Research on Tourist Needs Based on Food Docent-Guided Tour -focused Guangzhou Xiguan (미식 도슨트 가이드 투어를 통한 관광객 수요 분석 -광저우 시관을 중심으로)

  • Under the background of regional cultural development and cities' diversity, various tourist destinations attract tourists' attention and visit by mining their unique folk culture. As a part of sustainable tourism, gastronomy tourism can provide residents and tourists services only by improving the residents' facilities without damaging the environment. However, the existing gastronomy tourism only makes tourists in the folk scene, and tourists can not overstep the cultural differences caused by intersubjectivity to experience the core of folk culture. This paper attempts to use the observation method, cross-subject study, and case study to study the role of food docent-guided tours in understanding folk culture. Moreover, the docent-guided tour studies how the docent can help tourists go deep into the core of folk culture better to realize the sustainable development goal of gastronomy tourism.

Impact of Types of Food Tourism Experience on Purchase Intention and Visitor's Satisfaction: Focused on Participants at Dae-gu Food Tour Expo (음식관광 체험유형이 상품구매의도와 방문만족에 미치는 영향: 대구음식문화박람회 방문고객을 대상으로)

  • The purpose of this study was to analyse the impact of food tourism experience types on purchase intention and further to verify the influence of purchase intention on visitor satisfaction. For these purposes, a survey was given to 233 participants at the $15^{th}$ Daegu Food Tour Expo held from $9{\sim}12^{th}$ June 2016. The studay also carried out analysis of frequency, reliability, and correlation employing SPSS V. 20.0. The findings of the study are as follows. 1) Among 4 factors of food tourism experience types, gourmet, knowledge and healing pursuit groups havd a positive influence on purchase intention, although relation pursuit group had no significant influence on purchase intention. 2) It was discovered that purchase intention had a positive influence on visitor satisfaction. The results shown that food tourists have basic experience of gourmet with paying attention on knowledge and healing, as well. But food tourist has no significant influence on the group of relation pursuit. Accordingly, in order to encourage food tourists to re-visit, it is necessary to continuously develop and improve tour programs with well organized tour destinations and social system.

A study on heritagization of food culture and its utilization and value enhancement through the case of the Gastronomic meal of the French (프랑스 미식 문화의 사례를 통해 본 음식 문화의 유산화(heritagization)와 활용 및 가치증진에 관한 연구)

  • This paper examines the concept and process of heritagization, as well as other measures for the value enhancement of food culture as heritage, through the case of the gastronomic meal of the French, which has a long history as a socially constructed heritage. Heritage refers to what a society perceives as worthy of being transmitted. Thus, a heritage is something that a society or group chooses to preserve and that represents its identity. In the 19th century, France began to designate and protect heritage through a policy of preserving historical monuments, and heritage became both a social construct and creation with the purpose of preserving and enhancing values. Interest in heritage spread around the world with globalization, and has grown even greater since the 1972 UNESCO Convention. This interest has progressively extended to nature, urban landscapes and intangible cultural heritage. In 2003, the UNESCO Convention for the Protection of the Intangible Cultural Heritage was adopted, and this has strengthened the interest in intangible cultural heritage worldwide. Food-related heritage has been excluded from the list due to difficulties in establishing inscription criteria and concerns about the potential commercialization of heritage. However, in 2010, the food cultures of the Mediterranean, Mexico, and France were inscribed on UNESCO's Representative List of the Intangible Cultural Heritage of Humanity, which prompted interest in food culture and efforts to inscribe the food heritage of a number of other countries, including Korea. France has a long history of interest in gastronomy as a cultural heritage and part of its national identity. Efforts to preserve and popularize gastronomy as a part of the national identity and heritage have been made at both the private level, by gourmets and associations, and at the governmental level. Through these efforts, the culture of gastronomy as a heritage has been firmly established through theoretical discussion, listing of food-related heritages, and policies. Sustainable development of the heritage is pursued through certain ongoing institutional approaches, including the City of Gastronomy network, the National Food Program, and the promotion and labeling of the Year of the French Gourmet.

Effect of Tourism Motivation for Traditional Indigenous Foods on Expectation, Community Attachment and Tourism Satisfaction in Festival Event (축제이벤트에서의 전통향토 음식체험관광에 대한 관광동기가 기대도와 지역애착 및 관광만족에 미치는 영향)

  • In this study, an empirical analysis was carried out to determine the effect of tourism motivation for traditional indigenous foods experience tourism on expectation, community attachment and tourism satisfaction in festival event. The result is as follows. First, the effect of tourism motivation for foods experience tourism on expectation of tourism products in experience event showed that exchangeable, educational, aesthetic, derivative and adventurous attributes have a positive effect on expectation of tourism products. Second, the effect of tourism motivation for foods experience tourism on community attachment in experience event showed that exchangeable, educational, aesthetic and derivative attributes have a positive effect on community attachment. Finally, expectation of tourism products and community attachment had a statistically significant effect on community attachment and tourism satisfaction, and tourism satisfaction, respectively. That suggests that the development of various food tourism resources as the tourist value, which can get tourism resources of traditional foods through festival events, could not only introduce tourists to unique food culture, but add the pleasure of delicious food and tourism. Consequently, the preservation, inheritance and development of regional indigenous foods could increased local patriotism, and develop the related industry, maximizing economic effects.

  • 본 연구에서는 소비자의 지식 수준에 따른 향토음식 스토리텔링에 의한 행동의도를 알아보고자 하였다. 지금까지 우리나라 각 지역의 전통적인 식문화를 담고 있는 향토음식과 관련된 스토리텔링 연구를 살펴보면 대부분의 연구가 음식 스토리텔링의 필요성 제기, 음식 스토리의 소재 발굴, 미식 관광을 위한 스토리텔링의 중요성에 대한 연구에 머무르고 있다. 그러나 본 연구에서는 향토음식 스토리텔링이 소비자의 행동의도에 미치는 영향을 살펴보고자 향토음식과 관련된 지식에 기초하여 스토리텔링의 속성과 향토음식의 구매지역을 조절변수로 두었다. 최종적으로 지식의 정도가 낮으며, 구매지역이 일치하지 않는 경우 소비자들이 가장 선호하는 스토리텔링의 속성을 제시하고자 한다. 따라서 각 지역을 대표하는 향토음식의 스토리텔링을 발굴 또는 창작할 경우 향토음식의 문화적 가치를 향상시킬 수 있는 스토리텔링 개발 방법을 제시하고자 한다.

Influence of Consumers' Knowledge on Their Behavioral intentions By the Storytelling about the Local Food (소비자의 지식이 향토음식 스토리텔링에 의한 행동의도에 미치는 영향)

  • The purpose of this study was to know about the influence of consumers' knowledge level(expert vs novice) on their behavioral intentions by the storytelling about local foods. Reviewing previous storytelling studies related to local foods containing each region's traditional food culture in Korea, it can identify that most studies focused on the necessity of storytelling, the discovery of story materials, the importance of storytelling for food tour. Therefore, this study tried to know about how the storytelling about local foods influenced on the consumers' behavioral intentions, and set the attributes of storytelling and the consumers' local food-purchasing region as adjustable variances. Finally, in case that the consumers' knowledge level was low and their food-purchasing regions were not same, this study suggested the attributes of most preferred storytelling by consumers. By doing so, this study tried to discover the storytelling skills of local foods representing each region or to suggest a method to increase the cultural values of each local food in case of creating a story about the local food.
