Development and Evaluation of a Brief Fruit and Vegetable Food Frequency Questionnaire for Higher-Grade Elementary School Children (초등 고학년 아동의 과일 및 채소 섭취 수준 평가를 위한 간단한 식품 섭취 빈도 조사지의 개발과 평가)

  • 본 연구는 초등 고학년 아동의 과일과 채소 섭취 수준 측정을 위한 간단한 식품 섭취 빈도 조사지를 개발 및 평가하고자 실시되었다. 2001년도 국민건강영양조사에 참가한 만 $9{\sim}11$세 아동의 24-시간 회상 자료에 기초하여 식품섭취빈도 조사지의 항목 선정을 위한 기초 조사를 하였다. 각 과일과 채소 식품의 일일 평균 섭취량을 전체 아동 및 섭취량의 4분위 집단 별로 산출한 후, 이 자료를 바탕으로 전체 인구 집단의 섭취량을 대변할 수 있을 뿐만 아내라 고 섭취군과 저 섭취군 간의 차이도 나타낼 수 있는 항목을 선정하였다. 총 9개의 과일 항목과 11개의 채소 항목이 식품 섭취 빈도지에 포함되도록 선정되었으며, 섭취 빈도에 대한 응답 항목은 지난 7일 간의 섭취에 대하여 1개의 선택 범주가 제시되었다. 개발된 조사지의 신뢰도와 상대적 타당도에 대한 평가는 서울에 위치한 한 공립 초등학교에 재학 중인 153명의 $4{\sim}6$학년 학생들을 대상으로 실시하였다. 한 달간의 간격을 두고 2회에 걸쳐 조사를 실시한 자료를 이용하여 검사-재검사 신뢰도를 평가하였으며, 두 번째 방문 시에 28개의 과일 및 채소 항목을 추가로 포함하고 있는 식품섭취빈도 조사지를 더불어 실시한 자료를 바탕으로 상대적 타당도를 평가하였다. 상관 분석과 항목 별 빈도 응답 및 섭취 수준에 따른 집단내 순위 분류의 일관성에 대한 분석을 실시한 결과, 본 연구에서 개발된 20개 항목의 과일 채소 식품 섭취빈도 조사지의 신뢰도와 상대적 타당도가 적정 수준 이상으로 나타났다. 신뢰도를 살펴보기 위한 개별 항목 및 과일, 채소, 과일+채소 섭취 빈도에 대한 상관계수는 $0.22{\sim}0.64$(p<0.001)이었으며, 항목별 빈도 응답의 일관도는 평균 69.3%(<=1 빈도 응답차이)와 81.3%(<=2 빈도 응답 차이)로 나타났다. 상대적 타당도를 살펴보기 위한 과일, 채소, 과일+채소 섭취 빈도에 대한 상관계수는 $0.91{\sim}0.93$(p<0.0001)로 높게 나타났다. 따라서 본 연구를 통하여 개발된 식품섭취빈도 조사지는 초등고학년 아동의 과일채소 섭취 수준을 간단히 심사하거나 평가하는 도구로서 유용하리라 사료된다.

Seasonal variations of nutrients in Korean fruits and vegetables : Examining water, protein, lipid, ascorbic acid, and ${\beta}-carotene$ contents (한국인 상용 과일과 채소의 계절별 영양성분 변화 : 수분, 단백질, 지방, 아스코르브산, 베타-캐로틴 함량)

