  • This study was established to investigate the effects of Ca application on fruit mineral nutrients, quality, and browning of 'Fuyu' sweet persimmon (Diospyros kaki). Ca foliar application at 40ml/20L/tree had a greater fruit Ca concentration than did control, Ca fertigation (40ml/20L/tree), and Ca foliar application (40ml/20L/tree) coupled with IBA fertigation (40ml/20L/tree). Fruit mineral nutrient concentrations for Mg, B, and Mn were similar or lower in the foliar treatment compared to other treatments. Fruit color was not affected. Ca treatment, whether foliar applied or fertigated, was effective in maintaining fruit firmness and in decreasing the browning symptom in fruit after MA storage at $0^{\circ}C$ for 60 and 100 days. Although Ca foliar application + IBA fertigation treatment improved fruit firmness, the positive effect on the browning and decay occurrences in fruit was not shown.

• Pectolytic enzymes were extracted in apple fruits rotted by Botryosphaeria dothidea, and their activities and change of pectic substances were investigated. Exo-polygalacturonase(exo-PG), exo-polymethylgalacturonase(exe-PMG), polygalacturonate-trans-eliminase(PGTE) and pectin-methyl-trans-eliminase(PMTE) were produced by the pathogen. Activities of exo-PG and exe-PMG extracted from rotten apple fruits were high to 21.15 and 24.65 units/mg protein in specific activity at seven days after inoculation, respectively. Activities of PGTE and PMTE showed 5.60 and 7.90 units/mg protein, respectively, but they were lower than those of the exo-type enzymes. Water-soluble and versene-soluble pectins were 11.50 mg/100 mg-AIS and 7.31 mg/100 mg-AIS at 14 days after inoculation, namely, they were increased by 4.23 and 2.16 mg/100 mg-AIS over those of sound apples, respectively. Total soluble pectic substances of rotten apple were 72.4% of total pectic substances and it was higher by 24.8% than sound apple. Insoluble pectic substance was notably decreased from 15.32 to 7.16 mg/100 mg-AIS according to progress of decay while total pectic substances were not changed remarkably.

  • This experiment was carried out to investigate the influence of flooding on the quality and yield of an oriental melon. Waterlogging for four periods, 0(not flooded), 5, 10 or 15h, were applied to 30cm depth from the soil surface. The soluble solids content of fruit flesh measured at 7 days after waterlogging was 12.6 Brix in not-flooded plot, but it decreased by 4.7-5.6 Brix in plots flooded 5, 10 or 15h, respectively. Difference in fruit hardness between the no-flooded and 5h-flooded plots was not observed, while a significant decrease in fruit hardness was observed in 10 or 15 h-flooded plots at 7 days after waterlogging. Decrease in fruit hardness in all plots except control plot was observed at 13 days after waterlogging. The percent decayed fruits at 7 days after waterlogging was not observed, but at 13 days after waterlogging it gradually increased as duration of flooding increased. The incidence of downy or powdery mildews increased is significantly in plots flooded for 5, 10 or 15h as compared to the not-flooded control. However, population of cotton caterpillar decreased in the flooded plots. Marketable fruits yield per 10a was 616.2kg in no-flooded plot, but it decreased by 33%, 45% and 66%, respectively, in plots flooded for 5, 10 or 15h. The waterlogging during fruit enlargement stage significantly deteriorated fruit quality and decreased marketable fruit yield.

  • Quality deterioration during storage such as weight and fruit firmness loss after harvest is one of the main problems in summer cultivation of mini paprika. Objective of this study was to determine appropriate storage temperature and duration in the mini paprika('Hivita Yellow' and 'Hivita Red'). More fruit firmness loss during storage was observed at higher storage temperature. Fruit firmness of 'Hivita Yellow' at $20^{\circ}C$ was $99.6g/cm^2$ after a 5-day storage whereas that decreased by $73.0g/cm^2$ after a 40-day storage. Storing 'Hivita Yellow' at $8^{\circ}C$ showed the lowest fruit firmness loss with 109.7 and $92.7g/cm^2$ after a 5-day and a 40-day storage, respectively. In both cultivars, soluble solids content of fruits was higher at $20^{\circ}C$ than at 4, 8 and $12^{\circ}C$. Higher temperature triggered more water loss of the fruits with more occurrence of soft rot and shriveling symptoms. The changes in electrolyte conductivity of fruits during storage was higher in the fruits at lower temperature. Fruit stored at $20^{\circ}C$ showed the highest respiration(more $CO_2$ and less $O_2$) during storage than fruits at the other storage temperatures.

