A Study on Dietary Habits and Nutrient Intakes by Skipping Meals of Elementary School Children in Incheon (인천 지역 초등학생의 결식에 따른 식습관과 영양 섭취 상태에 관한 연구)

  • The purpose of this study was to analyze the relations of children's skipping meals after researching eating habits and lifestyle, parents' appreciation in nutrition behavior and dietary intake, throughout the research based on 4th to 6th grade students, total of 362 children at an elementary school in Inchoen. There were 104 students in skipping meals group and 258 students in eating meals group, with the average ages of 10.9, and 10.8, respectively. The average height and weight were 144.5 cm, 38.6 kg for skipping meals group, and 145.7 cm, 39.3 kg for eating meals group. Parents' appreciation of importance in breakfast showed a significant difference in whether children skip the meals or not (p<0.01). 43.7% of parents in skipping meals group answered that they serve breakfast everyday, compared to eating meals group with the percentage of 94.9%, showing significant difference in frequency of serving breakfast for their children (p<0.001). The skipping meals group answered that the reason they do not have breakfast is because they do not have time, which showed the highest percentage of 41.2%. For the eating meals group, 40.5% of students answered that they do not have appetite, which also showed difference (p<0.001). The skipping meals group tended to wake up later than those who have breakfast in the morning(p<0.01). The breakfast time for skipping meals group was later than the eating meals group, and according to whether they have breakfast of not, it showed a difference as well(p<0.01). Total score of nutrition attitude in skipping meals group and eating meals group were 30.8 and 32.1, showing that eating meals group showed more good in nutrition attitude (p<0.05). Daily intakes of energy (p<0.01) and protein (p<0.01) in skipping meals group were significantly lower than those in eating meals group. Skipping meals group bad lower rates in INQs of protein (p<0.01) and zinc (p<0.01), showing that skipping meals group is having low quality meals in nutrition. In conclusion, this study revealed that students with skipping meals are more likely to have meals that lacks nutrition or have low quality meals, and the time of rising hour in the morning, frequency of eating snacks can also affect whether or not they skip meals.

Functional Bakery Impact on the Degree of Motivation to Purchase Consumer Attitudes and Buying Intention - Focused on Busan - (기능성 베이커리 구매동기가 소비자태도 및 구매의도에 미치는 영향 - 부산지역을 중심으로 -)

  • This study examined the factors that affect the relationship among functional bakery purchase motivation, consumer attitudes, and purchase intention. A total of 230 questionnaires were distributed to the consumers, of which 210 were deemed suitable for analysis after the removal of 20 unusable responses. In order to perform statistical analyses required in current study, SPSS 18.0 statistical program was employed for frequency analysis, factor analysis, and reliability analysis, Correlations, regression analysis. The results of exploratory factor analysis showed that four factors regarding local specialties purchase motivation were extracted from all measurements with a KMO of 0.735 and a total cumulative variance of 65.759%, with regard to consumer attitudes, one factors were extracted with a total cumulative variance of 72.421% and a KMO score of 0.684. One factor for purchase intention was extracted that accounted for a total cumulative variance of 67.139% and a KMO score of 0.683. All factors were significant and the correlation between variables was significant as well. Thus, based on the results, the main research hypothesis that identifies the relationships purchase motivation between consumer attitudes and purchase intention were partially adopted.

Quality Characteristics of Korean Wheat Bread Prepared with Substitutions of Naturally Fermented Rice Starters (쌀 천연 발효액종을 첨가한 우리밀 식빵의 품질특성)

  • In this study, rice was used with naturally fermented extract to compare and analyze the physico-chemical characteristics and investigated how to make pan bread made with domestic wheat flour added with naturally fermented rice extract. Also, it examined quality characteristics of pan breads prepared with 0, 10, 30, 50, 70% naturally fermented rice starters. As the fermentation time of rice starters increased, pH of bread doughs decreased. On farinograph, water absorption, development time and stability of rice starters samples were lower than the control. RVA(Rapid Visco Analyzer) analysis showed that wheat flour retrogradation was retarded by increasing rice starters content. The weights of pan breads containing rice starters were higher than that of control. The moisture content of pan breads containing rice starters decreased as storage time increased. In analyzing of visible mold colony during 7 days of storage at $28^{\circ}C$, pan breads containing rice starters was retarded mold growth. In the texture analyzer measurement, hardness of breads containing rice starters significantly increased as storage time increased, which was higher than that of control. The result of sensory properties was no significant difference between the group containing 50% naturally fermented rice starters and control group, such as appearance, flavor, taste and overall quality.

