To analyze die quality characteristics of loaf bread added with waxy black rice flour by its storage period, this study stored loaf bread made of wheat flour added with 10% 20% 30% and 40% of waxy black rice flour for 4 days while measuring water activity, pH, chromaticity and texture. The results of die study are as follows. Based on die results of measurements of water activity of loaf bread added with waxy black rice flour by storage period, die control group and die groups added with 10% and 20% of waxy black rice flour showed significantly low water activity from the $3_{rd}$ day of storage and die groups added with 30% and 40% of waxy black rice flour from the $2_{nd}$ day of storage. As for pH changes over the storage period, only die group added with 40% of waxy black rice flour showed significant pH decreases from die $3_{rd}$ day of storage while the control group and the groups added with 10% and 30% of waxy black rice flour showed significant pH decreases from die $2_{nd}$day of storage. As for the pH of each group of loaf bread by storage days, die loaf bread added with 40% of waxy black rice flour showed significantly higher pH compared to the control group. Brightness decreased significantly from the 2nd day of storage and die yellowness from the $3_{rd}$ day of storage. As for chromaticity changes by storage days, as die amount of added waxy black rice flour increased, L values and b values decreased while redness values significantly increased. Over die storage period, hardness, gumminess and chewiness increased and die waxy black rice flour added groups showed lower increase rates compared to die control group. Especially, die groups added with 30% and 40% of waxy black rice flour showed low hardness changes. Springiness level was decreased as die addition rate of waxy black rice flour was increased, and the group added with 40% of waxy balck rice flour showed die lowest springiness level. It also showed lower cohesiveness up to the 3rd day of storage compared to die day of manufacturing. Therefore, it could be seen that die loaf bread made from wheat flour added with 30% of waxy black rice flour showed better quality feature until die $3_{rd}$ day of storage than die other experimental groups.
Microbiological, physicochemical, and organoleptic properties of fresh-cut vegetables (FVs), carrots, green peppers, cherry tomatoes, and paprika after X-ray irradiation were evaluated to verify food quality suitable for the immune-depressed patients. Total concentrations of aerobic bacteria in non-irradiated samples, except for cherry tomatoes, were 1.63-3.34 log CFU/g. Irradiation dose exceed 0.4 kGy was used for carrots and green peppers whereas the sterilization dose of 0.2 kGy was used for both cherry tomatoes and paprika. A dose of 0.4 kGy was tentatively determined as the minimum allowable dose for sterilization of the FVs, based on $D_{10}$-values of X-ray irradiation (0.11-0.32 kGy) for Escherichia coli, Listeria monocytogenes, and Salmonella Typhimurium inoculated on the samples. With respect to the physiological properties, only hardness was significantly decreased as the absorbed dose increased; however, there were no significant differences in hardness of the sterilized samples using X-rays at 0.4 kGy compared with those of non-irradiated samples (p<0.05). Moreover, overall acceptance scores of the sterilized FVs were higher than 5.0 points on a 7-point scale, indicating a good organoleptic quality. In a survey on preference of hospitalized patients with cancer (n=50), the average scores for the sterilized FVs, except for carrots, were higher than 4.0 points. In conclusion, it is considered that the FVs, except for carrots, sterilized using X-rays at 0.4 kGy could be served to immune-depressed patients as hygienically safe foods with acceptable organoleptic properties.

This study was investigated for the purposes of securing forage resource using idled rice paddy recently increased in accordance to a current trend of farm products' liberalization and also of presevation of environment by using cattle sluny as liquid manure, which is seriously increasing these days. In this study, mean annual dry matter yield and its seasonal variation with reed canarygrass, and a optimum rate of cattle sluny application were investigated. The results are as follows: 1. According to the conditions of cutting frequencies(3, 4 and 5 cutting per year), mean annual dry matter yield was recorded from 8.9 tons to 10.9 tons per hectare and was the highest at 3 cutting frequency. 2. The use of cattle sluny with the levels of between 300 and 360 kg N per hectare showed a significantly higher mean annual dry matter yield than that of the control (non-fertilization). 3. The treatments with 3 and 4 cutting frequencies(90 kg Nhdyear, 120 kg Nhdyear) recorded higher dry matter yields than the control of the former level by 1.23 tons and 2.34 tons respectively and in the treatment of 5 cutting frequency, the second level with cattle sluny of 300 kg Nhdyear showed an increased dry matter yield of 2.11 tons compared to the former level(l50 kg Nhdyear). With regards to nitrogen efficiency, one kg of nitrogen is applied to 13.7, 19.4 and 14.1 kg of dry matter yields in the conditions of 3, 4 and 5 cutting frequencies respectively. 4. In view of seasonal variance of annual dry matter yield, the second cut in 3 cutting frequency, the third cut in 4 cutting frequency and the third in 5 cutting frequency showed the highest ratio as 42, 37 and 32% respectively compared to the total. 5. Under the conditions of this study, the 'Input-Output curve' from 5 cutting frequency was the closest to sigmaformed process(i=0.9993) of various cutting frequencies, and the maximum marginal yield in the treatment was obtained at the level of 250 kg Nha with cattle sluny. The economic level of cattle sluny was between 371.0 and 402.2 kg N and the highest dry matter yield was obtained at 489.3 kg Mdyear in the same treatment
