Evaluation of Factors Related to Productivity and Yield Estimation Based on Growth Characteristics and Growing Degree Days in Highland Kimchi Cabbage (고랭지배추 생산성 관련요인 평가 및 생육량과 생육도일에 의한 수량예측)

  • This study was carried out to evaluate growth characteristics of Kimchi cabbage cultivated in various highland areas, and to create a predicting model for the production of highland Kimchi cabbage based on the growth parameters and climatic elements. Regression model for the estimation of head weight was designed with non-destructive measured growth variables (NDGV) such as leaf length (LL), leaf width (LW), head height (HH), head width (HW), and growing degree days (GDD), which was $y=6897.5-3.57{\times}GDD-136{\times}LW+116{\times}PH+155{\times}HH-423{\times}HW+0.28{\times}HH{\times}HW{\times}HW$, ($r^2=0.989$), and was improved by using compensation terms such as the ratio (LW estimated with GDD/measured LW ), leaf growth rate by soil moisture, and relative growth rate of leaf during drought period. In addition, we proposed Excel spreadsheet model for simulation of yield prediction of highland Kimchi cabbage. This Excel spreadsheet was composed four different sheets; growth data sheet measured at famer's field, daily average temperature data sheet for calculating GDD, soil moisture content data sheet for evaluating the soil water effect on leaf growth, and equation sheet for simulating the estimation of production. This Excel spreadsheet model can be practically used for predicting the production of highland Kimchi cabbage, which was calculated by (acreage of cultivation) ${\times}$ (number of plants) ${\times}$ (head weight estimated with growth variables and GDD) ${\times}$ (compensation terms derived relationship of GDD and growth by soil moisture) ${\times}$ (marketable head rate).

DEU-7 Derived from Ulmus macrocarpa Improved Immune Functions in Cyclophosphamide-treated Mice (면역억제 마우스 모델에서 왕느릅나무 유래 DEU-7의 면역기능 증강)

  • The present study investigated the immunomodulatory properties of four different medicinal plants in a cyclophosphamide-treated Balb/c mouse model. One of the four plants, Ulmus macrocarpa, showed partial resistance against immune suppression induced by cyclophosphamide. The bark of U. macrocarpa, commonly known as the Chinese elm, has been used as a pharmaceutical material in Korean traditional medicine to treat bacterial inflammation and induce wound healing. In this study, water extract of U. macrocarpa, named DEU-7, was used for its immunomodulating functional activity. DEU-7 increased the weight of the spleen and the number of splenocytes but did not significantly affect the liver, kidney, and thymus in vivo. A splenocyte viability assay confirmed that DEU-7 influenced ex vivo splenocyte survival. DEU-7 also increased the levels of cytokines, such as IL-2 and IL-4, and immunoglobulins, such as IgM, IgG, and IgA. These results indicated that DEU-7 is involved in the activation of T and B lymphocytes. In addition, DEU-7 was able to maintain the production of cytokines, such as TNF-α, IL-12, and IFN-γ, in the condition of cyclophosphamide-induced immune suppression, suggesting that DEU-7 activated innate immune cells, even under immune suppression. We concluded that DEU-7 aids immunological homeostasis, thereby preventing immune suppression, and aids both innate and adaptive immune response by maintaining the levels of various cytokines and immunoglobulins. Consequently, it is worth investigating the potential of DEU-7 as a supplemental source for immune-enhancing agents.

Analysis of Business Performance in Dental Hygiene Process (ADPIE) in Dental Clinic (치과의료기관의 치위생과정(ADPIE) 경영성과 분석)

