Analysis of Dietary Fiber Intake in the Korean Adult Population Using 2001 Korean National Health and Nutrition Survey Data and Newly Established Dietary Fiber Database

식이섬유 D/B 구축과 2001 국민건강 영양조사 식이섬유 섭취량 재평가 -20세 이상 성인을 대상으로-

Abstract

The present study estimates intake levels of dietary fiber (DF) in Korean adults aged 20 and over, using a newly established dietary fiber database for 3,149 food items, as well as 24-hour recall method data from the 2001 Korean National Health and Nutrition Survey. Dietary fiber intake and food groups are analyzed by gender, age, and region. The average dietary fiber intake, per capita of Korea was estimated to be 12.24g/1,000kcal or 23.58g/day. Calorie-based dietary fiber intake for 20-49 year-old-Korean males, 20-29 year-old females, and the adults who resided in metropolitan areas was under the Adequate Intake for DF, 12 g/1,000 kcal. Further, the dietary fiber intake after adjusting energy intake in people over 75 year-old was estimated to be 75% of AI. Vegetables, cereals and fruits were three major sources of DF for Korean, making up approximately 75% of DF. Regarding the subjects of this study, major sources of dietary fiber were Kimchi and well-polished rice, which supplied 13.98% and 9.16% of total dietary fiber intake, respectively. The result of this study could contribute to the establishment of DRIs for dietary fiber, after adjusting energy intake for Korean aged 75 years and over. The beneficial health effects of DF and the necessity of nutritional education in this area should be continuously emphasized concerning 20-29 year-old people and metropolitan adults.

본 연구에서는 3,149가지의 식이섬유 DB를 새로이 구축하고, 이 자료와 2001년 국민건강 영양조사 자료 중 24시간 회상법에 의한 식품섭취조사 결과를 활용하여 20세 이상 한국인의 식이섬유 섭취량을 성별, 연령별, 지역별로 구분하여 섭취열량 1,000 kcal당 식이섬유섭취량과 일일 총 식이섬유 섭취량을 AI와 비교평가 하였다. 또한 새로 구축한 식이섬유 D/B에서 구분한 식품군을 이용하여 식이섬유 섭취 기여식품군을 조사하였으며, 연구결과를 요약하면 다음과 같다. 1) 전체 대상자의 1,000 kcal당 평균 식이섬유 섭취량은 12.24 g/1,000 kcal이고, 남성은 11.47 g/1,000 kcal, 여성은 12.88 g/1,000 kcal로, 남성은 AI에 미달되었고, 여성은 AI보다 많았다. 일일 식이섬유 총 섭취량은 전체 23.58g, 남성 25.04g, 여성 22.36g으로 유의적으로 남성이 여성보다 많았다. 2) 연령별로 영양섭취 기준을 판정한 결과 섭취열량 1,000 kcal당 식이섬유 섭취량은 남성은 $50{\sim}64$세 (12.45 g/1,000 kcal), $65{\sim}74$세 (13.27 조 1,000 kcal)에서만 AI보다 많이 섭취하고 있었고, 여성은 $20{\sim}29$세 (11.20 g/1,000 kcal)에서만 AI보다 적게 섭취하였다. 1인 1일 식이섬유 총 섭취량은 여성 $30{\sim}49$세 (23.18 g/day), $50{\sim}64$세 (24.27g/day)를 제외하고는 모든 그룹에서 AI보다 적은 양을 섭취하고 있었다. 3) 지역을 대도시, 중소도시, 읍면지역으로 나누어 식이섬유 섭취를 평가한 결과 읍면지역> 중소도시 > 대도시 순으로 섭취하고 있었으며, 1,000 kcal당 식이섬유 섭취량은 대도시에서 AI보다 적게 섭취하고 있으면서 각 지역 간에 유의적인 차이를 보였으나, 1일 총 식이섬유 섭취량으로 비교 시에는 유의적인 차이를 보이지 않았다. 4) 20세 이상 전체 대상자의 식이섬유 기여식품군은 채소류 (40.98%) > 곡류 (19.86%) > 과일류 (14.98%) 순으로 이 세 가지 군이 전체의 75% 이상을 차지하고 있었다. 성별, 연령별, 지역별 평균 섭취량으로 비교 시 $50{\sim}64$세, $65{\sim}74$세 여성만 채소류 > 과일류 > 곡류 순으로 섭취하고 있었으며, 그 외 모든 군에서는 채소류 > 곡류 > 과일류 순으로 산출되었다. 식이섬유 섭취에 기여하는 상위 10대 단일 식품은 배추김치, 백미, 단감, 고춧가루, 무청, 글, 두부, 배, 사과, 대두였으며 계절적 요인을 받는 과일과 무청을 제외한 나머지 식품에서 전체 식이섬유의 30% 이상을 섭취하고 있었다.
