Sous-vided Restructured Goat Steaks: Process Optimized by Thermal Inactivation of Listeria monocytogenes and Their Quality Characteristics

  • The thermal-death times of Listeria monocytogenes were determined in inoculated restructured goat steak at 60℃, 65℃, and 70℃ of sous-vide temperatures. D-values of L. monocytogenes in inoculated restructured goat steak ranged from 7.27 min at 60℃ to 0.46 min at 70℃. Times need to yield at least a 6 log reduction of L. monocytogenes at their temperatures for this product were 47, 12, and 3 min, respectively. After sous-vide, all microbial counts in non-inoculated samples were not detectable, except the aerobic and anaerobic mesophilie and lactic acid bacteria counts were lower than 2 Log CFU/g. For sous-vided and grilled sous-vided samples, sous-vide loss and surface shrinkage were the lowest in samples sous-vided at 60℃ for 47 min (p<0.05). These samples demonstrated the lowest CIE L*, shear force, hardness, gumminess and chewiness and the highest CIE a* and hue angle (p<0.05). Therefore, sous-vide at 60℃ for 47 min provided convenient ready-to-cook restructured goat steak for microbiology safety and optimization of physicochemical quality.

Evaluation of Blast Wave and Pipe Whip Effects According to High Energy Line Break Locations (고에너지배관 파단위치에 따른 배관휩과 충격파의 영향 평가)

  • When a sudden rupture occurs in high energy lines, ejection of inner fluid with high temperature and pressure causes blast wave as well as thrust forces on the ruptured pipe itself. The present study is to examine pipe whip behaviors and blast wave phenomena under postulated pipe break conditions. In this context, typical numerical models were generated by taking a MSL (Main Steam Line) piping, a steam generator and containment building. Subsequently, numerical analyses were carried out by changing break locations; one is pipe whip analyses to assess displacements and stresses of the broken pipe due to the thrust force. The other is blast wave analyses to evaluate the broken pipe due to the blast wave by considering the pipe whip. As a result, the stress value of the steam generator increased by about 7~21% and von Mises stress of steam generator outlet nozzle exceeded the yield strength of the material. In the displacement results, rapid movement of pipe occurred at 0.1 sec due to the blast wave, and the maximum displacement increased by about 2~9%.

  • The p-version nonlinear finite element model has been developed to analyze the nonlinear behavior of simply supported RC slabs strengthened with carbon fiber reinforced plastic sheets. The shape function is adopted with integral of Legendre polynomials. The compression model of concrete is based on the Kupfer's yield criterion, hardening rule, and crushing condition. The cracking behavior is modeled by a smeared crack model. In this study, the fixed crack approach is adopted as being geometrically fixed in direction once generated. Each steel layer has a uniaxial behavior resisting only the axial force in the bar direction. Identical behavior is assumed fur tension and compression of steel according to the elastic modulus. The carbon fiber reinforced plastic sheets are considered as reinforced layers of equivalent thickness with uniaxial strength and rigidity properties in the present model. It is shown that the proposed model is able to adequately predicte the displacement and ultimate load of nonlinear simply supported RC slabs by a patch with respect to reinforcement ratio, thickness and angles of CFRP sheets.

No Tilt Angle Dependence of Grain Boundary on Mechanical Strength of Chemically Deposited Graphene Film

  • Although graphene has been successfully grown in large scale via chemical vapor deposition (CVD), it is still questionable whether the mechanical properties of CVD graphene are equivalent to those of exfoliated graphene. In addition, there has been an issue regarding how the tilt angle of the grain boundary (GB) affects the strength of graphene. We investigate the mechanical properties of CVD graphene with nanoindentation from atomic force microscopy and transmission electron microscopy. Surprisingly, the samples with GB angles of 10° and 26° yielded similar fracture stresses of ~ 80 and ~ 79 GPa, respectively. Even for samples with GB exhibiting a wider range, from 0° to 30°, only a slightly wider fracture stress range (~ 50 to ~ 90 GPa) was measured, regardless of tilt angle. The results are contrary to previous studies that have reported that GBs with a larger tilt angle yield stronger graphene film. Such a lack of angle dependence of GB can be attributed to irregular and well-stitched GB structures.

  • In order to improve seismic safety of nuclear power plant (NPP) structures in high seismicity area, seismic isolation system can be adapted. In this study, friction pendulum system (FPS) is used as the seismic isolation system. According to Coulomb's friction theory, friction coefficient is constant regardless of bearing pressure and sliding velocity. However, friction coefficient under actual situation can be changed according to bearing pressure, sliding velocity and temperature. Seismic responses of friction pendulum system with constant friction and various velocity-dependent friction are compared. The velocity-dependent friction coefficients of FPS are varied between low-and fast-velocity friction coefficients according to sliding velocity. From the results of seismic analysis of FPS with various cases of friction coefficient, it can be observed that the yield force of FPS becomes larger as the fast-velocity friction coefficient becomes larger. Also, the displacement response of FPS becomes smaller as the fast-velocity coefficient becomes larger.

