Effect of Harvest Date on Fruit Quality and Core Breakdown of 'Wonhwang' Pears (수확시기에 따른 '원황' 배 과실의 품질과 과심갈변에 미치는 영향)

  • This study was conducted on how the harvest time affect fruit quality, core breakdown, and taste of GA-pasted 'Wonhwang' pear (Pyrus pyrifolia Nakai) fruit in order to verify the optimum harvest time. Harvest time included 110, 115, 120, 125, 130 days after full bloom (DAFB). Delayed fruit harvest increased fruit weight and content of soluble solids but decreased firmness, titratable acidity, and starch content. Harvest at 130 DAFB severely reduced fruit firmness and increased fruit core breakdown for 21 days at room storage, while harvest at 115 DAFB showed the opposite result of the fruit firmness and breakdown. Delayed fruit harvest reduced fruit taste, regardless of GA pasting on fruit. GA-pasted fruit showed reduced taste in advance compared to those of non GA-pasted fruit, regardless of the harvest time. Harvest at 120 DAFB would be suitable to maintain fruit quality and reduce core breakdown.

된장절임기간에 따른 새송이버섯의 품질 변화 특성

  • 절임식품은 우리 고유의 먹거리이지만 체계적인 연구가 부족하여 품질표준화가 이루어지지 않고 있어 우리의 전통식품을 세계적인 식품으로 개발하기 위해서는 전통식품을 과학화하고 현대화할 수 있는 연구가 필요하다. 새로운 된장절임 가공법을 개발하고자 blanching, salting, drying 등의 전 처리를 행한 후 된장 절임기간에 따른 새송이 버섯의 수분함량, 염도, 색상, 조직특성, 관능특성 등의 변화를 조사하였다. 된장절임기간에 따른 새송이 버섯의 수분함량 변화는 숙성시간이 경과함에 따라 감소하였으며 염도는 시간이 지남에 따라 증가하는 경향을 보였으나 무처구를 제외하고는 숙성 30일 이후부터는 변화가 거의 없었다. 숙성기간에 따른 색상의 변화를 보면 블랜칭이 매우 효과적으로 변색을 방지하였다. 숙성 30일부터는 모든 처리구에서 강도가 저하하는 경향을 보였으며 관능평가 결과 숙성 40일째에 맛과 조직감 그리고 기호도 등 모든 항목에서 B(B)와 E(BSD) 처리구가 높은 점수를 받아 관능적 품질 특성이 가장 우수하였다. 이상의 결과로 볼 때 전처리공정에 있어서는 7$0^{\circ}C$에서 10분간 블랜칭처리한 B(B)처리구가 가장 우수하였으나 된장 절임후 숙성기간이 경과함에 따라서는 7$0^{\circ}C$에서 10분간 블랜칭처리후 5% 염용액에서 72시간 절임한 후 4$0^{\circ}C$에서 30분간 탈염하고, 다시 5$0^{\circ}C$의 온도에서 3시간 건조시킨 E(BSD)처리구도 우수한 품질을 유지할 수 있어 새송이 버섯을 이용한 장류절임가공법으로 활용이 가능함을 확인하였다.d, citric acid 그리고 shikimic acid가 검출되었고 수확시기에 3품종에서 모두 malic acid 함량이 가장 높았고 malic acid와 citric acid의 함량이 풍수와 신고에서는 약 0.3%, 추황은 0.4% 이상으로 나타났다. 또한 3품종 모두에서 총산과 같은 추세로 성숙기의 유기산의 함량이 생장초기의 함량보다 많이 감소되었음을 알 수 있었다. 배의 가용성 고형물은 전체적으로 과실의 성장이 진행됨에 따라 증가하는 추세를 나타내었다. 풍수와 신고 과피의 총당과 환원당은 거의 같은 추세로 증가하였고 성숙이 가까워지면서 환원당이 감소하였다. 배 과육의 총당과 환원당 또한 거의 같은 추세로 증가를 하다가 수확 전 20일 혹은 30일부터 총당의 함량은 계속 증가하지만 환원당의 함량은 큰 변화가 없는 것으로 나타났다. 배 과실의 전반 성장과정에 있어서 전분함량은 감소하였고 총탄수화물의 함량은 과육에서는 증가하나 과피에서는 반대로 감소하는 경향을 보였다. 풍수의 전분함량은 최고 2.19%에서 0.23%로 감소하였고 신고에서는 0.43%로 추황에서는 0.48%로 감소하였다. 배 유리당은 fructose, glucose, sorbitol, sucrose 둥 4종류의 당이 검출되었고 3품종 모두에서 생장과정 중 비환원당인 sucrose 함량은 계속 증가하였고 fructose, glucose, sorbitol의 함량(추황의 sorbitol을 제외)은 생장이 촉진됨에 따라 증가하다가 다시 점차적으로 감소하였다. 이러한 결과는 총당과 환원당의 측정결과와 일치한 것으로 나타났다. 결론적으로 배의 성장에 따라 산 함량은 감소하였고 당 함량은 증가하였다.luco-pyranosi

