A Study on the Actual Condition of Food Hygiene Safety Awareness, Food Hygiene Attitude, and Personal Hygiene Control of Male and Female college students in South Chungcheong Province (충남지역 남녀 대학생의 식품위생안전인식, 식품위생태도, 개인위생관리에 대한 실태조사 연구)

  • This study aims to provide basic data for food hygiene safety education by surveying the status of food hygiene safety awareness, attitude, and personal hygiene control of male and female college students in South Chungcheong Province, Republic of KOREA. From May 16 to June 30, 2019, 1,048 survey responses were collected at H University and analyzed statistically using SPSS 23.0. This study found males believed agricultural, livestock, and fisheries products (3.37, 3.08), and processed foods (3.40, 3.00) to be significantly safer, and information on food safety was easier to obtain (3.40, 3.00) than females. They were also more confident in choosing safe food (3.30, 2.97), than females. This indicates that males are more aware of food hygiene safety than females. On the other hand, females responded that they checked the expiration date (4.11, 4.40) and stored food according to characteristics (4.08, 4.30) than males, wash their hands after using the toilet(4.23 4.53) than males. This suggests that females were more aware of food hygiene attitudes and personal hygiene control than males. According to this study, college students' awareness of food hygiene safety and attitude, personal hygiene control showed a gender gap. Males had higher food hygiene safety awareness than females, but their awareness of food hygiene attitudes and personal hygiene control was lower. This suggests that differentiated food hygiene safety education is needed considering these gender differences.

Convergence Evaluating Food Safety Knowledge, Attitude, and Practice regarding Food handler (식품취급자의 식품안전에 대한 지식, 인식 및 행태의 융합적 평가)

  • This study aimed to assess the level of food safety knowledge, attitude and practices (KAP) among 500 Food handlers of hospitals in Korea and to explore the association between their knowledge, attitude and practices (KAP) and the socio-demographic characteristics. Self-reported questionnaire contains 50 questions: 15 for knowledge, 15 for attitude, and 20 for practice on food safety. The results showed that the overall mean of the knowledge score is 3.25, attitude 3.65, and practice 3.36 respectively. There was a significant difference between the mean score for knowledge, practice and overall KAP in three aged groups. Also, the overall KAP scores were significantly (p < 0.05) affected by the education level, where the average scores increased with the level of education. Public health preventive education and program should be provided to the food handlers in order to minimize foodborne hazards.

Convergence Analysis on Food Allergy Management of Home Childcare center's Directors in C city (C시 가정어린이집 운영자의 영유아급식 알레르기 관리에 대한 융합적 연구)

  • Children's food allergies are increasing every year, and the proportion of children who go to childcare centers is also on the rise due to the increase of women's social activities. In this study, the directors of home childcare centers in C city was supposed to investigate the current status of food allergy management and its knowledge, attitude, and practice, and to prepare basic data for safe feeding of children. The study found that there were not many opportunities for teachers and cooking staffs to learn about food allergies compared to the director of childcare center, and that the directors with experience of education are desirable in knowledge, attitude and practice of food allergy management. Therefore, the government should provide education on food allergies by using various contents and media tailored to each level of directors, teacher, and cooking staff, and provide continuous promotion and support to ensure proper management of food allergies in childcare centers.

Awareness and Behavior of Elementary School Children on Children's Favorite Foods (초등학생의 어린이 기호식품에 대한 의식과 섭취 실태 조사)

  • This study was performed to investigate elementary school children's awareness on children's favorite foods and their consumption behavior of the foods. This study also focused on the association between the variables and gender/grade. We conducted a cross-sectional survey with direct interview among three hundreds and six elementary school children (188 boys and 118 girls) from 13 schools of a city of Korea, using a structured questionnaire. Among the overall proportion, more than 20% of the respondents did not know children's favorite foods and/or have no information source on the foods. More than 60% of the respondents consumed children's favorite foods more than 1 to 2 times a week. Only 16% respondents got information on children's favorite foods at home and 37% at school. There were significant correlations (p < 0.05) between gender/grades and knowledge/route of information on children's favorite foods. Boys had more knowledge than girls (p < 0.05), however they showed worse attitude on children's favorite foods and consumed more the foods. The higher grade children had more knowledge, better attitude and various routes of information on children's favorite foods (p < 0.05), but consumed more the foods. The results of this study indicate that there is a discrepancy between knowledge and attitude/behavior. This study also indicate that school food-service program and food hygiene/safety education in school and at home should be improved. Strong implementation of laws for regulation of selling adulterated food around elementary school may be another step in controlling consumption of the food by school children.

