To investigate the genetic system in resistance to powdery mildew winter wheat cultivar Diplomat which has stable field resistance was crossed with high yielding susceptible winter type Caribo and Hayman's generation mean analysis technique was employed. Mildewing rate on flag-leaf at both heading-flowering and ripe stages were recorded according to lame's quantitative scale. The result indicated that additive gene effect was more important and significant role in the inheritance of resistance while dominant gene effect was minimum, and digenic interations were absent. Narrow sense heritability of resistance at ripe stage was higher than that of heading-flowering stage.

Among annual precipitation in Korea (1306.3 mm), 54% of it falls intensively in summer, and only about 12.4% falls in April and May, when the water requirement of wheat is the highest. Korean wheat also could be damaged by soil water excess stress as frozen soil thaws after winter (late Feb-Mar). This study was conducted to evaluate effect of soil water stress on yield and quality of Korean wheat cultivar 'Saegeumgang'. Soil water treatments consisted of 4 treatments; water excess treatment in tilling stage (3.23-3.30), drought treatment in ripening stage (Apr-Jun), irrigation treatment in ripening stage (5.10) and standard condition. There was no significant difference between the treatment conditions for culm length, and the number of spike number was the highest in the order of irrigation in the ripening period (951)> standard cultivation (876)> excess water treatment in the tilling stage (752)> drought treatment in the ripening stage (767/m2). Test weight and Thousand grain weight were 548g/L and 22. lg respectively, which were lower than other treatments, and there was no significant difference between the other treatments. Abortive grain was 5.4kg/10a which was lower than other treatment, and there was no significant difference between the other treatment than other treatments. In drought treatment, protein content was 11.9% which is the highest among all treatments, and SDS-sedimentation value was 27.2ml under drought treatment which was very low compared to other treatments. Therefore, wheat yield and spike number were decreased in excess water condition at tilling stage and drought condition at ripening stage. Furthermore, wheat quality became deteriorate in drought condition at ripening stage.
To observe the effects of temperature and photoperiod on the growth and yield of winter wheat (Triticum aestivum, L) eight varieties including Chang Kwang were tested at various treatments like longday-high temperature (24hrs-20\circ), shortdayhigh temperature (12hrs-20\circ), longday-low temperature (24hrs-14\circ) and shortday-low temperature (12hrs-14\circ). Among the traits measured, days to heading, plant height, spike length, number of spikes per hill and grain yield per hill were generally decreased at high temperature and long day treatment and increased at low temperature and shortday condition. Number of grains per spike was decreased at low temperature and short day condition while increased at longday and high temperature conditions. Grain weight was decreased significantly at high temperature and shortday while increased at low temperature and longday treatment.

Food Self-sufficiency rate in Korea was 26.4 percent in 1996. It include $89.9{\%}$ for rice, $99.6{\%}$ for root and tuber crops, and $73.5{\%}$ for barley. To make things worse, self-sufficiency for wheat and corn were far less than 1 percent. As food is considered as weapon, every effort should be given to increase the self-sufficiency. In order to cope with expected food crisis, we suggest wheat and barley be grown in winter period, where there is climate fit. The aim of this paper is to survey systematically the status of food supply and demand of wheat and barley and to encourage farmers make double cropping systems with better stability in yield and economic return.
"Charmdlerak" a new high-quality Korean wheat, was produced with production management from the Rural Development Administration (RDA). We evaluated the characteristics of grain, flour, and end-use quality of "Charmdlerak" wheat to assess consumer satisfaction with this new variety of wheat. Eighty-two farmers (450MT/100 ha) in Gwangju metropolitan city produced Keumkangmil wheat and 23 farmers (30 ha) produced "Charmdlerak" wheat "Charmdlerak" wheat had 1.55% ash content and 11.0-13.0% protein content "Charmdlerak" flour was milled by a commercial machine in Samyang Milmax. The protein content of "Charmdlerak" was slightly higher than that of flour from Hard Red Winter Wheat (HRWW), the most popular multipurpose flour in Korea. The ash content and color of "Charmdlerak" wheat were similar to those of HRWW. End-use quality testing of cooked noodles and bread indicated that "Charmdlerak" flour resulted in softer noodles and similar bread loaf volume compared with products made from Keumkangmil wheat.

