면에서 약간 더 우수하였다.

This hanging phenomenon is caused by the action of precursors such as ethyl acetate and acetaldehyde, which are the by products of fermentation contained in alcohol and alcohol accumulated in hepatocytes and body.   • Fish heads of the main by-product is fishery processing were treated to extract nutrients by heating the fish heads with 1.5 or 3.0 times added water during 9, 12 or 15 hours. The yield, chemical compositions and physical properties of the hydrothermal extracts were studied. The yield was increased with the amount of water added and the extracting hours. The extract contained about $80\%$ protein in solid basis, but has no lipid. In essential amino acid, glutamic acid was most abundant and Iysine was abundant. In free amino acid, $\delta$-hydroxylysine and L-histidine in Cypyrinus carpio linnaeus had 5 times more than those in Onchorhynchus keta, The solution of the extracts was known as Newtonian fluid and the color of the extracts showed lower whiteness, higher redness and higher yellowness.

  • The hydrothermal extracts were produced from fish head and their functional properties were investigated. The extracts exhibited an antioxidative effect and synergistic effect with $\alpha$-tocopherol by measuring peroxide values. The $5\%$ solution showed more antioxidative effect than $1\%$ solution. The extracts showed cryopropective effect, but the effect was less than sucrose. The solubility of the extracts was over $70\%$ in the all range of pH, and its lowest solubility was shown in pH 3.0. The extracts exhibited an emulsifying activity less than sugar ester (EAI=34.72) and little higher than or similiar to egg white (EAI= 14.69). The extracts showed a relatively high foam activity. The osmolality of the hydrothermal extracts at $1.0\%$ concentration were 23$\~$31 mOsmole which were much lower than 317 mOsmole at $1\%$ NaCl.

Comparative Analysis of 4-gram Word Clusters in South vs. North Korean High School English Textbooks (남북한 고등학교 영어교과서 4-gram 연어 비교 분석)

  • N-gram analysis casts a new look at the n-word cluster in use different from the previously known idioms. It analyzes a corpus of English textbooks for frequently occurring n consecutive words mechanically using a concordance software, which is different from the previously known idioms. The current paper aims at extracting and comparing 4-gram words clusters between South Korean high school English textbooks and its North Korean counterpart. The classification criteria includes number of tokens and types between the two across oral and written languages in the textbooks. The criteria also use the grammatical categories and functional categories to classify and compare the 4-gram words clusters. The grammatical categories include noun phrases, verb phrases, prepositional phrases, partial clauses and others. The functional categories include deictic function, text organizers, stance and others. The findings are: South Korean high school English textbook contains more tokens and types in both oral and written languages. Verb phrase and partial clause 4-grams are grammatically most frequently encountered categories across both South and North Korean high school English textbooks. Stance is most dominant functional category in both South and North Korean English textbooks.