  • As the minimum feature size decreases, techniques to avoid contamination and processes to maintain clean wafer surfaces have become very important. The deposition and detachment of nanoparticles from surfaces are major problem to integrated circuit fabrication. Therefore, cleaning technology which reduces nanoparticles is essential to increase yield. Previous megasonic cleaning technology has reached the limits to reduce nanoparticles. Megasonic cleaning is one of the efficiency method to reduce contamination nanoparticle. Two major mechanisms are active in a megasonic cleaning, namely, acoustic streaming and cavitation. Acoustic streaming does not lead to sufficiently strong force to cause damage to the substrates or patterns. Sonoluminescence is a phenomenon of light emission associated with the cavitation of a bubble under ultrasound. We studied a correlation between sonoluminescence and sound pressure distribution for the minimum of pattern damage in megasonic cleaning.

Monte Carlo Simulation of MR Damper Landing Gear Taxiing Mode under Nonstationary Random Excitation

  • When an aircraft is taxiing, excitation force is applied according to the shape of the road surface. The sprung mass acceleration caused by the excitation of the road surface negatively affects the feeling of boarding. This paper addresses the verification process of the semi-active control method applied to improve the feeling of boarding. The Magneto-Rheological damper landing gear model is employed alongside the control method. It is a Oleo-Pneumatic damper filled with a fluid having the characteristics of increasing yield stress when subjected to a magnetic field. The control method involves verifying Skyhook Control Type2 developed by Skyhook control. The Sinozuka white noise model that considers runway characteristics was employed for the road surface in the simulation. The runway road surface obtained through this model has stochastic characteristics, so the dynamic characteristics were analyzed by applying Monte-Carlo simulation. A dynamic analysis was conducted by co-simulating the landing gear model made by RecurDyn and the control method designed by Simulink. Simulation results show that the Skyhook Control Type2 method has the best control effect in the low speed range compared to the passive type (without control) and skyhook control.

A Synthesis of High Purity Single-Walled Carbon Nanotubes from Small Diameters of Cobalt Nanoparticles by Using Oxygen-Assisted Chemical Vapor Deposition Process

  • A successful combination of “oxygen-assisted chemical vapor deposition (CVD) process” and Co catalyst nanoparticles to grow highly pure single walled carbon nanotubes (SWNTs) was demonstrated. Recently, it was reported that addition of small amounts of oxygen during CVD process dramatically increased the purity and yield of carbon nanotubes. However, this strategy could not be applied for discrete Fe nanoparticle catalysts from which appropriate yields of SWNTs could be grown directly on solid substrates, and fabricated into field effect transistors (FETs) quite efficiently. The main reason for this failure is due to the carbothermal reduction which results in SiO2 nanotrench formation. We found that the oxygen-assisted CVD process could be successfully applied for the growth of highly pure SWNTs by switching the catalyst from Fe to Co nanoparticles. The topological morphologies and p-type transistor electrical transport properties of the grown SWNTs were examined by using atomic force microscope (AFM), Raman, and from FET devices fabricated by photolithography.

Effects of Electroplating Condition on Micro Bump of Multi-Layer Build-Up PCB (다층 PCB 빌드업 기판용 마이크로 범프 도금에 미치는 전해조건의 영향)

  • Micro-sized bumps on a multi-layered build-up PCB were fabricated by pulse-reverse copper electroplating. The values of the current density and brightener content for the electroplating were optimized for suitable performance with maximum efficiency. The micro-bumps thus electroplated were characterized using a range of analytical tools that included an optical microscope, a scanning electron microscope, an atomic force microscope and a hydraulic bulge tester. The optical microscope and scanning electron microscope analyses results showed that the uniformity of the electroplating was viable in the current density range of $2-4\;A/dm^2$; however, the uniformity was slightly degraded as the current density increased. To study the effect of the brightener concentration, the concentration was varied from zero to 1.2 ml/L. The optimum concentration for micro-bump electroplating was found to be 0.6 ml/L based on an examination of the electroplating properties, including the roughness, yield strength and grain size.

Optimum seismic design of unbonded post-tensioned precast concrete walls using ANN

  • Precast Seismic Structural Systems (PRESSS) provided an iterative procedure for obtaining optimum design of unbonded post-tensioned coupled precast concrete wall systems. Although PRESSS procedure is effective, however, it is lengthy and laborious. The purpose of this research is to employ Artificial Neural Network (ANN) to predict the optimum design parameters for such wall systems while avoiding the demanding iterative process. The developed ANN model is very accurate in predicting the nondimensional optimum design parameters related to post-tensioning reinforcement area, yield force of shear connectors and ratio of moment resisted by shear connectors to the design moment. The Mean Absolute Percent Error (MAPE) for the test data for these design parameters is around %1 and the correlation coefficient is almost equal to 1.0. The developed ANN model is then used to study the effect of different design parameters on wall behavior. It is observed that the design moment and the concrete strength have the most influence on the wall behavior as compared to other parameters. Several design examples were presented to demonstrate the accuracy and effectiveness of the ANN model.