A Study on Artificiality Salivary pH and Sugar Fermentation Test of Caries Potentiality Foods (우식유발식품에 의한 인공타액내 pH 변화와 당 분해 효소 활성에 관한 연구)

  • This study was designed to provide basic data for developing a standardized caries potentiality index to help to choose snack foods with a low score on the index by investigating adolescents' snack intakes and measuring them in total saccharinity, pH, and acidogenic potential and glucosidase activity of Streptococcus mutans (S. mutans). Total 28 snack foods were selected and measured for total saccharinity (Pocket refractometer PAL-1, ATAGO) and pH with a pH meter (Mentor, Seoul, Korea). Artificial saliva was added to each sample. The experiment group was administered with S. mutans (ATCC 3692), cultured in a constant temperature incubator at $37^{\circ}C$, and measured for pH changes over five times including after 10 minutes, 30 minutes, 1 hour, and 24 hours. Each sample of 0.3 ml was added to tubes containing sucrose, galactose, or glucose to measure the glucosidase activity of S. mutans. They were then observed for glucosidase activity with colorimetry after 24 hours of culture in a constant temperature incubator at $37^{\circ}C$. The mean pH by the acidogenic potential of S. mutans was pH 5.33. The experiment group dropped in pH more than the control group due to the increasing acidogenic potential of S. mutans by glucosidase activity, recording pH 5.27 after 10 minutes, pH 5.21 after 30 minutes, pH 5.15 after 1 hour, and pH 4.80 after 24 hours. The observation results of glucosidase activity of S. mutans with colorimetry show that most of the samples were positive in orange and yellow with glucose, sucrose, and glactose recording activity of 78.58%, 75%, and 71.42%, respectively.

Quality Characteristics of White Bread added Modified Starch (변성 전분을 첨가한 식빵의 품질 특성)

  • The textural properties of breads containing midified starches such as pregelatinized waxy corn starch, acetylated potato starch and hydroxypropylated tapioca starch, were investigated to determine the optimum addition level of modified starches. Effects of modified starches on dough properties were investigated through a farinogram and amylogram based on the different additional levels of modified starches (3%, 6%, 9%, 12% and 15% of flour content). Moisture contents and firmness values were measured to investigate the degree of retrogradation at 0 h, 36 h and 72 h after production. The levels of moisture contents were highest upon addition of pregelatinized waxy corn starch followed by acetylated potato starch and lowest upon addition of hydroxypropylated tapioca starch. Overall, higher moisture contents resulted in lower firmness levels. The preference scores by type of modified starch were highest upon addition of 9% hydroxypropylated tapioca starch, 3% pregelatinized waxy corn starch, and 6% acetylated potato starch, respectively. Preference scores were significantly correlated with textural properties such as volume, absorption, stability and weakness (p<0.01).

Local Food Specialties Tourism Quality, Value Perception, and Consumer Behavior Intention: Gyeongju Specialties Bread (관광지역 특산물의 메뉴품질, 가치지각, 행동의도와의 영향관계 연구: 경주 특산물 빵을 중심으로)

  • This study examined the factors that affect the relationship among local specialties food quality, value perception and customer behavioral intention. A total of 280 questionnaires were distributed to consumers, of which 268 were deemed suitable for analysis after the removal of 12 unusable responses. In order to perform statistical analyses required for the study, SPSS 18.0 Statistical Program was employed for frequency analysis, factor analysis, and reliability analysis. The results of the exploratory factor analysis showed that three factors regarding local food specialties quality were extracted from all measurements with a KMO of 0.827 and a total cumulative variance of 65.638%. With regard to value perception, six factors were extracted with a total cumulative variance of 59.855% and a KMO score of 0.782. One factor for behavioral intention was extracted that accounted for a total cumulative variance of 64.427% and a KMO score of 0.757. All factors were significant to 0.000 and the correlation between variables was significant. Thus, based on the results, the main research hypothesis that identifies the relationships between value perception and behavioral intention was partially adopted.

  • In the present society, our current technology associated with bakery industry has been improved as much as technical development can get abreast of the Western one where the bread has originated and has been awarded and ranked in the highest level of many bakery or pastry competitions. In these trends, many people are running for high value added business such as bakery industry and bakery $caf{\acute{e}}$, etc. with big interest. However, high labor cost of technician and difficulties in human resource management become obstruction factors in the growth of the bakery industries. Therefore, in this paper, the designed system for both dividing and rounding dough quickly and exactly at the same time was studied. The main function of this system is to divide the original dough into 3 tracks and then, to place 4 doughs in the inner track, 12 doughs in the mid track, 20 doughs in the outer track, totally 36 doughs in a routine. It takes much energy because 36 doughs can be completed in a routine. Therefore, this system uses hydraulic pressure and a 0.75Kw induction motor is used for dough rounding. This system can make primarily fermented dough into 36 divided doughs very quickly and exactly on a guide panel at the desired weight by dividing it within 1-9 seconds and by rounding each within 1-9 seconds. This system is very effective in bakery industry to minimize labor cost and it is expected to supply more hygienic products to the customers.

