The Changes of Pectic Substances in Sweet Potato Cultivars During Baking (가열에 의한 고구마 펙틴질의 변화)

  • The changes of pectic substances during baking at $175{\sim}180^{\circ}C$ for 30 minutes and polygalacturonase activities of three sweet potato cultivars on textural properties were investigated. The three different types of sweet potato cultivars were the dry type (Wonki), the intermediate type (Shinmi), and the moist type (Chunmi). The moisture content, alcohol insoluble solid content, composition of pectic substances and hardness were determined before and after baking. It was found that HCl-soluble pectin was significantly changed into water soluble and sodium hexametaphosphate soluble pectin by baking. The dry type, Wonki showed the lowest moisture content, but the highest alcohol insoluble solid content and hardness. Wonki, whose polygalacturonase activity was the highest, had the highest HCl-soluble pectin content after backing.

Changes in Firmness, Mineral Composition and Pectic Substances of Mume(Prunus mume Sieb. et Zucc) Fruits during Maturation (매실의 성숙중 경도, 무기성분 및 펙틴질의 변화)

  • The changes in firmness, mineral compositions and pectic substances of Mume(Prunus mume Sieb. et Zucc) fruits during maturation were determined. An average weight of the fruits in 92days after full bloom was increased during maturation proceeded up to the range of 212∼232%, as compared with that of 64days. The rate of weight increase of 'Ohshuku' fruits was 257%, and it was highest among four varieties. The ratio of stone to flesh weight was decreased, but the diameter of the flesh of fruits was increased during maturation. The firmness of 'Koume' fruits was rapidly decreased from 78days after full bloom. Three varieties, except 'Koume' fruits, showed similar changes in firmness. Potassium content of fruits was 85%. Calcium and Mg were decreased as the flesh of fruits became plump. The ratios of hydrochloric acid-soluble pectin(HSP) , water-soluble pectin(WSP), sodium hexamethaphosphate-soluble pectin(PSP), and sodium hydroxode-soluble pectin(SSP) contents to the total pectin content of the fruits were 66∼76, 8.4∼19.7, 5.4∼7.5 and 7.1∼8.3%, respectively. The total pectin content was increased up to 71days after full bloom, but it was decreased thereafter. Also, a significant increase of WSP and a decrease of HSP were observed during the softening process of fruits.

Changes on the Cell Wall Components of Jujube Fruits during Drying (대추 천일건조 중 세포벽 구성성분의 변화)

  • This paper was investigated to changes of cell components during drying for studies on the softening of jujube fruits. The contents of alcohol-insoluble material, cell wall and water-soluble material were not changed at 6 days of drying, but alcohol-insoluble materials and cell wall were decreased at 9 days of drying, however water-soluble materials were increased. Pectin and hemicellulose were not changed at 6 days of drying. Pectin and alkali-soluble hemicellulose were remarkable decreased at 9 days of drying, but acid-soluble hemicellulose was increased. Water-soluble pectin was not changed at 6 days of drying, but increased at 9 days of drying. EDTA-soluble and insoluble pectin were decreased after 6 days of drying. The non-cellulosic neutral sugars were not changed at 6 days of drying. The contents of arabinose, galactose and total neutral suger were decreased at 9 days of drying.

  • The changes of acidity, the content of alcohol-insoluble solid (AIS) and pectic substances of Kimchis which were prepared with various garlic contents and fermentation at $21^{\circ}C$ were investigated. Acidity and the content of water soluble pectin of Kimchis increased but the content of AIS and protopectin decreased during the fermentation. As the Kimchis contained high garlic contents compared with the Kimchis deleted garlic, acidity of those rapidly increased but the content of AIS of those slightly decreased with fermentation. In the case of Kimcltis contained high garlic contents, protopectin decreased and water soluble pectin increased with fermentation, but the amount of changes was small.

Comparison of Changes in Cell Wall Characteristics during Storage in 'Niitaka' and 'Pingguoli' Pear Fruits (동양배 '신고'와 '사과배' 과실의 저장 중 세포벽 특성의 변화 비교)

  • The characteristics of fruit ripening and cell wall modifications of two oriental pear fruits were compared during storage. The loss of fresh weight was lower in 'Pingguoli' than 'Niitaka', probably due to the difference in wax accumulation and skin structure. 'Pingguoli' produced much higher amount of ethylene and showed climacteric ripening pattern, but this response was not found in 'Niitaka'. A significant difference in soluble pectin contents was found, thus, the amount of water soluble pectins were much higher in 'Niitaka' at harvest but this difference was not significant at later stage of storage. A severe loss of water soluble pectins in 'Niitaka' was confirmed whereas a similar tendency was not found in CDTA soluble ones. Even the amount of $Na_2CO_3$ soluble pectins was relatively low, 'Pingguoli' contained approximately 2 times higher than 'Niitaka' and both cultivars showed an increasing tendency in $Na_2CO_3$ soluble polymers at later stage of storage. No significant difference in alkali soluble polysaccharides (hemicelluloses fraction) was found between both cultivars. There was a significant change in gel filtration profiles regardless of cultivars, especially in water soluble pectins resulting from severe depolymerization probably due to degradation of higher molecular weight pectins and loss of their side chains. In gel filtration profiles of $Na_2CO_3$ soluble pectins, neutral sugars were evenly distributed regardless of molecular size of pectic polymers but the decrease of high molecular weight fraction was found. In comparison of alkali soluble polymers, a similar trend was found, that is, there was no difference in gel filtration profiles but 'Niitaka' seemed to have longer side chains in alkali soluble polysaccharides in both 4% and 24% of KOH soluble fractions.

