Nutritional Characteristics of Kochujang Added With Fermented Extracts of Hizikia fusiforme (톳 발효 추출물을 이용한 고추장의 영양학적 특성)

  • The nutritional properties of the Kochujang were investigated with Fermented Extract of Hizikia fusiforme. No big differences in proximate compositions(moisture, Crude protein, Crude fat, and Crude ash, Carbohyrate) were observed between Two kinds of kochujangs tested in this study, general kochujang purchased from a market(GK), kochujang added with Fermented Extract of Hizikia fusiforme(FGK). However, FGK showed higher level of Total free amino acid(15,929.5 ng/mg), amino nitrogen(1715.88 mg%) and mineral contens than GK. the analysis of volatile compounds using GC/MS revealde than the fermentation dramatically removed off-flavors such as Acetaldehyde, Silane rimethyl(2-methylphenyl)-, 1H-Indole 2-phenyl-1-(trimethylsilyl) in Fermented Extract of Hizikia fusiforme(FGK).

Whitening and Antioxidant Activities of Fermentation Broth of Acacia Flower (Robinia pseudoacacia) (아카시아꽃잎 발효액의 미백 및 항산화활성)

  • This paper describes a shake-flask fermentation of Acacia flower producing whitening- and antioxidant- agents. Tyrosinase activity was inhibited in the presence of traditional and flask-fermentation broths whereas no inhibitory effect of flower extract was observed. Tyrosinase inhibition was 40% in the presence of solution containing 10% of extract from fermentation broth and it increased by increase in the concentration of it. Arbutin ($20mg\;mL^{-1}$) and kojic acid ($80{\mu}g\;mL^{-1}$) gave 90% and 58% inhibition, respectively. The result indicates that whitening activity of 40% extract solution was comparable to that of kojic acid ($80{\mu}g\;mL^{-1}$). The comparable antioxidant activity was observed for 60% extract and $10mg\;mL^{-1}$ vitamin solution. No noticeable toxicity was observed with extract. The physicochemical stability of fermentation supernatant was observed at room temperature storage condition. The result clearly shows that shake-flask fermentation of Acacia flower produced whitening agent for functional cosmetics.

Moisture Adsorption Preventative Effect of Fermented Red Ginseng Extract Spherical Granules by Using Hydrophobic Compounds (홍삼의 지용성 성분을 이용한 발효홍삼 농축액 알갱이의 흡습방지 효과)

  • For prevention of moisture adsorption, the fermented red ginseng extract spherical granules were coated by using hydrophobic fractions. The hydrophobic parts were extracted from red ginseng such as the perfect soluble part in 90% ethanol (PSE) and non-soluble part in hot water (NSHW). The optimum operating conditions for making fermented red ginseng extract spherical granules coated with PSE were a feeding rate (FR) of 0.49 mL/min, atomization air pressure (AP) of 2.14 bar, and product temperature (PT) of $48.96^{\circ}C$., whereas conditions for granules coated with NSHW were a FR of 0.61 mL/min, AP of 2.75 bar, and PT of $46.30^{\circ}C$. The solubility of coated fermented red ginseng extract spherical granule was lower than that of not coated. The fermented red ginseng extract spherical granules coated with NSHW showed more preventative effects for moisture adsorption than those coated with PSE, although there were no differences in solubility and fluidity. In the sensory evaluation, granules coated with hydrophobic fractions extracted from red ginseng were shown to be bitterer and less soluble than those not coated spherical granules. In conclusion, fermented red ginseng extract spherical granules coated with hydrophobic extracts from red ginseng showed a preventative effect against moisture.

Growth Patterns of Lactic Acid Bacteria during Fermentation of Radish with Rice Water and Rice Bran (쌀뜨물과 쌀겨를 이용한 무 발효과정 중 젖산균의 증식 양상)

  • Changes in total aerobic bacteria (TAB), lactic acid bacteria (LAB), rod- and coccal-shaped lactic acid bacteria (R- and C-LAB), pH, and total acidity were investigated during fermentation of radish with new fermentation base at $20^{\circ}C$ for up to 16 days. New fermentation base was prepared by pre-fermenting a mixture of rice bran and rice water (1 : 0.1, w/v) at $20^{\circ}C$ for 7 days. Initially, radish showed 5.41, 4.23, 4.57, and 3.1 log CFU/g, and base showed 6.68, 6.60, 5.95, and 5.6 log CFU/mL for TAB, LAB, R-LAB, and C-LAB, respectively. Initial pH and total acidity of radish were $6.6^{\circ}C$ and 0.09%, and those of base were 5.76 and 0.36%, respectively, Counts of LAB (4.23 to 8.33 Bog Cpu/g, 6.6 to 9.7 log CFU/mL), R-LAB (4.57 to 7.15 log CFU/g, 5.95 to 8.5 log CFU/mL), and C-LAB (3.1 to 7.5 log CFU/g, 5.6 to 8.6 log CFU/mL) of radish and base respectively increased during initial fermentation period, then remained constant during late fermentation period, and far 4 days after fermentation, pH values (6.6 to 4.19, 5.76 to 4.57) drastically decreased and thereafter slowly decreased. Total acidities of radish and base (0.09 to 0.63%, 0.36 to 0.63%, respectively) drastically increased far 7 days after fermentation and increased slightly thereafter.

