Decomposition of Compost Bag Using Polyester Resin (폴리에스테르 수지를 이용한 콤포스트 백 분해에 관한 연구)

  • In this study, the change of water content, pH, and combustion weight on the decomposition of poly ester vinyl and high density poly ethylene were examined. The poly ester vinyl was degraded by microorganism in food wastes for 30 days, while high density poly ethylene vinyl was not degraded. Also, the poly ester vinyl was rapidly degraded after the 10 days of operation and its weight was decreased. In the combustion reaction between $300^{\circ}C$ and $600^{\circ}C$, complete combustion was performed. Due to the degradation of poly ester vinyl by microorganism in food waste, the pH was increased from 4.26 to 7.6. During of 60 days operation, poly ester vinyl was degraded over 90%.

The Functional Effects of Polyester treated with silk sericin (견 세리신을 이용한 폴리에스텔의 기능성 향상)

  • The attaching treatment of sericin onto polyester fiber was attempted to improve its sanitary properties. Generally, sericin, a gummy material covering the outer layer of silk filament, is subjected to be removed during degumming process of silk textile process. For this study, sericin particle dissolved within the degumming waste water could be collected by sedimentation of polyaluminium chloride. It was revealed that sericin particle were attached onto the surface of polyester fiber evenly by treatment of glutaraldehyde, a crosslinking agent. A frictional static charge of the treated polyester fabric could be improved, while its hygroscopic property was little changed.

  • 근내지방도(IMF)가 한우육의 품질 및 기능성분에 미치는 영향을 조사하기 위하여, 250두의 한우를 근내지방 함량에 따라 Low(<14%, n=96), Medium(14~17%, n=83), High(>17%; n=71) 세 그룹으로 분류하고, 7일간 숙성 후 등심육의 품질 및 기능성분을 분석하였다. 한우 등심육의 수분 함량은 IMF와 반비례하였으며, High IMF 그룹은 Low IMP 그룹에 비하여 낮은 드립 감량을 나타내었다. 기능성 didpeptide 함량은 IMF에 따라 유의적 차이가 없었으나, High IMF 그룹은 다른 그룹보다 낮은 inosine monophosphate, 높은 hypoxanthine, 낮은 histidine 함량은 나타내었다. 불포화지방산의 비율은 IMF에 따라 유의적 차이가 없었다. 저지방육의 건강지향적 가치를 고려할 때 지나친 IMF를 목표로 하는 육종 및 사양은 지양되어야 할 것으로 판단되었다.

브랜드 돼지고기의 물리화학적 및 관능적 품질특성

  • 경남 진주 소재 대형유통매장에서 유통경과일자가 비슷하고 인지도가 상대적으로 높은 5개 회사 제품(Ha, E, H, J, P)의 냉장돈육 목심을 구매하여 과도한 지방과 결체조직을 제거한 후 육질 분석을 실시하였다. 일반성분은 지방 함량이 높은 처리구들이 수분함량이 낮게 나타났으며 Ha와 H 브랜드 돈육은 정상육의 pH를 나타내었으며, P 브랜드 돈육은 PSE육에 다소 가까웠으며, E와 J 브랜드 돈육은 PSE 육으로 판단되었다. pH가 낮은 브랜드육들이 가열감량이 높게, 보수력은 낮게 나타났다. E 브랜드육의 $L^{\ast}$값이 가장 높게 나타났으며 Ha와 H 브랜드육의 $L^{\ast}$값은 다른 브랜드육에 비해 낮게 나타났다. $a^{\ast}$값은 Ha, H, J 브랜드육이 높게 나타났으며, $b^{\ast}$값은 Ha와 P 브랜드육이 낮게 나타났다. Ha와 J 브랜드육이 관능검사에서 전반적으로 높게 나타났으며, 지방산 조성은 J 브랜드 돈육이 포화 지방산의 함량이 높게, 다가 불포화지방산 함량은 낮게 나타났다. 또한 E 브랜드 돈육의 linoleic acid(Cl8:2)와 arachidonic acid(C20:4) 함량은 다른 브랜드 돈육보다 높게 나타났다.

Physico-chemical Properties and Changes of Sarcoplasmic Protein Bands of Chicken Meat Cuts with or without Salt during Cooking Temperatures (식염첨가 유무에 따른 계육의 부위별 가열온도에 따른 이화학적 성상과 근장 단백질 밴드의 변화)

  • This study was performed to measure the pH, proximate composition, physicochemical properties, changes of protein bands, Hunter color values and endpoint cooking temperature of chicken leg and breast muscles during cooking from 64 to 74℃ with 2℃ increments. Chicken leg had higher pH, moisture and fat contents (%) and lower protein solubility(P<0.05) than chicken breast. Although the cooking losses(CLs, %) of chicken muscles increased with increased cooking temperature, the addition of 2% salt did not affect CL. The redness values of chicken leg without 2% salt were higher than chicken breast, however, the addition of 2% salt reduced the differences of the redness. Protein solubility decreased with increased cooking temperatures and were not affected by the addition of salt, and no further changes were observed higher than 68℃. Protein bands having the molecular weights of 66 and 54kDa were disappeared in the chicken leg at the cooking temperatures of 66~70℃, whereas 66, 54 and 34kDa in the chicken breast. These protein bands could be used potential indicators to determine the endpoint cooking temperature in chicken muscles.