The Changes of Pectic Substances During the Fermentation of Kimchis (김치의 숙성 과정에 따른 펙틴질의 변화)

  • The changes of acidity, hardness, and pectic substances of Kimchis fermented at 6-1$0^{\circ}C$ and 22-24$^{\circ}C$ were investigated. With fermentation, acidity was increased and hardness was decreased, and these changes were more marked in Kimchis fermented at 22-24$^{\circ}C$. The contents of AIS was decreased with fermentation. Hot water soluble pectin was increased and protopectin was decreased with fermentation, but the amount of changes was small.

Modeling of Extrusion for Pectin Extraction from Apple Pomace (사과박의 펙틴 추출을 위한 압출 공정 모형화)

  • This study was performed to search a physical method having high yield and quality and minimum environmental pollution for extraction of pectin from apple pomace. Based on the physical solubilization of plant cell wall under the condition of high temperature, pressure and shearing stress, apple pomace was treated by a corotating intermeshing type twin-screw extruder with the diameter-to-length ratio of 1/20. The specific mechanical energy of extruder was introduced as system parameter for extrusion process modeling and the shaft speed, feed rate and moisture content as process variables. The yield, average molecular weight and galacturonic acid content of water-soluble polysaccharides obtained by extrusion were, respectively, modeled with the linear functions of the system parameter which was of the form as a linear function of process variables. The specific mechanical energy increased with increase of shaft speed and with decrease of feed rate and moisture content. Out of process variables, moisture content had the greatest effect on specific mechanical energy. The yield increased with increase of specific mechanical energy while the average molecular weight and galacturonic acid content increased with its decrease. In aspects of yield and quality of pectin, the results from this study showed the possibility to replace a traditional acidic method with the extrusion treatment of this study.

Changes in the Enzyme Activities, Pectins and Structure of Persimmon Fruit during Softening (감과실의 연화중 효소활성, 펙틴 및 조직의 변화)

  • This study was carried out to investigate change in the polygalacturonase and ${\beta}-galactosidase$ activities, pectins, cell wall structure of persimmon fruit during ripening and softening. Polygalacturonase and ${\beta}-galactosidase$ activities were not detected at turning stage. However polygalacturonase activities of mature and soft persimmon fruits were 55.01 and 206.70units/100g-fresh weight(fr. wt.), respectively. ${\beta}-Galactosidase$ activities of mature and soft persimmon fruits were 21.79 and 380.23unit/100g-fr. wt. respectively. The contents of total and insoluble pectins increased during maturation but decreased during softening. The content of water-soluble pectin increased during maturation and softening. The intercellular space was in larged during ripening, and middle lamella was degraded in mature persimmon fruit, and the cells of soft persimmon fruit were separated each other.

Physicochemical Characteristics of Cabbage Kimchi during Fermentation (양배추 김치의 숙성과정 중에 나타나는 이화학적 특성에 관한 연구)

  • The purpose of this study was to investigate the physicochemical characteristics of Cabbage Kimchi with different kinds of jeot-kal. The Cabbage Kimchis were stored at 4${\pm}$1$^{\circ}C$ for 49 days. The pH of all samples of Cabbage Kimchis decreased during fermentation. The total acidity of Cabbage Kimchis increased gradually during fermentation and that of Cabbage Kimchis with different kinds of jeot-kal was higher than that of control. Redox potentials and reducing sugar content decreased gradually during fermentation. Total vitamin C content of Cabbage Kimchis with different kinds of jeot-kal was much higher than that of control. In color measurement, the lightness value decreased gradually, whereas the redness and yellowness values increased gradually during fermentation. The content of hot water soluble pectin (HWSP) decreased as the fermentation proceeded, but that of hydrochloric acid soluble pectin (HCISP) and sodium hexametaphosphate soluble pectin (NaSP) increased.

Changes of Component on Green Discolored Garlic (녹변된 마늘의 성분 변화)

  • Effects of temperature, discoloration, and conditioning on garlic compositions before and after storage were examined. Proximate composition, soluble solids, pH, organic acids, and total sugars of all samples were not significantly different. Sugar contents were sucrose > fructose > glucose, and included such fructooligosaccharide as 1-kestose, 1-nystose, and 1-F-fructosyl nystose. Allicin contents in control, green discolored, and conditioned garlics were 647,9, 613.8, and 648.0 mg%, respectively. Thirty-two flavor compounds were identified by GC/MSD, including 11 sulfide compounds, 5 acids, and 3 aldehydes. Contents of sulfur compounds, including disulfide(di-propenyl), 2-thiophene methanethiol, thiophene, 3,4 dihydro-3-vinyl-1,2-dithiin, and 2-vinyl-4H-1,3-dithin, and water-soluble pectins in low temperature-stored garlic were higher than those in control, and decreased by conditioning or inducing green discoloration. These results show sulfur compounds and water-soluble pectins accumulated in low temperature stored-garlic, and are then converted into green pigments by alliinase in disintegrated garlic tissues.
