염절임 가지의 저장방법에 따른 물성 및 일반성분의 변화

  • 본 연구는 수출방법의 개선과 절임 가공식품의 개발하고 일본 수출용으로 재배하고 있는 가지 품종의 최적 염절임 방법과 더불어 절임가지의 저장중에 물성 및 일반성분의 변화를 조사하였다. 절임가지의 명도와 황색도는 저장기간이 길어질수록 모든 조건에서 증가하지만, 진공포장한 절임가지의 명도와 황색도는 침지 저장한 것에 비해 변화 정도가 작았다. 절임가지의 염도는 절임 초기에는 축양 품종과 시키부 품종에서 각각 24.67, 20.27% 이었으며, 진공포장한 것은 저장 5일 이후에는 변화가 없었으나 침지 저장한 것에는 저장 중에 계속 감소하였다. pH의 변화는 품종과 저장방법에 관계없이 저장중에 감소하였으며, 수분함량은 절임중에 급격하게 감소하여 축양 품종과 시키부 품종에서 각각 79.93, 82.56% 이었으며, 진공 포장하여 저장한 절임가지에서는 5일째에 증가하였고 이후에는 변화가 없었으나, 침지 저장 방법에서는 두 품종 모두 15일까지 증가하였다. 또한 수용성 단백질 함량의 변화도 수분함량의 변화와 비슷하였다. 비타민 C의 함량은 생가지 보다 두 품종 모두 최적조건으로 염절 임 한 가지에서 높아 축양 품종과 시키부 품종에서 각각 21.41, 24.53mg/100g 이었으며, 저장기간 동안 그 함량이 감소하였고, 진공포장 저장한 방법이 침지 저장한 방법에 비해 감소하는 경향이 적었다. 저장기간에 길어질수록 나트륨과 마그네슘의 함량은 감소하였으나 반대로 칼륨의 함량은 증가하였고 특히 침지 저장한 방법에서 이와 같은 변화가 두드러졌다. 두 품종의 절임가지의 저장방법과 저장기간에 따른 물성 및 성분의 변화를 조사한 결과, 진공포장하는 것이 절임가지의 품질 유지할 수 있는 것으로 생각된다.부로 유출되어 균체의 생육이 억제되며 성장을 저해 또는 사멸시키는 것으로 나타났다. 대장균수는 우유, 달걀 및 콩나물의 모든 처리구에서 BAAG의 첨가에 의해 성장이 억제되었으며 농도가 증가시킬수록 균증식 억제 효과가 뚜렷하였으며, 총균수도 압도적으로 낮은 간을 보여주었다. 달걀의 조단백함량의 변화는 BAAG를 처리하지 않은 무처리 대조구에 비하여 침지 처리한 경우가 조단백 변화가 크지 않았다. 즉, BAAG의 침지 처리한 경우, 저장기간 14일이 경과 한 후에 10%정도의 수준으로 감소한데 반하여, 무처리구인 대조구의 경우, 23%수준으로 감소 증도가 증가하였다. 외관상의 변화와 상품 가치를 측정한 결과는 달걀의 경우, 14일이 경과후에는 무처리 대조구에서 흰자위의 감소와 노른자위와의 경계가 뚜렷하지 못하여 상품으로서의 가치가 크게 떨어진 상태였다. 우유의 경우에는 4$^{\circ}C$와 2$0^{\circ}C$에 저장된 대조구에서는 각각 3일과 12일경과 후 강한 부패취와 아울러, 표피의 갈변정도가 심하되어 관능적으로 부패상태를 인지할 수 있었다. 콩나물의 경우도 저장3일 경과 후에 부패취와 함께 점질성 갈변물질이 생성되었다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 농산물 식품원료에 적용하여 선도유지 기간을 연장할 수 있는 효과를 기대할 수 있었다. 과일 등의 포장제로서 이용할 가능성을 확인하였다.로 [-wh] 겹의문사는 복수 의미를 지닐 수 없 다. 그러면 단수 의미는 어떻게 생성되는가\ulcorner 본 논문에서는 표면적 형태에도 불구하고 [-wh]의미의

