Changes in Compositions of Fatty Acids According to Drying Methods of Mugwort (Artemisia asiatica Nakai) (쑥의 건조방법(乾燥方法)에 따른 지방산(脂肪酸) 변화(變化)에 관하여)

  • This study was carried out to investigate changes in the compositions of fatty acids according to the different drying methods of raw mugwort. Raw mugwort from Kang-wha was dried with four methods such as sun-drying, shady sun-drying, heated oven-drying and freeze-drying. Total contents and fatty acid compositions of the ethyl ether extracts from the dried mugworts were examined. Total contents of the ethyl ether extracts showed remarkable differences with drying methods; freeze-dried mugwort had the highest content (5.60%), while oven dried mugwort revealed the lowest content (2.45%). Eleven fatty acids and four unknown peaks were identified by gas-liquid chromatography; major fatty acids were linoleic acid, linolenic acid and palmitic acid. Fatty acids of mugworts dried by 4 different methods were the same in kinds, but different in their compositions. The content of polyunsaturated fatty acids $(C_{18:2}+C_{18:3})$ was the highest and the loss of low volatile fatty acids was the least in mugwort dried by the freeze-drying method. The volatile fatty acids considerably decreased in oven-dried mugwort. However, the contents of polyunsaturated fatty acids were a little higher in oven-dried mugwort than in sun-dried and shady sun-dried mugwort, and the lowest in sun-dried mugwort.

A Study on Empowerment Process of the Disabled - Focused on Experience of 'Pre-Adulthood' - (장애인의 임파워먼트 과정에 관한 연구 - 성인기 이전의 경험을 중심으로 -)

  • This study was performed to analyze empowerment process of the disabled. Participants were 11 disabled college students and they were individually face-to-face in-depth interviewed until data were saturated. This study used the grounded theory approach based on Strauss and Corbin(1998). With the qualitative constant comparative analysis, 105 concepts, 22 subcategories, and 12 categories were generated. In the axial coding, a paradigm model was proposed as follows: The central phenomenon of the empowerment process of the disabled adolescents was 'Rising from the Limits'. The causal conditions were 'Just living' and 'realizing disabilities'. The contextual conditions were 'Being excluded', 'But wishing', and 'Breaking down'. The intervening conditions were 'Without giving up' and 'Taking support'. The action/interaction strategies were 'Grasping own lifestyle' and 'Being proactive'. The consequences were 'Acquiring the self-control', 'Getting generosity', and 'Participating in society'. In the selective coding, the core category was 'to live together stately with grasping own lifestyle pro-actively as the disabled'. Based on the core category, three types and 4 stages of the empowerment process of the disabled adolescents were found. The types were 'Social change oriented type', 'Self-development oriented type', and 'Passive effort oriented type' and the stages took 'Isolation stage', 'Rising stage', 'Mastering stage' and 'Stately being together stage'. In particular, this process had the circulation structure of which these 4 stages are not terminated, and developed and repeated. In conclusion, these results convey to us the understanding and knowledge about empowerment process of the disabled as their healthy -whole and unique- development process. And some implications and suggestions for the social work services and theories about the disabled focusing on the pre-adulthood period.

Factors Influencing the Intention of Admission into a Charged Nursing Home for the Elderly (유료노인전문요양원 입주의사 결정요인에 관한 연구)

  • Objectives : To gather information about the factors which influence the interest and intention of admission into charging nursing hones for the elderly(CNH), as these homes represent an important method for resolving the problems related to the rapid population aging occurring in Korea. Methods : A face-to-face interview survey was carried out with 320(men 159, women 165) patients over 60 years old who were admitted at 2 university hospitals and 5 general hospitals in the Busan area between December 1998 and March 1999. Data were analyzed through t-test, ANOVA, correlation and multiple regression analysis. Results : The mean age and years of education of the study population was 67.0 and 7.7 years, and the types of chronic degenerative disease included musculoskeletal disorders(20.1%), cerebrovascular disease(17.1%), and diabetes(14.3%). The major forms of household living arrangement prior to admission were elderly alone(22.6%), and elderly couple(33.5%), while about half of them(55.5%) didn't want to live with their children id the future. Almost half were paying medication fees by themselves(46.6%). The level of actual intention of admission$(3.07{\pm}1.39)$ into a CNH was lower than that of interest$(3.22{\pm}1.33)$(p<0.01). Multiple analysis revealed that the intention of admission increased with decreasing number of future supportive persons$(\beta=-0.107)$, lower level of activity in daily life$(\beta=-0.447)$, and longer years of education$(\beta=-0.447)$ with 32.7% of $R^2$. As for the factors which determined the admission into a CNH, the fee and facilities were considered to be most important, and professional nursing and physician's care were the most desired services. In nomenclature, they preferred 'elderly hospital' or 'elderly health center' to CNH. Conclusions : Interest in CNH is increasing recently, but existing studies about patient experiences in CHN are still limited. This study may form a basis for future examinations of the needs and uses for CNH. Active financial support and public information are considered by the authors to be important factors for the induction of welfare services for the elderly, though CNH.

