  • This research is to analyze the status of menu guides provided to inpatients in Korean hospitals, analyze the problem of delivering information, and propose improvement plans through information visualization as a part of improving service for inpatients. The nutrition department in hospitals were directly visited, data were collected, and the types and contents of menu guides were analyzed. Then, problems were found by focusing on whether there is an effective delivery of information, in terms of information visualization aspects. The menu provided to inpatients in Korean hospitals are divided into general, optional, and therapeutic menu depending on patients' conditions, and the menu guide is largely divided into a general guide and optional guide. The information covers menu, origin of ingredients, guide, withdrawal time, etc. However, there is no categorization according to the contents or importance of information, thus creating inefficient problems for patients to acquire information. The problem of menu guides is that they do not deliver information properly due to disorganized information. In order to improve this, information should be categorized and visualized according to its contents and importance for enhancing readability, which will then be able to provide menu guides that can deliver information more efficiently to patients.

Glycemic Responses of Korean Domestic Measl and Diabetic Meals in Normal Subjects (한국인 대표 식단 및 당뇨 식단의 정상인에 대한 혈당반응)

  • This study was carried out to determine the blood glucose responses to 10 kinds of typical Korean domestic meals, 9 kinds of eating out meals and 5 kinds of diabetic meals recommended by hospitals. The levels of blood glucose were measured at 15, 30, 60, 90 and 120 minutes after taking 24 kinds of meals(500$\pm$10㎉) and 50g of glucose to healthy volunteers. The blood glucose response areas and glycemic index(GI) were calculated. There was no invariable tendency of blood glucose responses among diabetic meals, general domestic meals and eating out meals. As the units of grain groups were increased, the GI of meals was increase. When the units of grain groups are same, the side dishes also affected the blood glucose responses, however, it is yet unknown what kinds of food materials of side dishes affected the blood glucose responses. Noodles (Chinese style, kalgugsu(Korean home made) and ramen) lowered blood glucose responses compared to steamed rice. Mixing barley and brown rice with polished rich also lowered blood glucose responses, especially when the mixing ratio of them was over the 15%. The lowering efficiency of barely was greater than brown rice. More than three grain units of rice increased the blood glucose response. The GI was significantly correlated with left area ratio(LAR), right area ratio(RAR) and blood glucose levels at 15, 30, 60, 90 minutes. The RAR and blood glucose levels at 30 minutes profoundly affected the GI.

Menu pattern and food diversity of snack menus provided by Child Care Information Centers in Seoul (서울시 소재 육아종합지원센터에서 제공하는 어린이집 간식식단의 유형 및 식품 다양성)

  • Purpose: This study was conducted for analysis of menu pattern and food diversity of snack menus of child care centers in order to provide preliminary data for establishment of related guidelines for snack menus for child care centers. Methods: Data from 630 snack menus (350 for morning snacks and 280 for afternoon snacks) of March, 2013 from 14 Child Care Information Centers in Seoul provided for child care centers were analyzed. In addition, the menu pattern and food diversity of morning snack menus were compared with those of afternoon snack menus. Results: Differences in menu pattern and food diversity were observed between morning and afternoon snack menus. The majority of snack menus (66.8%) included two menu items and the numbers of menu items of afternoon snack menus were significantly larger than those of morning snack menus. The percentages of "Grains (G)" and "Grains (G) + Milk (D)" patterns were higher in snack menu (G: 18.9%, G+D: 17.1%). Approximately one third of snack menus were composed of only one food group. In addition, 45.6 % of all snack menus comprised milk and only 23.0% included fruits. Conclusion: These results demonstrated the need for improvement in food composition and diversity of snack menus provided by Child Care Information Centers for child care centers. Therefore, to ensure children's intake of nutritionally balanced snacks, it will be necessary to establish more detailed guidelines for the menu pattern and food composition in snack menus for child care centers.

  • 만성질환과 관련된 식품 또는 영양소에 대한 관심이 높아지면서 정부에서는 현대인들의 건강을 위해 보다 정확하고 알기 쉬운 정보를 제공하고자 노력하고 있다. 최근에는 외식식품, 가공식품 등에 영양표시를 의무화함에 따라 소비자들이 좋은 제품을 선택할 수 있도록 제도화하였다. 하지만 이 정보를 적용하는 경우는 많지 않아 영양표시에 대한 이해와 활용법에 대한 지도가 필요한 시점이다. 식품에 영향을 많이 받는 당뇨병환자들부터 영양표시를 읽고 식단의 수준을 높여보자.

The Evaluation of Food Service Menus in an Immigration Detention Center (외국인 보호소 급식 식단 품질에 대한 인식 및 만족도)

  • The purpose of this study was to investigate the recognition and satisfaction with the menu quality of food services in an immigration detention center. The survey was conducted from January 22, 2010 to April 22, 2010 by questionnaires. A survey with 265 respondents was conducted and data analyzed by the SAS Program. In analyzing leftovers, the most common was kimchi (37.61%), followed by breads (21.52%), and beans/bean curd (17.99%). The common cause for leftover were undesirable taste (31.84%), sickness or a lack of desire for eating (19.85%). In terms of cooking methods, stir-frying, broiling, and frying were highly preferred to steaming, boiling, and salting. In the analysis of preferences in the taste and satisfaction of food service, there were significant differences in hot, sour, bitter, and light tastes (p<0.05, p<0.01, p<0.001). Satisfaction was low with hot and light tastes, whereas sour and the bitter tastes showed a high degree of satisfaction. In the opinions for quality improvement, most immigrants wanted a tastier food supply (58.69%), a diverse food supply (40.54%), and clean utensils (36.68%). In the analysis of the gap between importance and performance, food taste, variety, and sanitation were recognized as poorly performed, causing major dissatisfaction with the food. The overall satisfaction score was 'average' (3 points out of 5 points) with 3.26 points. The satisfaction score showed insignificant difference depending on religions and duration of stay in Korea, but showed significant differences depending on nationality (p<0.001).

  • The purpose of this study was to develop a software system for computerized menu planning program by food exchange group. In this research, Powerbuilder 5.0 was used. This study provides food service manegers with more effective manegement system and scientific menu. A Customized Healthy Menu Recommendation Method Using Content-Based and Food Substitution Table (내용 기반 및 식품 교환 표를 이용한 맞춤형 건강식단 추천 기법)

  • In recent times, many people have problems of nutritional imbalance; lack or surplus intake of a specific nutrient despite the variety of available foods. Accordingly, the interest in health and diet issues has increased leading to the emergence of various mobile applications. However, most mobile applications only record the user's diet history and show simple statistics and usually provide only general information for healthy diet. It is necessary for users interested in healthy eating to be provided recommendation services reflecting their food interest and providing customized information. Hence, we propose a menu recommendation method which includes calculating the recommended calorie amount based on the user's physical and activity profile to assign to each food group a substitution unit. In addition, our method also analyzes the user's food preferences using food intake history. Thus it satisfies recommended intake unit for each food group by exchanging the user's preferred foods. Also, the excellence of our proposed algorithm is demonstrated through the calculation of precision, recall, health index and the harmonic average of the 3 aforementioned measures. We compare it to another method which considers user's interest and recommended substitution unit. The proposed method provides menu recommendation reflecting interest and personalized health status by which user can improve and maintain a healthy dietary habit.