Effects of Manufacturing Methods of Broiler Litter and Bakery By-product Ration for Ruminants on Physico-chemical Properties (육계분과 제과부산물을 이용한 반추가축용 완전혼합사료(TMR) 제조 시 가공처리 방법이 물리화학적 특성에 미치는 영향)

  • This study was conducted to develop effective manufacturing methods of a total mixed ration(TMR) composed of broiler litter(BL) and bakery by-product(BB) for ruminants. Five experiments included a small-scaled manufacture of TMR using a deepstacking method(Exp. 1), its pelletization(Exp. 2), its field-scaled manufacture(Exp. 3), a field-scaled manufacture using an ensiling method(Exp. 4), and a mixing process of deepstacked BL and BB prior to feeding(Exp. 5). BL and BB were mixed at a ratio which makes total digestible nutrients of the TMR 69%. For each experiment, temperature, appearance and physico-chemical properties were recorded and analyzed. The chemical composition data revealed that the mixture of BL and BB showed nutritionally additive balance which resulted from a considerable increase(P<0.05) of organic matter and a desirable decrease(P<0.05) of protein and fiber up to the requirement level for growing ‘Hanwoo’ steers. Deepstacking of BL and BB in Exp. 1 and 3 resulted in a sufficient increase of stack temperature for pasteurization, little chemical losses, appearance of white fungi on the surface, and partial charring due to excess stack temperature. For Exp. 2, its pelleting, which was successful using a simple, small-scaled pelletizer, resulted in a little loss(P<0.05) of organic matter and an increase(P<0.05) of indigestible protein(ADF-CP). Ensiling the mixture in Exp. 4 made little effect on chemical composition; however, one month of the ensiling period was not enough for favorable silage parameters. Deepstacking BL alone in Exp. 5 tended(P<0.1) to decrease true protein : NPN ratio and hemicellulose content and increase ADF-CP content due to the heat damage occurred. Deepstacking or ensiling of BL-BB mixtures and simple incorporating of BB into deepstacked BL prior to feeding could be practical and nutrients-preservative methods in TMR manufacture for beef cattle, although ensiling needed further hygienic evaluation.

Effect of Livestock Manure Application on the Productivity of Whole Crop Rice, Feed Value and Soil Fertility (가축분뇨 시용이 총체 벼의 생산성, 사료가치 및 토양의 화학성에 미치는 영향)

  • The experimental work was conducted to determine the growth characteristics and yield of whole crop rice (cv. Suwon 468 and cv. Chuchungbeo) and soil properties using various type of livestock manure application on rice paddy land for 3 years ($2003{\sim}3005$). Compared Suwon 468 and Chuchungbeo, Suwon 468 has longer plant height and more DM yield than that of Chuchungbeo. Among livestock manure type, plant height was longer in order of liquid swine manure (LSM) > composted swine manure (CSM) > chemical fertilizer (CF) > composted cattle manure (CCM). Number of branch on Chuchungbeo had more than that of Suwon 468. Among livestock manure type, number of branch had more in order of LSM > CSM > CF > CCM. DM yield of whole crop rice (WCR) was affected by various types of livestock manure application and increased in order CSM > CCM = LSM. DM yield on the effects of application level of LSM was highest in LSM 75% + CF 25%. Plant diseases such as rice blast, damage by insect, smut, sheath blight occurred in LSM and CSM and there was not significantly different among application level of LSM. The nitrogen content of WCR by CSM was the highest of all treatments and the ripened ratio by CSM was in contrary order. Moreover the feed value of WCR was not significantly different among treatments. Soil pH, organic matter and total nitrogen was not different by LSM application whereas phosphorus content increased by LSM application. Cu and Zn content increased by LSM and CSM application and were not different by CCM as compared to control plots.

The Quality Properties of Rapidly Fermented Mukeun (Long-Term Fermented) Kimchi with Different Salinity and Fermented Temperature (염도와 발효온도를 달리하여 제조한 단기 숙성 묵은 김치의 품질특성)

  • We conducted a study on mukeun (long-term fermented) kimchi ripened over one year in an attempt to develop an alternative salt and improve the quality of low-salt kimchi. However, few studies have focused on mukeun kimchi that has been fermented for a short time in different salinity conditions. Therefore, the aim of this study was to investigate the physicochemical characteristics that occur during the fermentation of mukeun kimchi samples produced with different conditions of salinity and fermentation temperature. Kimchi samples were produced at 3 different salinity levels: 1.6%, 2.4%, and 3.2%. Previous studies revealed that the optimum fermentation time at pH 4.1 was 128 hours at $18^{\circ}C$ and 417 hours at $12^{\circ}C$; furthermore, the samples were stored for 12 weeks under the condition of $-1^{\circ}C$ after fermentation. Total cell increased on week 0 of storage and decreased according to the storage period. Total cell was the highest at 3.2% salinity and had a high value at $18^{\circ}C$ temperature during the storage period. Based on the physiochemical results, mukeun kimchi at a salinity of 3.2% can be fermented for a short time, and low-salt kimchi at a salinity of 1.6% and fermented at $18^{\circ}C$, is similar to mukeun kimchi at 2.4% salinity.

