Thermal equalized freezing process - A basic research on the destruction of tissues by internal pressure during freezing of foodstuffs - (균온처리 냉동기법 - 식품냉동시 내부압력에 의한 조직 파괴에 관한 기초 연구 -)

  • 식품동결에 의한 품질손상에 있어 크게 영향을 미치는 인자 중의 하나가 체적변화에 의한 조직 파괴이므로 식육 및 과채류의 냉동시 내부압력에 따른 조직파괴를 방지하기 위한 기초연구로 다양한 동결방법에 따른 내부압력 변화에 대하여 조사한 결과, 급속 및 완만동결시 우육의 내부압력 변화 경향은 동결 직전에 급격히 상승한 후 동결 초기부터 최대빙결정생성대를 통과하는 동안은 급격히 감소하다가 다시 온도가 내려감에 따라 압력변화는 증가와 감소를 반복하여 상승하는 경향을 보여 주었고, 동결시의 내부압력 크기는 약 8~10 psig 수준이며, 내부압력의 변화 경향은 정지공기식보다 침지식에서 약 1 psig 정도 크게 나타났다. 냉동냉장시에 일어나는 내부압력의 상하변화는 돈육의 품온차가 ${\pm}1^{\circ}C$일 때, 시료중량에 따라 1.84~2.32 psig 정도의 내부압력 차가 반복적으로 발생됨을 알 수 있었다. 또한, 돈육의 해동시 내부압력은 해동 개시 후 급격히 상승하여 5분 이내에 최고압력에 도달한 이후에는 서서히 하강하였으며, 해동시에 발생한 내부압력의 값은 동결시의 내부압력 값보다도 대부분 크게 나타났다. 또한, 균온처리한 우육의 동결시 내부압력 값은 약 1~4 psig 수준으로 균온처리하지 않은 우육에 비하여 매우 적게 나타났으며, 동결소요시간도 약 10~20% 정도 짧게 나타났다. 그리고 균온처리 및 다양한 동결방법에 따른 동결식육의 조직과 냉동냉장 중의 품질변화를 비교 검토한 결과, 동결방법에 따른 드립손실율은 우육의 경우 정지공기식으로 처리한 시료는 타 처리구에 비해 계속 높게 나타났으며, 돈육은 우육에 비해 상대적으로 드립손실량이 적게 나타났으나 송풍식으로 처리한 시료에서 저장 40일째, 7.39%로 가장 높게 나타났다. 동결 우육 및 돈육의 pH변화는 뚜렷한 차이를 나타내지 않았으며, VBN 및 TBA값에 있어서는 균온 처리한 시료가 완만 및 급속동결 처리한 타 시료에 비해 저장 200일까지 가장 변화가 없었다. 동결저장온도의 상하변동에 있어서는 온도변동 횟수가 증가할수록 pH 및 수분함량은 뚜렷한 변화가 없었으나 드립손실율, VBN 및 TBA값은 온도 변동횟수가 증가할수록 서서히 증가하는 경향을 보여 주었다.

  • A totally 178 housewives in Gyeongnam were surveyed on consumer's purchase behavior and perception of branded pork. The degree of consumers' perception and reliance on the branded pork was still low. Consumers' consideration quality factors when buying pent is higher in order of safety/hygiene>taste/tenderness>meat color, In taste, consumer preferred Korean native pig meat when compared to the common meat. But the consumers have a notion that the price of Korean native pig meat was too expensive. The consumer preferred consumer group to government agency as a official approval organ for pork quality assurance. The consumers had different behavior in information channel, purchase frequency and place depending on age, income. In the development of branded pork, further studied are required on consumers' purchase behavior, perception, preference choice and decision-making process of branded pork.

옻나무 첨가 사료 급여에 따른 한우육 및 돈육의 저장 중 미생물의 변화

  • 옻나무 첨가 사료를 급여하여 사육한 한우육과 돈육의 위생학적 품질을 시험하기 위하여 Pseudomonas aeruginosa를 각 한우육과 돈육에 접종하여 저장 중 접종한 균의 생육을 측정하였다. 옻 급여 기간에 따른 우육의 미생물 변화에서는 옻이 4% 첨가된 사료를 4개월과5개월간 급여한 구가 저장 초기에 $0^{\circ}C$, $5^{\circ}C$, $10^{\circ}C$에서 모두 상대적으로 낮은 수치를 보였다. 하지만 $0^{\circ}C$$5^{\circ}C$는 저장 7일째, $10^{\circ}C$는 저장 3일째부터 무 첨가구와 옻 첨가구간에 뚜렷한 차이를 발견할 수 없었으며, 옻나무 첨가 사료의 급여가 돈육의 저장 중 미생물의 변화에 미치는 영향은 저장 온도 $0^{\circ}C$$5^{\circ}C$의 경우에는 옻나무 첨가에 의한 Pseudomonas aeruginosa의 억제 효과가 거의 나타나지 않았다. $10^{\circ}C$의 경우 저장 3일째까지 옻나무 첨가구가 무 첨가구 보다 낮은 균수를 나타내었다.

