Oxidative Changes in the Ramyon(deep fat fried instant noodles with palm oil) Lipids during Storage (저장중(貯藏中) plam유(油)로 유열처리(油熱處理)한 라면 유지(油脂)의 산패(酸敗))

  • Ramyon(deep fat fried instant noodle with palm oil) preserved in sunlight, room temp. ($20{\pm}5^{\circ}C$), incubator ($30{\pm}2^{\circ}C$) and corrugated fiber board box to investigate the oxidative changes of the Ramyon lipids. In the study, changes in acid value, peroxide value, carbonyl value, TBA value, fatty acid composition, iodine value and panel test were determined with the lipids extracted from the Ramyon samples in intervals for a period of 20 weeks. Acid value, peroxide value, carbonyl value and TBA value of the Ramyon lipid were increased slightly during the storage in aluminum foil package in the corrugated fiber board box in the dark room. They did not appear the oxidative rancid odor at the end of 20 weeks storage. Acid value, peroxide value, carbonyl value and TBA value of the samples under room temp., incubator slightly during storage, while a sharp increase of those values were noticed with the samples of sunlight. Especially, the TBA value of the Ramyon lipid under sunlight markedly increased within 14 weeks and then decreased. Oxidative rancid odor appeared at the end of 10 weeks storage under sunlight, while it took 18 weeks with the sample stored under room temp. and incubator. During the storage under incubator and sunlight for 18 weeks, the content of oleic, linoleic acid decreased, while palmitic and stearic acid increased. However, only small changes were noticed in iodine value of the samples.

Quality Characteristics of Southeast Asian Salt-Fermented fish Sauces (동남아산 액젓의 품질특성)

  • To investigate quality characteristics of southeast asian salt-fermented fish sauces, various chemical properties were examined against 13 kinds of southeast asian salt-fermented fish sauces. The range of chemical compositions were $60.6{\~}72.8{\%}$ moisture, $18.2{\~}25.8{\%}ash,\;0.9{\~}13.7{\%}$ crude protein and $14.1{\~}338.6\;mg/100 ml$ VBN. The pH and salinity were $4.66{\~}5.91,\;24.1{\~}30.6{\%}$, respectively. Total nitrogen, amino nitrogen, total free amino acid, and total ATP related compounds (sum of $ATP{\~}IMP$, HxR, Hx and uric acid) were in the ranges of $0.140{\~}2.199g,\;115.4{\~}1,643.0 mg,\;46.4{\~}9,056.3\;mg\;in\;100 ml,\;and\;0.829{\~}9.564 {\mu}mol\;in\;1\;ml$, respectively. Southeast asian salt-fermented lish sauces were rich in tree amino acids, such as glutamic acid, Iysine, leucine, alanine, aspartic acid, valine and isoleucine in the order.

Phylogeny of the subfamily Salmoninae distributed in Korea based upon nucleotide sequences of mitochondrial ribosomal RNA genes (미토콘드리아 ribosomal RNA 유전자 염기서열분석에 의한 한국산 연어아과 어류의 유전적 계통도)

  • Complete senuences of the mitochondrial rRNA Benes were determined among six salmonines in Korean Waters (Brachpmystax lenok, Onoorhpchus keta, O. masou mason, O. mason ishikawae, O. mykiss, and albino mutant of O. mykiss). The purposes of this study were to provide the basic information on levels of mtDNA polymorphism among these species for genetic characterization; discuss phylogentic relationships among three Oncorhynchus sepecies; demonstrate the utility of rRNA gene sequence data as a genetic marker for disringuishinf among Korean salmonines. PCR/direct sequencing data indicated the following consistent results; 1) 12S rRNA genes was 945 bases long in Oncorhynchus species, and 946 bases in B. lenot including one insertion. 2) Of sequence variation in mitochondrial rRNA regions, transitional substitutions were superior to transversion. 3) The significant differences were not shown in the intraspecific variation values in these gene regions. The percentage sequence divergence values were ranged from $0.066 to 0.212{\%}$. 4) The interspecific divergences were greater than the intraspecific variation. Nevertheless, ribosomal RMh genes were more conserved among species than the other mitochondrial genes, and they showed potentiality as an intergenic marker for systematics. In addition, phylogenetic trees, constructed from this data, supported that cherry salmon was closer to chum salmon than to rainbow trout, and that lenok was most distantly related species in six salmonid species.

Survey on pesticide usage for the development of pesticide use indicator in fruit vegetables (농약사용 지표개발을 위한 과채류 농약사용실태 조사분석)

  • Actual pesticide usage in fruit vegetable cultivation was surveyed. Usage trend of in of vidual pesticides was evaluated to provide the data for the development of indicators of environmental impact and the production of safe agricultural products. The amount of the pesticides used for fruit vegetables was revealed in order of fungicide> insecticide> herbicide, showing that the portion of fungicide to the total amount used was about 70 to 80%. Main fungicides used on fruit vegetables were mancozeb, thiophanate-methyl propineb, etc while the insecticides were imidacloprid, milbemectin, methomyl, etc. Main formulation types of pesticide were wettable powder and emulsifiable concentrate. By different fruit vegetables and cultivation patterns, pesticide use per unit area was revealed red pepper (field cultivation, 13.2kg/ha), cucumber (field cultivation, 12.4kg/ha), sweet melon (field cultivation, 11.2kg/ha) as high pesticide use crops, meanwhile, water melon (greenhouse cultivation, 1.2kg/ha), sweet melon (greenhouse cultivation, 2.2kg/ha), strawberry (field cultivation, 2.8kg/ha) as low pesticide use crops.