Different Perceptions, Knowledge, and Attitudes of Elementary, Middle, and High School Students regarding Irradiated Food, Nuclear Power Generation, and Medical Radiation (초, 중, 고등학생의 방사선조사식품, 원자력발전, 의료방사선에 대한 인식, 지식, 태도 차이)

  • A survey was conducted on perceptions, knowledge, and attitudes of elementary, middle, and high school students, who will lead public opinion in the future, regarding irradiated food, nuclear power generation, and medical radiation. These topics urgently require general social acceptability among various fields in which radiation is used. Educational methods to enhance social acceptability were partially discovered. First, it is necessary to implement different strategies when designing courses for female and male students. Male students have higher levels of objective knowledge (p<0.039) of irradiated food, necessity (p<0.001) and objective knowledge (p<0.001) of nuclear power generation, approval of building a nuclear power plant in the nation (p<0.001), necessity (p<0.001) and objective knowledge (p<0.001) of medical radiation, and attitudes regarding using medical radiation (p<0.007, p<0.001). Second, the educational effect of explanations to help increase national understanding of the necessity and safety of nuclear power generation will increase if information on the necessity and safety of medical radiation is provided as well. Both male and female students perceived that medical radiation is the most necessary (p<0.001), medical radiation is the safest (p<0.001), and nuclear power generation is the least safe (p<0.013). Moreover, the correlation between medical radiation and nuclear power generation was the highest. Third, there is a need for different lectures between classes, since the patterns of perception vary according to the field of radiation use among elementary, middle, and high school students. Elementary school students had high interest in education on nuclear power generation (p<0.005), perceived that irradiated food is safe (p<0.001), and had the most positive attitude toward consuming irradiated food (p<0.001). Middle school students had high interest in education on nuclear power generation (p<0.018), perceived that nuclear power generation (p<0.001) and medical radiation (p<0.002) are safe, and had the most positive attitude toward using radiation for treatment (p<0.001). High school students had the highest level of objective knowledge on nuclear power generation (p<0.001) and medical radiation (p<0.001), and perceived that medical radiation is the most necessary (p<0.017); however, they perceived that nuclear power generation is the least safe (p<0.001). Attitudes toward irradiated food intake (p<0.001) and approving construction of a nuclear power plant in their neighborhood (p<0.001) were both low. Fourth, it is necessary to provide educational programs to change perceptions and improve attitudes rather than providing education focused on objective knowledge. There was no correlation between objective knowledge and necessity of irradiated food, objective knowledge and safety and interest in education on nuclear power generation, and objective knowledge and interest in education and information acquirement regarding medical radiation. In particular, high school students had the highest level of objective knowledge and yet had the least positive attitudes toward approving construction of nuclear power plants in their neighborhood and intake of irradiated food. Therefore, to increase the social acceptability of using nuclear energy and radiation in Korea, it is desirable to provide strategic educational programs to improve perceptions, knowledge, and attitudes regarding the necessity and safety of their use.

Studies on the Knowledge, Attitudes, and Behavior of Mothers Toward Food Hygiene and Safety of School Food-Service Programs - part 1 (학교급식의 위생안전성에 대한 학부모의 지식, 태도 및 행동에 관한 연구 -제1보)

  • This study was performed to investigate knowledge, attitudes and related behavior on the food hygiene and safety management of school food-service programs among mothers and to find factors affecting their knowledge, attitudes and behavior. A self-administered questionnaire was offered to a random sample of 301 mothers who have children attending elementary schools in one region of Korea. The survey was carried out over a two-month period (April-May,2001). They had lower behavior scores compared to the scores of knowledge and attitudes (p〈0.05). The micro levels of the knowledge, attitudes and behavior scores also showed the same tendency. Logistic regression analysis showed that mothers' education level affected their knowledge and attitudes, while the participating activity in school food-service programs affected their behavior the most frequently. Pearson's correlation analysis confirmed that the knowledge and attitude scores were significantly correlated (r=0.61404, p〈0.001). The results indicate that the knowledge and attitude levels of mothers regarding the food hygiene and safety of school food-service programs were good, however, their behavior levels were not satisfactory. The findings highlight the importance of participating programs in school food-service programs to close gaps between the behavior and knowledge or attitudes of mothers and to improve their behavior levels.

