To investigate the efficacy of grapefruit seed extract (GFSE) in the preservation of Satsuma mandarin, the citrus fruits were treated with 0 (control, only wash), 100 ppm and 250 ppm, dried and stored for 8 weeks at $15{\sim}20^{\circ}C$ and 60% RH. While 80% of the control fruits were contaminated and decayed by Penicillium sp., forming the the greenish blue spores, 27% of 100 ppm GFSE-treated fruits were contaminated and decayed and only 13% of 250 ppm GFSE-treated fruits were contaminated and decayed and only 13% of 250 ppm GFSE-treated samples were contaminated and not decayed by the fungi. GFSE showed marded inhibitory action against Penicillium sp. which was related to the decay of the citrus fruits in vitro experiments. Fungal growth was completely controlled through use of 500 ppm and the recommended range of GFSE to preserve the citrus fruits was $250{\sim}500ppm$. Transmission electron microscopic examination showed the fungal conidiospores the function of which was destroyed by dipping into GFSE.
Soluble solids $(^{\circ}Brix)$, acid content and vitamin C content of Citrus miyakawa unshiu and C. okitsu unshiu juice harvested middle of November 1993 in Seuho-Dong and Topyung-Dong, Seogwipo-si, south area of Cheju were $10.7{\sim}11.0$, 1.04% and $41.19{\sim}44.94\;mg/100\;g$ juice, respectively. Carbohydrate was consisted of about 1/2 sucrose, 1/4 glucose, and 1/4 fructose. Fruit weight, peel thickness, soluble solids, pH, acid content and Brix/Acid ratio had a good correlation in linear function with increasing fruit size, respectively. However, hardness and edible part ratio were not showed correlation with increasing fruit size. Middle size of citrus fruit was favorable to panelists, and the citrus peel color of red yellow was more favorable than pale yellow color in sensory evaluation. Sensory evaluation score showed a linear correlation among citrus fruits of C. okitsu unshiu produced in Namwon-ri, Seuho-Dong, Seogwipo-si, south area of Cheju, and that of Chochun-ri, Ara-Dong, Cheju-si, north area of Cheju, and the score was higher according to citrus fruit produced in optimum cultivation area. With increasing Brix/Acid ratio of citrus juice, high sensory evaluation score was gained in panelists. These data obtained are supposed to be applied to the quality evaluation of Citrus unshiu produced in Cheju.

Analysis of chemical components in the cultivars of Korean figs(Ficus carical L.), Bongraesi and Seungjung Dauphone were performed. The results of analyses for Bongraesi and Seungjung Dauphine were found out to he moisture content of 88.70, 88.40%, protein 0.70, 0.72%, fat 0.31, 0.27%, fiber 1.12, 0.83%, ash 0.47, 0.44%, pectin 2.81, 2.71% and ascorbic acid 1.33, 1.67 mg%, respectively. The total and reducing sugar contents of two cultivars were 9.0%, 9.6% and 8.5%, 8.8% respectively. Glucose and fructose were major sugar components of figs. The organic acids in figs were mainly composed of citric and tartaric acid. The amino nitrogen contents of the two cultivars were 47.6 mg/100g in Bongraesi and 38.7 mg/100g in Seungjung Dauphine. It was found that major amino acids in figs were serine, aspartic acid, proline and alanine. The content of these fraction in total amino acid were shown 62.8% in Bongraesi and 64.0% in Seungjung Dauphine, respectively.
The study was established to compare fruit qualities and antioxidant compounds in 'Niitaka' pear (Pyrus pyriforia) trees grown in the organic and conventional farming systems. Fruits in the organic system appeared to have dark red color on the fruit surface. Fruit weight, soluble solids, acidity, firmness, and stone cells were not different between the farming systems. Organic fruits had a greater potassium concentration than the conventional fruits, but phosphorous, calcium, and magnesium concentrations in fruits were not different between the treatments. Peel, flesh, and juice parts in the organic fruits had greater phenolic compounds compared to the conventional fruits. Peel parts had much greater antioxidant compounds than the flesh parts, regardless of the treated-fruits. All fruits grown in the conventional and organic systems had a similar DPPH ($\alpha$, $\alpha$-diphenyl-$\beta$-picryl-hydrazyl) radical-scavenging activity in the peel, but flesh parts in organic fruits had a greater DPPH than the conventional fruits. Phenol and flavonoid compounds in the peel and flesh were positively related to the DPPH radical-scavenging activity. There were no significant differences for the nitrite scavenging activity in the peel and flesh parts between the treatments.