Effects of Item Packaging Methods on the Quality Characteristics of Yukwa during Storage (단위포장 방법에 따른 유과의 저장 중 품질 특성)

  • This study aimed at investigating the quality changes of Yukwa during storage using the various item packaging methods present in the domestic market. The samples consisted of a self-adhesive-oriented polypropylene (OPP) film pouch (P1), a heat-sealed OPP film pouch (P2), and a polystyrene (PS) tray with a polyethylene terephthalate (PET) lid (P3). These were stored at $25^{\circ}C$ up to eight weeks. Throughout the storage period, the acid values of all the study samples remained under the Korean hygiene regulation limit of 2.0 mg KOH/g. The P2 samples showed both the slowest decrease in water content and the slowest increase in hardness value during storage. Sensory evaluation also showed that the P2 samples were the only ones that maintained their market value of 5.0 throughout the eight-week assessment period.

Evaluation of Quality Characteristics of Korean and Chinese Frozen Chopped Garlic (국내산 및 중국산 냉동 다진 마늘의 품질 특성 평가)

  • This study investigated quality characteristics of commercial frozen chopped garlic. We collected six kinds of commercial frozen chopped garlic, four of which were domestic and the remaining two made in China. The moisture contents and drip loss of domestic frozen chopped garlic were significantly lower than those of Chinese garlic. Drip loss was positively correlated with moisture content (r=0.918, P<0.01). Total pyruvate contents of frozen chopped garlic ranged from $118.69{\pm}5.97{\sim}224.81{\pm}9.92{\mu}mol/g$ in domestic garlic and $75.27{\pm}5.91{\sim}79.35{\pm}1.79{\mu}mol/g$ in Chinese garlic. Allicin contents of frozen chopped garlic ranged from $8.91{\pm}0.34{\sim}13.09{\pm}0.35mg/g$ in domestic garlic and $5.91{\pm}0.08{\sim}6.05{\pm}0.27mg/g$ in Chinese garlic. Total thiosulfinate content of commercial frozen chopped garlic ranged from $0.60{\pm}0.07{\sim}1.33{\pm}0.12$ optical density/g. Total thiosulfinate content of commercial frozen chopped garlic was positively correlated with allicin content (r=0.892, P<0.01). Flavor patterns of commercial frozen chopped garlic measured by an electronic nose showed no difference between domestic and Chinese garlics.

Physicochemical and Textural Properties, and Antimicrobial Effects of Low-fat Comminuted Sausages Manufactured with Grapefruit Seed Extract (자몽 종자 추출물을 첨가한 저지방 세절 소시지의 이화학적, 조직적 특성 및 향균 효과)

  • This study was conducted to evaluate physicochemical and textural properties, and antimicrobial effects of low-fat comminuted sausages manufactured with sodium lactate $(3.3\%,\;SL)$ and various levels $(0.1\~0.3\%)$ of grapefruit seed extract (GSE, DF-100) during refrigerated storage for 10 weeks. Low-fat comminuted sausages (LFCS) has pH ranges of $6.09\~6.26,\;74\~76\%$ moisture, $<3\%\;fat,\;16\~17\%$ protein. The addition of SL $(3.3\%)$ and GSE with various levels $(0.1\~0.3\%)$ didn't impair water holding capacity (WHC), vacuum purge (VP) and Hunter color values (L, a, b). LFCS containing SL $(3.3\%)$ increased hardness and chewiness, whereas most TPA values were not affected by the addition of various levels $(0.1\~0.3\%)$ of GSE. LFCS containing $0.2\%\;or\;0.3\%$ GSE retarded the microbial growth of Listeria monocytogenes(LM). The addition of $0.3\%$ GSE in LFCS showed similar antimicrobial effect to $3.3\%$ SL, which kept $10^3 CFU/g$ until 10 weeks of refrigerated storage. Yellowness, VP and cohesiveness tended to be increased with increased storage time. These results indicated that the addition of $0.3\%$ GSE as a replacer for synthetic particularly paI1icuiarly inhibited the microbial growth of LM, resulting in antimicrobial effect similar to those of $3.3\%$ SL treatment without quality defects.

Comparison of the Quality Characteristics of Korean Native Black Pork and Modern Genotype Pork During Refrigerated Storage (재래종 흑돼지육과 개량종 돼지육의 냉장저장중 품질비교)

  • This study was carried out to compare the quality characteristics including aroma compounds and pattern of M. Biceps femoris from Korean native black pigs (70kg, 6 months, KNP) and modern genotype pigs (103kg, 6 months, Landrace×Yorkshire, MGP) during vacuum-storage at 2±0.2℃ for 12 days. KNP had high contents of crude protein and ash, but low content of moisture as compared to MGP (p<0.05). KNP showed lower pH and higher cooking loss than MGP (p<0.05) during storage. CIE a* and b* values of KNP significantly higher during storage as compared to those of MGP (p<0.05). TBARS value of KNP significantly increased after 8 days as compared to that of MGP (p<0.05). Shear force value of KNP was higher than that of MGP until 8 days (p<0.05). Volatiles by SPME-GS/MS was slightly different between KNP and MGP, but aroma pattern by electronic nose was not different. Therefore, KNP had redder and darker color, higher cooking loss and harder texture than MGP. The sensory quality of KNP was better than those of MGP (p<0.05), although aroma characteristics by instruments were not different between KNP and MGP.

Comparison of Quality Characteristics Between Meat Ball Products in Korean Domestic Market (국내시판중인 완자제품의 품질 특성 비교)

  • This study compared the quality characteristics between meat ball products in domestic market. Five types of meat ball products(T1, T2, T3, T4 and T5) were purchased in domestic market. In terms of the chemical composition, meat ball products ranged 53.92~63.45% in moisture contents. In terms of quality characteristics, T2 showed a significantly higher pH value and cooking loss than the others (p<0.05). In terms of deformation rate, T2 showed a significantly higher contraction of height than the others (p<0.05). In the panel test, T1 showed a significantly higher score in saltiness, flavor, color, appearance and total acceptability (p<0.05). Overall, meat ball products showed considerable differences in chemical composition, cooking loss, Hunter color values, and texture profile due to differences in raw materials, recipes, and weights.
