This study analyzed the quality changes of Yakgwa in terms of the amount of oil assumption, acid value, TBA value, sensory evaluation and texture with different contents of vegetable power which provides vitamins, minerals and fiber, at 0, 3, 6, 9 and 12% levels. As for the acid value, the control sample showed the lowest figure of 0.33 while 9% and 12% added samples showed the highest of 1.46. As for TBA, 3% added sample had the lowest of 0.140, and 12% added sample had the highest of 0.328. As the amount of vegetable powder increased, texture, cohesiveness, hardness, gumminess, and chewiness increased while springiness decreased In the sensory evaluation, overall acceptability of different contents of vegetable powder samples at 0%~9% showed little difference, but taste significantly decreased at 12% added sample. The 3% added sample got the highest scores in the overall evaluation.
Soil pollution indices (SPI) were designed for estimating quality of soil polluted with arsenic and heavy metals. Applying the quality reference value of soil based on its multifunctional purpose was a key step. For considereing multifunctions of soil, soil was classified into 4 groups-agricultural land, residential area, recreational area, factorial site. Then, each concentration of arsenic and each of five heavy metals (Cd, Cu, Hg, Pb, Zn) in soils grouped was transformed to a mathematical value based on the soil quality reference value which may stand for ecological impact. Soil pollution score (SPS) was the addition of the 6 values transformed, and the range of the SPS was divided into 4 Soil Pollution Classes (SPC). The SPC 1, 2, 3, and 4 were SPS <100, SPS 100-200, SPS >200-300, and SPS >300, repectively. SPS and SPC were evaluated with the results of the data from employing the Soil Network of 1994. Based on the soil quality reference values, SPS and SPC of the Soil Network's data were transformed and classified, respectively. Then, SPS and SPC were compared with arsenic and the 5 heavy metal contents of their reference values resulted from the Soil Network's. From this method, soil quality of most of the Soil Network area was estimated to be healthy. However, ca. 3.0~4.0% of the Soil Network area was determined in a range of slightly and heavily polluted. As the mean value of SPS of the Soil Network's was 66.2 which indicates most of soil evaluated was healthy. When the SPSs of the data were divided into 4 groups of SPC, Class 1 (Good quality of soil), Class 2 (Need to be checked area 1), Class 3 (Need to be checked area 2) and Class 4 (Polluted area) were 87.0, 9.4, 2.4, 1.2%, respectively. Using SPI were comparable to those of heavy metal contents in soils, and would be comprehenve to determine the status of soil qulity. Methodology of the developing SPI would be applicable to the other soil pollutants such as organic and inorganics than arsenic and 5 heavy metals used here.

In this paper, we propose a training method of a recommendation learning model that analyzes the battlefield situation and recommends a suitable hypothesis for the current situation. The proposed learning model uses the preference determined by comparing the two hypotheses as a label data to learn which hypothesis best analyzes the current battlefield situation. Our model is based on Siamese neural network architecture which uses the same weights on two different input vectors. The model takes two hypotheses as an input, and learns the priority between two hypotheses while sharing the same weights in the twin network. In addition, a score is given to each hypothesis through the proposed post-processing ranking algorithm, and hypotheses with a high score can be recommended to the commander in charge.
The purpose of this study was to investigate the effect of the addition of the extract (0, 2, 4, 6, 8%) and crude enzyme (0, 0.05, 0.1, 0.5, 1%) extracted from the fruits of paper mulberry (Broussonetia kazinoki Siebold) on the tenderness and palatability of Jangchorim. Addition of up to 8% of the extract diminished the shear force by 4.8∼27%, while the addition of up to 1% of the crude enzyme begot 7.8∼34.2% decrease. Also, as the addition of the fruits of paper mulberry increased, the cooking loss was somewhat decreased, an the redness of cooked beef surface and free amino acid content in the liquid part of Jangchorim were generally increased. The contents of the mineral were in the order of Na, K, P, Ca, and Mg when crude enzyme was added. In sensory evaluation, the 4% crude extract from the fruit of paper mulberry and 0.1% addition in its crude enzyme showed the most favorable response.

This study was carried out to develop jelly food using dried persimmon. Jelly products were prepared with the ratio of 5, 10, 15, 20 and $25\%$ of dried persimmon extract. Quality characteristics of its products were investigated. Proximate compositions of jelly were $6.74\~14.03\%$ of moisture, $6.83\~7.53\%$ of crude protein, $0.62\~1.16\%$ of crude lipid, $2.61\~13.21\%$ of crude ash, respectively. Water activity and brix $(\%)$ of jelly products ranged from 0.678 and $56.66\%\;to\; 0.748\;and\;76.59\%$. The pH and total acidity of jelly products ranged from 5.30 and $0.06\%$ to 5.38 and $0.09\%$. In the Hunter's color values, L, a and b vaules of jelly products were increased, respectively. Major free-sugar and organic acid of jelly products were maltose ($753\~1,297mg/100g$) and malic acid (263mg/100g in $25\%$ dried persimmon jelly). Major mineral of jelly products was K ($69.64\~154.37mg/100g$). In the texture property, addition of dried persimmon extract decreased gumminess and chewiness. In sensory score of dried persimmon jelly, color, flavor, texture and sweetness of $15\%$ dried persimmon jelly were high score, taste and overall acceptance of jelly products were high score, respectively. Judging from research results of the jelly products, recommended substitution level for addition of dried persimmon extract in jelly was $10\~15\%$.

