Differences Between Analyzed and Estimated Sodium Contents of Food Composition Table or Food Exchange List (나트륨 실측치와 식품교환표 및 식품성분표를 이용한 추정치의 비교)

  • Excessive intake of sodium is known as a risk factor for hypertension, and Korean adults consume sodium 3 times higher than Dietary Reference Intakes (DRIs). The purpose of this study was to evaluate the difference on sodium content between analyzed and estimated by food composition table and food exchange list. Seven days of low salt diet and seven days of high salt diet were prepared, and sodium contents were estimated by food composition table and food exchange list and measured by atomic absorption spectrophotometer. Sodium contents of diet per day estimated by food exchange list significantly differed from analyzed content, but those estimated by food composition table were not. However, when absolute differences from analyzed content were compared by dishes in the low and high salt diet periods, there were significant differences among estimated sodium content by food composition table and food exchange list and analyzed sodium content. The discrepancy between those results was due to that absolute value was used to compare sodium contents of dishes but not to compare sodium contents of days. In addition, main dish, side dish, and soup were significantly different among estimated sodium content by food composition table and food exchange list and analyzed sodium content. Actual sodium contents of Jap-Chae Deop-Bap and Roasted chicken with oyster sauce differed to a great extent from estimated contents by food exchange list and food composition table. In conclusion, actual sodium contents of Korean dishes were significantly different from those estimated by food composition table and food exchange list, and thus these differences in salt content should be considered on planning of low-salt menu for hypertensive patients.

  • 최근 동물성 제품을 섭취하거나 소비하지 않는 비거니즘 생활방식을 지향하는 사람들이 증가하고 있다. 그러나 채식 인구의 증가에 수반되어야 하는 채식하기 좋은 환경에 대한 구축은 아직도 미흡한 실정이다. 본 연구에서는 채식주의자들을 위해 가공식품 성분 표를 분석하여 채식주의자 단계에 맞는 대체식품을 추천해 주는 시스템을 제안한다. 제안 시스템은 먼저, 가공식품의 원재료들이 표기되어 있는 성분 표를 분석하여 사용자의 채식주의자 단계에 적합한지를 확인한다. 확인 결과 적합하지 않다면, 한국식품안전관리인증원의 공개 API를 이용하여 해당 가공식품과 제품 유형이 같은 식품을 검색하고 그 결과로부터 사용자의 채식주의자 단계에 적합한 원재료들이 포함되어 있는 식품을 추천해준다.

  • 사람들이 체중을 조절하고 건강을 관리하기 위한 방법 중 하루 영양소 섭취량을 조절이 있다. 현대 사회에선 가공식품의 섭취량이 증가함에 따라 자연스레 가공식품들의 영양소를 파악하고 기록하는 것도 중요한 문제가 되었다. 본 논문에서는 실제 가공 식품의 포장지에 인쇄되어있는 영양성분 표 이미지를 인식할 수 있는 OCR을 FOTS 기반으로 구현 및 실험을 진행하였다. 실제로 시중에서 파는 영양성분 표는 한글과 영어가 섞여 있기 때문에 한글을 인식하는 모델과 영어와 숫자를 인식하는 모델을 따로 학습한 뒤 생성하여 각 언어에 대한 인식률을 향상시켰다.

Deep-Learning-based smartphone application for automatic recognition of ingredients on curved containers (곡면 용기에 표시된 성분표 자동 인식을 위한 인공지능 기반 스마트폰 애플리케이션)

  • Consumers should look at the ingredients of cosmetics or food for their health and purchase them after checking whether they contain allergy-causing ingredients. Therefore, this paper aimed to develop an artificial intelligence-based smartphone application for automatically recognizing the ingredients displayed on a curved container and delivering it to consumers in an easy-to-understand manner. The app needs to allow consumers to immediately comprehend the restricted ingredients by recognizing the ingredients' words in the cropped image. Two major issues should be solved during the development process: First, although there were flat containers for cosmetics or food, most were curved containers. Thus, it was necessary to recognize the ingredient table displayed on the curved containers. Second, since the ingredients' words were displayed on the curved surface, the transformed or line-changed words also needed to be recognized. The proposed new methods were enough to solve the above two problems. The application developed through various tests verified that there was no problem recognizing the ingredients' words contained in a cylindrical curved container.