Estimation of Daily Dietary Intake of Food Red Colors - Food Red No.2, No.3 and No. 40 - (식이를 통한 식품첨가물의 섭취량에 관한 연구 - 식용색소적색제2호, 적색제3호 및 적색제40호를 대상으로 -)

  • This study was carried out to measure the amount of daily intake on three synthetic food red colors (Amaranth: R2, Erythrosine: R3, Allura Red: R40) in foods by Korean. Analysis of three synthetic food red colors was conducted by HPLC with the foods including bread, confection, candy, alcoholic beverage, soft drink, ice cream, chocolate, and chewing gum. Recovery rates from the known concentrations of three standard food red colors which were spiked into foods were ranged from 85.1 to 100.4 (%) for each foods. Total Estimated Daily Intake (∑EDI) was from 0 to 1.632 mg/kg bw/day for each food item and from 0.512 to 7.281 mg/person/day for ages (1∼over 65 years old). The data of average food intake for each food item per person per day were obtained from the report of Korean National Nutrition Survey conducted by the Korea Ministry of Health and Welfare in 2001. Total EDI of each red colors per person per day were showed as follows; 0.742 mg/kg bw/day for R2, 0.391 mg/kg bw/day for R3 and 2.018 mg/kg bw/day for R40 as total amount respectively, and the ranges of these values were 0.5∼7.1% of FAO/WHO's Acceptable Daily Intake (ADI) values. Therefore, the amount of daily intake of three synthetic food red colors in Korea was regarded as safe.

Quality Characteristics of Sea Tangle Single Cell Detritus (SCD) Manufactured by Vibrio sp. Isolated from Batillus cornutus (소라에서 분리한 Vibrio균으로 제조한 다시마 Single Cell Detritus(SCD)의 품질특성)

  • Obtaining powder form of seaweed is essential for the use of seaweed as a food additive. The deterioration of seaweed caused by high temperatures during homogenization and powder processing is a serious problem and limits the use of seaweed as a food or pharmaceutical ingredient. Furthermore, many powder particles are not fluidized very well because of the interaction between particles. In order to solve this problem, sea tangle was hydrolyzed to a level of single cell detritus (SCD) by Vibrio sp., isolated from Batillus cornutus. with strong hydrolytic activity. The crude protein and amino acid contents of sea tangle SCD were higher than those of the powder, whereas the reverse was true for ash content. Sea tangle powder contained more mineral than its SCD, whereas total amino acid content was 5 times more in SCD than in power. The anticancer activities of sea tangle SCD and powder were 31.20 and 29.07%, respectively, with no significant difference (p<0.05), but about 15% higher than that of the control. The ACE inhibitory activity of the sea tangle powder, 39.31%, was higher than the 26.07% of the SCD. The antithrombin activity of the sea tangle powder, 55.3 seconds, was higher than the 34.5 seconds of the SCD. Moreover, there was no antioxidative and ischemic activities in both tile sea tangle powder and SCD.

Effects of Temperature, Salinity and Diet on the Productivity of the Cyclopoid Copepod, Apocyclops royi (수온, 염분 및 먹이에 따른 기수산 cyclopoid 요각류, Apocyclops royi의 생산력)

  • The productivity of cyclopoid copepod, Apocyclops royi fed by various diets (Isochrysis galbana, Tetraselmis suecica, Phaeodactylum tricornutum, concentrated freshwater Chlorella and baker's yeast) was investigated at tile different temperatures ($16-36^{\circ}C$) with different salinities (5-34 ppt). A. royi was cultured in 6 ml vessels (12 wells culture plate). Total production (188 inds.) and daily production (13.4 inds.) of nauplii by A. royi female at $32^{\circ}C$ were significantly higher than those of nauplii at the different temperatures (P<0.05). Development time from nauplii to copepodite and from nauplii to adult tended to increase with increasing water temperature up to 32. And total production (169 inds.) and daily production (9 inds.) of nauplii by A. royi female at 10 ppt were significantly higher than those of nauplii at the different salinities (P<0.05). The fastest development time from nauplii to copepodite and from nauplii to adult was observed at 10 ppt and 15 ppt, respectively (P<0.05). The highest total production of A. royi nauplii and fastest development time from nauplii to adult were obtained in females fed Isochrysis galbana (P<0.05). These results may indicate that the optimum culture temperature and salinity for A. royi are $32^{\circ}C$ and 10 ppt, respectively, and Isochrysis galbana is one of the suitable diets for this copepod.