Antioxidant Activity of Pyrus serotina Fruit in Different Cultivars and Parts (배 품종 및 부위별 항산화 활성)

  • The aim of this study is to compare the total polyphenol, total flavonoid, and antioxidative activity among 5 cultivars of Korean pears cultivated in Korea. As a result of the analysis for the phenolic substance of 5 cultivars, such as Wonwhang, Sunwhang, Whangkeumbae, Chuwhang, and Shingo, the content of total polyphenol was higher in Shingo and Chuwhang, and the content of total flavonoid showed higher levels in Wonwhang and Sunwhang. In addition, this study found that DPPH radical-scavenging ability was the highest in Shingo and that the part of fruit skin showed more favorable reaction to radical ability than fruit flesh. It was also found that much better antioxidative activity was shown for the methanol solvent extraction than for the ethanol solvent extraction. The nitrite-scavenging ability showed the best for Wonwhang and Chuwhang of the cultivars and much better reaction for the methanol solvent extraction than for the ethanol solvent extraction just like the case of DPPH radical-scavenging ability. Further, nitrite-scavenging ability appeared much better reaction for the fruit skin than for the fruit flesh, and antioxidative activity dropped for the higher the range on the pH scale. From the results of this study, Korean pears are worthy of developing as a natural functional food and substance for beauty treatment through the research on bioactivity.

Simultaneous Determination of Synephrine and N-Methyltyramine in Orange Fruit and Juice from Korean Market by UPLC-FLD (UPLC-FLD를 이용한 국내 시판 오렌지 및 오렌지 주스 중 시네프린 및 n-메틸티라민 동시분석)

  • An accurate and sensitive analytical method was established for the simultaneous determination of synephrine and n-methyltyramine contents by ultra-performance liquid chromatography (UPLC) with a fluorescence detector (FLD). A 70:30 (v/v) mixture of 10 mM sodium dodecyl sulfate (SDS) and acetonitrile was used as the mobile phase. The coefficient of correlation ($r^2$) was 0.9999 for both synephrine and n-methyltyramine, and their limits of detection (LOD) were 0.02 and 0.01 mg/kg, respectively. The percentage recoveries for synephrine and n-methyltyramine were 96.4% and 100.9%, respectively, from bitter orange (Citrus aurantium) samples. The synephrine and n-methyltyramine contents were 38.07-118.21 mg/kg and 0.27-0.56 mg/kg, respectively, in the orange fruit samples, while they were 14.61-120.39 mg/kg and up to 3.34 mg/kg, respectively, in the tested commercial orange juice samples. The differences in synephrine and n-methyltyramine content between orange fruit and commercial orange juice were not significant (p<0.05). These results suggest that UPLC-FLD can be applied to develop an analytical method of quality control for commercial orange juice.

Effect of Removed Peel from Sweet Persimmon on Nutritional Ingredients and Antioxidant Activities (단감의 박피가 영양성분 및 항산화 활성에 미치는 영향)

  • This study was for the industrial application of functional food ingredients from whole fruits of sweet persimmon. Whole fruit and pulp of sweet persimmons were divided, and then lyophilized and powdered. Contents of crude fiber, vitamin C, and mineral were significantly higher in whole fruit than pulp of sweet persimmon. The amino acid content of whole fruit was 1.4 times higher than those of sweet persimmon pulp. In the biological activities of water and ethanol extracts from whole fruit and pulp of sweet persimmon, ethanol extract was higher than water extract, and whole fruit was higher than its pulp. The result which compared the biological activities of the water and ethanol extract from lyophilized sweet persimmon showed that total phenolic content was significantly higher in whole fruit of sweet persimmon, but flavonoid contents were not significantly different. Especially ABTS, NO radical scavenging activity, reducing power and tyrosinase inhibition activity were significantly higher in whole fruit extract than pulp extract of sweet persimmon. The relatively high content of fiber and vitamin C, and biological activity of whole fruit than pulp of sweet persimmon may be make it preferable as functional food materials for secondary processed goods.