  • Under Article 19, Paragraph 1 of the Food Industry Promotion Act, Rural Development Administration renews the Korean foods composition table every five years. Before the publication of the tenth revision of the Korean foods composition table in 2021, this paper suggests methods for collecting representative samples of 182 highly consumed foods in Korea. Food markets are categorized by their distribution channels, which are supermarkets and local markets. Eight samples are collected from each category by applying the National Food and Nutrient Analysis Program (NFNAP)'s stratified multi-stage sampling. The NFNAP was implemented in 1997 as a collaborative food composition research effort between the National Institute of Health (NIH) and the US Department of Agriculture (USDA) to secure reliable estimates for the nutrient content of food and beverages consumed by the US population. Selected supermarkets for selecting representative food samples are Emart Kayang, Homeplus Siheung, Lottemart Dongducheon, Emart Suwon, Lottemart Dunsan, Lottemart Yeosu, Emart Ulsan, and Hanaroclub Ulsan. Selected local markets also are Doksandongusijang in Geumcheon-gu and Pungnapsijang in Songpa-gu, Seoul, Ilsansijang in Ilsanseo-gu, Goyang, Unamsijang in Buk-gu, Gwangju, Beopdongsijang in Daedeok-gu, Daejeon, Bongnaesijang in Yeongdo-gu and Jwadongjaeraesijang in Haeundae-gu, Busan, and Jungangsijang in Jinhae-gu, Changwon.

  • 바쁜 생활 속에서 아침식사를 빵으로 해결하는 경우가 많아졌고, 청소년이나 젊은층사이에 빵은 점심이나 저력 등의 주식으로서도 큰 몫을 차지하고 있다. 그러나 그동안 자주 섭취해온 옥수수식빵, 우유식빵 및 호빵(고기)의 영양성분은 외국 식품성분표의 내용을 인용하여 왔다. 따라서 농촌자원개발연구소에서는 한국인이 좋아하는 식빵 및 호빵의 영양성분을 종류별로 분석하고, 이들 빵류에 대한 영양정보를 소비자에게 제공하여 균형 있는 식생활을 위한 기초 자료로 제공하고자 한다. (중략)

Effects of Temperature and Composition on the Thermal Conductivity and Thermal Diffusivity of Some Food Components (온도와 조성이 식품성분의 열전도도와 열확산도에 미치는 영향)

  • The thermal conductivity and thermal diffusivity of food are heavity dependent on temperature and composition. The thermal properties of pure component solids were determined by the proposed model at a temperature range of $-40^{\circ}C\;to\;150^{\circ}C$ from the experimental values of 10%, 30% and 60% solid content suspensions. The major components of food products were proteins(albumin, casein, whey protein, meat protein and gluten), lipids (milk fat, vegetable oil, lard and corn oil), carbohydrates (dextrose, lactose, sugar and starch), fibers (cellulose and pectin), all milk salts. A modified probe method was used to measure these properties of pure component suspensions of each major component of food products. General mathematical models which were developed by an optimization technique can be applied to predict the properties of food products.

A Study on the Metadata Design for Standardization of Food Composition Research Data (식품성분 연구데이터의 표준화를 위한 메타데이터 설계에 관한 연구)

  • The purpose of this study was to designed the structure and elements of metadata that can manage and share research data produced in the food composition database. In order to derive metadata elements, mapping crosswalk was performed on 5 metadata such as DCAT, DataCite metadata schema 4.4, TTAK.KO-10.0976, AgMES, and FoodData Central. As a result of the study, the top 15 elements of the 'Resource information' metadata were derived, and 7 mendatory, 3 recommended and 5 optional elements, and the 'Composition analysis' metadata included 8 mendatory, 3 recommended and 1 optional element were derived to describe food composition research data, respectively. The derived metadata elements will be used as an item for systematic management of food composition data and can be used as basic data for sharing with domestic and international food composition databases.
