Comparative Analysis of Bioactive Compounds and the Sensory Evaluation of Korean Chili (Capsicum annuum L.) Ketchup and American Chili Ketchup (미국 고추케찹 및 국내산 고추케찹의 생리활성 성분 및 관능특성 분석)

  • The purpose of this study is to analyze the Korean chili (Capsicum annuum L.) ketchup and American chili ketchup for their comparative bioactive components and then conduct a sensory evaluation. American chili ketchups are collected from Americans' local favorites, and then the American chili ketchups and Korean chili ketchups are analyzed based on their physiological compositions. Bioactive analysis of the Korean chili ketchups show : total capsaicinoids of $2.59{\pm}1.00mg/100g$, total carotenoids of $33.28{\pm}1.52mg/100g$, total phenol of $61.17{\pm}8.08mg/GAE/100g$, and vitamin C equivalent antioxidant capacity (VCEAC) of $187.04{\pm}3.22mg/100g$. The Korean chili ketchups show higher overall acceptability when being compared to Americans' local favorite chili ketchups. In the sensory evaluation, there are significant differences (p<0.05) in sour, sweet, hot, salty taste, and the overall acceptability in two groups.

  • 본 연구는 농산물을 건조할 때 배풍구로 버려지는 열을 회수하여 건조열원으로 재이용할 수 있는 배풍열 회수장치를 개발하여 연료절감 및 열회수장치의 성능을 분석한 연구 결과 다음과 같은 결론을 얻었다. 가. 농산물건조기의 열수지를 분석한 결과 투입열량을 100%로 하였을 경우, 배기열은 13.2%, 배풍역량 77.7%, 관류열량은 9.1%로 나타났다. 나. 고추를 건조시 배풍구입구온도가 55-6$0^{\circ}C$일 때 배풍구 출구온도 41-43$^{\circ}C$, 일때 흡입구 입구온도는 25-28$^{\circ}C$, 흡입구 출구온도는 41-43$^{\circ}C$로 나타나 건조실로 41-43$^{\circ}C$의 높은 온도를 투입할 수 있었다. 다. 배풍열 량이 단위 시간당 4700kca1에서 6000kca1로 증가할 때, 흡입 열량은 2200kca1에서 3000kca1로 나타났다. 라. 고추의 초기함수율이 80%에서 15%까지 떨어지는데 관행건조는 약 27시간이 경과했으며, 배풍연회수건조를 할 경우는 약 24시간이 경과했으며 그 결과 배풍열 회수건조가 약 3시간정도 소요시간이 단축되었음을 알 수 있었음. 마. 배풍열 회수장치를 사용하여 농산물건조기 투입량의 47%, 배풍열량의 64%의 열량을 회수할 수 있었다. 바. 배풍열 회수 농산물건조기 성능시험 결과 고추 100kg 건조시 연료소모량은 43%, 건조 소요비용은 21% 감소시킬 수 있었다.

Changes of Soil Water Balance and Growth of Red Pepper as Affected by Growing Conditions in the Plastic House (재배 조건에 따른 고추의 생장과 토양 수분소비의 변화)

  • This work was conducted to estimate amounts of irrigating water during the growing periods of pepper after estimating water consumption in the plastic film house in 1997 and 1998. Evapo-transpiration (ET) under conditions of a black and white PE mulch and sandy or clay loam soil which enhanced the growth and yield of red peppers was greater than that at the bare and sand soil. Average ET of pepper grown in pots accounted for 56.5%∼79.7% of total supplying water in 1997 and 1998. Most of ET was proportioned to the transpiration amount (91∼94%), but there was some difference between amounts of ET and transpiration plus evaporation. Although 57 depended on conditions of the soil texture and plant growth, transpiration for pepper growing periods was amounted to 337.7∼774.3 m in the clay soil,910.6 m in the sandy loam soil, and 253.1 mm in the sandy soil.

Characteriatics of Single Cell Suspension of Garlic, Red Pepper and Cucumber Prepared by Protopectin Hydrolytic Enzymes (펙틴분해효소를 이용한 마늘, 고추와 오이의 단세포화물의 제조)