The protective effects of a powder mixed with solid-cultured and liquid-cultured Lentinus edodes mycelia (2 : 1, w/w) (designate LED) with different doses of carbon tetrachloride ($CCl_4$) on induced hepatotoxicity in male Sprague-Dawley (SD) rats was investigated. The rats were divided into seven groups (6 rats/group) and the following substances were administered orally to each group: Vehicle (0.2 ml distilled water), Control (0.2 ml distilled water), LED (LED 100, 200, 300 and 400 mg/kg BW in 0.2 ml distilled water), and Silymarin (200 mg/Kg BW in 0.2 ml distilled water). After two weeks of daily administration, all groups except for the Vehiclegroup were subjected to abdominal injection with $CCl_4$ ($CCl_4$ : corn oil, 1 : 1 v/v; 0.5 ml/kg BW). One day later, blood and liver samples were collected to analyze biomarkers. All LED treatments elevated hepatic superoxide dismutase (SOD), catalase and glutathione peroxidase (GSH peroxidase) activities, and reduced thiobarbituric reactive substances (TBARS), tumor necrosis factor-$\alpha$ (TNF-$\alpha$), interleukin-$1{\beta}$ (IL-$1{\beta}$) and interleukin-6 (IL-6), resulting in the reduction of glutamate-oxalate transaminase (GOT), glutamate-pyruvate transaminase (GPT) and lactic acid dehydrogenase (LDH) activities in plasma. These results indicate that LED effectively protected SD rat hepatotoxicity induced by $CCl_4$ through its antioxidative activity and reduction of some cytokines. The highest efficacy was found in LED 200 mg/kg BW, showing potential as a useful material for protection from hepatotoxicity in humans.

The Bagan, the central part of Myanmar, is dry zone where the mean annual precipitation is less than 600 mm for the last ten years. Forest in this region has been degraded due to biotic and abiotic disturbances. While there have been various efforts to rehabilitate the degraded area, the information on growth and physiological characteristics of planting species and the impacts of planting trees in the region still lacks. Therefore, this study was conducted to determine the growth and physiological water use efficiency characteristics of five species (Azadirachta indica A. Juss., Acacia catechu Willd., Eucalyptus camaldulensis Dehn., Acacia leucophloea (Roxb.) Willd. and Albizia lebbek (L.) Willd.) which are utilized as rehabilitation species in the dry zone and to identify the impacts of tree planting on microclimate change in dry zone. The growth and the foliar carbon isotope composition of seedlings and the above mentioned five species planted in 2005 were measured. And from February 2015 to January 2016, microclimatic factors air temperature and relative humidity at 60 cm and 2 m above soil, soil temperature, soil water contents and precipitation were measured at every 30-minute interval from the two weather stations installed in the plantation located in Ngalinpoke Mt. Range. One was established in the center of A. indica plantation, and the other was in the barren land fully exposed to the sunlight. Among the five species, A. indica and A. lebbek which showed higher water use efficiency could be recommended as rehabilitation species in dry zone. Planting trees in the dry area was shown to affect the change of microclimate with shading effects, declining temperature of the land surface and aridity of the air, and to contribute to conserving more water in soil by preventing direct evaporation and containing more water with fine roots of trees.
This study was carried out to investigate the optimal propagation condition through stem node tissue culture of yam supplemented with concentration levels of growth regulators and activated charcoal in 1 /8MS white media. For shoot induction and plant regeneration from yam stem node tissue wre more effectivein combination of auxin, kinetin and activated charcoal than combination of auxin and kinetin. Shoot induction and plant regeneration were more effective in 1/8 medium suplemented with 1AA $2mg\;/\;\ell,\;kinetin\;2mg\;/\;\ell$ and activated charcoal $1g\;/\;\ell$ than in white medium, but in case of white medium, Shoot induction and plant regeneration wre effective in culture medium supplemented with NAAa $4mg\;/\;\ell,\;kinetin\;2mg\;/\;\ell$ and activated charcoal $1g\;/\;\ell$. Growth status in optimal propagation condition from yam stem node tissue brought the results of multiple plant, elongated plant height and increase in number of leaves and roots, but tissue culture effect by kinds of media in number of multiple plant were more effective in 1 /8MS medium than in white medium.