A Study on Consumer's Attitude for Food Safety and Purchase of Environment Friendly Agricultural Products (소비자의 식품안전에 대한 태도와 친환경농산물 구매행동에 관한 연구)

  • This study is to assess the level or consumer's attitude or food safety and their effects on the purchase or environment friendly agricultural products. For these purposes, the survey was implemented to 550 adults who resided in Seoul and metropolitan area. As a results, a lot of respondents perceived the five food hazards, pesticides, food additives, BSE, chemical materials, GMOs as the severest food risks. Results revealed that women, the most educated, married, and the older respondents were more likely to be negative about food safely. And Also, consumer's knowledge of environment friendly agricultural products was lower than the median. The respondents who have bought environment friendly agricultural products were 80.5% of the entire respondents. Also, the educated and the consumers who had the knowledge of the environment friendly agricultural products started to purchase them. The consumers who had higher income, perceived the food hazards(BSE), assessed agricultural products safety negatively, had willingness to pay them and more knowledge of environment friendly agricultural products were likely to purchase them usually.

Knowledge, Attitude and Behavior of High School Students Regarding Irradiated Foods (고등학생의 방사선조사식품에 대한 지식, 태도 및 행위)

  • This paper presents basic supporting data necessary for planning an educational intervention strategy as part of a communication strategy that would form an extensive national consensus on and enhance national understanding of irradiated foods. A survey was conducted to collect data on the knowledge, attitude, and behavior with regard to irradiated foods among high school students, on whom education has a great ripple effect compared with the general public. The results show that 82.9% (627 students) have acquired no information, whereas 89.3% (675 students) have received no education on irradiated foods. The reason for these overwhelmingly large percentages is the lack of available opportunity for education(88.2%). Their level of knowledge on irradiated foods scores 1.71 points (out of 10 points), which is very low, whereas their attitude toward the safety of irradiated foods scores 2.76 points (out of 5 points), which is relatively low as well. As such, we predict that their tendency to purchase and consume irradiated foods is low, given their very low level of knowledge of and negative attitude toward irradiated foods. The students who have been educated on irradiated foods show a higher level of positive attitude (p<0.001) toward irradiated foods compared with those who have had no education. This result suggests the need to provide high school students with knowledge on irradiated foods as well as education in the same to help them form a proper attitude toward these food items.

Assessment of Consumer's Food Safety Perceptions and Practices (소비자의 식품안전 인지도와 안전행동 평가)

  • Consumers are very concerned about food safety as the risk with food increased. This study was conducted to evaluate the perceptions and practices of consumers on food safety in order to collect some information for the development of consumer education program. Total 500 consumers were asked to answer for survey constituted with 6 questions of generic information, 4 of food safety perceptions and 8 of food safety practices from June to July, 2006. More than half of respondents (51.8%) were unsatisfied with the food safety management of government while the individual practices on food safety were satisfactory. Especially, most respondents (98.7%) checked the expiration date of food when they purchased and 97% of respondents were washed hands before food preparation. The higher food safety perception, the better food safety practices of consumers. These results suggest that the systematic and continuous educations on food safety hazards and the principles of sanitation management are necessary for safe food handling and perception on food safety.

