  • The objective of this study was to investigate the effects of environments (farms born, testing groups, age at the tests, date at slaughter, ages at slaughter) on body weights at 6, 12, 18 and 24 months of ages, body type measurements at 18 months of age and carcass characteristics in Hanwoo steer populations that were collected from commercial farms and reared in a progeny testing station. Performances of a total of 1,838 steer calves set for tests from 2004 to 2008 were recorded. Carcass characteristics were the carcass grading results evaluated and data collected slaughter scores at 24 months of age. For growth traits of all age classes and body type traits measured at 18 months of age, farms born, test group and linear covariate of age at test were fit in the models. For carcass traits, date at slaughter and linear covariate of ages at slaughter were fit in the models. Effect of farm at birth was not significant for body weight at 24 months of age. Carcass weight, eye muscle area, yield score and back fat thickness were affected by dates at slaughter but not by the ages at slaughter. Marbling score, however, was affected by these two effects. Farms at birth did not seem to affect body type measures greatly. This study will be utilized for Hanwoo Steers genetic evaluation.

  • Bacteriological quality of beef carcass and distributions of pathogens in beef processing environments were investigated to improve the hygienic quality of fresh beef. Total bacterial contamination of carcass surface in slaughtering process and cutting board in cut-meat process showed 10$^{5}$ -10$^{6}$ CFU/$\textrm{cm}^2$ and 10$^{5}$ CFU/$\textrm{cm}^2$ in summer, respectively. The viable bacterial count of cotton glove was similar to that of cutting board during and entire period of year. Microbial contamination of carcass surface, cutting board, cotton glove and deboned meat showed the highest in summer and the lowest in winter during the year. Escherichia coli O157, Pseudomonas aeruginosa, Klebsiella. ornithinolytica, Staphylococcus aureus, E coli, Tatumella. ptyseos, Serratia odorifera, Aero-monas sobria, Enterobacter cloacae and Flavimonas oryzihabitans were isolated from carcass surface during slaughter treatments. S. aureus, Listeria grayi and L. monocytogenes were isolated from cutting board and L. grayi, Erwinia spp. Salmonella app. and S. aureus were isolated from cotton glove in cut-meat process environments. Citrobacter freundii; L. monocytogenes; and S. aureus were isolated from deboned meat.

  • $Bi_2Sr_2Ca_2Cu_3Oy$-based superconductor phases were synthesized by the wet process using acetate precursors. Superconducting transition temperature ($T_c$) was determined from both measurements of electrical resistivity and magnetic susceptibility for the samples which were sintered at the temperatures of $850^{\circ}C$, $860^{\circ}C$, and $870^{\circ}C$ for 40 hours, respectively. The values of carrier concentration from Hall measurements were compared with $T_c$ data as a function of the sintering temperature. The formation mechanism of the superconducting phase was tentatively discussed on a basis of the distribution profile concept of the carrier concentration and the amount of superconducting phases in a ceramic bulk. This explanation may be supported by the experimental results of correlation between the relative amount of superconducting phases and the difference of $T_c$ values between superconducting onset temperature and cutoff temperature at each sintering temperature.

  • This study was conducted to identify the characteristics and estimate the genetic parameters of average daily gain (ADG) and carcass traits of Hanwoo. The data used in this study were 4,681 heads which were performance-tested and 4,442 heads which were progeny-tested in test station of National Agricultural Cooperative Federation. The means and standard deviations of ADG between 6~9 months (ADG:6-9), ADG between 9~12 (ADG:9-12) and ADG between 6~12 (ADG:6-12) from the performance test were $1.04{\pm}0.16$, $1.11{\pm}0.17$ and $1.07{\pm}0.11$, respectively. The phenotypic correlations of ADG:6-9 and ADG:9-12, ADG:6-9 and ADG:6-12, ADG:9-12 and ADG:6-12 were -0.03, 0.66 and 0.65, respectively. The phenotypic correlations of ADG:6-12 with carcass weight (CW), eye muscle area (EMA), backfat thickness (BF), and marbling score (MS) from progeny test were 0.446, 0.199, 0.0266 and 0.045, respectively. Estimated heritabilities from the pooled data were 0.251 (ADG:6-12), 0.298 (CW), 0.424 (EMA), 0.503 (BF) and 0.626 (MS), respectively. Estimated genetic correlations of ADG:6-12 with CW, EMA, BF, MS were 0.606, 0.292, -0.095 and -0.007, respectively. From these results, it could be suggested that selection for ADG significantly affects CW, EMA and BF by correlated response to selection.