Effects of Extract of Lactic Acid Bacteria Culture Media on Quality Characteristics of Pork Loin and Antimicrobial Activity against Pathogenic Bacteria during Cold Storage (유산균 배양액 추출액의 항병원성균 효과 및 냉장저장 육제품의 품질에 미치는 효과)

  • Anti-microbial effects of the medium extracts from three different lactic acid bacteria (LB1, Lactobacillus acidophilus; LB2, Lactobacillus casei; LB3, Lactobacillus sicerae) were investigated. Three different extracts of lactic acid bacteria media (ELAM) did not show significant changes in pork loin quality after 3 and 14 days of cold storage such as general contents, colors, pH, and TBARS. To determine anti-bacterial activity of three ELAM, three pathogenic bacteria (Bacillus cereus, Bacillus subtilis, and Staphylococcus aureus) were obtained and incubated with ELAM-absorbed paper discs. ELAM of LB2 and LB3 showed significantly larger bacterial growth inhibitory zones compared with that of LB1 (P<0.05). When the pathogenic bacteria inoculated in pork loin with three ELAM, total microbial contents of pork loin treated with ELAM of LB3 after 14 days of cold storage showed significantly lower microbial contents compared to those of control, LB1 and LB2 (P<0.05). In conclusion, ELAM of LB3 derived from L. sicerae had the most effective pathogenic bacteria inhibitory activity on agar and pork loin. This is the first result to report the antibacterial effect of L. sicerae. If the safety and toxicity characteristics of L. sicerae are further investigated, this new lactic acid bacterium would have potential as an effective and nature-friendly food preserving agent.

Quality Characteristics and Storage Improvement of Seasoned Pork Added with Phlomis umbrosa Turcz. Extracts (속단추출물의 첨가로 인한 양념 돈육의 품질특성 및 저장성 향상)

  • Antioxidant and antibacterial activities of Phlomis umbrosa Turcz. (PU) ethanol extracts were investigated in vitro. Total polyphenols, flavonoids and FRAP values of PU extracts were $57.32{\pm}2.30{\mu}g$/mg, $21.44{\pm}2.52{\mu}g$/mg and 0.26 mmol $Fe^{2+}$/g, respectively. The PU extracts also showed strong DPPH scavenging activity and antibacterial effects against Staphylococcus aureus. In addition, the DPPH scavenging effect of the seasoning sauces was increased by the addition of PU extracts. This study was also conducted to evaluate the quality characteristics of seasoned pork treated with PU extracts during storage at $4^{\circ}C$ for 21 days. Seasoned pork was produced containing 0, 0.5, and 1% PU extracts and 0.1% BHA. The total bacteria and TBARS values of seasoned pork added with PU were decreased compared to the control, whereas coliform bacteria were not detected after longer storage periods. With regards to sensory evaluation, seasoned pork treated with 0.5% PU had higher juiciness, flavor and overall acceptability compared to seasoned fork. These results suggest the possibility of manufacturing seasoned pork with PU extracts for the improvement of shelf-life and quality.

Effects of Combined Treatment of Gamma Irradiation and Addition of Fucoidan/laminarin on Ready-to-eat Pork Patty (감마선 조사와 푸코이단/라미나린 병용처리가 돈육 패티의 품질에 미치는 영향)

  • The objective of this study was investigated to apply the fucoidan and laminarin extract from low-grade Undaria pinnatifida to real food product, a pork patty. Pork patties added with fucoidan and laminarin showed lower lipid oxidation and the inhibition against lipid oxidation was shown to be dependent on the irradiation doses. The Hunter color values of pork patty added with fucoidan increased significantly with an increase of irradiation dose. The hardness profiles of the patties with fucoidan and laminarin was decreased, but the amount of water in the patties was increased. Also, the combination of gamma irradiation and addition of fucoidan and laminarin was shown to be effective for the microbiological control. These results suggested that gamma irradiation and fucoidan and laminarin treatment showed the positive effect on microbial stability and quality of the pork patty.

