Characteristics of Wheat Flour Dough and Noodles with Amylopectin Content and Hydrocolloids (아밀로펙틴 함량 변화와 하이드로콜로이드 첨가에 의한 밀가루 반죽 및 국수의 특성)

  • The effects of amylopectin and hydrocolloid (locust bean gum and guar gum) content on wheat flour dough and noodle properties were investigated. As the amount of amylopectin increased, the water absorption rate (farinograph), the tension (tension test), the gel stability (freeze-thawing treatment), and the springiness and the cohesiveness (TPA) increased, but the pasting temperature (RVA), the lightness and yellowness (color measurement), and the hardness (TPA) tended to decrease. In sensory evaluations, the scores for cohesiveness, springiness, and acceptability of cooked noodle increased as the proportion of amylopectin increased. The proper combination of amylose/amylopectin ratio and hydrocolloids improved the freeze-thaw stability and the sensory acceptability of wheat flour dough and noodle.

  • 액화천연가스(LNG : Liquified Natural Gas)는 연료로 사용하기 위하여 기화하는 과정을 거치게 되는데 기화하는 방식에는 해수에 의한 기화와 공기에 의한 기화의 두 가지 방식으로 나뉘게 된다. 해수에 의한 기화는 LNG 인수기지에서 대량의 LNG를 NG로 기화하기 위하여 사용하며, 공기에 의한 기화는 LNG 위성기지에서 사용처에 적합한 온도를 얻기 위해서 일반적으로 많이 사용하고 있는 공기식 기화기를 이용하여 기화를 하는 방식을 취하고 있다. LNG가 NG로 기화하는 과정에서 1kg당 200kcal의 냉열을 외부로 방출하고 있으며, 이러한 냉열의 방출로 인하여 공기식 기화기의 표면에 결빙현상을 발생시킨다. 또한 현재 사용하고 있는 기화기는 $2{\sim}3$개의 기화기를 연결하여 사용하고 있어 그 비용의 손실이 크다고 할 수 있다. 그리하여 본 연구는 최근 사용빈도가 증가하고 있는 공기식 기화기에 관한 것으로 작동유체는 실제 LNG와 특성이 비슷한 초저온 액화가스인 $LN_2$를 사용하였다. 이번 연구에 사용된 변수는 다음과 같다. 첫째, 각각의 기화기의 길이를 4000mm, 6000mm, 8000mm으로 하였고 핀의 type을 finless, 4fin, 8fin으로 하여 적용하였다. 두 번째는 봄, 여름, 가을, 겨울철에 따른 기화기의 성능을 알고자 각각의 계절별 온도와 습도를 적용하였다. 마지막으로 계절별 풍속과 실험을 하는 시간 동안의 유량을 알고자 압력을 1 bar로 적용하였다. 그리하여 이번 연구의 목적으로는 각각의 변수를 통하여 실험을 진행 한 후 vaporizer type과 길이에 대한 최적의 성능을 가지는 기화기에 대한 자료를 제시하고자 한다.기성분은 균주에 따른 약간의 차이가 있었으나 경향은 비슷하게 나타났다. 이상의 결과 알코올 발효 균주에 따른 참다래 와인의 이화학적 품질특성에는 큰 차이가 없었으나 고급알코올함량을 비교하였을 때 Sacch. cerevisiae Wine 3이 와인제조에 가장 적합한 것으로 평가되었다.장 낮은 값을 나타내었으며, 홍국의 함유량이 증가할수록 유의적으로 증가하였다. b값은 CSB가 가장 낮은 값을 나타내었으며, 홍국의 함유량이 증가할수록 유의적으로 증가하였다. 물성측정 결과 경도와 응집성은 각 시료들 간의 유의적인 차이가 나타나지 않았다. 탄력성과 부서짐성은 CSB가 가장 낮았으며, 홍국의 함유량이 증가할수록 증가하였다. 점착성은 SDB1이 가장 낮았으며, 홍국의 함유량이 증가할수록 증가하였다. 관능검사 결과 기공의 균일성은 SDB1이 가장 균일한 것으로 나타났으며, 색은 홍국의 함유량이 증가할수록 높게 나타났다. 경도, 탄력성, 단맛 및 신맛 등은 홍국 함유량이 증가할수록 증가하는 것으로 나타났다. 이취는 SDB1이 가장 적게 나는 것으로 나타났으며, 전반적인 기호도는 SDB1이 가장 높았다. 따라서 홍국을 10% 첨가한 sourdough starter를 3일 동안 발효한 후 반죽에 첨가하여 sourdough bread를 제조할 때 품질이 가장 우수한 제품을 얻을 수 있었다.생수와 여러 물질의 혼합용액의 온도가 장에 끼치는 자극에 차이가 있지 않나 추측되며 이에 관한 추후 연구가 요망된다. 총대장통과시간의 단축은 결장 분절 모두에서 줄어들어 나타났으나 좌측결장 통과시간의 감소 및 이로 인한 이 부위의 통과시간 비율의 저하가 가장 주요하였다. 이러한 결과는 차가운 생수 섭취가 주로 결장 근위부를 자극하는 효과를 발휘하는 것이 아닌가