  • The purpose of this study was to investigate the seasonal variations in water, protein, lipid, ascorbic acid, and ${\beta}-carotene$ contents of 17 vegetables and 4 fruits that are available all the year round and frequently consumed by Koreans. The water contents of the fruits ranged from 83-89%, and the vegetables contained more water than the fruits. The apples and pears had more water in the spring and summer than in the fall and winter. The tangerines showed a high water content in the winter, whereas the strawberries contained more water in the fall. The vegetables also showed seasonal variations in water content. The protein contents of the fruits were lower than 1%; the cucumbers contained 0.1% protein, which was the lowest level, but spinach, lettuce, bean sprouts, sesame leaves, and mushrooms had more than 1% protein. The ascorbic acid and ${\beta}-carotene$ contents of the apples, pears, and tangerines were higher in the fall and winter than in the spring and summer. The vegetables, in general, contained more ascorbic acid than the fruits. The cabbage and radishes showed higher ascorbic acid contents in the fall and winter than in the spring and summer, indicating that vegetables as well as fruits are more nutritious during their harvest season. The zucchini, spinaches, and green peppers had higher ${\beta}-carotene$ contents in the winter than in the other seasons. The above results show that there were seasonal differences in the ascorbic acid and ${\beta}-carotene$ contents of the fruits and vegetables. In addition, the fruits and vegetables had a tendency to contain more ascorbic acid and ${\beta}-carotene$ in the season they were harvested. Therefore, we recommend the consumption of those fruits and vegetables during their harvest season.

Association of fruit and vegetable consumption with asthma: based on 2013-2017 Korea National Health and Nutrition Examination Survey (한국 성인 남녀의 채소, 과일 섭취와 천식 유병률의 관련성: 2013-2017 국민건강영양조사 자료를 이용하여)

  • Purpose: This study examined the association of fruit and vegetable consumption with asthma in Korean adults. Methods: Data on 16,528 adults aged 19-64 were collected from the Korea National Health and Nutrition Examination Survey (KNHANES). The general characteristics of the subjects, daily food intake, and daily energy and nutrients intake were investigated according to fruit and vegetable consumption. All statistical analyses were conducted based on SAS software version 9.4. Results: The prevalence of doctor-diagnosed asthma was 2.6%, and ranged between 1.8% and 3.1% depending on fruit and vegetable consumption. As fruit and vegetable consumption increased, the individuals showed a higher average age and household income, but a lower educational level, smoking rate, and frequency of alcohol consumption. The group with higher fruit and vegetable consumption had higher intakes of all food groups without milk and dairy products and energy and nutrients than the counterpart group. For the intake rate of energy, the group with higher consumption of fruit and vegetables had a higher intake rate of carbohydrate and protein and a lower intake rate of fat. The risk rate of asthma with the third quartile group regarding fruit and vegetable consumption was 35%-40% lower than that of the first quartile group. Conclusion: The results suggest that adequate consumption of fruit and vegetable will help to improve the risk of asthma. Moreover, prospective cohort studies and clinical test research are necessary to measure the effects of fruit and vegetable consumption on the occurrence of asthma.

The Effect of Nutrition Education on the Improvement of Psychosocial Factors Related to Vegetable and Fruit Intake of Elementary School Children in Pre-Action Stages (채소와 과일섭취 증진을 위한 영양교육이 행동전단계 초등학생의 사회심리적 요인의 변화에 미치는 효과)

  • This study investigates the change of level of psychosocial factors of decisional balance, processes of change, and self-efficacy after nutrition education on vegetable and fruit intake of children in pre-action stages. Forty-seven 5th grade elementary school children in Yeongi-Gun, Chungnam-Do were categorized into pre-action stages from a total of 71 children by four-stage questions, and then finally into two stages of precontemplation and contemplation & preparation. After 6 weeks nutrition education, recognition of both of pros and cons of vegetable intake were improved in the two groups of precontemplation and contemplation & preparation. In fruits intake, however, recognition of pros was not changed after nutrition education in either stage, but recognition of cons was improved only in the precontemplation stage. However, no difference in any psychosocial variables was found between precontemplation stage and contemplation & preparation stage. After the nutrition education, the score of consciousness raising of vegetable intake belonging to cognitive process of change increased in the subjects of the precontemplation stage, wheres the scores of dramatic relief, self-reevaluation, environment reevaluation and social liberation increased in the group of contemplation & preparation. In fruit intake, however, no change was found except in the environment reevaluation in the precontemplation group. The behavioral process of change of vegetable and fruit intake did not show any change in either group after nutrition education. Self-efficacy scores of vegetable intake of keeping the foods at hand, eating the recommended number of servings and making time to eat increased in the precontemplation group, while in the contemplation & preparation group, self efficacy scores of shopping for a variety of vegetables, instead of keeping the foods at hands, as well as the scores of the rest two items of eating the recommended number of servings and making time to eat increased after nutrition education. However, in case of fruits intake, no difference was shown in the precontemplation stage except an item of keeping the foods at hand. The results indicated that the stage of change was progressed in the pre-action stage after nutrition education and the scores of many psychosocial factors increased in both pre-action stages. It is suggested that the recognition of cons as well as the cognitive process of change and self-efficacy could be best used as indicators of the assessment of nutrition education program for vegetable intake.