  • Protopectinase (PPase) from Bacillus subtilis was used to investigate enzymatic maceration of vegetable tissues. Optimum concentration and pH of PPase were 0.75, 0.75, and 0.5%, and 5.0, 8.0, 7.0 for red pepper, garlic, and cucumber, respectively. Optimum shaking-rate, reaction time, and temperature of PPase were 250 rpm, 150 min, and $37^{\circ}C$, respectively. Yields of mechanically macerated red pepper, garlic, and cucumber were 45.8, 47.5, and 82.1%, whereas those treated with PPase were 81.8, 84, and 98%. Over 40% Vitamin C, the most unstable component during mechanical maceration, remained intact for 12 days after enzymatic treatment. Color differences $({\Delta}E)$ of mechanically macerated red pepper, garlic, and cucumber were 1.16, 2.86, and 3.27, whereas those of PPase-treated ones were 2.87, 7.68, and 5.22 after heat treatment at $100^{\circ}C$ for 20 min. Capsaicin content of mechanically macerated red pepper was 0.4 mg/100 g, whereas that treated with PPase was 1.32 mg/100 g. Viscosity of PPase-treated vegetable decreased slowly with increasing storage period, whereas that of mechanically macerated vegetable sharply decreased. These results indicate PPase treatment of vegetable could be better choice for preparation of high-values and functionally processed food and for extending preservation period.

Determination of Factors Affecting Injury of Pepper Cultivars to Napropamide and Pendimethalin (고추에서 Napropamide 및 Pendimethalin에 대한 약해요인(藥害要因) 구명(究明))

  • In order to examine the factors affecting herbicidal injury of pepper, crop injury and growth response of 2 red pepper cultivars and 2 sweet pepper cultivars to napropamide and pendimethalin were evaluated under defferent conditions of soil texture, organic matter, soil temperature and seeding depth in the greenhouse. Growth response of 4 pepper cultivars was also examined by roos dipping to napropamide and pendimethalin. More inhibition of top leaf growth by root dipping to napropamide was occurred in red pepper cultivars than in sweet pepper cultivars. However, sweet pepper cultivars showed more severe inhibition of top leaf growth by root dipping to pendimethalin compared to red pepper cultivars. Crop injury due to napropamide and pendimethalin was more severe in sandy soil than in loam soil and this trend was more remarkably shown in sweet pepper cultivars. Crop injury due to napropamide and pendimethalin was reduced with the increase in organic matter especially in cv. Walgeykwan and cv. Orient al Pimento. As seeding depth of pepper cultivars became deeper, crop injury due to napropamide and pendimethalin was reduced in cv. Walgyekwan and cv. Oriental Pimento.

Red Pepper Anthracnose: Colletotrichum gloeosporioides, It's Cultural Variations and Pathogenicity (고추 탄저병균의 배양형 변이 그리고 병원성 차이)

  • The dominant isolates of Colletotrichum gloeosporioides from the red pepper anthracnose(both of the diseased plants and debris) was more pathogenic than the isolates of Colletotrichum acutatum of minorly isolated from Gyeong-buk, Korea. There were both of the G and R strains of cultural variants of Colletotrichum gloeosporioides, the G strain was more pathogenic than R strain. The cultivars of red-pepper, cv. 'Kumsegi' was the most susceptible and cv. 'papet' was the least susceptible in the pathogenicity test. The isolates of Colletotrichum gloeosporioides from other host plant such on sesame, safflower, yam, strawberry could infect to the red pepper plant also.

조미향신료의 영양학적인 측면 (양념의 영양)

  • 양념의 섭취는 고대 에집트 시절부터 시작되어서 현재에까지 인류의 식탁을 지켜 오고 있다. 양념의 용도는 시대에 따라서 다양화되고 있다. 고대에는 양념의 용도는 단순히 음식의 풍미를 돋구기 위해서 사용하였지만, 현대 사회로 올수록, 다양한 음식과 음료수의 맛과 향, 식품저장, 의학적 생리학적인 용도, 및 화장품 및 향수 제조를 위해서 사용한다. 세계적으로 이용되고 있는 양념의 수는 약 70여종에 이르고 있으나, 우리나라 식탁을 오르내리는 상용하는 양념의 수는 10종 내외로 본다. 그러므로 우리나라 음식 향과 맛의 단조로움을 느끼기 때문에 보다 다양한 양념의 개발이 요청된다. 최근 들어와서 고추와 마늘의 생리학적 기능이 재평가되고 있어서, 현대인의 고민인 고혈압과 이와 관련된 순환계 계통의 질병 및 암의 발병 방지 및 치료에도 효과가 있다는 보고가 되고 있다. 위궤양 및 위산분비 비정상인은 자극적인 양념인 고추나 마늘의 섭취를 금지하여 왔으나, 특별히 고추의 섭취가 이러한 상태에 있는 사람들에게 반듯이 위액분비를 자극하지 않는다는 보고도 되어 있다. 양념에 함유된 영양소의 함량으로 미루어 보면 열량 무기질의 일부 및 비타민의 일부 공급원으로 중요하다. 한국인에게 중요한 양념으로 여겨지는 고추와 마늘의 섭취량은 한국 경제가 성장함에 따라 그 섭취량이 증가되는 경향을 나타낸다.

