Recent research trends of post-harvest technology for king oyster mushroom (Pleurotus eryngii) (큰느타리버섯 수확후 관리기술 최근 연구 동향)

  • The king oyster mushroom (Pleurotus eryngii) is widely consumed because of its flavor, texture, and its functional properties such as antioxidant activity and prebiotic effects. However, long-term product storage and transportation (e.g., export) are difficult because of its limited durability. The shelf-life of king oyster mushroom is affected by environmental factors such as temperature, humidity, gas composition, and ventilation, which may affect sensory characteristics including respiration rate, texture, moisture, flavor, color, and pH. The major problems regarding storage of mushrooms are browning, flavor changes, and softening. To address these problems, novel preservation techniques were developed, and more durable variants were bred. Different drying methods, gamma irradiation, chitosan coating, modified atmosphere (MA) packaging, and controlled atmosphere (CA) storage were evaluated in order to extend the shelf-life of king oyster mushrooms. Freeze drying showed better results for the preservation of mushrooms than other drying methods. Irradiation with 1 kGy was more effective for extending mushroom shelf-life than higher doses. The preservative performance of chitosan-based films was improved by combining the compound with other hydrocolloids, such as oil, protocatechuic acid, and wax. The CA storage conditions recommended for king oyster mushrooms are 5kPa $O_2$ and 10 to 15kPa $CO_2$ at temperatures below $10^{\circ}C$. Active MA packaging with microperforated PP film was also effective for maintaining quality during storage.

Changes in Physicochemical Properties of Korean Rice Cake Subjected to Microwave-Drying (마이크로파 건조 방법에 따른 흰떡의 이화학적 특성변화)

  • An investigation was carried out to study the effects of aging time, storage temperature, and drying type on the physical, chemical and sensory properties of Korean rice cake. Water content and cooking properties were significantly influenced by aging time and storage temperature. However, aging time did not affect the soup turbidity. Difference in water content was noticeable by drying type. The microwave treated rice cake (MW) showed a higher water content than the other ones. The lightness (L-value) was not affected by the aging time and drying type. Rice cake storaged at 4oC showed the highest L-value. The textural properties of rice cake were influenced by the all sources of variables. There was a significant difference in hardness between microwave and hot air treated rice cake (MWH), and microwave and vacuum treated rice cake (MWV). In the sensory properties, mean intensities of all attributes except chewiness were significantly different among drying types. The MWV showed a higher acceptability than the MW and the MWH. Scanning electron photomicrographs revealed that the MWV has more porous structure. The MWV was the most desirable one as determined by the physical, chemical and sensory evaluation.

Analysis of Aroma Pattern of Gastrodiae Rhizoma by the Drying Conditions (건조 방법에 따른 천마의 향기패턴 분석)

  • The study was to analyze aroma patterns of Gastrodiae Rhizoma by the electronic nose with conducing polymer 32 sensors. Response by the electronic nose was analyzed by the principal component analysis (PCA). Sensory evaluation for the organoleptic characteristics of Gastrodiae Rhizoma was also performed. Raw Gastrodiae Rhizoma was very intensive in overall odor and taste. Hot air-dried $60^{\circ}C$ Gastrodiae Rhizoma was relatively weak in overall odor and taste. Intensity of aroma in the electronic nose was the highest in $60^{\circ}C$ hot air-dried Gastrodiae Rhizoma. As quality factor (QF) calcuated from PCA map of normalized pattern data by thirty two sensors showed less than 2, and so aroma pattern among raw, freezed-dried, and hot-air dried Gastrodiae Rhizoma had no difference. When PCA was performed for normalized pattern data by the selected sensitive ten sensors, QF value between raw and $60^{\circ}C$ hot air-dried Gastrodiae Rhizoma was 2.366. Thus aroma pattern of raw and $60^{\circ}C$ hot air-dried Gastrodiae Rhizoma was discriminated in electronic nose.

  • In recent, Kimchi is produced in the scale of industry, Consumers show increased demand of safety and high quality and hygienic process control. So, sun drying, hot air drying and cold air drying methods were investigated to compare the demand Sun drying took 96 hrs, hot air drying took 4 hrs at $70^{\circ}$ and cold air drying took 102 hrs at $10^{\circ}C$ in removing water to $90\%$ from radish. Brownness of radish was expressed as absorbance. Absorbance were 0.20, 2.04 and 1.87 and also Vit-C contents were 0.14 mg/g, 0.12 mg/g and 0.096 mg/g in dried radish according to cold air drying, hot air drying and sun drying, respectively. From overall experimental results, cold air drying method was found as superior drying method to other drying methods.

  • It is very important to minimize the acid value of oil in the oil and fat industry, because acid value of oil products are a indicator quality. This study was performed to investigate change of moisture content, acid value and free fatty acid content by drying condition such as drying method, temperature and drying time on steamed duck egg york. Also, change of fatty acid composition by acid value. The acid values, moisture contents and free fatty acid contents were showed comparatively lower value by spray drying and freeze drying than by steam drying. but difference that keep in mind between each drying method was not looked. Whereas moisture content, acid value and free fatty acid content of effect of drying temperature reaches in lowest value. also, did not show change until dry 12hours reaching to lowest value by 3.1, 3.0% and 0.98% after dry 9hours both moisture content, acid value and free fatty acid content. Also, acid value increase, free fatty acid was increased, where unsaturated fatty acid showed that decrease rapidly.