  • In order to get the actual pesticide usage data for fruit crops at farmer's gate, this survey was carried out on the growers of 6 representative fruit crops such as apple, citrus, grape, peach, pear and persimmon, in Korea. One hundred fifty farmers were selected in main production areas to record their pesticide usage during the growing seasons. Pesticides were sprayed in pear 15.2 times/year and persimmon 7 times/year. Pesticide input amount per unit for fruits was 39.5 for citrus, 22.1 for apple, 21.5 for pear, 11.9 for peach, 10.8 for persimmon and 6.7 a.i. kg/ha for grape, respectively. The amounts of pesticides sprayed in 2002 except for peach and pear tend to decrease compared with those in 1999. The major fungicides used were mancozeb, propineb, dithianon, etc., while the major insecticides were fenitrothion, chlorpyrifos, methidathion, etc. Total active ingredients of pesticides used for six fruit crops amounted to 18.3% of total sales amount of pesticides for horticulture in 2002. The amounts of pesticides sprayed on citrus, grape, peach and pear in Korea was less than those in U.S.A., excepting those in apple.

  • Sixty two lines of pepper including Korean local cultivars and introductions were planted out to the experiment farm of Kyungpook National University for seed increase, and 16 plant and fruit characters including days to flower were recorded. In days to flower, KC85(Chilgok Dongmyung) and KC116(PI308791), KC154(Cherry Sweet), and KC185(Choseongochu) were the earliest with 83 days, and KC139(Serrano chili) and KC103(PI297488) were the latest with 126 days. In fruit detachment force, KC85(Chilgok dongmyung) was the tenderest with 0.45kg and KC162(PI22444) was the toughest with 3.34kg. In powdery mildew incidence, KC10(Pimiento), KC23(PI224423), KC51(PI257044), KC56(PI257053), KC126(PI358812), KC119(PI322719), KC143(Emerald Giant), KC148(VR-2), KC163(PI224445), KC163(Papari Mild) were the least diseased. Anthracnose was least on KC39(Serrano Chili). Collection and introduction of pepper germplasm was continued. Fourteen Korean local cultivars and 25 foreign cultivars including 2 wild species were additionally collected or introduced.

Encapsulation of Pine Agaric ( Tricholoma matsutake) Flavor with Alginates (알긴산을 이용한 송이 향의 캡슐화)

  • Encapsulating 1-octen-3-ol with alginates solution, the effects of physical properties (viscosity, emulsion activity, emulsion stability) of alginates solutin on the retention of 1-octen-3-ol in capsules were investigated. Only alginates solutions haying less than 350 cP in viscosity were capable to be adopted to spray dry. Adding citric acid to alginates solution in order to reduce its viscosity, the concentration of citric acid became higher, the viscosity of alginates solution were lower. Adding $0.1\% of citric acid could reduce viscosity of alginates solution to 150 cP. The viscosity of alginates solution after emulsifying showed higher value than that of solution before emulsifying, but its viscosity were within the possible ranges for spray drying. The lower viscosity of alginates solution were, EAI became higher but ESI and amount of remaining 1-octen-3-ol in capsules were lower, In reducing the viscosity of alginates solutions, heating time after adding citric acid were longer, the their viscosity became lower. Differences of viscosity of alginates solution after and before emulsifying were little, In encapsulating raw pine agaric with alginates solution, the adding amount of soybean oil increased, the amounts of remaining 1-octen-3-ol in capsules increased. After freeze drying the amount of remaining 1-octen-3-ol in alginates capsules prepared with raw pine agaric was higher than that after cold air flow drying.

  • In this study, by using Landrock method modified by Yokozeki (1973) and Koizumi (1980), water activity ($a_w$) of various model preparations of Kamaboko was measured and ability of lowering $a_w$ of humectants added such as sodium chloride, sugars and polyols was discussed. The results were as follows : 1 The effect of sodium chloride on lowering aw was the highest among all of examined. When $4\%$ sodium chloride as humectant was added to the model Kamaboko, the $a_w$ was reduced to 0.94 or below. 2. Among the sugars, glucose was so effective that it lowered $a_w$ to 0.96 by adding $10\%$, but it would cause browning reaction on the Kamaboko surface. 3. Glycerin was the most effective among the polyols. When it was added by $10\%$, the $a_w$ of Kamaboko was reduced to 0.95. 4. It was more effective to decrease $a_w$ to lower moisture content of model Kamaboko.