A Study on the Respondents' Difference of Willingness to Pay Amount on Forest Landscape (산림경관에 대한 지불의사금액의 인식 차이에 관한 연구)

  • The purpose of this study was to define the relationship between respondents' social economic condition and willingness to pay on forest landscape. From the result of analyzing the difference of willingness to pay amount with considering social economic condition by using statistical technique, it was found that willingness to pay amount was highest when people are able to access forests landscape. In addition, it was found that women's willingness to pay amount was higher than that of men and the person such as laborer and public employee, who could spare enough time, had the intention to pay higher amount, than the person such as specialist and self-employed person, who spare enough money. For age, it was found that the retired people in their sixties showed low willingness to pay amount on forest scenery. For income per household, it was interesting that although willingness to pay amount increased as income increased, it was rather low in high income class, whose income was more than KRW 10 million.

  • The purpose of this study is to examine the difference of Chinese consumer preference between chicken burgers cooked by Sous-vide adding Korean-styled seasoning and chicken burgers from local fast food restaurants. For Chinese women in their 20s who reside in Beijing, China, the most important attribute for eating-out was taste (M=6.5), health (M=6.0) and pleasure (M=5.6) in order and 68.60% of them replied that they were interested in Korean cuisine. More than 90% answered they like Korean food for its good taste, shape and color. As for burger preference, BB was significantly higher in terms of the overall and appearance preference. However, there was no significant difference between AB and SB. As for flavor and texture, it showed no significant differences among BB, AB, and SB products. For SB, total balance, soft texture of patty and balance of flavor characteristics were the reasons for their preference of the burger.

Expression of Human Leukocyte Antigen DQB1*0602 in Korean Patients with Narcolepsy (한국인 기면병 환자의 Human Leukocyte Antigen(HLA) DQB1*0602 발현 빈도)

  • Introduction: Narcolepsy, a sleep disorder characterized by excessive daytime sleepiness and cataplexy, is known to be closely associated with the human leukocyte antigen (HLA) DQB1*0602. Several studies have suggested that HLA-DQB1*0602 is strongly linked with narcolepsy-cataplexy. However, no studies have yet been made on whether HLA DQB1*0602 is associated with Korean patients with narcolepsy. This study was designed to investigate the frequency of HLA-DQB1*0602 of Korean patients with narcolepsy. Methods: Twenty patients were selected (mean age: $28.2{\pm}3.0$, 11 men and 9 women). The patients were confirmed to have narcolepsy by the overnight polysomnography and multiple sleep latency test (MSLT) in addition to their clinical history and symptoms at St. Vincent's Hospital and Korea University Hospital Sleep Disorders Clinic. Any subjects co-morbid with other hypersomnic sleep disorders such as sleep apnea or periodic limb movements during sleep were excluded. Clinical data was collected through a semi-structured interview for narcoleptic patients. All patients and 21 control did HLA typing for the presence of DQB1*0602. Results Obtained were as Follows: 1) Mean sleep latency was 2.4 (${\pm}2.0$ minutes) and mean frequency of sleep-onset REM period was 3.0 (${\pm}1.6$) by MSLT. 2) Characteristic symptoms of narcolepsy investigated were as follows: excessive daytime sleepiness (100%), cataplexy (100%), sleep paralysis (60%), hypnagogic hallucination (70%) and disrupted nocturnal sleep (75%). 3) Strong emotional expression such as laughing (80%) and joking (70%) triggered cataplexy which affects the knee and leg region (80%) and jaw region (30%). 4) HLA-DR2 was found in 90% of patients and 35% in controls. The frequency of HLA-DQB1*0602 in patients and controls was 90%, and 24%, respectively. Conclusions: These results, which exhibit high HLA-DQB1*0602 expression in Korean patients with narcolepsy, suggest that HLADQB1*0602 could be a strong genetic marker in narcolepsy.

Physicochemical Properties of Several Korean Yam Starches (한국산 마전분의 이화학적 특성)