Change of Ginsenosides and Free Sugars in Seeds During Stratification and Seedling During Early Growth Stage of Panax ginseng (인삼의 종자개갑시와 묘생육초기의 Ginsenosides 및 유리당의 변화)

  • For the elucidation of saponin synthesis during ontogeny changes of ginsenosides and free sugars in seeds during stratification and seedlings in early growth stage were investigated with high performance liquid chrom-atography. Embryo plus endosperm at 40-day stratification showed 80% decrease of total saponin, disappear-ance of Rc, Rb$_2$ and Rb$_1$ and appearance of Rg$_3$ (probable) and 20-Glc-Rf (probable). Leaf ginsenoside F$_3$ was found not in fruit plup but seed and decreased during stratification. Both decomposition and synthesis of saponin seemed to occure during stratification. Ginsenosides in endosperm and embryo might be originated from fruit pulp by penetration. In seedling saponin appeared first in shoot and in root about one month later. Ginsenoside Rc, Rb$_2$, Rb$_1$ appeared in root at the last investigation (June 30) indicating normal saponin synthetic capacity of root. Saponin synthetic rate was twice in leaf than in root. Leaf ginsenoside F$_3$ was found in seedling root. Root saponin Rg$_3$ and 20-Glc-Rf were found in leaf and stem in seedling and decreased with growth suggesting that rate saponin is not such in certain growth stage. Total saponin content was negatively correlated with PT/PD in seeds and arial parts of seedling due to greater change of PD. than PT. Seed at 70days stratification showed high sucrose content. In seedling glucose was main sugar in stem all the while and sucrose in root at early stage while glucose, fructose and sucrose were found in leaf.

  • We explored how 'Wonwhang' pear fruit quality was affected by selenium (Se) application. The fruit skin color and fruit type differed between Se-treated trees and controls. Se-treated fruits had higher potassium and Se concentrations, more fruit soluble solids, and lower acidity, compared to the controls. All Se treatments improved fruit firmness during cold temperature storage compared to the controls. Also, Se-treated fruits had greater specific gravity and minuteness, which reduced fruit pithiness and rendered test fruits denser than the controls. Overall, Se foliar application improved fruits marketability compared to the Se fertilization or Se trunk injection.

Edible Coating Effects on Storage life of ‘Niikata’ Pear (신고배의 저장성에 미치는 가식성 코팅제의 효과)

  • In this study, edible coatings for ‘Niikata’ pears have been applied in order to provide an alternative way to control and extend market quality and shelf life during cold storage. Fruit treated with edible coatings had better effects on maintaining some quality features such as fresh weight, firmness and SSC content than non-coated fruits. However, non-coated fruits in terms of overall quality were better evaluated than fruit with edible film. It may be caused by various factors such as film thickness effect oil emulsion on fruit skin, unknown reactions between the fruit skin and functional groups in the chitosan structure and so on.

Biological Activities of Yuza Grown in Different Areas (산지별 유자의 생리활성)

  • The biological compounds such as vitamin C, carotenoids, hesperidin and naringin were determined in Yuza grown in Geoje, Goseong, Gohung and Namhae. Also, activities of electron donating, nitrite scavenging and tyrosinase were detected by concentration of water extracts made from Yuza peel. Vitamin C contents of flesh sample were 6.34${\Pm}$0.12-10.74${\Pm}$1.25 mg/100 g and its contents of peel were 2.17-3.57 times higher than flesh. The carotenoid contents of peel were higher than flesh, and its contents were abundant (over 6.0 mg/100 g) in peel of Yuza grown in Goseong and Namhae-native, while Goheung-native and improved samples were detected below 3.6 mg/100 g. The contents of total phenols were the highest in flesh (11.11${\Pm}$0.10 mg/100 g) and peel (31.76 mg/100 g) of Namhae-improve Yuza. The contents of hesperidin and naringin were about 4.81-7.80, 3.07-4.62 times higher in peel than flesh. Electron donating ability of water extracts made from Yuza peel was 52.78${\Pm}$1.13-66.88${\Pm}$0.53%, in over 5 mg/mL; especially, its ability in Namhae sample was significantly high in reaction system added over 5 mg/mL of water extracts. Nitrite scavenging ability in all samples was below 30% in reaction system added 1 mg/mL of water extracts. Inhibition activity of tyrosinase in reaction system added 2.5 mg/mL of water extracts was only observed in Namhae samples, but the other samples were increased in reaction system added over 5 mg/mL of water extracts.

A Monitoring Survey on Pesticide Residues in Pears and Sweet Persimmons (배와 단감 중 농약 잔류에 관한 조사 연구)

  • A pesticide monitoring survey was undertaken for the both 30 samples of pears and sweet persimmons from chief producing districts in1985 to evaluate pesticide residues in these agrcultural products and also to give basic informations in establishing maximum residue limits. Pesticide residues in pears were detected with fairly low in 7-60% of total samples. Even the maximum residue levels were only in the amount of 1/53-2/3 compared with maximum residue limits established in fruits in Environment Administration, Korea. Most of the residues (71-82%) was remained in peels of pears. Incase of sweet persimmons, captan, captafol, EPN, parathion, and phenthoate residues were also detected with fairly low in 3-20% of total samples. Presently, it is considered that pesticide residues in pears and sweet persimmons may be no harmful levels for food commodities.
