A Study on the Texture Characteristics of Ssooksulgis Affected by Mugworts (쑥 첨가량에 따른 쑥설기의 텍스쳐에 관한 연구)

  • Ssooksulgis made with different levels of Mugworts were tested to investigate the texture characteristics by sensory evaluation and mechanical test in this study. As a result of the sensory evaluation for Ssooksulgis with the levels of 0%, 10%, 20%, 30% and 40% , the consistency, texture, moistness and flavor were increased according to the increase of the added Mugworts. In view of color and overall quality, 30% Ssooksulgis was preferable than those of other mixing levels. In the texturometer measurement for Ssooksulgis, hardness tend to decrease, while springiness and cohesiveness tend to increase according to the increase of the added Mugworts. As for Ssooksulgis, the consistency and moistness in sensory evaluation correlated significantly with the cohesiveness and correlated negatively with hardness, chewiness, gumminess in mechanical test (p<0.01).

  • The present paper reviews the widely used surface microstructural investigation technique and micro/nano nondestructive evaluation(NDE) technique which is able to evaluate the surface and subsurface. In general, the micro/nano defects and microstructural state of surface have great influence on the mechanical, physical, and chemical properties of bulk materials. The investigation technique of surface microstructure is possible to evaluate the defects and microstructural state with high reliability. The various applications and developments of each inspection technique have been introduced. Consequently, it is thought that the technique developments and applications of micro/nano NDE in nondestructive industries are extensively possible hereafter.

찹쌀첨가량에 따른 백편의 조직감 특성의 변화

  • 백편을 만들 때 멥쌀가루 100에 찹쌀가루를 총중량의 0%, 5%, 10%, 15%, 20%, 25%, 30% 첨가하고 저장시간 0시간, 24시간, 48시간, 72시간 저장한 후 (4$^{\circ}C$에서) reheating 한 백편의 기호성과 조직감(Texture)에 어떠한 영향을 끼치는 가를 관능검사와 기계적 검사에 의해 측정한 결과를 다음과 같이 요약할 수 있다 1. 관능검사 결과 백편의 Color 는 찹쌀의 첨가량이 증가할수록 누런색이 짙어졌으며, 24, 48, 72 시간 저장한 후 reheating 한 백편도 누런색이 짙어지는 경향을 나타냈다. Coarseness 는 찹쌀의 첨가량이 증가할수록 증가하는 경향이었으나 저장전의 백편은 유의적인 경향을 나타내지 않았다. 찹쌀의 첨가량이 증가할수록 Softness, Dryness, crumblyness는 감소경향을 나타냈으며 24, 48, 72 시간을 저장한 후 reheating 한 백편도 유의적인 감소경향을 나타냈다. 외관의 기호도는 찹쌀의 첨가율이 5% 인 백편을 가장 좋아했고, 조직감 및 종합적인 기호도는 찹쌀의 첨가율이 10~20%인 백편을 좋아했다. 2. Rhemeter에 의한 백편의 Texture는 찹쌀의 첨가량이 증가할수록 Compression force, gumminess, Chewiness가 증가하는 경향을 나타냈다. 24, 48, 72 시간 저장한 후 reheating 한 백편은 저장전보다 점점 감소경향을 나타냈다가 72시간 저장한 후 reheating 하면 다시 증가경향을 나타냈다. Work ratio 및 Recovered height는 찹쌀의 첨가량과 저장시간의 변화에 크게 영향을 미치지 않았다. Recovered 하지 않고 0, 24, 48, 72 시간 저장한 백편의 Compressing force는 찹쌀의 첨가량이 증가할수록 증가경향이 컸고 저장시간이 경과함에 따라 Compression force가 증가하였는데 특히 24시간 저장하는 동안 급격히 증가하였다. 3. 찹쌀 첨가량이 증가할수록 수분함량은 증가하였고, 저장시간이 경과함에 따라 수분함량은 감소경향을 나타냈으나 24시간 저장한 후 reheating 한 백편만이 수분함량의 증가경향을 나타내었다. 4. qoruvs의 Softness 는 Compression force 및 Work ratio 와 유의적인 상관관계를 나타내었으며, Dryness 와 Crumblyness 는 Work ratio와 유의적인 상관관계를 나타내고 있어 백편의 조직감은 Compression force 와 Work ratio로 대치할 수 있을 것이라고 사료된다. 수분함량은 기계적 검사보다 관능검사와 더욱 높은 상관관계를 나타냈다.

Effect of Compression Test Conditions on the Textural Parameters of Imitation Crab-leg Product (압착시험 조건이 게맛살의 조직감 지표에 미치는 영향)

  • The optimum conditions fer the measurement of texture profile of imitation crab-leg products were investigated by different conditions using Texture Analyser and the date were compared to those of sensory evaluations. The textural characteristics of surimi gels were compared with those of imitation crab-leg products. The TPA values of 5 different kinds of commercial imitation crab-leg product and 2 kinds of surimi gel products purchased in a market in Seoul were measured. In surimi gels, instrumental hardness and cohesiveness were higher than those of imitation crab-leg products, especially chewiness and gumminess were significantly higher than those of imitation crab-leg products. In imitation crab-leg products, hardness and cohesiveness increased and springiness decreased as the probe diameter increased from 12.5 mm to 24.6 mm. In the different compression ratio (60, 70, 80%), hardness increased and cohesiveness and springiness decreased as the compression ratio increased. The chewiness, gumminess, cohesiveness and hardness increased slightly as the cross-head speed increased from 0.8 to 2.4 mm/sec. Significant correlations between mechanical and sensory values were observed in gumminess, chewiness, cohesiveness and hardness. The optimum conditions for the TPA measurement of imitation crab-leg products were a cross-head speed of 2.4 mm/sec and 60% compression ratio with a flat probe having twice of the sample diameter (24.6 mm).