A Study on Cooking Method of Millet Nochi (기장 노치 제조 방법에 관한 연구)

  • Millet Nochi is a kind of Korean traditional food which is not well known to the general public. This study was crried out in order to elucidate the cooking method and investigate the changes of textural properties during retrogradation. Cooking method for millet Nochi were as follows. 1. Millet is soaked in water for 3 hours, mashed, sifted by 20 mesh 3 screen. 2. The millet flour is mixed with malt (amount of malt is 0.025 times of millet flour by weight) 3. This mixture is steamed for 20 minutes. 4. Steamed mixture is again mixed with the same amount (0.025 times of millet by weight) of malt. 5. The mixture is incubated at $60^{\circ}C$ for 2 hours. 6. After incubation, the mixture is panfried. 7. The changes of textural properties during 30 freeze-thaw cycles, except adhesiveness were not significantly appeared.

Preparation and Quality Characteristics of Korean Wheat Noddles Made of Brown Glutinous Rice Flour With and Without Aroma (현미찹쌀가루와 향현미찹쌀가루를 첨가한 우리밀국수의 제조 및 품질특성)

  • In order to manufacture the high-quality products as well as to promote their consumption, dry noodles were prepared with Korean wheat flour and brown glutinous rice flour with and without aroma and quality characteristics of dry noodles were investigated. The average particle size distributions of aromatic brown glutinous rice flour and brown glutinous rice flour ranged from 12.38 to $15.59\;{\mu}m$, which was different from that of control. As a result of farinograph study, water absorption of dough increased and decreased with increasing amounts of brown glutinous rice flour with and without aroma, respectively. Stability, developing time and elasticity of dough showed a decreasing tendency. When compared with the control, aromatic brown glutinous rice samples produced noodles with a greater degree of lightness and a less intensity of yellowing. Replacement of up to 20% of Korean wheat flour by aromatic brown glutinous rice flour and brown glutinous rice flour in noodle had similar cooked properties such as weight gain, volume and water absorption as compared with the control. From the result of sensory evaluation, composite flours(addition up to 30% aromatic brown glutinous rice flour and up to 20% brown glutinous rice flour) and control were rated with a relatively high quality score for appearance, taste and overall eating quality.

Rheological properties of flour dough containing roasted rice bran (볶은 쌀겨를 첨가한 밀가루 반죽의 rheology 특성)

  • This study was carried out to investigate the effect of roasted rice bran (RRB) on the rheological properties of bread dough. According to farinograph analysis, the consistency of the control sample was greatest. There were no significant differences in water absorption (p<0.05). Lower values of development time, stability, and time to breakdown, which were affected, by the addition of RRB, were observed for RRB-containing dough samples, compared to the control dough sample. Addition of RRB significantly increased the mixing tolerance index (MTI). According to rheofermentometer analysis, the values of H'm, $T^{\prime}_1$, and retention volume decreased with increase in the amount of RRB added. According to the rapid visco analyzer (RVA) analysis, peak viscosity, holding strength, and setback values were greater in the control than in the RRB-containing samples. The addition of RRB to the flour influenced rheological properties like fermentation volume and acidity. The total acidity increased with the increase in the amount of RRB added. The present study has indicated that there was no significant difference between the rheological properties of the control and 5% RRB-containing dough samples. Therefore, the addition of 5% RRB could be an effective way to produce functional flour bread without affecting its desirable physical properties.