  • This study was conducted to examine decay incidence of citrus fruit treated with antifungal patches during short-term storage using 10 kg paper boxes at room temperature. It was investigated for 15 days in 'Iwasaki' and for 30 days in 'Miyagawa' treated with 200 mg/kg and 500 mg/kg patches of hexanal, carvacrol, and cinnamaldehyde alone or mixed. When it was treated with 200 mg/kg in 'Iwasaki, The decay rate of fruit was at 1.0% in carvacrol alone. In 'Miyagawa', The decay rate of fruit showed lower at cinnamaldehyde and hexanal+cinnamaldehyde mixture of 500 mg/kg than others. And also hexanal+cinnamaldehyde mixture of 200 mg/kg was twice lower than others. In conclusion, the mixed antifungal patches was more effective in reducing citrus fruit decay in citrus fruits than alone at room temperature.

  • The experiment described in this paper focused on determining the effects of high-temperature(20$^{\circ}$) treatment of Satsuma mandarins, prior to their storage, on their color development and quality. High-temperature treatment promoted fruit skin color during the storage, decreased the weight loss regardless of their color at the time of their harvest and reduced the decay occurrence until the middle of March, but there was no difference between treatments after the end of March. There was a tendency of higher soluble solid and acid levels in the fruit when high-temperature treatment was applied but this difference was not significant.

  • The objective of this study was to evaluate the effect of storage temperature on fruit quality attributes and physiological disorders including peel blackening in 'Sangjudungsi' persimmon (Diospyros kaki Thunb.) fruit stored in air at -1, 0.5 or $3^{\circ}C$ for up to 3 months. Higher storage temperature reduced ethylene production but not respiration rate, compared with lower storage temperature. Flesh firmness decreased continuously as storage time passed but firmness was reduced rapidly in the fruits stored at higher storage temperature. Fresh weight loss increased at higher storage temperatures. Soluble solids content was higher at lower storage temperature than at higher storage temperature. All color variables ($L^*$, $a^*$, $b^*$) were reduced by lower storage temperature, compared with higher storage temperature, regardless of tissue regions. Fruit softening increased as storage duration advanced and with the increase in storage temperature. Results indicated that the 'Sangjudungsi' persimmon fruits stored at higher storage temperature ($3^{\circ}C$) could not retain fruit quality properly on account of lower flesh firmness and higher incidence of peel blackening and fruit decay, compared with lower storage temperature.

  • This research was conducted for major cultivated chestnut (Castanea spp.) in Korea to compare chestnut quality characteristics according to storage temperatures ($4^{\circ}C$ vs. $-1^{\circ}C$) and cultivars. Color, hardness, soluble solids content (SSC), rate of decay and sensory evaluation were investigated during 16 weeks storage. Cultivars 'Tsukuba' and 'Ishizuchi' showed the least pericarp color change while cultivars 'Riheiguri' and 'Daebo' showed the most pericarp color change during storage. Chestnut fruits stored at $-1^{\circ}C$ showed less pericarp color change than those stored at $4^{\circ}C$. Cultivars 'Arima' and 'Tanzawa' exhibited the decrease tendency of hardness with lowest hardness during storage at $-1^{\circ}C$. Chestnut fruits stored at $4^{\circ}C$ showed high hardness than those stored at $-1^{\circ}C$. Cultivars 'Riheiguri' showed the highest increase of SSC, while cultivar 'Arima' showed the lowest increase of SSC after 16 weeks of storage. The SSC increased in nuts from all cultivars at both temperatures, but nuts stored at $-1^{\circ}C$ showed higher increases in SSC than nuts stored at $4^{\circ}C$. Cultivars 'Ishizuchi' and 'Riheiguri' showed high rates of decayed nuts in contrast to cultivars 'Daebo', 'Okkwang' and 'Tanzawa' that showed low rates of decayed nuts during storage. The chestnut fruit stored at $-1^{\circ}C$ showed less decay than fruit stored at $4^{\circ}C$. Texture and sweetness were tested for sensory evaluation. Among the tested cultivars, 'Riheiguri', 'Daebo' and 'Tsukuba' showed hard texture and very sweetness, while 'Tanzawa' showed relatively soft texture. 'Arima' and 'Okkwang' showed weak sweetness during storage. Nuts stored at $4^{\circ}C$ exhibited harder texture than nuts stored at $-1^{\circ}C$ while $-1^{\circ}C$ exhibited more sweetness than nuts stored at $4^{\circ}C$. Chestnuts for hard texture and short-term storage (less than one month), $4^{\circ}C$ will be a proper storage temperature, while in order to store long-term (more than 4 month), $-1^{\circ}C$ will be a proper storage temperature. Result from this study provide base-line data of postharvest management for Korean cultivated chestnut as well as contributing increased product value and income for chestnut producers.