Effects of Various Drying Methods of Agar-gel on Dried-agar Quality (한천(寒天) 추출물(抽出物)의 건조방법(乾燥方法)에 따른 한천(寒天)의 품질(品質))

  • Effects of various drying conditions of agar gel on the physico-chemical properties of dried agar were investigated. For drying of the agar gel$(1.0{\times}1.0{\times}34.0cm)$ by means of sun drying, simple solar drying, hot-air drying ($30^{\circ}C$, control, natural convection), hot-air drying ($30^{\circ}C$, pretreatment, natural convection) and freeze drying, it took 96, 75, 67, 50 and 21 hours, respectively. The gel strengths of dried agar gel prepared by sun drying, solar drying, freeze drying and spray drying were320, 370, 270 and $360g/cm^2$, respectively and that of hot air-dried agar gel was influenced by drying temperature, pretreatment an mode of heat transfer. The gel strength, the gelation temperature and other quality index of spray-dried agar were not inferior to those of sun-dried agar, but it was not expected to be economical because of it recovery rate. In case of hot air drying, the gel strength value of agar increased as the drying rate increased. No significant differences among various products were noted in the gelation temperature, the melting temperature, the ash and $SO_3$ content.

Effect of Mower Conditioner at Different Harvest Stage on the Field Drying Rate and Quality of Rye Hay (수확시기별 Mower Conditioner 처리에 의한 속성 양질 호밀 건초조제 효과)

  • A field experiment was carried out to determine the effects of chemical /mechanical treatments at mowing on the field drying rate and hay quality of rye (Secale cereale L.). The chemical drying agent/mower conditioner ($K_2CO_3$ 2%, conditioning, $K_2CO_3$ 2% + conditioning and control) were treated at different harvest stage (late boot, heading and bloom stage) for hastening hay-making in the spring of 1996. After field dry, square bales were made by hay baler, and the dry matter(DM) loss, visual estimation and nutritive value of rye hay were evaluated after storing two months. The field drying rate of rye was higher with delayed stage of harvest, and mechanical and chemical + mechanical treatment, but the effectiveness of chemical alone was very low. With mower conditioning, the duration of field dry was shortened by 1.5 to 2 days compared with control. The DM loss of rye hay was reduced by late harvest and mechanical, and chemical + mechanical combined treatment, but the efficiency by chemical alone was very low. The visual score (Ieafiness, green color, odor and softness) of hay after storing was high in mechanical and chemical + mechanical, but the score by chemical alone was very low. The nutritive value (ADF, NDF, digestibility, and relative feed value) of hay was also high with treatment of mechanical and chemical + mechanical, but the quality by chemical alone was similar compared with control. The quality of hay was very low when harvested at bloom stage. In conclusion, mower conditioning can enhance the field drying rate of rye, but the drying effectiveness of chemical drying agent was very low. The effect of chemical/mechanical combined treatment was very similar when compared with mechanical alone. Harvest at early heading to heading stage was recommended for high quality rye hay.

Production of High-Level Polyphenol Powders from Young Grape Leaves (어린 포도 잎을 이용한 폴리페놀 고함유 분말 제조)

  • Polyphenols are naturally occurring antioxidants and play many important roles in human health. Grape leaves have not yet been reported to contain the antioxidants. In this study, the physicochemical properties of powders from young grape leaves, obtained after hot-air or vacuum freeze drying, were analyzed. Weight loss rangedfrom 76-80%, but no difference was found between samples prepared by hot-air orvacuum freeze drying. The L-, a-, and b- values of grape powder all fell upon hot-air drying. Quercetin, resveratrol, catechin, and epicatechin were detected in all cultivars. The contents of the four polyphenols were generally higher in powders obtained by vacuum freeze dryingthan in those prepared by hot-air drying, indicating that vacuum freeze drying is better for optimal preservation of polyphenols. None of three polyphenols assayed was found in some cultivars or after certain drying treatments. Based on physiochemical properties, our findings suggest that powders obtained after vacuum freeze drying are optimal for industrial use.

Influence of Curing Methods on Compressive Strength and Shrinkage of High Strength Mortar with High Volume SCMs (양생방법 변화가 혼화재 다량치환 고강도 모르타르의 압축강도 및 수축변화에 미치는 영향)

  • Currently, in South Korea, because of reducing the construction period or treating wasted water, there are some cases of missing wet curing for concrete structure even though for high strength concrete. This air curing conditions is considered to cause increased possibility of compressive strength decrease, and increasing drying or autogenous shrinkages. As a solution of shrinkage of concrete, The authors' research team conducted the research on improving durability of concrete with decreasing autogenous shrinkage by adding the oil or fat to induce the saponification. Therefore, in this research, the influence of curing method on compressive strength, shrinkage on evaporation rate of high strength mortar including high volume supplementary cementitious materials (SCMs) was evaluated depending on various curing methods such as air curing, drying after painting emulsified refined cooking oil (ERCO), and drying after 7 and 28 days' wet curing. The experimental result showed the air curing method caused approximately 50% of decreased compressive strength and 1.9 times of increased shrinkage rather than the 28-day-wet curing method, thus it was known that the wet curing significantly influences on performance of high strength mortar using high volume SCMs. However, the ERCO painting curing caused decreased performance of concrete rather than drying after 7 days curing while it caused improved performance of concrete than entire period air curing.

Analysis of Pungent Principles of Capsicum Fruit by HPLC (고속 액체크로마토그래피에 의한 고추중의 신미성분 분석)

  • The analysis condition for determination of capsaicin and dihydrocapsaicin, major pungent principles of capsicum fruit, with high performance liquid chromatography was studied and the difference of those content according to species, cultivated region and drying method was investigated. The capsaicins were extracted effectively with 70% ethanol for 1 hr at $60^{\circ}C$. As a result of reproduciblity and recovery test, the calculation of analysis data was reasonable based on the peak area. The content of capsaicins was different with species, cultivated region and drying method, respectively. Especially, the difference depending on drying method was remarkable; the sun dried sample showed higher value than that of the oven dried sample, about maximum 80% for capsaicin and 60% for dihydrocapsaicin.
