Effect of Freezing on the Physicochemical Properties of Semi-dried Red Pepper (냉동조건에 따른 반건조 홍고추의 물리.화학적 특성 변화)

  • Quality changes in semi-dried red pepper (SRP) treated with ozone water were observed upon storage (at $-18^{\circ}C$) after freezing at $-10^{\circ}C$, $-20^{\circ}C$, and $-40^{\circ}C$. Drip loss after treatment was greater than in control peppers, but no significant difference was evident between treatments (p<0.05). We observed that differences between samples decreased as storage time increased. Texture after treatment did not change significantly over a 3-month period. The redness (a-value) after treatment was greater than in the control, but no sample showed significant color alteration after the 3-month period. The capsaicinoid content decreasedas storage time increased, and was also affected by the freezing temperature. However, carotenoid content was not influenced by freezing or storage temperature. Ascorbic acid and free sugar contents showed decreases of 47% and 6.5%, respectively, after semi-drying. The results of sensory evaluation indicated no significant difference between samples in terms of color appearance.

Changes in Volatile Compounds of Schizandra chinensis Fruits According to Drying and Extracting Methods (건조 및 추출방법에 따른 오미자 휘발성 성분의 변화)

  • To understand the effects of drying conditions on changes of volatile compounds in fruits of Schizandra chinensis, we analyzed SDE (steam distillation and extraction) extract and Headspace vapor of fresh and dried samples using GC/MS (Gas chromatograph/Mass spectrometer). Contents of essential oils from samples with different drying conditions were 0.58% in fresh ones, 0.60% in freeze dried ones, and 0.30% in hot-air dried ones. In SDE extract, major volatile compounds in fresh samples were terpinen-4-ol(9.01%), ${\gamma}-terpinene(7.02%),\;{\beta}-myrcene(7.55%)$, unidentified sesquiterpenes(28.48%), showing almost the same composition as that in freeze-dried ones, but those in hot-air dried samples at $60^{\circ}C$ were ${\gamma}-terpinene(5.40%),\;{\alpha}-elemene(8.28%)$, unidentified sesquiterpenes(50.38%), indicating the chemical changes during drying procedure. In Headspace vapor, major compounds in fresh samples were ${\beta}-myrcene(22.05%),\;{\gamma}-terpinene(9.47%),\;{\alpha}-pinene(8.91%)$, sabinene(8.48%), which were different from those in SDE extract. In chemical compositions of volatile compounds in dried samples, ${\beta}-myrcene,\;{\alpha}-terpinene$ decreased in the order of freeze-drying > hot-air drying at $60^{\circ}C$ > hot-air drying at $60^{\circ}C$, and ${\alpha}-ylangene,\;{\alpha}-pinene$, camphene increased in the reverse order of the former. We observed the changes of the contents and compositions of essential oils compounds during drying procedure, especially a decrease in monoterpenes and alcohols and an increase in sesquiterpenes with relatively weak volatility.

Optimization of the Preparation of Rice-based Infant Foods Using Freeze Drying Process (냉동건조를 이용한 쌀기본 이유식 제조에 있어서 건조조건의 최적화)

  • Rice based infant foods of carrot, of beef, and of egg for 4-6 month old infants were prepared using freeze drying (FD) process. The optimum moisture content prior to FD and the plate temperature in the drier were determined with the use of response surface methodology. For all the infant foods under this study, FD time was longer as the initial moisture content was higher and the plate temperature was lower. Brittleness of the dried infant foods increased as the moisture content decreased and the plate temperature increased. Among the sensory attributes, hydration rate, uniformity, and smoothness were greater with increased moisture content and with decreased plate temperature. Ease to spoon increased as moisture content increased and mouthcoating increased as both the moisture content and the plate temperature increased. Optimum moisture content and plate temperature for the FD of carrot, beef and egg foods were 88.5% and $34^{\circ}C$, 88.5% and $28^{\circ}C$, and 87.3% and $39^{\circ}C$, respectively.

