volatile Flavor Components in Various Varieties of Apple (Molus pumila M.) (사과의 품종별 휘발성 향기성분)

  • This study was investigated to compare the volatile flavor components in fuji, tsugaru, hongro and jonathan (Malus pumila M.). In the results of analyzing the volatie components of four varieties apples with GC-FID and GC/MS, 100, 68, 85 and 94 volatiles were identified in fuji, tsugaru, hongro and jonathan apples, respectively. Hexanal, butanol, (E)-2-hexenal, hexanol,3-methy-1-butanol, ethy1actate, ethyl butyrate, 2-methybutyl acetate and hexy1 acetate were major flavor components in the four varieties of apple, though there were several differences in composition of colatiles.

Effects of Producing Medium Size Fruits on the Profitability of an Apple Orchard (사과 중소과 생산이 농가소득에 미치는 영향)

  • The management system and profitability were compared for the commercial orchards in the apple producing districts from April to October, 2011. The present study reasonably graded a large fruit as a fruit of heavier than 300g for 'Fuji' and 330g for 'Hongro' apples. As comparing cropping density and yield efficiency, 'Fuji' apples showed 3.28 fruits per TCA of crop density and 0.96 kg per TCA of yield efficiency and 'Hongro' demonstrated 4.04 fruits and 1.01 kg. With the application of the results above, the orchard management systems was classified into 3 classes as the orchard for large-size fruits, medium-size fruits, and combined size fruits. The increase of cropping density made the increase of fruit yield with medium-size fruits in unit area but brought about the decrease of large size fruits. The difference in fruit size failed to make significant differences in fruit characteristics. The orchard management system for producing medium size fruits performed decrease in input cost and improved the profitability in orchard management.

Effects of Calcium Chloride Treatment and Modified Atmosphere Packaging on the Quality Change of 'Fuji' Apple (염화칼슘 처리와 MAP 저장이 '후지' 사과의 품질변화에 미치는 영향)

  • We investigated the effects of both $CaCl_2$ treatment and modified atmosphere packaging (MAP) (compared with non-packaging on 'Fuji' apples from the Young-Joo region of Korea. Apples were dined into 5% (w/v) $CaCl_2$ solution for 15 min and then packaged with or without LDPE film (thickness: 0.025 mm) before cold storage at $0^{\circ}C$. Weight loss of applies in film packaging was lower than that of non-packaging applies, and the apple firmness resulting from $CaCl_2$ treatment and MAP was better than that of apples receiving control treatment. Also, $CaCl_2$ treatment and MAP resulted in improvements in titratable acidity, soluble solid content (SSC), and decay rate compared to control treatments. However, no significant differences in vitamin C content were found amongst apples receiving various treatment. the results suggest that a combination of postharvest calcium dipping and plastic film packaging may effectively preserve 'Fuji' apples, and that the combined treatment are better than either individual treatment.

The Accumulation of Rare Earth Elements Fertilizer and its Subsequent Effects on Apple Fruit Quality at Harvest and During Storage (희토류비료 시비가 사과 과실내 축적과 수확 및 저장 중 사과품질에 미치는 영향)

  • Rare earth elements fertilizer and Ca were sprayed on eight-year-old 'Fuji'/M.9 apple trees during two consecutive seasons, and fruit quality was quantified at harvest and 5-month long storing in a commercial cooling house at $4^{\circ}C$ and 80~85% RH. In the first season, single-sprayed of rare earth elements fertilizer showed appreciable accumulations of its elements (La, Pr, Gd, and Nd) in the fruit. In the following season, application of higher doses accumulated higher amount, indicating that the accumulation of rare earth elements was dose-dependent. However, rare earth elements did not affect the accumulations of Ca, Mg, and K in 'Fuji' apple fruit showed that there was no interaction between rare earth elements and these macronutrients. Double-spray of 0.2% rare earth elements increased fruit redness at harvest and had exhibited better color. Although at harvest it did not show significant effects on fruit weight, pulp firmness and titratable acidity (TA), but had pronounced effects on inhibiting fruit softness and retarded decrease of TA during storing. Furthermore, it reduced respiration rate and inhibited ethylene production during storing indicated that rare earth elements may be an alternative for prolonging the shelf life of 'Fuji'/M.9 apple fruit.