  • This study, the value of dental hygiene process and business performance among the dental clinics located in Gyeonggi province by comparing and analyzing the financial and non-financial results specifically in the department that provides and did not provide dental hygiene process (ADPIE). The collected data treated with percentage and t-test in utilization of IBM SPSS Statistics ver. 20.0. In terms of the medical cost per patient, the Department A (DA) that applied the dental hygiene process were 216,664 Korean Won (KRW) in 2013 and 324,810 KRW in 2014 whereas Department B (DB) which did not apply the dental hygiene process resulted in 184,655 KRW in 2013 and 225,698 KRW in 2014 (p<0.01). Regarding the number of daily patients, the DA showed increase of 8.08 (p=0.01) while DB showed increase of 2.42 patients (p>0.05). The medical consent rate was 89.17% in DA and 60.09% in DB in 2013 while showing 89.68% and 66.98% respectively in 2014 (p<0.001). The patients' revisit rate was 87.48% in DA and 44.92% in DB in 2013 and that of the DA and DB was 85.89% and 45.55% respectively in 2014 (p<0.001). The rate of regular check-up was 16.01% in DA and 2.53% in DB in 2013 and the same rate in 2014 showed 19.03% and 6.84% respectively in 2014 (p <0.001). The rate of referred patients was 38.46% and 29.98% respectively in DA and DB in 2013 whereas DA showed 47.59% and DB showed 30.77% in 2014 (p<0.05). According to the results, the medical system with dental hygiene process is verified to be a premium medical program that can improve satisfaction as well as management effectiveness in dental service.

Chemical Composition, Functional Constituents, and Antioxidant Activities of Berry Fruits Produced in Korea (국내 재배 베리류의 화학 조성 및 기능성 성분과 항산화 활성)

  • Berry fruits are rich in phytochemicals, including polyphenols, anthocyanins, phenolic acids, and organic acids, which are known to have beneficial effects on health. The aim of this study was to investigate chemical composition, functional constituents, and antioxidant activities of mulberry, black raspberry, raspberry, and blueberry cultivated in Korea. Acidity of the four berries ranged from 0.26% to 1.10%, and pH ranged from 3.3 to 5.2. Total mineral contents of the four berries ranged from 92.9 to 256.0 mg/100 g. Among the berries, mulberry contained the most abundant total free sugars, and glucose and fructose were the major sugars in the berries. Mulberry contained more than three times as much ${\gamma}-aminobutyric$ acid as the content of the other berries. Blueberry contained more free phenolic acid than the other berries. Especially, chlorogenic acids were the major free phenolic acids in blueberry. Black raspberry had the highest amount of polyphenols, anthocyanins, and flavonoids among the berries and showed the highest antioxidant activity.

Soil Residual Activity of Surfactant Mixtures Containing Polyoxyethylene Octylphenyl Ether and Their Effect on Initial Wetting and Water Movement in Container Media (Polyoxyethylene Octylphenyl Ether를 포함한 계면활성제 혼합물의 토양 잔류성 및 상토의 초기습윤화와 수분이동에 미치는 영향)

  • In developing soil wetting agent using polyoxyethylene octylphenyl ether [$C_8H_{17}O(C_2H_4O)_{10}H$, POE], the effect of mixtures of POE and polyoxyethylene+polypropyleneoxide tridecylether (1:1, w/w, CM-1), polyoxyethylene+polypropyleneoxide tridecylether+propyleneglycol monomethylether (1:1:2, w/w/w, CM-2) or glycerin+ditridecyl phthalate (1:1, w/w, CM-3) on changes of concentration of POE, initial wetting, evaporative water loss, water infiltration, and changes of physical properties in root media were determined. The mixtures of POE and CM-1, 2, or 3 with zeolite or vermiculite as carrier had high concentrations of POE in root media during 6 elution times, but those after 6 times decreased rapidly indicating unstable elution of POE. The commercial AquaGro was more effective than the mixtures of POE+CM-1, 2, or 3 in water retention during 18 hours. Root media incorporated with POE+CM-2 held more water than any other treatments at 84 hours after watering, but the differences among treatments except control were not significant. In the treatments with zeolite as a carrier, POE+CM-3 had the greatest evaporative water loss followed by POE+CM-2, AquaGro, control, and POE+CM-2. In the treatments with vermiculite as a carrier, POE+CM-1 had the highest evaporative water loss followed by POE+CM-3, AquaGro, control, and POE+CM-2. In the effect of mixtures with zeolite as a carrier on infiltration of water into root media, the treatment of POE+CM-1 had the highest amount of water infiltrated followed by POE+CM-3, AquaGro, POE+CM-2, and control. In the effect of mixtures with vermiculite as a carrier on infiltration of water into root media, the treatment of POE+CM-3 had the highest amount of water infiltrated followed by AquaGro, POE+CM-1, POE+CM-2, and control.