Studies on the Mulberry Variety "Yongchonppong"(Morus alba L.) II. Increasing Effect of Mulberry Leaf Value for Food by Cover Rearing with Vinylon Gauze (용천뽕에 관한 연구 II. 한랭사 피복사육에 따른 용천뽕(Morus alba L.)의 사료가치)

  • Yongchonppong is liable to withering of leaf and it is lowering leaf value for the feed. In this respect, covering of the vinylon gauze over the feed has been carried out in the branch rearing system to sustain leaf value as itself. The covering of the vintlon gauze over Yongchonppong marks 7% and 9% increment of cocoon yield in dry season, spring rearing season, as compared to the non-covering of the vinylon gauze over Kaeryangppong and Yongchonppong, respectively. There was no significant differences in cocoon shell percentages of them. In more humid environment than average relative humidity in Korea the rearing results of "Yongchonppong" was improved by covering with vinylon gauze after feeding compared with the non-covered rearing. However, the vinylon guage covering was not effective for improving the rearing results of "Kaeryangppong". No effect of the vinylon gauze covering was seen in the area where it frequently rains and raining season lasts. In case of the non-covering of the vinylon gauze, Yongchonppong reduces repidly in the first three hours of exposure to the air, as compared to Kaeryangppong. The water content reductions rate of Yongchonppong in 6 hours of exposure to the air marks 7% to so when the dry vinylon gauze cover and 17 to 26% when the wet vinylon gauze covers, as compared to 58.8% of it for the noncovering of the vinylon gauze.f the vinylon gauze.

Change of Weeds Occurrence, Growth and Yield of Foxtail Millet Cultivation by Polyvinyl Chloride Removing Time (조 재배 시 피복비닐 제거시기에 따른 잡초발생과 조의 생육 및 수량 변화)

  • Weeding measures is an important issue for cereal crop because weed is superior to crops in early growth stage and there are not many herbicides applicable to cereal crop. Since the concern about well-being and eco-environmental products are increasing, cultivation with polyvinyl chloride (PVC) is needed. Five treatments included as weed-free, control (not remove weed) and covering with polyvinyl chloride removed 20, 30, 40 DAS (day after seeding). At removing PVC, plant height did not differ depending on the growth stage. However, weed-free plot by weed competition were somewhat short. And, removing PVC accelerated the earlier by 2-3 day than weed-free plot. Soil moisture which removed from the control was higher than 20, 30, 40 DAS and weed-free, and it was kept low by evaporation. The chlorophyll meter of weed-free plot was 34.3, 30 DAS was 40.6 at heading time. Weed-free showed that increased in weed population $300.8g\;m^{-2}$. Weed control value of 20 DAS, 30 DAS, 40 DAS were 86.5%, 84.0% and 74.8%, respectively. In 30 DAS, yield of foxtail millet according to treatment of removing PVC were $355kg\;10a^{-1}$. At weed competition early in 30 DAS, the removing PVC was good for control. Thus, 30 DAS was judged to be suitable.

Effect of BA and GA on Embryo Germination from Ovule Culture in Intergeneric Hybrids between Brassica and Raphanus (배추와 무의 속간 잡종육성을 위한 배주배양시 배 발아에 미치는 BA와 GA의 효과)

  • Intergeneric crosses over 34 cross combinations between genus Brassica and Raphanus were made. Ovules taken out of crossed were cultured on MS media supplemented with 1.0 mg/L GA and BA. Germination of embryo from ovule culture was not influenced by BA and GA in medium but by parental characters in its cross combination. Use of Raphanus sativus cv. Daibyosobudore and Jungkukcheongpi showed low embryo germination when they were used as male part. Cross combination with Brassica juncea as male parent showed slightly increased germination compared to other cross. These results indicated that embryo germination in ovule culture was not much influenced by casein hydrolysate, malt extract, BA, kinetin and glutamine in the medium, but parents in combination were key factor for increasing embryo germination.