  • This study aims at revealing the effect of ${\omega}-3$ and ${\omega}-6$ polyunsaturated fatty acids on serum and lipid metabolism of liver in rats. Various diets were fed to 5 groups of rats differently composed of red pepper oil with about 64 % of ${\omega}-6$ linoleic acid and perilla oil with 60% or so of ${\omega}-3$ linolenic acid : group 1, 10% perilla oil ; group 2, 7.5% perilla oil and 2.5% red pepper oil; group 3, 5% perilla oil and 5% red pepper oil ; group 4, 2.5% perilla oil and 7.5% red pepper oil; group 5, 10% red pepper oil. The following shows the results. 1. As for cholesterol concentration in serum, group 1 was significantly lower than groups 4 and 5. 2. HDL-cholesterol concentration tended to grow gradually with the increase of ${\omega}-6$ linoleic acid and to decrease with the increase of ${\omega}-3$ linolenic acid. 3. Group 5 was the highest in HDL concentration of cholesterol. 4. About concentration of triglyceride and phospholipid in serum, group 2 was significantly lower than group 4. 5. In cholesterol level of liver, group 5 was the highest and groups 2, 3 and 4 were relatively lower. 6. Triglyceride concentration of liver was higher than others in groups 1 and 5.

Detect of Hypericin (HyH) gene in Hypericum erectum in Korea and Comparison of H. perforatum in Europe (한국내 고추나물의 하이퍼리신 유전자(HyH)의 탐색과 유럽의 서양고추나물과 비교)

  • Hypericin (HyH) is a substance which is isolated a medicinal herb, Hypericum perforatum L., commonly known as St. John's Wort. Hypericum erectum is a long-lived herb that is distributed in Korea. Cloned HyH genes H. erectum of were conformed by sequencing. The cDNA Hyp-1 sequence has 732 bp with an open reading frame of 567. Thus coding for a protein of 152 amino acid residues. A BLAST re-search using the deduced nucleotide sequences in HyH gene produced significant alignments with the H. perforatum. Sequences in HyH gene showed significant homology with Rubus idaeus putative allergen Rub-i-1 mRNA, Protein sequence comparisons revealed significant homology between Hyp-1 and the phenolic oxidative coupling protein hyp-1 of H. perforatum (98%). Additionally, Hyp-1 showed sig-nificant homology with various other classes of allergens, including Pru-av-1 (62%) from Prunus avium and allergen Bet-vl-Sc3 from Betula pendula (60%). Thus, the result of this study may offer an important information to establish an assay system for chemicals of the herbal medicines for H. erectum as well as H. perforatum.

Status of Pepper Organic Farming and Collection of Pepper Germplasm

  • 고추 유기농재배에 적합한 고추 유전자원을 선발하기 위한 기초자료를 확보하기 위하여 우리나라 고추 유기농가에 대한 현황 분석을 실시하였고 국내외 고추 재래종 유전자원을 수집하였다. 고추 161개의 유기농가에 대한 설문조사 결과 총 재배면적은 64ha 였고 이중 노지재배 38ha, 비닐하우스재배 26ha 였다. 유기농 재배경력은 10년 이하가 124농가(76.9%)로 가장 많았고 11~15년, 16~20년, 20년 이상이 각각 19농가(11.8%), 12농가(7.5%), 6농가(3.8%)였다. 유기농 재배에 사용하는 고추 종자는 157농가(97.6%)가 종묘회사에서 시판되는 F1품종을 이용하고 있었고 종묘회사에서 육성되는 품종을 이용하는 주된 이유는 유기종자의 자가채종이 어렵고(43.4%) 품질이 낮으며(34.6%) 병에 약해서 (9.9%) 기타(12.1%) 순이었다. 품종 선택시 최우선으로 고려하는 사항은 품질(51농가, 31.7%)과 수량 (47농가, 28.2)이 병해 저항성보다(45농가, 28.0%) 높은 수준을 차지하였다. 2008년과 2009년 2년간 국내 재래종을 탐색?수집하여 국내에서 수비초 등 9자원을 수집하였고 우즈베키스탄에서 재래종 및 고정종 자원 19자원을 수집하였다. 국내에서 수집한 재래종 자원들은 현재 몇 농가에서만 재배가 되고 있으며 이들 자원들은 국내 환경에 오랫동안 적응되어 유기농 재배에 적합할 것으로 사료 되었고 우즈벡키스탄에서 수집된 자원들은 단고추가 4자원, 매운고추가 15자원으로 이 중 단고추 1자원은 과중이 200g 이상인 대과 자원이었고 이들 자원 또한 고정종으로 유기농재배에 적합할 것으로 사료되었다.