Antioxidant Activities of Phenolic Compounds from Medicinal Plants (Hibiscus esculentus, Cirsium japonicum, Zizania latifolia and Kalopanax pictus) (약용식물(오크라, 엉컹퀴, 엄나무, 줄풀) 유래 페놀성 물질의 항산화 활성)

  • In this study, the antioxidant activity of water and ethanol extracts from Hibiscus esculentus, Cirsium japonicum, Zizania latifolia and Kalopanax pictus for functional food source were examined. The optimal conditions for phenolic compounds extraction from medicinal plants were at 50% ethanol with Hibiscus esculentus and Cirsium japonicum var. ussuriense, at 40% ethanol with Kalopanax pictus and at 60% ethanol with Zizania latifolia. The total phenolic contents from the extracts of medical plants were determined to be 2.72~34.15 mg/g in the water extracts and 2.83~34.23 mg/g in the ethanol extracts. The electron-donating abilities (EDA) of the water and ethanol extracts were both above 74% at the low concentration of $50{\mu}g/mL$. The ABTS radical-cation decolorization was above 88% at $100{\mu}g/mL$ concentration in all the extracts of various medicinal plants. The antioxidant protection factor (PF) in the water and ethanol extracts of the Cirsium japonicum var. ussuriense extracts was $1.73{\pm}0.02PF$ and $1.76{\pm}0.01PF$ at $50{\mu}g/mL$ concentration respectively, and was higher than those of the other medicinal-plant extracts. The TBARs inhibition rates of all the medicinal-plant extracts, were above 80% at the $50{\mu}g/mL$ concentration except Hibiscus esculentus. These results confirmed that the various oriental medicinal plants (Hibiscus esculentus, Cirsium japonicum var. ussuriense, Kalopanax pictus and Zizania latifolia) that were included in this study are useful anti-oxidant and functional-food resources.

Study on Physicochemical Properties of Emulsion-Type Sausage Added with Pork Skin Gelatin (돈피 젤라틴을 첨가한 유화형 소시지의 이화학적 특성 연구)

  • The aim of this study was to investigate the effects of pork skin gelatin on the physicochemical properties (pH, CIE color value, water holding capacity, cooking yield, viscosity, proximate composition, and texture profile analysis) of emulsion-type sausage. Emulsion-type sausages were manufactured with 0% (control), 1%, 3%, and 5% pork skin gelatin. Moisture contents of samples containing 3% and 5% pork skin gelatin were significantly higher than those of the control and samples containing 1% pork skin gelatin (P<0.05). Protein contents were the highest in samples containing 5% pork skin gelatin (P<0.05). The pH values of uncooked and cooked samples increased with increasing pork skin gelatin level (P<0.05). The lightness and yellowness values of cooked samples containing pork skin gelatin were higher than those of the control (P<0.05). In addition, redness values of cooked samples containing 3% and 5% pork skin gelatin were significantly lower than those of the control and samples containing 1% pork skin gelatin (P<0.05). Water holding capacity (WHC) was the lowest in control, and samples containing 3% and 5% pork skin gelatin had significantly higher WHC compared to the other samples (P<0.05). Cooking yield of samples increased with increasing concentration of pork skin gelatin (P<0.05). Samples containing 3% and 5% pork skin gelatin showed higher viscosity than the control and sample containing 1% pork skin gelatin (P<0.05). Springiness, cohesiveness, and chewiness of samples were not significantly different among the samples. Hardness values of the control and sample containing 1% pork skin gelatin were lower than those of other samples (P<0.05), and samples containing 5% pork skin gelatin had the highest hardness (P<0.05). Gumminess of sample containing 5% pork skin gelatin was significantly higher than that of the control (P<0.05). The results show that pork skin gelatin could improve the potential of emulsion-type sausage physicochemical properties.

