Production of Vinegar Using Deteriorated Deastringent Persimmons during Low Temperature Storage (저온저장 중 품질이 저하된 단감을 이용한 식초의 제조)

  • 저온저장 중 품질 열화가 일어난 단감의 산업적 이용성을 증진하기 위한 감식초의 가공조건을 조사한 결과, 연화된 단감을 폐쇄하여 종초 10%와 알코올 4%를 첨가한 후 발효온도 3$0^{\circ}C$에서 2주 이내에 산도 4%이 상인 감식초가 발효되었으며, 15$^{\circ}C$에서 3주간의 숙성 조건에서 식초 고유의 향미가 형성된 반면 포도당과 초산의 첨가는 최종 제춤의 품질을 저하시키는 결과를 얻었다. 연화된 단감의 열처리 효과는 잡균에 의한 오염 가능성을 제거시킬수 있었기 때문에 품질의 안정화를 위한 필수적인 공정으로 볼 수 있었다. 종초에서 분리된 산생성 균주의 생육과 산생성능을 조사한 결과, AH-1은 발효초기에 증식한 반면 AH-2는 발효 푸기에 증식하면서 산을 생성하였다. 따라서 이런 균주들이 서로 어우러져 최종적인 감식초의 품질을 결정하는 것으로 사료되었다. 감식초의 유기산 성분은 대부분이 acetic acid로 구성되어 있었고, 그 다음은 $\beta$-galac-turonic acid였다. 그리고 tanin 함량은 시판제품에 비하여 16~44mg% 정도 적게 나타났다.

Preparation and Quality Evaluation of the Quick Fermented Persimmon Vinegar Using Deteriorated Sweet Persimmon (불량 단감을 이용한 속성 감식초의 제조와 품질 평가)

  • This study was performed to analyze general components such as, organic acids, alcohols and minerals In persimmon vinegar made with quick fermented using deteriorated sweet persimmon and four commercial vinegars (rice vinegar, apple vinegar, brewed vinegar, traditional persimmon vinegar) purchased In local markets for quality evaluation. The pH and total acidity of all vinegars were in the range of 2.02-3.02 and 4.62-9.78%, respectively The pH of quick fermented persimmon vinegar (A) was relatively higher than that of others. Acidity was the highest in brewed vinegar. Total sugar content was in the range of 0.45-6.43%. These contents were high In were high In traditional persimmon vinegar wherase low in brewed vinegar. Total nitrogen and amino-nitrogen were in the range of 0.025-0.046% and 0.015-0.029%. Organic acids were identified as acetic acid, citric acid, tartaric acid malic acid, succinic acid, formic acid and oxalic acid. While major minerals of all vinegars were Mg, Ca, and Na, minor minerals were Zn, Cu, Mn and Fe.

Change of Physicochemical Characteristics of Persimmon Vinegar by Vacuum Concentration (진공농축에 따른 감식초의 이화학적 특성 변화)

  • This study was performed to offer fundamental data for concentration of persimmon vinegar. The $5.4^{\circ}Bx$ raw persimmon vinegar was concentrated to $20^{\circ}Bx$, $30^{\circ}Bx$, $40^{\circ}Bx$, $50^{\circ}Bx$, $60^{\circ}Bx$ and $70^{\circ}Bx$ concentration by vacuum concentration at $55^{\circ}C$ and diluted to $5.4^{\circ}Bx$ solution with distilled water. The physicochemical properties such as color, viscosity, pH, acidity, organic acid content and free sugar content of various persimmon vinegar concentrates were examined. The recovery yield of water soluble solid to concentrates was 55.5% on $20^{\circ}Bx$ vacuum concentration. Color of $5.4^{\circ}Bx$ persimmon vinegar diluents from concentrates became more dark brown by vacuum concentration. Flow behavior of persimmon vinegar concentrates was pseudoplastic. As the concentration of persimmon vinegar concentrates increased, pH of $5.4^{\circ}Bx$ diluents increased and acidity as acetic acid decreased compared to original raw vinegar. Acetic acid, lactic acid and citric acid were detected, malic acid and oxalic acid were not detected in persimmon vinegar concentrate. Fructose and sucrose only were detected in persimmon vinegar concentrate.

Application of Electronic Nose for Aroma Analysis of Persimmon Vinegar Concentrates (감식초 농축액들의 향기성분 분석에 대한 전자코의 적용)

  • This study was performed to test application possibility of electronic nose with 32 conducting polymer sensor arrays for aroma analysis of persimmon vinegar. The 20, 30, 40, 50, 60, and $70^{\circ}Bx$ persimmon vinegar concentrates were prepared by vacuum concentration at $55^{\circ}C$. The recovery yield of water soluble solid to concentrates was 55.5% on $20^{\circ}Bx$ persimmon vinegar concentrate. As the concentration of persimmon vinegar concentrates increased, pH of concentrates increased and acidity as acetic acid decreased. From sensory evaluation for persimmon vinegar concentrates, as the concentration of persimmon vinegar concentrates increased, their cooking odor and umami taste increased, sour taste and acidic odor decreased, salty odor and astringency were not changed. Aroma analysis by electronic nose (AromaScan) showed no difference in normalized pattern and odor intensity among persimmon vinegar concentrates. All quality factors among concentrates also were less than 1.042. And so the electronic nose with conducting polymer sensor was not suitable for aroma analysis of persimmon vinegar concentrate.