  • 본 논문에서는 월드와이드웹상에서 3차원 인터페이스를 기술하는 표준 사양인 VRML과 자바의 EAI(External Authoring Interface)를 통하여 사용자 간에 발생하는 상호작용들을 동기화 시키는 방법을 소개한다. 제시한 방법에서는 별도의 독립적인 응용프로그램을 작성하거나 동기화를 위하여 확장된 VRML을 사용할 필요없이 웹브라우저와 바로 호환하여 사용할 수 있으며 기존의 방대한 웹문서와 연계가 쉬우므로 범용적인 자료구축이 가능하다. 하지만, 가장 최근의 VRML97에서조차도 VRML이 제시하는 가상공간 다중 사용자 환경의 지원은 아직 미비하다. 더 이상 단순히 3차원 월드를 탐험하는 시기는 지났으며, 같은 공간상에서 혼자가 아닌 여럿이 함께 하는 다중 사용자 환경을 제공해야 할 것이다. 이에 자바의 네트웍 기능과 가상공간의 외부에서 동적으로 월드를 제어할 수 있는 EAI를 이용하여 부족했던 다중 사용자 환경을 지원함으로써 가상 공간 시스템을 구축할 수 있다. 그러나, 가상 공간에서 일어나는 이벤트는 단지 동일 브라우저에서만 유효하기 때문에 다른 사용자에게 전달할 때는 이벤트를 원격지의 이벤트와 연동하기 위하여 다른 방법이 필요하다. 사용자 상호작용 시스템에 있어서 이러한 이벤트를 결정하는 가장 중요한 요소는 아바타의 행동양식(avatar's behavior)이라 할 수 있다. 가상 공간에서 일어나는 이벤트의 대부분이 사용자에 의해서 발생되는 것들이다. 즉, 아바타의 행위에 따라서 사용자 서로 간에 상호작용이 일어나게 되며 이들 이벤트를 서로 동기화 함으로써 실시간 3차원 상호작용 시스템을 구현한다. 이렇게 구현된 시스템을 구현한다. 이렇게 구현된 시스템은 전자 상거래, 가상 쇼핑몰, 가상 전시화, 또는 3차원 게임이나 가상교육 시스템과 같은 웹기반 응용프로그램에 사용될 수 있다.물을 보존·관리하는 것이 필요하다. 이는 도서관의 기능만으로는 감당하기 어렵기 때문에 대학정보화의 센터로서의 도서관과 공공기록물 전문 담당자로서의 대학아카이브즈가 함께 하여 대학의 공식적인 직무 관련 업무를 원활하게 지원하고, 그럼으로써 양 기관의 위상을 높이는 상승효과를 낼 수 있다.하여는, 인쇄된 일차적 정보자료의 검색방법등을 개선하고, 나아가서는 법령과 판례정보를 위한 효율적인 시스템을 구축하며, 뿐만 아니라 이용자의 요구에 충분히 대처할 수 잇는 도서관으로 변화되는 것이다. 이와 함께 가장 중요한 것은 법과대학과 사법연수원에서 법학 연구방법에 관한 강좌를 개설하여 각종 법률정보원의 활용 내지 도서관 이용방법에 관하여 교육하는 것이다.글을 연구하고, 그 결과에 의존하여서 우리의 실제의 생활에 사용하는 $\boxDr$한국어사전$\boxUl$등을 만드는 과정에서, 어떤 의미에서 실험되었다고 말할 수가 있는 언어과학의 연구의 결과에 의존하여서 수행되는 철학적인 작업이다. 여기에서는 하나의 철학적인 연구의 시작으로 받아들여지는 이 의미분석의 문제를 반성하여 본다. 것이 필요하다고 사료된다.크기에 의존하며, 또한 이러한 영향은 $(Ti_{1-x}AI_{x})N$ 피막에 존재하는 AI의 함량이 높고, 초기에 증착된 막의 업자 크기가 작을 수록 클 것으로 여겨진다. 그리고 환경의 의미의 차이에 따라 경관의 미학적 평가가 달라진 것으로 나타났다.corner$적 의도에 의한 경관구성의 일면을 확인할수 있지만 엄밀히 생각하여 보면 이러한 예의 경우도 최락의 총체적인 외형은 마찬가지로 $\ulcorner$순응$\lrcorner$의 범위를 벗어나지 않는다. 그렇기 때문에도 $\ulcorner$순응

Target Speaker Speech Restoration via Spectral bases Learning (주파수 특성 기저벡터 학습을 통한 특정화자 음성 복원)

  • This paper proposes a target speech extraction which restores speech signal of a target speaker form noisy convolutive mixture of speech and an interference source. We assume that the target speaker is known and his/her utterances are available in the training time. Incorporating the additional information extracted from the training utterances into the separation, we combine convolutive blind source separation(CBSS) and non-negative decomposition techniques, e.g., probabilistic latent variable model. The nonnegative decomposition is used to learn a set of bases from the spectrogram of the training utterances, where the bases represent the spectral information corresponding to the target speaker. Based on the learned spectral bases, our method provides two postprocessing steps for CBSS. Channel selection step finds a desirable output channel from CBSS, which dominantly contains the target speech. Reconstruct step recovers the original spectrogram of the target speech from the selected output channel so that the remained interference source and background noise are suppressed. Experimental results show that our method substantially improves the separation results of CBSS and, as a result, successfully recovers the target speech.