  • The present study was undertaken to investigate the effects of increasing pig market weight on the incidence of the 'caky-fatty' belly, carcass grade and carcass quality traits. To this end, 500 (Yorkshire ${\times}$ Landrace) ${\times}$ Duroc market pigs consisting of equal numbers of barrows and gilts were slaughtered at body weights ranging from 85 to 150 kg and their carcasses were analyzed. Backfat thickness (BFT; mm) of the barrows and gilts regressed on live weight (kg) linearly as follows: BFT (y) = 0.1827x + 3.4825 ($r^2$ = 0.4671) and y = 0.2015x-0.6972 ($r^2$ = 0.4736), respectively. The caky-fatty belly, which, by definition of the present study, had = 55% fat by weight in the dorsal-side half of a 5 cm-wide belly strip between the $11^{th}$ and $12^{th}$ ribs, was found in 10 carcasses from barrows. However, no belly was condemned as 'caky-fatty' by the retailers. Total number of carcasses which were down-graded on account of overweight was as many as 101 (20.2%). The $1^+A$-grade carcasses exhibited a superior intramuscular fat score to all other grades, but except for this and the defective quality traits, no visible differences were found in carcass quality among different carcass grades. In conclusion, the current carcass grading system, which is sparingly reflective of the carcass quality and also under-evaluates the larger but otherwise normal carcasses, may as well be revised. Moreover, the incidence of the caky-fatty belly appears not to be a critical factor to be considered when increasing the pig market weight.

  • The present study investigated effect of supplementation of agricultural byproduct on growth performance and blood parameters of broiler chicken using meta-analysis. Total 11 studies (32 experiments) where broiler feeding trials with agricultural byproducts were included were employed in analysis. All studies were conducted at commercial farm placed in South Korea and under commercial feeding programs. Growth phases were divided into two groups based on slaughter day. For growth performance, body weight, body weight gain, feed intake and feed conversion rate (feed/gain) were investigated. Carcass weight, dressing percentage, liver and spleen weight, blood glucose, total cholesterol and triglyceride, HDL (High density lipoprotein) and LDL (Low density lipoprotein) cholesterol contents in blood were investigated. Body weight of broiler of treatment was significantly increased than the control (P<0.05), regardless of growth phase. However, body weight gain during late growth phase did not show significant difference between control and treatment. Effect evaluated by random effect model on feed intake was not significant. Effect on feed conversion rate during early growth phase was significantly negative (P<0.05). Effects on carcass weight, dressing percentage, liver and spleen weight were not significant in random effect model. Effect on abdominal fat was significantly negative (P<0.05). In blood parameters, significant effects were found at total cholesterol, triglyceride and HDL cholesterol (P<0.05). Effect on HDL cholesterol only was positive effect, and others were negative.

  • This experiment was carried out to investigate effects of fermented feedstuff added Saccharomyces cerevisiae(FFSC) on growth performance and carcass grade of growing Hanwoo bulls. Twenty six Hanwoo bulls averaging 230$\pm$24kg were randomly assigned within two dietary treatments which were control and FFSC. Average daily gain and feed intake were significantly higher in FFSC compared with control during growing, fattening and finishing period. Feed conversion was improved in FFSC compared with control during fattening and finishing period. During the whole experimental period, average daily gains were 1.06 and 0.98kg in FFSC and control, respectively, and it indicated that 19% was improved in FFSC compared with control(P<0.05). Feed intake was not significantly different between treatments during whole experimental period. In addition, feed conversion was not significantly different between treatments, there was a tendency to be beneficially increased about 7% in FFSC compared with control. There was no differences on yield traits including carcass weight, dressing, back fat thickness, rib-eye area and meat production between treatments. Marbling score was improved in FFSC compared with control(P<0.05). Appearances of ‘A’ ranked meat quantity were 44.4 and 25.0% in FFSC and control, respectively. Only FFSC had ‘1’ ranked appearance, but there was no ‘1’ ranked appearance in the control.

  • This study was intended to provide basic information which might be useful in increasing added values to the pork from Korean native black pigs (KNP), through comparative evaluation on carcass characteristics and meat qualities between KNP and four exotic breed groups including Duroc (DD), Landrace (LL), Yorkshire (YY), and LYD-cross (1/4LL 1/4YY, 1/2DD), and the results were summarized as follows. Live weight carcass weight, dressed meat weight, skin weight, fat weight and bone weight of KNP were significantly (p<0.05) lower than those of DD, LL, YY and LYD-cross. Carcass yield and dressed meat yield were also significantly (p<0.05) lower in KNP than other 4 groups, however, total fat, skin, bone, kidney and kidney fat in percentage were significantly (p<0.05) higher for KNP than others. Dressed meat yield was highest for YY, followed by LYD-cross and KNP. Weight of belly was 6.12, 9.43, and 9.52 kg for KNP, YY and LYD-cross, respectively. Percent belly of KNP was $11.11\%$ while other groups ranged from 11.5 to $12.2\%$ Shear force value was not different among the treatments. KNP had significantly (p<0.05) lower water holding capacity (WHC), and cooking loss, but significantly (p<0.05) higher in juiciness comparatively. KNP had significantly (p<0.05) higher $a^{*}$ value while DD had significantly (p<0.05) lower than other breeds.