Effect of Extracts from Acanthopanax senticosus and Eucommia ulmoides on Shelf-Life and Quality of Wet Noodle (가시오가피와 두충 추출 혼합물 첨가에 의한 생면의 저장성 및 품질 증진 효과)

  • This study examined the shelf-life and quality characteristics of the wet noodle added with the Acanthopanax senticosus and Eucommia ulmoides extract (AEE). The wet noodle with AEE reduced total microbial counts and TBARS value compared with the control during storage at $4^{\circ}C$ for 21 days. Moisture content of the wet noodle with AEE and control was not different during the early storage period, but after 9 days of storage, that of the control was decreased about 7%, while that of the noodle with AEE was decreased slightly. Lightness of the wet noodle with AEE showed low value in uncooked and cooked noodles compared with the control and decreased during storage. The pH and texture of the wet noodle with AEE and control did not change during storage at $4^{\circ}C$ for 21 days. In sensory evaluation, texture, soup smell and springiness of the wet noodle with AEE were preferred than the control. These results suggested that the AEE can keep the quality characteristics and increase the shelf-life in the wet noodle.

The Effect of Bulking Agent on Quality of Kiwifruit Powder in the Process of Domestic Kiwifruit Tenderizer (국내산 키위연육제 제조과정 중 부형제의 첨가가 키위분말의 품질에 미치는 영향)

  • Development of tenderizer using domestic fruits was studied. Kiwifruit was dried using various methods, and the quality of kiwifruit powder was observed during 12 week storage. Frozen kiwifruit was prepared in paste, dice, and whole flesh. After drying, paste-type kiwifruit showed 2.0 and 1.3 times higher proteolytic activity than dice and whole flesh kiwifruits, respectively. Nine hour of hot-air drying or 46 h of freeze-drying eliminated more than 90% of water from kiwifruit, during which discoloring of kiwifruit occurred. Freeze-dried powder showed 6.6 times higher yield and proteolytic activity, and resulted in almost no discolorization than those of air-dried powder. Addition of bulking agent affected the quality of hot air-dried kiwifruit powder, except color, resulting in $3.2{\sim}3.6$ times higher proteolytic activity than that without bulking agent, which is comparable to 60% of the initial freeze-dried powder content. Moisture content of kiwifruit powder with bulking agent sustained consistently during 12 week storage, whereas proteolytic activity decreased for the first 4 weeks. Freeze-drying is a preferable method to produce kiwifruit powder for tenderizer, although hot air-drying with bulking agent treatment is more economical.

Cryopreseryation and Germination of Native Aquilegia Species Seeds by Predehydration Treatment (건조 전처리에 의한 자생 Aquilegia속 식물 종자의 초저온 저장과 발아)

  • Predehydration effects for cryopreservation in -196$^{\circ}C$ liquid nitrogen were studied in Korean native Aquilegia buergeriana var. oxysepala Kitamura and A. flabellata var. pumila Kudo seeds. Aquilegia species seeds were adjusted to moisture contents between 3.2 and 9.7% by air dry treatments. Seeds were placed in paper envelopes after submerged in liquid nitrogen and rewarming in 38 $^{\circ}C$ water. Seeds moisture contents by duration of drying were identified as controlling factors in the survival of Aquilegia species seeds for cryopreservation. Aquilegia species seeds having approximate 5% moisture content were able to withstand cooling to -l96$^{\circ}C$. Undehydrated seeds of Aquilegia buergeriana var. oxysepala Kitamura after being cryopreservated in liquid nitrogen have a 10.9% of moisture content and show 52.5% in germination. But, Aquilegia buergeriana var. oxysepala Kitamura seeds dehydrated by drying for 60 min. to have 6.0% of moisture content before cryopreservation show 84.7% in germination test. Properly dehydrated seeds after being stored in liquid nitrogen showed over 60% in germination rate and also shows an uniform sprouting time,11~13 days in average. Any morphologically deformity in germinating beds has not been observed. Results from this study suggest that Aquilegia species seeds can cryopreservation in liquid nitrogen if the seed moisture content is controled by a proper amount of dehydration.