To investigate the effects of heat conservation materials on freeze damage and weed occurrence during overwintering in Saururus chinensis, Temperature difference was $6.9^{\circ}C$ in chaff, and was lower than those ranged from 9.7 to $14.4^{\circ}C$ in other materials. Heat conservation index, calculated from average temperatures below $-10^{\circ}C$ of earth's surface during the winter, was higher $1.7^{\circ}C\;and\;1.5^{\circ}C$ in chaff and lagging, respectively than in straw. Preservation of water is greater $9.6{\sim}26.1%$ in covering than in open field, and it increased in the order of lagging > chaff > straw among heat conservation materials. The survival rate of rhizome was increased in the order of 99% in lagging > 75% in chaff > 58% in straw, 32% in open field after overwintering, budbreak began fast, and the numbers of total budbreak per unit area were greater 22 times in lagging than 35.0 units in open field. Weeds occurrence was decreased in covering, i.e., $12.0{\sim}33.2\;units/m^2,\;7.3{\sim}10.7\;kg/10a$ of dry weight, and $5.6{\sim}6.4\;hours/10a$ of labor input compared with $157.2\;units/m^2,\;28.9\;kg/10a$ of dry weight, and 65.7 hours/10a of labor input in open field. Growth of top part was better in covering than in open field, and the number of tillers per unit area showed $347{\sim}396$ compared with 293 in open field. Marketable yields of dried stem and leaves and rhizome were higher $69{\sim}87%\;and\;58{\sim}88%$, respectively in covering than in open field, and among heat conservation materials, those were highest in lagging.
The biological activities of extracts from Rosa rugosae Radix were compared. About 78% of the growth of human hepato- carcinoma and 68% of human gastric cancer cell was inhibited in adding 0.5 mg/ml of the extracts of Rosa rugosae Radix respectively. The growth of human breast cancer cells was also inhibited in adding 0.5 mg/ml of the extracts as well as 66% of the human cancer cells. It was proved that the growth of human normal lung cell, scored as 20% for the extracts. Overall selectivity of the extracts on several human cancer cell line was over 4, which is higher than those from the Rosa rugosae Radix. The growth of both human immune B and T cells was enhanced up to 1.2 to 1.5 times by adding the extracts, compared to the controls. The secretion of tumor necrosis factor-alpha$(TNF-{\alpha})$ from T cell was also increased up to 61.9 pg/ml in adding the ethanol extract (0.5 mg/ml). Ethanol extract also increased up to about 61.3 pg/ml of interleukin-6(IL-6) from B cell.

This study determined the effects of cabbage juice and cabbage-mixed juices on the growth of AGS human gastric cancer cells and their anti-gastritic effects on HCl-ethanol induced gastritis in SD rats. Cabbage juice showed the highest growth inhibition on AGS gastric cancer cells in vitro (42%), compared with chlorella (20%) and kale juice (21%). However, cabbage-chlorella and cabbage-kale juice mixtures (at a 7:3 ratio) showed synergistic effects (57% and 65% inhibitory effects, respectively) on the gastric cancer cells. Inflammatory genes (iNOS, COX-2, TNF-${\alpha}$ and IL-$1{\beta}$) were significantly down-regulated in the mixed juices. Tests of DPPH radical scavenging activity and acid-neutralizing capacity with the mixed juices also showed this trend, as cabbage-chlorella and cabbage-kale mixed juices showed synergistic effects compared to cabbage juice alone. The inhibition rate of acute gastritis induced by HCl-ethanol in rats was 46% with high amounts of cabbage (CH; 800 mg/kg), 71% with high amounts of cabbage and chlorella (CChH; 800 mg/kg), 74% with high amounts of cabbage and kale (CKH; 800 mg/kg), and 75% with cimetidine (positive control) compared with the control. In addition, rates with CChH and CKH showed decreasing gastric secretions with increasing pH. These results show that cabbage juice and cabbage-mixed juices, especially with chlorella or kale, exhibit remarkable anti-gastritic effects and can be administered for a long period for the prevention and treatment of gastric cancer and gastritis.

The aim of this study was to investigate the quality characteristics of rice cookies specifically prepared with rice flour following enzyme treatment. In this study, three types of specific enzyme treatments, that is, ${\alpha}$-amylase, ${\beta}$-amylase, and cellulose+${\beta}$-glucanase were applied on the effect of rice flour with respect to desired quality characteristics of the rice cookies. Based on our study results, we have found that the density of dough in the rice cookies was not significantly different between that of the non-enzyme treated (control) and the enzyme treated group. However, we found that the spread factor of rice cookies, prepared with rice flour treated with ${\beta}$-amylase, was higher than that of the control. It was also found that the moisture content of rice cookies (with added enzyme-treated rice flour) was 3.20 to 3.90%; however, this range is much lower than that observed in the control. Further, we observed that Hunter color's L-values were significantly higher for the control than those of the enzyme-treated cookies. We also found that hardness of enzyme-treated cookies was comparatively better than that of the control. In addition, the sensory acceptability scores of the enzyme-treated cookies were found to be significantly higher than the control in decisive parameters such as aroma, appearance, flavor, taste, texture, and overall acceptability. Based on our findings, we suggest that ${\alpha}$-amylase treated rice flour is an effective ingredient for improving the overall quality of rice cookies.