Ethanol Fermentation of Hemicellulose Hydrolyzate Using High-Level Inocula of a Pachysolen tannophilus NRRL Y-2460 (Pachysolen tannophilus의 고동도 Inocula를 이용한 Hemicelluose hydrolyzate의 알코올 발효)

  • High-level yeast inocula was investigated as a means of overcoming the inhibition problem in ethanol fermentation of hemicellulose hydrolyzate. When the inoculum exceeded 25g dry cells/liter, the fermentation proceeded completely to the end within 24 hours. Furfural was taken up by Pachysolen tannophilus and catabolized to furfuryl alcohol. Thus inhibitory effect of furfural component was less adverse toward ethanol production than that of non-furfural components in hemicellulose hydrolyzate. The specific ethanol productivity in the fermentation of hemicellulose hydrolyzate was 14% of that of simulated media containing 41.8g xylose and 2.3g furfural per liter.

Studies on the Standardization of Doenjang (Korean Soybean Paste) 1. Standardization of Manufacturing Method of Doenjang by Literatures (된장 제조방법의 표준화 연구 1. 문헌에 의한 된장 제조방법의 표준화)

  • This study was conducted to standardize the manufacturing process of doenjang. The preparation methods, kinds and levels of the ingredients were determined by the statistical surveys of literatures obtained from cooking books, scientific papers and doenjang manufacturing factories. The standardized preparation of fermentation methods of doenjang were classified into two large groups, that were traditional and modified (commercialized) methods. Most soybeans used in doenjang preparation were the large size. To prepare traditional doenjang, soybeans were cleaned, scaled and cooked for 2 hrs at atmospheric pressure. These cooked soybeans were crushed in water and molded as brick shape. The molded soybean was dried for 2 days in the air, hung up by rice straw and fermented for 30~60 days under natural environmental condition (called meju). Recently soybean grain meju that inoculated with Asp. oryzae also frequently used to make traditional doenjang. The fermented meju was brined with a ratio of meju : salt : water = 18.4 : 14.6 : 67.0 and the meju-brine mixtures were ripened for 2 months. When the meju-brine mixture was fully fermented, it was separated into liquid and solid parts. The crushed solid part was further ripened in a separated pottery for 60 days and become doenjang. The liquid part was filtered, boiled and used as soy sauce. In modified commercial doenjang preparation, soybeans were cocked by autoclaving and then cooled about to 3$0^{\circ}C$. Separately, steamed barley grains or wheat flour were inoculated with 0.2% Asp. oryzae and incubated for 3 days at 3$0^{\circ}C$ and mixed with the crooked soybeans, salt, and water (soybean : salt : starch : water = 39.8 : 12.5 : 22.6 : 25.1). These mixtures were ripened for 30 days at 3$0^{\circ}C$. It seems that the manufacturing process of traditional doenjang needs to be more industrialized, whereas, the commercial doenjang preparation is going to adapt the traditional processing method of doenjang.

Comparison Study of White Ginseng, Red Ginseng, and fermented Red Ginseng on the Protective Effect of LPS-induced Inflammation in RAW 264.7 Cells (RAW 264.7 세포에서 LPS에 의해 유도된 염증에 대한 백삼, 홍삼, 발효홍삼의 항염효과에 대한 비교 연구)

  • Red ginseng (RG) and fermented red ginseng (FRG) are produced from ginseng (GS) via certain biological processes. The main difference between three ginsengs is the composition of ginsenosides known as major metabolites having several biological activities. The concentration of the metabolites has been known to be dependent on the methods which make RG and FRG In this study, we investigated the effects of WG, RG and FRG on the productions of inflammatory proteins (NF-${\kappa}B$, iNOS, COX-2) and cytokines (TNF-$\alpha$, INF-$\gamma$) in LPS-stimulated RAW 264.7 cells. The levels of NO production and iNOS expression were suppressed by the treatment of white ginseng (WG), RG and FRG in LPS-stimulated cells. Also, the production of TNF-$\alpha$ and INF-$\gamma$ was decreased in the cells by all of them. It was indicated that the inhibition of NF-${\kappa}B$ activation in LPS-stimulated cells treated with three kinds of ginsengs was resulted from the suppression of the level of COX-2 expression and the phosphorylation of IkB by LPS. The present study indicated that RC showed the best biological activity among them and FRG was better than WG. The better activity of RG on the inhibition of NO production is considered to be caused by the difference of ginsenoside composition produced during their preparations. In order to elucidate the mechanism, animal test should be performed with three ginsengs.