Objectives: The purpose of this study was to investigate the health food consumption patterns and their relationship to dietary behavior in middle-aged women (45-60 years). Methods: The exclusive face-to-face interviews by well-trained interviewers guaranteed a scientific data collection and the quality of survey data of 731 women. Subjects were divided into two groups according to the intake of the health foods, 'Intake' group (${\geq}3.2$, n = 488) and 'Non-intake' group (n = 243). Data were analyzed using the SPSS 20.0 program. Results: The average age of the subjects was 49.8 years and 66.8% of subjects were taking the health foods. Vitamins and minerals were consumed by the subjects. The major reason for intake of health foods was that they provide nutrient supplements may prevent diseases. More than 70% of the subjects reported checking nutrition information, ingredients, recommended daily intakes, instructions, when they bought the health foods. The average dietary life score of the intake group was significantly higher (p < 0.05) than that of the non-intake group. In analysis of exploratory factors of dietary life, the intake group showed significantly higher score (p < 0.001) in 'moderation of food intake' among the 4 exploratory factors. Conclusions: These results showed that women who took health foods had better dietary behavior than others suggesting a positive relation between the dietary behavior and the health food consumption. Therefore, we suggest that developing guidelines and then educating women about those guidelines could improve the ability of choosing health foods appropriately for their own benefit.

This study evaluated the dietary habits and health behaviors of Korean adolescents according to their nutrition label utilization. This study was conducted on the adolescents aged between 12 and 18 who participated in the 2016-2018 National Health and Nutrition Examination Survey. Subjects were classified into nutrition label utilizing group and non-utilizing group. Then the general information, diet habit and nutrient intakes, health status and obesity and mental health of the two groups were analyzed. There was no significant difference in skipping breakfast, frequency of eating out, smoking status and alcohol drinking status according to the utilization of nutrition labels. Nutrition label utilizing group had higher % KDRI of protein(p<0.05), calcium (p<0.01), phosphorus(p<0.01) and potassium intakes(p<0.01) than non-utilizing group. Nutrition label utilizing group had higher EQ-5D score(0.97) than non-utilizing group(p<0.001). Practical nutrition education using nutrition label is needed. So these results can be useful for supporting dietary education regarding use of nutrition label for adolescents.
We investigated changes in the nutrient compositions of seokbakji supplemented with seafood during storage at $5^{\circ}C$ for 14 days. We added the seafood at a concentration of 10% (w/w) to salted radish and prepared seokbakji samples. Our results showed that the levels of moisture, crude lipids, crude ash, carbohydrates, and crude fibers did not differ markedly among the samples. However, the level of crude protein in seokbakji with added seafood was greater than that in control seokbakji. The highest level of Ca and P was determined in seokbakji supplemented with gizzard shad; the highest level of vitamin $B_2$ was determined in seokbakji supplemented with sandfish, and the highest vitamin C content was determined in seokbakji supplemented with small octopus. Glutamic acid showed the highest content in seokbakji with seafood; further, hydroxyproline was the most abundant free amino acid. The results of sensory evaluation showed higher scores in the overall acceptability of seokbakji with seafood than in control seokbakji.
In an attempt to develop functional salts having beneficial health effects, we experimentally prepared three functional salts by fortification with soluble seaweed minerals (Hizikia mineral salt, HMS), fucoidan (fucoidan salt, FS) and laver extracts (laver salt, LS). To characterize the functional salts, their physicochemical properties and in vitro functionalities, such as pH, color, mineral composition, solubility, oxidation-reduction potential, sensory properties, angiotesin converting enzyme (ACE) inhibitory activity, and bile acid binding capacity were investigated. The functional salts revealed slightly lower NaCl concentrations, but showed a variety of pH values compared with conventional table salt. The pH values of HMS, FS, and LS were 11.3, 6.8, and 6.5, respectively. The oxidation-reduction potentials (ORP) of the functional salts varied from -229 mV to 38 mV, significantly lower than refined salt. The functional salts were significantly darker in color than refined salt, and the mineral composition of HMS was considerably enriched compared to refined salt, particularly in potassium ion. As a result of the sensory evaluation, FS and LS were comparatively palatable in saltiness, pungency, bitterness, and overall acceptance compared with refined salt. It was also found that one functional salt had ACE inhibitory activity (54.8% in LS) and another had bile acid binding capacity (80.7% in FS).