Studies on Mechanization of Yukwa Making (유과 제조의 기계화 연구)

  • Whipping and bandaekee making process were known to a bottle neck for yukwa(deep-fat fried waxy rice snack) making process. For mechanization of the process, a machine was designed and manufactured with conveyer. Some functions of the machine were compared. The continuous whipping and bandaekee making machine was developed by modification of chopper. The chopper was substituted with specially designed plates and die. The newly designed plates were suitable for continuous whipping of dough and making bandaekee without showing any quality different at the final stage. The width and thickness of bandaekee could be controlled by speed of conveyer. The proper conveyer speed was 87.3 mm/sec when amount of extrudate of dough was 221.8 g/sec (MW 51%) from chopper. A shape of knife and plate among components of chopper was not seriously influenced on whipping effect. Expectable thickness of bandaekee for good quality was $3.0{\sim}3.5\;mm$. The number of passing through the chopper was not effected on yukwa quality·but no whipping showed bulky volume with too soft texture.

Effect of Oxidizing Agents on the Burning Characteristics of Smoke Rod of Pesticides Using Rice Chaff as a Combustible Carrier (왕겨를 가연성 담체로 하는 봉상 농약 훈연제의 연소성에 미치는 산화제의 영향)

  • An investigation in search of the best oxidizing agent for smoke generators using rice chaff as a combustible carrier was carried out. Smoke rods formulated with active ingredients (AIs) such as inorganic oxidizing agents, glue, and powdered rice chaff, showed constant and high burning rate and high smoking rate on 11 kinds of pesticides. Sodium chlorate was the most suitable oxidizing agent for smoke rod. Even though the sodium chlorate content of the formulation showing the highest smoking rate of AI was variable to pesticides, the smoking rate appeared to increase as the burning rate increased. Active ingredients in smoke generator using rice chaff as a combustible carrier were stable for 60 days when stored at $50^{\circ}C$. An apparatus designed for smoke trapping was useful to collect smoked active ingredients.

Consideration of Making Techniques for Red Painted Roof Tiles from Presumed Site of Daetongsa in Gongju Using Nondestructive Analysis (비파괴 분석을 활용한 공주 대통사 추정지 출토 주칠흔 기와의 제작기술 검토)

  • The Daetongsa temple is the earliest temple to be constructed during the era of the Three Kingdoms in ancient Korea. The main architect, purpose, and name of the temple have been confirmed through ancient literature and archeological materials carved in the Chinese letter, Daetong, excavated around Gongju. However, the location and range of the temple have remained elusive and were discussed in various studies. In this study, we examine the roof tiles obtained from the presumed site of the Daetongsa temple. The tiles were found to contain traces of red paint (red pigments) on their surface and analyzed using nondestructive techniques. The results imply that roof tiles were made using clay tablets and wooden cylinders, with latticed cloth in between. Additionally, some wooden cylinders appeared to comprise numerous wooden plates tied together by strings. The clay tablets used to make the roof tiles were produced from the source clay via the sorting process. The traces of red paint on the surface of the roof tiles were verified to be traditional pigments used for painting wooden buildings. These pigments were extracted from red ocher or red clay (Seokganju), mainly consisting of iron oxide. In the literature, the location of provenance sites for Seokganju is estimated to be far from Gongju. However, the materials for extracting the red pigments were relatively easy to source because most rocks comprised iron oxides. Therefore, it is necessary to discuss the provenance of the red pigments around the presumed site of Daetongsa.