청주지역 주부들의 수입식품 이용실태 및 분별능력

  • WTO 출범 이후 우리나라 국민의 식생활 중 수입식품이 차지하는 비중이 급속히 늘어나면서 수입식품 자체의 위해성과 수입농산물에 관한 지식이나 정보가 소비자들에게 부족하여 올바른 구입과 소비가 어렵게 되어 피해를 당하는 경우도 발생하고 있다. 본 연구에서는 청주지역 주부들을 대상으로 수입식품 이용과 인식도 및 수입식품 분별능력의 조사를 통하여, 교육의 필요성여부를 검토하였다. 조사 대상자는 청주시에 거주하는 주부 183명이었고, 조사기간은 2003년 3월 1일부터 3월 15일까지였다. 조사내용은 조사대상자의 일반사항, 식품구입시 태도, 수입식품 구입 경험, 수입식품에 대한 인식도, 수입식품과 국산식품의 분별력 테스트로 구성되었으며, 인식도는 5점 척도에 의해 조사되었다. 사용된 통계처리 방법은 SAS program을 사용하여 빈도, 백분율, 평균, 표준편차를 구하였고, Chi-square 또는 ANOVA로 검정하였다. 연구결과는 다음과 같다. 국내산과 수입산 표시의 확인여부는 응답자의 92.3%가 확인한다고 응답하였고, 선호도를 조사한 결과 99.5%가 국내산을 선호하는 것으로 나타났다. 선호하는 주된 이유로는 ‘수입산은 유해물질이 많으므로’라는 응답이 46.3%로 가장 많이 나타났고, 수입식품 구입경험의 유무로는 92.3%가 경험이 있다고 응답하였으며, 구입동기에 대해 ‘수입산이 시중에 많아 쉽게 구입할 수 있기 때문에’라는 응답이 61.6%로 가장 많았다. 또한 수입식품을 국산식품으로 혼동하여 구입한 경험으로는 응답자의 76%가 ‘있다’고 응답하였으며 혼동한 이유로는 ‘수입식품과 국산식품의 구분이 명확하지 않아서’ 49.6%, ‘수입산과 국내산의 표시가 명확하지 않아서’ 41%를 차지했다. 국내산과 수입산 표시에 대한 신뢰도는 89.7%가 대체로 신뢰하지 않는 것으로 나타났다. 신뢰하지 않는 이유로는 ‘허위표시에 대한 보도를 많이 접해서’가 56.l%로 가장 많은 비율을 차지했다. 수입식품의 인식도를 품질, 가격, 포장 용기, 맛, 조리편리성, 안전성, 건강에 미치는 영향의 7가지 측면에서 살펴보았는데, 수입식품의 품질과 맛에서 국내산과 비슷하거나 나쁘다고 인지하였고, 가격은 수입식품이 싸다고 인지하고 있었으며 연령과 유의성을 보였다(p <0.01). 포장 용기와 조리편리성에 대해서는 국내산과 비슷하거나 좋다고 인지하고 있었으며, 조리편리성은 학력과 유의성이 높게 나타났다(p < 0.01). 안전성과 건강에 미치는 영향에 대해서는 나쁘다고 인지하고 있었다. 수입식품과 국산식품의 분별정도는 66.1%가 구별하는 능력이 언다고 응답하였다. 분별정보를 얻는 경로로는 ‘TV 및 라디오 프로그램’이 61.7%로 가장 많았다. 수입식품에 관한 교육을 받을 의향에 있어서 61.5%가 ‘예’라고 응답하였고, 필요한 교육에 대해 ‘국산식품과 수입식품의 분별법에 관한 내용’이 75.4%로 가장 많았다. 수입식품 분별력 테스트에 있어서는 40점 만점에 평균이 13.6 $\pm$ 7.4점으로 낮았고, 분별력이 가장 좋은 품목은 고사리(53.6%), 분별력이 가장 낮은 품목은 고춧가루(40.4%)로 나타났다. 분별정도에 있어서 ‘매우 잘 구별한다’고 응답한 사람일수록 분별력 점수가 높게 나타나 주부들이 자신의 분별능력에 대해 매우 잘 인지하고 있다는 것을 알 수 있었다(p<0.001). 이상의 결과를 통하여 대부분의 응답자가 수입산에 대해 부정적인 태도를 보이고 있으나 대부분 구입경험이 있고, 분별력 점수도 낮은 편이었다. 따라서 국내 소비자들의 피해를 줄이기 위하여는 수입식품과 국내식품의 특징 및 분별법에 대한 대중매체를 통한 홍보와 이에 대한 교육의 기회가 확대되어져야 하겠다.