The volatile components, normal hydrocarbons, organic acids, and nonvolatile fatty acids in the various parts of Luffa cylindrica(L.) Roemer(sponge-gourd) were analyzed by GC and GC/MS. More than 150 volatile components were separated and thirty seven components were identified and quantified. The contents of essential oil were 0.05%, 0.05%, and 0.08% on a dried weight base in leaves, stem, and seeds respectively. Fruit juice and sap contained 0.06% and 0.03% oil on the fresh weight base. Twenty six components of normal hydrocarbons in leaves, stem, seed, and unripe fruit were separated, identified, and quantified. The total concentrations of the hydrocarbons were $75.5\;{\mu}g/g$ in leaf, $52.0\;{\mu}g/g$ in stem, $46.6\;{\mu}g/g$ in fruit juice, and $32.8\;{\mu}g/g$ in seed fractions. The major hydrocarbons in leaves, stem, and fruit juice were $nC_{25}$, $nC_{27}$, $nC_{29}$, and $nC_{31}$, $nC_{16}$, $nC_{17}$, $nC_{18}$, and $nC_{19}$ were abundant in seeds mainly. The concentration of malonic acid among the five organic acids was highest in leaves, stem, and flowers. Unripe fruit contained 24.5 mg/g of the five organic acids and malic and citric acids were higher. The concentrations of palmitic, linoleic, and linolenic acids were higher concentration in the various parts of sponge-gourd and palmitic acid was distributed in the most parts. The concentrations of organic and fatty acids in the sap were negligible.
For the development of mulberry wine, we investigated its optimum fermentation conditions as well as quality changes during fermentation. The physicochemical characteristics of the mulberry fruit used in the study were pH 4.56, 0.50% titratable acidity, and 13.0 $^{circ}Brix$ soluble solids. The mulberry wine fermented with Saccharomyces cerevisiae KCCM 12224 (Sc-24) at 24 $^{circ}Brix$ soluble solids and $26^{circ}C$ showed excellent characteristics in terms of ethanol production, titratable acidity, and redness. The sucrose, fructose, and glucose contents of the mulberry wine drastically decreased with fermentation time. The citric acid content was maintained during the fermentation period, and malic acid decreased, but lactic and succinic acids increased. The cyanidin-3-glucoside content, a major anthocyanin pigment, of the mulberry wine drastically decreased from 195.5 mg% at the initial stage of fermentation to 15.37 mg% at 2 days of fermentation. However, cyanidin-3-rutinoside decreased gradually. In summary, a mulberry wine of high quality was made by fermentation for 8 days at $26^{\circ}C$ using mashed mulberry fruit containing $24^{\circ}Brix$ soluble solids, after adding 200 ppm $K_2S_2O_5$ and inoculating with 3%(v/v) Sc-24.

This study was carried out to optimize the filtration, clarification, anti-browning processing conditions of clear pear juice and to investigate changes in antioxidant activity of pear juice produced through different heating treatment. For the filtration with cheese cloth, filter paper, or centrifugation (10 min at 3,000 rpm), the pear juice was most efficiently filtered with centrifugation because it showed the highest lightness (L value) and lowest yellowness (a value). Among various clarifying agents, 1% of gelatin or bentonite clarified effectively pear juice but tannin or egg albumin did not. Among anti-browning agents (0.1%) like L-ascorbic acid, NaCl or citric acid, L-ascorbic acid prevented the browning of pear juice with the lowest browning index value (2.62), compared to that of NaCl (2.74), or citric acid (2.87). Fructose, sucrose, glucose and sorbitol were present in the pear juice, the fructose and glucose contents increased but that of sucrose decreased in the heated pear juice. The total polyphenol content of the heated pear juice significantly increase, and did the total flavonoid contents in the clear and heated pear juice. The DPPH radical scavenging activity and nitrate scavenging activity were higher in the clear and heated pear juice than in the fruit crush.
