Quality Characteristics of Soy Sauces by Various Manufacturing Methods (간장의 제조방법에 따른 품질 특성 비교 연구)

  • This study aimed to evaluate quality characteristics of soy sauce by various manufacturing methods. We examined color values, contents of saccharide and free amino acid. Regarding color values, brewed soy sauce showed lower level of L-values than traditional soy sauce, and the L-value was increased with time dependent manner in traditional soy sauce. The one year old traditional soy sauce exhibited the lowest a-value whereas the three years old traditional soy sauce showed the highest b-value (+4.27). The content of the bitter and savory taste amino acids was the highest in commercial soy sauce with the values of 28.98% and 18.93%, respectively. In addition, traditional soy sauce contained more GABA than brewed soy sauce.

Malo-lactic Bacteria in Korean Winery Environment and Their Potential Use in Wine Making (한국내 양조 환경하의 malo-lactic 박테리아의 분포 및 그들의 양조업에의 이용성)

  • Substantial numbers of malo-lactic bacteria were detected in Korean winery environment such as in grape juices, fermenting musts, lees, aging wines, and bottled apple wines. Among 1363 malo-lactic strains isolated from the above habitats, four superior strains were selected and identified as Leuconostoc oenos strain A-25, B-30, C-13 and Lactobacillus plantarum strain D-11. The strain A-25 showed malate utilizing activity almost equivalent to Leu. oenos ML34, a well-known malo-lactic bacterium. Upon experimental vinifications the malo-lactic fermentation efficiency of A-25 was confirmed.

Phenolics Content and Browning Capacity during the White Winemaking (백포도주 양조중 페놀류의 함량과 갈변도)

  • Juices of Golden Queen, Neo-Muscat and Seibell-9110 were prepared with the addition of $SO_2(100ppm)$ in must and juice, of $SO_2(100ppm)$ and pectinase (40mg/l) in must, respectively and then 300mg/1 of Polyclar AT were added on different white wines from grape juices. Phenolics content in grape juices and white wines were determined. and also changes of browning capacity of white wines during the storage periods at $45^{\circ}C$ were investigated by accelerated method. Extraction of total phenol into grape juices was increased significantly in $SO_2-pectinase$ addition lot and content of total phenol of Seibell-9110 juice was two or three times higher than the others. Yield of grape juices was highest in $SO_2-pectinase$ addition lot. Ethanol content of white wines were 11.4-12.0 v/v% , and total acid, fusel oil and methanol content of Neo-Muscat white wine was lower than that of the other white wines. Total phenol content of white wines was 25-50% lower than that of grape juices and 50-80% lower in colour. Browning capacity of white wines was decreased by 25-40% for 18 days at $45^{\circ}C$ with addition of Polyclar AT, but Seibell-9110 white wine prepared from $SO_2-pectinase$ addition lot was not available commercially because of severe browning.

A Study on the Fermentation Characteristics of Yeast for Rice Beer Separated from Traditional Nuruk (전통누룩으로부터 분리한 효모의 쌀맥주 발효 특성 연구)

  • This study was undertaken is to isolate brewing yeast suitable for rice beer fermentation from the traditional Nuruk, and to identify the brewing ability of the isolated yeast. After 6 months of research, four brewing yeast isolated from traditional Nuruk showed a normal fermentation pattern in terms of physicochemical data (pH, brix, alcohol content) and higher vitality, as compared to commercial brewing yeast. The concentrations of higher alcohol and ester, that impart the aroma to beer, were 78.4 to 106.5 ppm and 15.1 to 29.3 ppm, respectively. In particular, S. cerevisiae (KCCM 90313) bestowed significantly higher contents of higher alcohol and ester concentrations than rice beer prepared from commercial yeast. We conclude that the four variants of yeast isolated from traditional Nuruk are potentially suitable for manufacturing rice beer. Especially, the S. cevisiae (KCCM 90313) yeast shows excellent yeast activity and aroma production, thereby displaying potential application for manufacturing rice beer in the future.