  • The physicochemical properties of Korean yam starches (D. aimadoimo, D. batatas and D. japonica) were investigated. The mean granular size of starches were 23.5 μm for D. aimadoimo, 23.9 μm for D. batatas and 18.2 μm for D. japonica. Amylose content, blue value and water binding capacity was $29{\sim}33%,\;0.42{\sim}0.51%\;and\;109.9{\sim}118.3%$, respectively. The optical transmittance of 0.3% (dry basis) yam starch suspensions were increased at $70{\sim}75^{\circ}C$ and D. japonica showed typical two-step transmittance curve. The swelling power and solubility patterns increased over $60^{\circ}C$, and D. aimadoimo was the highest values. Amylogram patterns of 5% (dry basis) yam starch suspensions, determined by Brabender amylograph, were similar to that of yam flours and the viscosity of D. aimadoimo had 630 BU, which was about 5 times higher than 130 BU for D. batatas and D. japonica. Observation under scanning electron microscope lefted marks of resistance to glucoamylase because these surfaces were similar to the natural granules. In rates of solubiliazation by dimethyl sulfoxide, D. aimadoimo showed the highest value. (3-Amylolysis limits of yam starches and their amylose were $71.8%{\sim}75.5%\;and\;90.2{\sim}92.1%$, respectively. Gel filtration patterns of debranched amylopectin by pullulanase were divided into 3 peaks. The weight ratios of peak III to peak II in yam starches were $2.15%{\sim}2.42%$.

  • The dietary habit, health condition and the cognition concerning the health food have been surveyed with the help of the 151 old people living in In-Cheon and Seoul. In this study, the old are classified as an institution for the aged and the old in their own home. The preference and mental health condition influenced on dietary habits have been surveyed as wall. Their dietary habits such s three meals a day and a regular meal time have show) that they have generally good eating habits. Psychologically, the old in an institution for the aged think their health condition is not so good in comparison with the old in their own home. The old in their own home have good condition in that they can go up the stairs, exercise often and walk relatively well. Moreover, men's health condition is better than women. The old generally like meats(especially beef) and prefer sesame oil, perilla oil, soy been oil to Western oil. They like sweat flavor the most and hot, salty taste in order. Thier favorite cooking method is a pot stew, soup and season. The difference between dietary habit and mental health based on an academic career, an allowance and a residential condition shows that the old who live alon have relatively terrible eating habit and the more learned, the better. The more pocket money they have, the better dietary habits they have. The old feel glommy in general and the old in an institution are more depressed and it is statistically significant.

Trace Components and Functional Saccharides in Marine Algae -2. Dietary Fiber Contents and Distribution of the Algal Polysaccharides- (식용해조류중의 미량요소와 특수기능성 당질 -2. 산지와 채취시기별 식이성섬유질 함량의 변화와 해조다당류의 분포-)

  • This report described on the soluble, insoluble, and total dietary fiber level depending on the harvesting seasons and habitats in 9 species of marine algae. Total dietary fiber contents were comprised $25.4-38.1\%$ (dry basis) in green laver and $35.4-43.8\%$in sea staghorn of green algae, $34.2-48.8\%$ in sea mustard, $37.5-47.8\%$ in seaweed fusiforme, $42.9-71.3\%$ in gulf weed, and $37.1-45.1\%$ in sea tangle of brown algae, and $31.3-40.5\%$ in laver, $51.5-60.4\%$ in seaweed dilatata, and $57.1-65.8\%$ in seaweed furcata of red algae. Relatively high levels of both soluble and insoluble dietary fibers were found in seaweed furcata and gulf weed. The ratio of soluble dietary fiber to total dietary fiber was the highest in green laver $(43.7-64.8\%)$, sea mustard $(17.5-31.3\%)$, and seaweed furcata $(44.7-63.2\%)$ in their respective groups. The highest level of algal polysaccharides was confirmed to be an alkali-soluble alginic acid $(9.0-15.1\%)$ in whole brown algae, porphyran$(5.8\%)$ in laver, agar $(20.0\%)$ in seaweed furcata, and carrageenan $(23.8\%)$ in seaweed dilatata of red algae.

Effect of Oral Healthcare Program of Exemplary Kindergartens for Prevent the Dental Caries in Incheon City, Korea (치아우식증 예방을 위한 모범 유치원 구강건강관리프로그램 효과 - 인천 일부지역 유치원을 중심으로)

  • The purpose of the study is to confirm the effect of the oral health management program in exemplary kindergartens for prevent the dental caries. The study performs the survey on the parents about the changes in the oral health behaviors after the oral health education in April 2012 and measures the patient hygiene performance (PHP) index before the education, after the education and 3 weeks after the education to assess the removal capability to plaque on the teeth surface for the children. The analysis is performed on 130 people who join the program and respond the survey. There is no change in the behavior related to the tooth brushing of children after the oral health education. No change is found from the interest in the oral health education (p>0.05) but the recognition in the importance of the tooth positively change, as well as recognition of the tooth brushing method and the reaction to recommending to tooth brushing. The PHP index of children is significantly improved from 3.87 before the education through 2.71 after the education and 3.27 3 weeks after the education (p<0.001). The observation from the patents shows that their children have interest in preventing the cavities including 33.1% after having xylitol and 60.7% after the oral health education. In conclusion, the study confirms the effect of the oral health management program in exemplary kindergartens to prevent the cavities, meaning that it is required to activate the programs and keep implementing the programs including providing xylitol and education for teachers, parents and children to habituate the oral health behavior of the children and completely learn toothbrushing method under continuous management and reeducation.