The Method Research for Development of Pellet Using Suljigemi (술지게미를 이용하여 펠릿화 개발을 위한 방법 연구)

  • 본 연구는 저탄소 녹색성장의 국가 정책에 맞추어 주류 제조과정에서 발생하는 생전분발효 부산물인 주박(酒粕, 술지게미)을 펠릿화(pellet) 하는 것이 목적이다. 주류 제조과정에서 발생하는 주박을 100g당 물 100ml 비율로 섞어 충분히 반죽 후 녹즙기로 압축 성형화 하는 과정을 대신 하여 주박을 뽑았다. 이 주박을 온열 건조기에서 20시간이상 건조 시키면 완성이 된다. 주박펠릿은 폐기물을 재활용한 것이기 때문에 열량-가격대비를 비교해 보았을 때 등유 8950kcal-1000원/L, 경유 9050kcal-1433원/L, 면세경유 9050kcal-821/L, 우드 1812kcal-400원/kg, 주박 1989kcal-200원/kg으로 훨씬 저렴하며 열량도 높다. 주류업체에서 주박을 폐기물 처리하므로 가격 책정은 어렵다. $CO_2$ 발생량도 적어 온실가스를 절감시킬 수 있는 친환경적인 청정연료이다. 또한 연료로서 운송, 저장 및 보관이 편리하다. 주류업체도 주박 처리로 인해 연간 12억 정도 사용된다. 폐기물을 에너지화 함으로써 타 신재생에너지에 비해 초기 투자 비용이나 연료비가 저렴하다. 그리고 태우고 남은 회분은 토양개량제로 다시 재활용 되기 때문에 무해백익하다. 현재 폐목재를 사용한 우드펠릿은 원료를 수입해야 한다는 점과 삼림자원의 부족시 문제가 발생할 수 있다. 그리고 폐목재를 분쇄한 후 가공 및 성형을 해야 하기 때문에 주박이 효율성이 좋다. 현재 세계에서 가장 많이 사용되고 있는 석유나 화석연료의 매장량이 고갈 되어가고 있다. 하지만 주박은 술이 사라지지 않는 한 계속적으로 발생하기 때문에 무궁무진하게 사용이 가능하다. 또한 주류 제조시 발생하는 주박은 바로 성형 및 가공이 용이하다. 현재 주박으로 만든 펠릿은 전 세계적으로 전무하다. 막걸리 및 전통술의 특화사업으로 주박량은 더욱 증가하고 있다. 더욱이 2012년부터 해양 투기 금지로 주박 폐기물 처리가 힘들어진다. 주박 폐기물을 펠릿화해서 에너지원으로 사용하면 해결이 된다. 주박의 에너화를 통해 재생산의 열원으로 사용되고 펠릿을 연료원과 더불어 기계적인 시스템을 개발한다면 저탄소 녹색성장인 국가 정책과 부합된 미래형 에너지가 될 것이다.

Effects of Punching and Drying Process on Quality Characteristics of Yukwa Dough and Yukwa Bandegi during Preparation of Yukwa (유과 제조 시 반죽과 반대기의 품질 특성에 미치는 꽈리치기 공정과 건조 공정의 영향)

  • Effects of punching and drying process on quality of Yukwa were determined. Lightness (L) of Yukwa dough with punching was higher than that with no punching. Air cell distribution of Yukwa dough was fine with higher punching. Microstructure of Yukwa dough showed a broken surface structure with increasing punching. Hardness and adhesiveness of Yukwa dough decreased after 5 min of punching and then increased with higher punching. Expansion ratio of Yukwa base with punching at 155 rpm for 5 min was highest among the samples. Appearance of Yukwa base with no punching showed a poor shape and cross section, whereas Yukwa base with punching at 95 rpm for 10 min showed the best appearance and cross section and Yukwa base with punching at 155 rpm for 5 min also showed good appearance. The moisture content of Yukwa Bandegi after 24 hr of drying was 14.93%. Microstructure of Yukwa Bandegi showed a broken surface structure and empty spaces with increased drying time. Expansion ratio of Yukwa base with 24 hr of drying at $40^{\circ}C$ was highest among the samples. Overall, optimum punching conditions were 10 min of punching at 95 rpm or 5 min of punching at 155 rpm and optimum drying condition was 24 hr of drying at $40^{\circ}C$.