Antioxidant Activities of Rumex crispus Extracts and Effects on Quality Characteristics of Seasoned Pork (소리쟁이 추출물의 항산화 활성과 이를 첨가한 양념돈육의 품질특성)

  • Antioxidant activities of ethanol extracts of Rumex crispus (RC) were investigated in vitro. Contents of total polyphenols and total flavonoids in RC ethanol extracts were $108.24{\pm}3.29\;{\mu}g/mg$ and $33.06{\pm}2.24\;{\mu}g/mg$, respectively. The antioxidant capacities of RC extracts were high. The RC extracts were capable of directly scavenging DPPH free radicals by acting as reducing agents. This study was also conducted to evaluate the quality characteristics of seasoned pork treated with RC extracts during storage at $4^{\circ}C$ for 21 days. Seasoned pork was produced containing 0, 1, and 3% RC extracts and 0.1% BHA. The DPPH scavenging effect of the seasoning sauces was increased by the addition of RC extracts. The total bacteria and TBARS values of seasoned pork with RC extracts were decreased compared to control, whereas coliform bacteria were not detected after longer storage periods. With regards to sensory evaluation, seasoned pork treated with 1% RC had stronger odor, juiciness, and tenderness compared to seasoned pork. These results suggest that it is possible to manufacture seasoned pork with RC extracts for the improvement of shelf-life and quality.

Effect of Marination with Mixed Salt and Kiwi Juice and Cooking Methods on the Quality of Pork Loin-Based Processed Meat Product (혼합염 및 키위주스 침지와 조리 방법에 따른 돈육등심 가공육의 품질에 미치는 영향)

  • The aim of the present study was to evaluate the effect of marination with mixed salt (NaCl, $CaCl_2$, and phosphate) and kiwi juice and of different cooking methods for pork loin-based products in order to establish the basic database for increasing the consumption of pork loin in Korea. Diced chilled pork loin ($2{\times}2{\times}2\;cm$) was marinated in 4 different treatments: no additives (T1), salt mix only (T2), kiwi juice only (T3), and salt mix+kiwi juice (T4). The mixed salt was prepared by the addition of NaCl, $CaCl_2$, and phosphate dissolved in water (10% of pork loin weight) at concentrations of 0.5, 0.5, and 0.3% per pork loin weight, respectively. The amount of kiwi juice was 10% of pork loin weight. After marination for 24 hrs at $4^{\circ}C$, the samples were cooked with different methods including roasting with Kimchi, pan broiling, and simmering. After simmering, pH of pork loin of T1 and T2 was higher than that of T3 and T4 (p<0.05), while that of roasted with Kimchi and pan broiled did not show any difference. Water holding capacity of T4 after pan broiling was higher than that of T1, T2, and T3 (p<0.001) and shear force of T4 was lower than other treatments. Also flavor and acceptability of T4 after pan broiling were scored higher by 11 sensory panelists (p<0.05). From this result, the pork loin-based products marinated with mixed salt and kiwi juice with pan broiling would be preferred by consumers as one of the methods to promote the consumption of pork loin in Korea.

Quality Characteristics of Low-Fat Plant Oil Emulsion Pork Patties (식물성유 유화물로 대체한 저지방 돈육 패티의 품질 특성)

  • This study investigated the effect of plant oil emulsion as a replacement for animal fat on the quality characteristics of low-fat pork patties. Pork patties were manufactured using a pork fat control (CON) and olive (OPP), soybean (SPP), and canola (CPP) oil emulsions. Replacing animal fat with the plant oil emulsions increased the moisture content and decreased the fat content of the patties as compared to those with pork fat. The water holding capacity and cooking yield, and the moisture and fat retention of the patties were significantly increased, and the diameter reduction and shrinkage ratio decreased with the plant oil replacements. The color parameters of the samples were affected by the addition of the plant oil emulsions, and higher L* and a* values were observed in CON. The b* value of the raw pork patty was highest in OPP, and palmitic acid was the most abundant saturated fatty acid. In terms of unsaturated fatty acids, oleic acid was highest in CON, OPP, and CPP, and linoleic acid was highest in SPP. Hardness, cohesion, and chewiness were no different among the samples, although higher springiness was observed in the pork patties with added plant oil emulsions. The taste, flavor, and palatability of the OPP and CPP patties were higher than in the CON and SPP groups. Fat replacement with plant oil emulsion therefore had a positive effect on the quality characteristics of the pork patties, and due to reduced saturated fatty acids, the end-product provides the healthy low-fat option desired by consumers.