  • Acupuncture is a treatment method that originated more than 3,000 years ago in China and is practiced in most of the world. Acupuncture became the most popular complementary and alternative medicine modality. Ultrasound is useful for research and educational purposes, visualizing needle insertion at acupuncture points, especially next to vulnerable structures such as nerves or the pleura. Additionally, ultrasound is an ideal imaging method for evaluation the biomechanical effects of needle manipulation on tissue and has the distinctive advantage of yielding both images of tissue morphology and biomechanical information. Elastography take aim at quantifying a mechanical response or the mechanical property of tissues from a mechanical stimulus, generated internally or externally. Therefore, the combination of ultrasound and elastography analyses allows quantitative assessment of dynamic changes in the structure of human connective tissue.

Arthroscopic ACL Reconstruction Using Quadrupled Hamstring Tendon with Tibial Remnant-preserving Technique (슬괵건을 이용하여 경골부 잔류 조직을 보존한 관절경적 전방십자인대 재건술)

  • Purpose: We evaluated the clinical results of arthroscopic ACL reconstruction using quadrupled hamstring tendon with tibial remnant-preserving technique. Materials and Methods: Thirty-five cases were evaluated from Feb, 2003 to May, 2006. The average interval from injury to surgery was $2.6{\pm}1.6$ months. The cause of injury was mostly sports-related trauma. The average follow-up period was 17 months. Tibial remnant was preserved as much as possible and caution was taken not to damage the remnant during ACL reconstruction. Postoperative rehabilitation was the same as the usual rehabilitation method after ACL reconstruction, except for delaying motion for 2 weeks with an extension locking brace. Clinical evaluation was performed using ROM; Lachman test; pivot-shift test; anterior displacement measurement using KT-2000 arthrometer; Lysholm score and proprioception measured by single limb standing test. Results: There was no limitation of knee motion without contracture. The Lachman test and pivot-shift test were both negative. The side-to-side difference of anterior displacement measured using KT-2000 arthrometer was improved from 6.7 mm to 2.2 mm. The average Lysholm score improved from 81 to 96. The single limb standing test for proprioceptive evaluation showed no significant difference from a normal leg. Conclusion: ACL reconstruction with tibial remnant-preserving technique can preserve mechanoreceptors with prorioception and expect good functional recovery.

Evaluation of Aging Degradation in 2.25Cr-1Mo Steel by Coercivity and Remanence Measurements - Microstructural Approach (보자력 및 잔류자화를 이용한 2.25Cr-1Mo강의 경년열화도 평가 - 미세조직적 접근)

  • Artificial aging was performed to simulate the microstructural degradation in 2.25Cr-1Mo steel arising from long time exposure at $540^{\circ}C$. Microstructural analysis (mean equivalent size, number of carbides per unit area) and measurement of mechanical properties(UTS, Vickers hardness) and magnetic properties(coercivity, remanence) were performed. By comparing these results, the relationship between magnetic properties and microstructural changes with artificial aging was clarified. The carbides were classified as rod, globular and acicular type in terms of morphology. The fine acicular carbides were found to diminish drastically in the initial stage of aging. The magnetic coercivity and remanence were observed to decrease rapidly in the initial about 920 hours of aging time and then decrease slowly afterwards. Linear correlations between the mechanical properties and magnetic properties such as correlations remanence were found.

  • 열교환기용 304L SUS 강관의 열에 기인한 열처리 영향이 강관의 조직과 기계적 성질에 미치는 영향을 평가하고자하였다. 이를 위하여 인위적으로 열처리시킨 304L SUS 강관의 표면과 표면하 마이크로 비커스 경도시험과 와전류 비파괴검사시험을 하였다. 또한 열처리영향에 따른 강관내 조직변화를 금속현미경으로 관찰하여, 열교환기용 304L SUS 강관의 열영향 평가를 비파괴적 기법으로 조사하고자 하였다.

  • In order to study the cast structure and mechanical properties of Al-10 % Mg alloy solidified under the various high hydraulic pressure, ranging from $0kgf/cm^2$ to $2000㎏f/cm^2$ , the relationship between the cooling rate and the cast structure was observed, and also the mechanical test and the measurement of the specific gravity were carried out. From this experiment, results were summerized as follows; 1. The cooling rate of the alloy increased with increase of the applied pressure. 2. The formation of the piping and the porosity in the castings was surpressed by applying the high hydraulic pressure. 3. The dendrite arm spacing decreased with increase of the applied pressure. 4. Mechanical properties and specific gravity increased with the increase of the applied pressure.

The Evaluation of Mechanical Property of WC-8%Co Alloys by Coercive Force and Magnetic Saturation (항자력과 자기포화도에 의한 WC-8%Co 초경합금의 기계적 성질 평가)

  • The prediction of mechanical properties for WC-Co alloys by evaluation of coercive force and magnetic saturation were studied in relation to their microstructure. The WC-8%Co alloys were prepared using different WC particle size, carbon content and various sintering temperature by PM process. The magnetic properties such as coercive force and magnetic saturation of sintered WC-Co alloys were critically dependent upon their final composition and microstructure. Slight changes of carbon contents and small variation of WC grain size result in marked changes of magnetic properties, hardness and transverse rupture strength of sintered WC-Co alloys. It was found that the coercive force and hardness were increased by fine WC grain size of sinterd alloys, and the coercive force was proportional to hardness. With decreasing total carbon content below the stoichiometric value in WC-8%Co alloys the volume fraction of $\eta$ phase increased steadily, while the magnetic saturation and transverse rupture strength decreased. The magnetic saturation was inversely proportional to the coercive force of WC-Co alloys.