Moisture Sorption Characteristics of Powdered Soybean Curd (분말(粉末) 두부의 수분흡착(水分吸着) 특성(特性))

  • In order to improve the storage stability of powdered soybean curd, moisture sorption characteristics of the curd stored at specific relative humidity and temperature were investigated. The results obtained are summarized as follows; 1. When the fresh soybean curd (2cm thickness) was dried in a hot air drier at $55^{\circ}C$, it took 18 hrs to reduce its moisture content from 85% to 8.8%, and drying rate was very high during the first 5 hrs. 2. Equilibrum moisture content (E.M.C.) of powdered soybean curd by freeze drying was higher than that of sample by got air drying, but the particle size did not influence E. M. C. 3. The monolayer value of freeze dried powder of high E. M. C was higher than that of the hot air dried(8.30 vs 7.35). 4. The free energy for moisture absorption of freeze dried powder at 11% RH were 1285.1 cal/mole, 1323.5 cal/mole at $15^{\circ}C$ and $30^{\circ}C$, respectively, and the free energy of freeze dried product was lower that of hot air dried product. 5. The moisture sorption rate constant was not affected by particle size, and it showed that the moisture sorption rate decreased as temperature was increased. The rate constant of powder produced by freeze drying were 0.00804 at $15^{\circ}C$ and 0.00696 at $30^{\circ}C$.

분무진공동결건조기 개발

  • 최근 건조 제품의 양질화, 고급화 및 편의화가 요구되어 이를 충족시키기 위한 새로운 건조방법이 계속 개발 되어 왔다. 이러한 방법들 중에서 저온과 진공하에서 건조가 이루어지는 진공 동결 건조는 가장 완벽한 건조 방법으로 최근 실용화 되고 있다. 진공동결건조란 건조의 한 종류로 수분을 함유한 시료를 동결시킨 후 진공펌프를 이용하여 수증기압을 3중점 이하로 낮추어 얼음을 직접 증기로 만드는 승화의 원리에 의해서 얻어진다. 분무진공동결건조의 특징은 (1) 물리적구조의 보존성, (2) 화학적인 안정성, (3) 생물학적인 활동의 보존성, (4) 제품의 높은 복원성 및 재생성이다. 따라서 분무진공동결건조 기술은 크게 진공, 분무, 동결, 건조, 멸균 등과 같은 요소기술의 복합기술이라 할 수 있다. 분말을 제조하기 위해서 진공동결건조 후 분쇄하는 방법을 사용하나 본 방법에서는 정밀화학품 제조를 위해서 분무진공동결건조 방식을 사용한다. 이를 통하여 적당한 크기인 5~10 um의 입경 제조가 가능하고, 공기동력학적인 입경이 기존 방식에 비해 작아서 허파까지의 운반효율이 1.5~2배 우수하다. 화학, 의학 분야에서의 분무동결 건조는 주로 민감한 제품, 즉 생물학적 고유성의 손상 없이 물을 제거하는데 사용되어 영구적으로 저장 가능한 상태로 보관할 수 있으며 물의 첨가로 원상태로 복구할 수 있어서 매우 각광을 받고 있다. 의약용 냉동건조 제품은 항생물질, 박테리아, 혈청, 백신, 검사 약물, 단백질을 포함하는 생물공학 제품들, 세포, 섬유, 화학제품 등이 있으며 주로 vial 또는 ampule 상태로 건조가 이루어진다.본 연구에서는 원료를 $-194^{\circ}C$의 액체질소에 분무시켜 동결된 미립자를 형성한 후 진공 및 저온상태에서얼음의 승화(sublimation)에 기반한 1차 건조와 수증기 탈착(desorption)에 기초한 2차 건조 과정으로 구성된 분무진공동결건조기를 개발하였다. 분무동결 과정의 해석을 통해 2유체식 노즐을 통해 분무된 미세 입경의 액적이 액체 질소 표면까지 도달하는 회수률, 분무 노즐의 위치, 운전 조건 및 용기의 설계의 최적화를 수행하였다. 초기 액적속도, 분무노즐의 높이, 흡입구 추가에 따른 액적 유동 및 회수의 특성을 제시하였으며 이를 통한 분사시스템 고도화 가능성을 제시하였다. 구형의 미세 입자가 적층된 제품의 동결건조 공정의 해석은 흡착승화 모델(sorption sublimation model)을 기반으로 다음과 같은 열전달, 물질전달, 상변화 모델을 고려하여 유도되었다. 분무노즐 및 냉동/진공 배기계 시작품을 개발하여, 표면의 고다공도를 갖춘 입경 3~20 m 정도의 시료를 얻을 수 있으며, 동역학적 입경 5 m 충족함을 확인하였다.