Two of the Hard White Winter (HWW) wheats had higher farina yield than mixed Hard Red Winter (HRW) wheat. Optimum steaming time for HRW farina spaghetti was 3min under 86-98$^{\circ}C$. Optimum cooking time decreased after steam treatment. Steam treated spaghetti showed much higher strength of dried spaghetti, lower cooking loss, and cooked weight, less stickiness, and total organic matters (TOM) value than in treated spaghetti after cooking. The rooking qualities except stickiness were significantly different between treated and untreated steam. The quality of hard wheat farina spaghetti was more affected than that of durum spaghetti after steam treatment. HWW farina spaghetti im-roved all the qualities of steam treated and untreated spaghetti than those of HRW farina spaghetti except stickiness. From the observations of scanning electron microscope (SEM), maybe two general principles of steaming can be explained by : i) forming hydrophobic protein film on surface of pasta, ii) higher retrogradation of starch, which cause less swelling of starch.
This study aims to understand the contribution rate of plant parts on biomass in five winter forage crops including barley, wheat, oat, rye and triticale. In barley and oat, the major plant parts on dry matter yields were changed from culm to spike at 20 days after heading(DAH), but culm was very important part on biomass of rye, wheat and triticales until 30DAH. Wheat, rye and triticales showed same pattern in dry weight increase indicating that culm was main component of biomass from heading stage but spike became heavier after 30 DAR. Barley and oat were similar in dry weight increase where spike was the main components of biomass at 20 DAR. After heading stage the major biomass of most winter forage crops were dependent on the weight of culm and spike, while the contribution of leaves to plant biomass was lower as compared to culm and spike. Thus culm and spike were very important factors for improving the dry matter production of winter forage crops breeding and early maturing is also additively required under Korean climatic condition.
This study was conducted to clarify progressed changes of plant types and the effects of the physiological and ecological components on improving ideotype of winter wheat. 12 wheat varieties were planted at the experimental farm of Wheat and Barley Research Institute in Suwon in 1990. As results of intensive wheat breeding for early maturity since 1959, heading, flowering and maturing dates have been shortened by 17, 15 and 14 dagys, respectively. The shortened days from sowing to heading and from heading to flowering contributed to the early maturity to improved. Physiological factors associated with heading time of wheat could be reprsented by growth habit, photoperiod responses, earliness in narrow sense and winter hardiness. For improving an early maturity of winter wheat, it would desired to maintain some degree of winter habit(III-IV), and recombination of more insensitivity to short day length and more shortened earliness in narrow sense than that of Saemil and Chugoku 81, and higher degree of winter hardiness. For improving the early maturity the more effective way must be of shortened days from sowing to heading, and days from flowering to maturity than days from heading to flowering. Ideotype of wheat will be desired to recombine two semi-dwarf genes with erect plant type being about 70-80cm, less stem elongation by late spring, long spike and many grains per spikelet. Average spike weight ratio was about 45-49% in high-yielding varieties, stem fresh weight was lighter, but spike fresh weight was heavier in new one while leaf fresh weight was similar to each other during the maturing periods. Average spike dry weight ratio was higher about 40~48%, and stem and leaf blade dry weights were lower in the newly bred varieties. Stem dry weight was heavier than spike or leaf dry weight in the old varieties of Yungkwang, Jangwang and Jinkwang. Leaf area index for the varieties showed normal distribution curve as the maximum point in booting stage. The maximum point of this curve come in early maturing wheat, and late in old one. The maximum points of LAI were 6.4~6.8 in the high-yielding varieties. Totals of LAI in each period investigated of old one were higher than those of newly bred being 24.6~28.8. Chlorophyll content of the high-yielding varieties of Chokwang, Geurumil and Saemil as higher than that of the old varieties Jangkwang, Jinkwang, Wonkwang and Sinkwang from regrowing period to April 21. after then slightly and even after heading. Net assimilation rate (NAR) was higher in high-yielding varieties with good plant type, and lower in old ones. Grain yield of the newly released varieties increased rapidly but slowly in the old ones. Change in water content of grain at the growing stage in newly bred was lower than that of the old bred. Diminishing rate of water content of grain in establishment per day was 1.2% average that of the old varieties including Yungkwang was 1.5%, and those of the newly bred including Chokwang were 0.9~1.1%. Chokwang, Naemil, and Saemil were the highest-yielding varieties of the Korean cultivars. Yields were increased by spikes per m$^2$, grain weight for the varieties bred in Suwon, and by spikes per m$^2$ for the varieties bred in Milyang.
The physicochemical characteristics of fresh noodles made with blends of low-protein wheat flour and barley byproduct (BBP, $250{\mu}m$) were investigated. The crude protein contents (PC) of flour from Goso and Backjoong cultivars were 7.91% and 7.67%, respectively. PC and ${\beta}$-glucan contents from the BBP were 14.10% and 3.11%, respectively, which were higher than those in wheat flour. The water-holding capacity (WHC) of various blends was increased as a function of BBP but not gluten contents. Goso flour had the highest starch content (78.68%), with peak and final viscosities of 3,099 and 3,563 cp, respectively. Peak and final viscosities, trough, breakdown, and setback of the blends were decreased with the addition of BBP. Noodles made with Backjoong had the highest thickness score, while the hardness of noodles made with blends of Goso or Backjoong and 20% BBP were similar to those made from wheat flour only. The WHC of the samples was strongly correlated with PC, crude fiber, and ${\beta}$-glucan. The PC was not correlated with final viscosity, setback, thickness, hardness, gumminess, or chewiness.