Effect of Seed Moisture Content on Seed Storage of Dehisced Ginseng Seeds (종자 수분함량에 따른 개갑 인삼 종자의 저장성 연구)

  • Ginseng (Panax ginseng C.A. Meyer) is a perennial plant and propagates by seeds, and those need after-ripening for germination. To be ready for climate change and to ensure a stable seed supply, the technique for storing seeds in short-term and long-term in large quantities is required. In this study, dehisced ginseng seeds from two locations, batch #1 and batch #2, were stored at -3.5℃ with different moisture content, and after 3, 15, and 27 months of storage, the percentage of radicle emergence and shoot emergence were measured. After 3 months, radicle emergence and shoot emergence were normal only when the seed moisture content was more than 35%, and overall, germination was higher in batch #2 than in batch #1. After 15 months, the partially dehydrated seeds, with a moisture content between 45 to 54%, showed the highest germination rates, and most of the undried seeds were spoiled and failed to germinate. Seeds with moisture content lower than 25% had poor germination, too. The partially dehydrated seeds also succeeded in germination and growth in the soil after 15 months of storage, but deteriorated after one more 1 year, too. In summary, ginseng seeds look like have temperate recalcitrant seed characteristics, and partial dehydration allows extension of seed longevity.

Quality Characteristics of the Simple Preprocessed Food Julienne White Radish and Pear during Storage and Development of a Standard Recipe (단순 가공 식품재료 활용을 위한 혼합무배생채의 저장기간에 따른 품질특성 및 레시피 기준 설정)

  • This study was carried out to investigate the quality characteristics and microbiology of the simple preprocessed food julienne white radish and pear during storage at $4^{\circ}C$ and fordevelopment of a standard recipe. Total aerobic bacteria level were $3.20{\pm}0.08$ log CFU/g in julienne white radish and pear, and $3.00{\pm}0.14$ log CFU/g in julienne white radish (control). Coliform counts were $3.20{\pm}0.08$ log CFU/g in julienne white radish and pear and $1.84{\pm}0.17$ log CFU/g in julienne white radish. Low levels of coliform and total aerobic bacteria were detected. pH values of julienne white radish and pear increased significantly after 3days, whereas that of control increased significantly after 1day. Lightness and redness decreased during storage, whereas yellowness increased significantly during storage. During storage, hardness of julienne white radish and pear decreased after 3days, whereas that of julienne white radish decreased after 5days. According to sensory evaluation, 70% julienne white radish and 30% julienne pear showed higher score in term of taste, harmony of ingredient, harmony of sauce and overall preference. Consequently, 70% julienne white radish and 30% julienne pear was determined to the best formula and a maximum storage period of 3 days was showned to be optimal.

A Study on Changes of Physico-Chemical Properties of Plow Layer Soil and its Response of Tobacco Growth under Poly Ethylene Film Mulching Condition. -1.   • Under the field condition mulched by polyethylene film, changes of the soil moisture content and soil temperature due to the meteorological influence, which have had a great effect upon productivity of upland - field crop, was investigated. The results obtained were as follows; 1. During the early growth stage from the first part of April to the last part of May, soil temperature at 15cm below the mulched surface of ridge (13:00) was about $5^{\circ}C$ higher than that of non-mulched plot. 20 days earlier than normal soil temperature reached up to $20^{\circ}C$ due to the mulching. The increasing of soil temperature resulted from poly ethylene film mulching had a similar tendency for the annual experiment of 3 years (1982-1984). 2. Changes of the soil moisture content in the plow layer during the growing season was remarkably less in the mulched plot than in the non-mulched plot due to suppression of evaporation by polyethylene film. 3. Soil moisture contents of the plots planted with tobacco was lower than those of the non-planted plots owing to the more transpiration induced by growing of the tobacco plant. As the results, it was refered that initial fresh weight of above ground part of tobacco that had an influence upon the consumption of soil moisture by the transpiration rather than evaporation was about 250g per plant. 4. At the appreciable amount of rainfall (for instance; 63.5mm), soil moisture content at middle place between plants in the plow layer of the mulched plot was not increased owing to the infiltration interruption by polyethylene film. 5. By the comparatively small amount of rainfall (e.g. 20mm) after the drought period, leaf water potential of the mulched plot was not increased as much as that of the non-mulched plot owing to the less moisture content of soil resulted from interruption of rainfall.