Contents of Free Amino Acids, and Nucleotides and Their Related Compounds of Dried Cod (대구 건제품의 핵산관련물질 및 유리아미노산 함량)

  • In this experiment, the contents of free amino acids, and nucleotides and their related compounds of dried cod products were analysed by amino acid autoanalyzer and HPLC. Proline, histidine, lysine and alanine were dominant amino acids in raw extracts, having $65.4\%$ of total free amino acid contents, but the contents of aspartic acid, serine, isoleucine and phenylalanine were low, and methionine, tyrosine and arginine were detected in trace amount. In free amino acid composition of dried products, abundant amino acids were glycine, histidine, lysine, proline and alanine. Such amino acid as aspartic acid, methionine, tyrosine and phenylalanine were poor. In extracts of storage sample, most free amino acids were increased in both sun dried products and hot air dried products, and glycine, histidine, lysine, proline and alanine were abundant amino acid, such amino acid as methionine, tyrosine and phenylalanine were poor. In raw cod, inosine and IMP were dominant contents which 18.5, $10.0{\mu}mole/g$ on dry base, respectively, but the contents of ATP, ADP, hypoxanthine and AMP were detected less than $3.2{\mu}mole/g$. ATP and ADP were decreased while IMP, inosine and hypoxanthine were increased during drying and storage of cod.

Performance Evaluation of Rough Rice Low Temperature Drying Using Heat Pump (열펌프를 이용한 벼의 저온건조성능평가)

  • This study was conducted to design and fabricate a heat pump that can produce some weather conditions similar to those of the dry season of the rough rice in Korea, and to investigate basic performances of the apparatus. During the drying test, the amount of energy consumption and drying characteristics were measured at four different temperature levels ranging between 20$^{\circ}C$ and 50${^{\circ}C}$. In the psychrometric chart, the freezing capacity and refrigerant circulation ratio of the heat pump were 173 kJ/kg and 49.6 kg/hr, respectively. Therefore, coefficient of performance was 5.5, which was superior to that of refrigerant R-22 (4.0) in standard refrigeration cycle. In addition, the time to reach target drying temperature (30${^{\circ}C}$) and relative humidity (40%) were 6 minutes and 7 minutes, respectively. Temperature differences between the drying temperature and the rice were 1.5${^{\circ}C}$ and 8.5${^{\circ}C}$ at the drying temperatures of 21.9${^{\circ}C}$ and 48.7${^{\circ}C}$, respectively. This result demonstrated that the increased temperature of the rice in the drying section decreased sufficiently in the tempering section. At the drying temperatures of 21.9, 30.7 38.8, and 48.7${^{\circ}C}$, drying rates were 0.29, 0.61, 0.85, and 1.26%/hr, respectively, which were similar to those of commercial dryer. In addition, the amounts of energy consumption were 325, 667, 692, and 776 kJ/kg, respectively. These results showed that this dryer saved up to 86% of energy consumption compared with the commercial dryer, which uses 4,000-5,000 kJ/kg of fossil fuel.

Studios on Drying and Preservation of Omija (Schizandra chinensis BAILL.) (오미자 건조와 저장에 관한 연구)

  • Quality and component of dry Omija during storage and shelf-life of fresh Omija were investigated. Acidity and pH of dry Omija were not significantly different among drying methods, but reducing sugar(3.77%) of field (drying was much lower than that of hot air drying(11.02%) and freeze drying(10.12%). Crude protein was higher in order of freeze drying> hot air drying> field drying, and the optical density of freeze drying at 520nm were higher up to about 3 times than field drying and hot air drying, respectively. Moisture content of dry Omija during the storage was increased, whereas acidity decreased at 25$^{\circ}C$. However changed little at 4, -5, -20$^{\circ}C$ Reducing sugar increased until 8 mouth, and thereafter decreased continuously. Optical density and color(L,a,b) decreased at 25$^{\circ}C$ but increased at 4, -5, -20$^{\circ}C$. Shelf-life of flesh Omija at 4$^{\circ}C$ was limited to 9 days because staring decay. Acidity and reducing sugar of flesh Omija continuously decreased during storage at -5, -60$^{\circ}C$. Optical density increased until 8 month and then decreased, and especially the optical density of 8 month storage at -60$^{\circ}C$ was higher than initial's.