  • Purpose: This study investigated fruit and vegetable intake and associated socio-demographic and dietary factors, and compared the nutritional intake according to the fruit and vegetable intake level among Korean adolescents. Methods: This study was conducted on 1,676 adolescents who participated in the 2016-2019 Korea National Health and Nutrition Examination Survey. The subjects were classified into four groups based on the fruit and vegetable intake recommendations in 2020 Dietary Reference Intakes for Koreans: Application (KDRIs Application): sufficient fruit intake (SF) group, sufficient vegetables intake (SV) group, sufficient fruit and vegetables intake (SFV) group, and not sufficient fruit and vegetable intake (NS) group The nutrient intake per day in each group was compared.. Logistic regression analysis was performed to examine the factors influencing fruit and vegetables intake. Results: In the sample of adolescents surveyed, only 1.40% met the recommended daily intake of fruits and vegetables, while 79.54% fell below the established threshold for adequate consumption. Female adolescents, those with fathers holding university degrees or above, and those who ate breakfast at least three times a week were likelier to have adequate fruit intake. Male adolescents and those from higher-income households were likelier to consume vegetables. Females, those who ate out daily, those from lower-income households, and those who understood food labels were likelier to have adequate fruit and vegetable intake. The daily nutrient intake and intake-to-requirement ratio significantly differed according to the fruit and vegetable intake groups. The NS and SF group had lower ratios for calcium and iron, while the NS group had the lowest vitamin A and C intake. By contrast, the SFV group met almost all daily nutrient requirements, except for calcium and vitamin A. Conclusion: This study highlights the need for nutrition education programs to encourage adolescents to consume adequate amounts of fruits and vegetables.

  • Traditionally, lactic acid bacteria(LAB) is microorganism that has been used for food fermentation. Bacteriocinogenic culture and by-products of lactic acid bacteria have the antimicrobial effect. The antimicrobial effect of lactic acid bacteria enable to extend the shelf life of many foods through fermentation processes. Therefore, a lot of investigation of antimicrobial compounds from LAB have been studied on the effect of foods preservation of fish, meat, dairy product, refreserated nonfermentive food and so on. However a little research on the effects of LAB in fruit and vegetables preservation has been reported. In this study, effectiveness of LAB as a quality preservative in fruit and vegetables storage were reviewed.

Determination of Dietary Fiber Content in Some Fruits and Vegetables (과일.채소중 식이섬유의 분석법 검토 및 함량 분석)

  • This study was undertaken to examine the applicability of domestic enzymes in the quantitative determination of dietary fibers according to the official enzymatic-gravimetric method of AOAC and to apply it to 4 kinds of fruits (apple, pear, peach and persimmon) and 4 kinds of vegetables (Korean radish, lettuce, Korean cabbage and cabbage Kimchi). With domestic enzymes, an optimum condition was selected to use 1/10 units of enzyme activity and to extent the reaction time two-fold as compared with the recommended method, in the case of fruits and vegetables. On a dry matter basis, fiber contents of fruits were in the range of 9.4-28.8% total dietary fiber, 1.8-7.8% non-cellulosic polysaccharides, 3.7-5.8% cellulose and 1.3-21.3% lignin. Fiber contents of vegetables were 26.0-35.7% total dietary fiber, 11.3-14.4% non-cellulosic polysac-charides, 12.3-19.7% cellulose and 1.4-7.4% lignin. On a dry matter basis, crude fiber contents were 3.5-6.7%in fruits and 9.1-13.8% in vegetables. Therefore, crude fiber contents of fruits and vegetables accounted for only 12-50% of total dietary fibers.