Ripened Persimmon Vinegar with Mountain-cultivated Ginseng Ingestion Reduce Blood Lipids and Enhance Anti-oxidants Capacity in Rats (산양삼 혼입숙성 감식초 섭취에 의한 흰쥐의 혈중지질 감소와 항산화능 개선)

  • In this study we investigated that the mountain-cultivated ginseng into persimmon vinegar fused material on blood lipids and anti-oxidant capacity in rats. A 4-year-old mountain-cultivated ginseng was ripened with 4-year-matured persimmon vinegar, and then it was diluted 5 times and orally administerd to rats. The rats were divided into a control group (CON), a persimmon vinegar group (PV) and a mountain-cultivated ginseng + persimmon vinegar fusion material group (MPV). The body weight was found to be low in MPV, and amount of the stored fats were also low in PV and MPV. Blood lipids were found to be low in PV and MPV compared to the CON. HDL-C (high density lipoprotein cholesterol) was found to be significantly high in these two groups. Liver Cu,Zn-SOD (superoxide dismutase) and GPx (glutathione peroxidase) were CON < PV < MPV, in sequence, with significance. Especially, it was the highest in MPV. Liver MDA (malondialdehyde) concent was MPV < PV, CON, in sequence, with significance. These results suggested that the fusion material lowers blood lipids and enhance anti-oxidant capacity. We carefully thought that it might be used effectively as a health food.

  • Currently, there are various institutions performing fire investigation and identification, such as fire stations and police stations as well as institutes related to fire safety, etc. And the manpower working at the institutions reaches a large number of persons. But there is no objective index on the expertise of the persons. In this paper, we suggested the examination criteria through job analysis and the enforcement method of the exam system. And we developed suitable exam subjects and exam content specifications for qualification of fire identification and estimation that investigate a fire cause, combustion, escape circumstances and fire facilities at the scene of a fire, survey the fire damage and analysis fire cause, etc. It will increase the public trust to develop national technical qualification items of the fire identification and estimation engineer.

Antibacterial Activity of Vinegars on Streptococcus mutans Caused Dental Caries (충치 유발균 Streptococcus mutans에 대한 식초의 항균효과)

  • The antibacterial activity for S. mutans by using 5 kinds of vinegar was researched. As a result it was the highest at persimmon vinegar and then grape, apple, high calcium brown rice, brown rice vinegar in order. The antibacterial effect was shown at 1.5% of persimmon vinegar concentration and the growth was fully repressed at 4% of concentration. As an observation result with a transmission electron microscope(TEM), the growth was obstructed by destroying the cell wall and the cytoplasmic membrane. As a research result of the total phenol contents for each vinegar, the persimmon vinegar was the highest as 237.49 mg% and the antibacterial activity was increased when the total phenol contents were high.

  • This study was determined changes of components of sweet and astringent persimmon vinegars by two stages fermentation. Free sugars of persimmon juices before alcohol fermentation were mainly composed of glucose, fructose and sucrose. The content of glucose, fructose and sucrose of sweet persimmon juice was 6.60, 6.12 and 1.74%, respectively, and those of astringent persimmon was 5.63, 5.21, 0.62%, respectively. The contents of free sugar decreased continuously during fermentation. Major organic acids of persimmon juices were acetic, galacturonic, malic, citric and ascorbic acid. Alcohols of persimmon juices was detected methanol, ethanol, iso-propylalcohol, n-propylalcohol and iso-butylalcohol at the initial fermentation. The contents of alcohols increased continuously up to 4days of fermentation but their contents except ethanol decreased slightly at 5th day of fermentation. Contents of free amino acid were higher in sweet persimmon than those in astringent persimmon. Volatile components increased during acetic acid fermentation.

Volatile Components in Persimmon Vinegars by Solid-Phase Microextraction (Solid-Phase Microextraction(SPME)을 이용한 감식초의 휘발성 성분 분석)

  • Traditional static headspace and headspace solid-phase microextraction(SPME) techniques were compared for their effectiveness in the extraction of volatile flavor compounds from the headspace of persimmon vinegar. The adsorption condition of SPME fiber for equilibrated headspace vapor was selected as $80^{\circ}C$ and 20 min. Total FID response for volatiles of persimmon vinegar was exactly higher such as total peak area $18.18{\times}10^6$ in SPMEGC technique than total peak area $1.35{\times}10^6$ in static headspace-GC. The major volatiles in persimmon vinegar were acetic acid, ethyl acetate, 3-hydroxy-2-butanone, ethanol, phenethyl alcohol. From static headspace-GC technique, 3 acids, 3 aldehydes, 5 alcohols, 9 esters and 1 ketone were identified. From SPME-GC technique, total 34 compounds including 6 acids, 7 aldehydes, 6 alcohols, 9 esters, 2 hydrocarbones, 1 ketone, 3 others were detected. Also the ratio for benzaldehyde, phenethylacetate and phenethylalcohol were higher in SPME-GC.