This study was conducted to investigate the food value of Cudrania tricuspidata at its various maturation stages. The pH, total acid and reducing sugar contents of its fruit juice were determined to have been 4.2~5.1, 1.4~2.0% and 5.4~8.6%, respectively. The general chemical components of its fruit were observed as 76~80% moisture, 2.2~3.5% crude protein, 1.7~2.9% crude fat, 0.8~1.2% ash and 14.5~16.4% carbohydrate. Its free sugar, glucose and fructose contents were determined. The fructose contents of both its ripened and over-ripened fruits were higher than their glucose contents. Organic acids such as oxalic acid, citric acid, tartaric acid, malic acid and succinic acid were detected, and the concentration of the malic acid and the succinic acid were found to have been most abundant. The K content was higher than the amounts of other minerals, such as Ca, Fe, K, Mg, Na and P. Its vitamin C and the total amount of its dietary fiber were 127.5~149.2 mg% and 22.7~38.7%, respectively. Its insoluble dietary fiber content was higher than its soluble dietary fiber content. Its total polyphenol and flavonoid content were 18.9~19.6 mg% and 40.9~48.2 mg%, respectively.

The effect of chitosan on the quality of processed milk was investigated to minimize the microbial spoilage occurred by contaminant bacteria and yeast. Yeast and bacteria isolated from commercial processed milk were identified as Saccharomyces cerevisiae and Pseudomonas fluoresence by Api 20C and 20E Aux kit, respectively. The growth of isolated yeast and bacteria inhibited in YM broth and TSB containing 0.03% chitosan at $25^{\circ}C$ and $37^{\circ}C$ for 24hour, respectively. Viable cells of processed milk artificially contaminated with Saccharomyces cerevisiae and Pseudomonas fluoresence were reduced about 2~3 l$og_{10}$ cycle by addition of 0.03% chitosan pH, acidity and total bacteria were changed from after storage for 10 day at $4^{\circ}C$, 7 day at 1$0^{\circ}C$ and 1day at $25^{\circ}C$in chitosan no added processed milk during storage for 15day. But, The change of physico-chemical and microbiological charcteristics could not observe in 0.3% chitosan added processed milk during storage 15 day at $4^{\circ}C$, 1$0^{\circ}C$ and $25^{\circ}C$, respectively. The sensory quality of processed milk with 0.3% chitosan was different significantly from control in taste, texture and overall acceptability(p<0.05).
This study was conducted to analyze components of the fruit of Etaeagnus multiflora to form a part of studies on the nutritional and functional materials of fruits and leaves of E. multiflora, and the development of a functional food. The moisture content of the fruit was 82.34%, and the content of carbohydrate, crude protein, lipid and ash was 15.4, 1.29, 0.79 and 0.54%, respectively. The pH of the fruit extract was 3.29, acidity 0.64%, and brix 14.0. Total sugar was contained 1.03/100g and reducing sugar was 3.27 g/100g. The content of soluble protein was 0.48 g/100g, and polyphenol was 0.28 g/100g. The glucose and fructose as a free sugar was 401.96 and 370.34 mg/100g, and account for a great portion of the components. Total content of free sugary was 0 mg/100g. The total amount of organic acid was 294.44 mg/100g, and the content of citric acid was 265.01 mg/100g, malic acid 18.16 mg/100g, and succinic acid 8.50 mg/100g. In the free amino acid, the concentration of serine was the highest (13.93mg/100g), and alanine, aspartic acid, cystine and methionine were high in the above order. The content of ascorbic acid was 131.35 mg/100g and that of dehydroascorbic acid was 431.37 mg/100g. Potassium, magnesium and sodium content were 627.44, 140.28, and 56.70 mg/100g, respectively.