Roasting Conditions for Optimization of Citri Unshii Pericarpium Antioxidant Activity Using Response Surface Methodology (반응표면분석을 이용한 진피의 항산화 활성 최적화를 위한 로스팅 조건 확립)

  • This study was conducted to establish roasting conditions for optimization of Citri Unshii Pericarpium antioxidant activity using response surface methodology (RSM). A central composite design was applied to investigate the effects of two independent variables, namely roasting temperature ($40{\sim}100^{\circ}C$; $X_1$) and roasting time ($5{\sim}15min$; $X_2$), on responses such as electron donating ability ($Y_1$), total phenolic content ($Y_2$), total flavonoid content ($Y_3$), and hydroxyl radical scavenging activity ($Y_4$). The maximum electron donating ability was 72.38% at a roasting temperature of $71.12^{\circ}C$ and roasting time of 9.39 min. The maximum total phenolic content was 10.76 mg tannic acid equivalents/g at a roasting temperature of $69.71^{\circ}C$ and roasting time of 8.39 min. The maximum total flavonoid content was 105.99 mg quercetin equivalents/100 g at $72.54^{\circ}C$ and 8.64 min. The maximum hydroxyl radical scavenging activity was 60.33% at $68.97^{\circ}C$ and 9.84 min. Based on the superimposition of three dimensional RSM with respect to electron donating ability, total phenolic content, total flavonoid content, and hydroxyl radical scavenging activity under various conditions, optimum conditions were established as follows: roasting temperature of $70.90^{\circ}C$ and roasting time of 9.03 min.

Combined Treatment of Aqueous Chlorine Dioxide, Organic Acid, and Blanching for Microbial Decontamination of Wild Vegetables after Harvest (수확 후 산채류의 미생물 제어를 위한 이산화염소수와 유기산 및 Blanching 병합 처리)

  • To improve the microbiological safety of wild vegetables after harvest, Aster scaber and Cirsium setidens Nakai were treated with combinations of 50 ppm aqueous chlorine dioxide ($ClO_2$)/0.5% citric acid or fumaric acid, and 50 ppm $ClO_2$/0.5% fumaric acid/blanching at $90^{\circ}C$ for 2 min. Combined treatment of 50 ppm $ClO_2$ and 0.5% citric acid reduced populations of total aerobic bacteria, yeast, and molds in Aster scaber and Cirsium setidens Nakai by 2.80~3.64 and 2.02~2.67 log CFU/g, respectively, compared to those of the control. Combined treatment of 50 ppm $ClO_2$ and 0.5% fumaric acid reduced total aerobic bacteria, yeast and molds populations by 3.62~3.82 and 2.47~3.02 log CFU/g, respectively. Based on the results, combined treatment of $ClO_2$ and fumaric acid was more effective in controlling microorganisms in the wild vegetables than either $ClO_2$ or citric acid. In addition, combined treatment of $ClO_2$/fumaric acid/blanching reduced the populations of total aerobic bacteria by 4.59~5.12 log CFU/g, and populations of yeast and molds were not detected by treatment. These results suggest that combined treatment of $ClO_2$/fumaric acid/blanching is the most effective method for improving microbiological safety of wild vegetables after harvest.

Changes in Quality of Hanwoo Bottom Round under Different Freezing and Thawing Conditions (한우육의 냉동 및 해동 조건에 따른 품질 변화)

  • This study examined the effects of freezing and thawing conditions on quality of Hanwoo bottom round. The beef samples were frozen by air blast freezing at $-20^{\circ}C$ or ethanol immersion freezing at $-70^{\circ}C$ and then stored at $-20^{\circ}C$ for 10 days. After 10 days of storage, the frozen samples were thawed with air blast thawing at $4^{\circ}C$ or water immersion thawing at $4^{\circ}C$ and subjected to subsequent analyses of drip loss, water holding capacity, thiobarbituric acid reactive substance (TBARS), volatile basic nitrogen (VBN), total aerobic bacteria, and microstructure. Drip loss significantly increased in samples treated with air blast freezing compared to ethanol immersion freezing, whereas freezing and thawing processes had no significant impact on water holding capacity of the samples. Thawing conditions had a much stronger influence on the TBARS and VBN of the samples than freezing conditions. There was no significant difference in the population of total aerobic bacteria among the four samples subjected to one freeze-thaw cycle. In addition, to analyze the effects of freeze-thaw cycle on the quality of beef, three freeze-thaw cycles were performed during storage. Multiple freeze-thaw cycles increased drip loss, TBARS, and VBN and decreased water holding capacity, accelerating microstructural damage. These data indicate that Hanwoo bottom round can be rapidly frozen and thawed by using ethanol immersion freezing and water immersion thawing methods with minimal impact on meat quality.
