밀의 고분자 글루테닌 조성과 농업 형질이 품질 특성에 미치는 영향 (Effects of High-Molecular-Weight Glutenin Subunits and Agronomic Traits on Bread Wheat Quality Parameters)

  • 국내외 유전자원을 이용하여 HMW-GS 조성과 농업 특성이 밀가루 품질에 미치는 영향을 평가하였다. 1. 국내 자원의 HMW-GS 조성은 Glu-A1c와 Glu-A1b, Glu-B1b, Glu-D1f가 가장 많았고, Glu-B1i 또는 Glu-B1al을 가진 자원은 각 1개로 적었다. 외국 자원은 각 loci 별로 Glu-A1a, Glu-B1c, Glu-D1d가 가장 많았고, Glu-B1에서는 Glu-B1i가 두번째로 많았다. 2. 국내자원은 도입자원에 비해 출수일수가 짧고 성숙일수가 길며, 글루텐 인덱스, 믹소그래프 반죽 강도(MPV 및 MPW)가 높은 반면, Glu-1 점수와 반죽시간, 반죽 안정성(MTxW)이 낮았다. 3. HMW-GS 조성과 품질 특성 간 관계를 분석한 결과 단백질 함량과 글루텐 함량은 Glu-B1i에서 가장 높았다. 글루텐 인덱스, 침전가, 믹소그래프 반죽시간, 반죽 안정성(MTxW)은 모두 공통적으로 Glu-B1의 Glu-B1i와 Glu-B1al에서 높게 나타났다. 반죽시간과 반죽 안정성(MTxW)은 Glu-A1a와 Glu-A1b, Glu-D1d에서도 높았다. 4. 농업 형질과 품질 특성의 상관관계를 분석한 결과 단백질 함량, 글루텐 인덱스, 침전가, 반죽 강도(MPV 및 MPW)는 공통적으로 출수일수와는 부의 상관, 성숙일수와는 정의 상관을 나타내었다. 이를 통해 국내 자원의 빠른 출수기와 충분한 성숙일수를 유지하면서 도입 자원이 가진 Glu-B1i, Glu-B1al, Glu-D1d 등의 유용한 HMW-GS 조성을 도입하면 고품질 밀 품종을 육성하는 데 도움이 될 것으로 생각된다.

카레 가루를 첨가한 식빵의 품질 특성 (Quality Characteristics of Bread Prepared with the Addition of Curry Powder)

  • This study was done to provide the basic information of bread made with curry powder. The amounts of curry powder used were 0 to 3% based on the wheat flour weight. The quality of bread was investigated by evaluation of the specific loaf volume, water absorption capacity, color, sensory quality and texture. The weight of bread decreased with the increase of curry power contents, but there were no significant differences among 0.5, 1 and 2% added curry powder bread. The volume and specific loaf volume also decreased with the increase of curry power contents, but those decreases were not significant between 1% one and 2% one. The water absorption capacities were not affected by the addition of curry powder. The lightness and redness decreased with an increase of curry powder content in the bread, while yellowness increased significantly(p<0.01). The result of the sensory evaluation showed that total acceptabilities of appearance, aroma, texture and taste in the bread with 0.5% and 1% curry powder were significantly higher than the control group and the other groups. Overall quality was negatively affected by the yellowness, odor, hot and bite taste of added curry powder. The factors affecting on the overall quality of the bread with added curry powder were in order of taste quality > curry powder odor > texture quality > aroma quality > springiness > wheat flour odor.

Effect of nitrogen fertilize application levels on yield and quality of Korean wheat cultivars

  • This study was done to determine the effect of additional nitrogen fertilization on the yield and quality of the Korean wheat cultivars Keumkang, Jokyoung, Baegjoong, Sooan, Uri and Goso. Different levels of nitrogen applications (109, 82, 55, 41, and 27 kg/ha) were applied to six cultivars. The results show that the yield and protein contents were increased in all tested cultivars. The grain yields of the cultivars Keumkang, Jokyoung, Baegjoong and Sooan were greatly increased in the case of double fertilization treatments. Moreover, Uri and Goso had greatly increased yields by the additional fertilization at a 50% rate compared with korea wheat standard fertilization rate. A significantly higher yield was observed in Uri. Baegjoong was the highest yielding cultivar among the tested cultivars with the additional nitrogen fertilization. As the fertilization was increased up to double the fertilization treatment, the yield of Baegjoong also showed a constant increase. Positive correlations were found between the nitrogen fertilizer application levels and the protein contents of the grain in all the cultivars except for Uri, and among these, Jokyoung had a most significant correlation between the nitrogen fertilizer application level and the increase in its protein contents. Keumkang had the highest protein contents and highest increase in the protein content change according to the amount of nitrogen application. However, amylose, damaged starch and ash contents were not significantly changed by the different levels of nitrogen applications.

알로에 첨가 식빵의 품질 특성 (Quality Characteristics of Bread with Added Aloe(Aloe vera Linne))

  • The quality characteristics of breads made by adding levels of 30%, 60%, and 100% aloe gel were investigated. The 60% aloe gel sample had a larger dough volume than the control dough. Also, the loaf volume and specific volume of the bread made with 60% aloe gel were larger than those of the control bread. The pasting temperature increased gradually with the increasing amounts of substituted aloe gel as compared to wheat flour with water added$(66.5{\pm}12^{\circ}C)$; the wheat flour with 100% aloe gel had a pasting temperature of $90.7{\pm}1.1^{\circ}C$. Peak viscosity decreased gradually with increasing amounts of aloe gel when compared to the wheat flour with water added. Setback also was decreased gradually with the increasing amounts of aloe gel as compared to the wheat flour with added water. From the setback decrease it is suggested that the aloe controlled retrogradation of the bread during short-term storage. The crumb color of the bread made with the aloe gel was not significantly different to that of the control bread, and the color of the crumb was yellow-white. Bread hardness decreased gradually with increasing amounts of the substituted aloe gel. However, bread gumminess and chewiness increased gradually with increasing amounts of aloe gel. The springiness of the bread made with 100% aloe gel was lower than that of the control bread. With regard to flavor and taste, the bread made with 100% aloe gel produced a green-like odor and had a bitter taste. The mouth feel of the breads made with aloe gel was considered soft and moist. The overall acceptabilities of the breads made with 30% and 60% aloe gel were not significantly different from the control bread, but the bread made with 100% aloe gel had a green smell and bitter taste. Yet accordingly, the results indicate that functional and health products with improved quality could be developed by adding aloe gel to breads and cakes.

흑미가루 첨가 쿠키의 품질 특성 연구 (Quality Characteristics of Cookies with Black Rice Flour)

  • The quality characteristics of cookies containing black rice flour, which has a greater variety of functional components than wheat flour, were studied. The results of the pasting properties shows that the inclusion of black rice flour to the wheat flour-mixture did not affect the pasting temperature but increased the enthalpy, indicating that more energy is needed for the starch gelatinization. The total dietary fiber and total polyphenol content increased and the cookies color became darker and deeper with increasing black rice flour content. According to the results from TA on texture, the hardness decreased and the crispness increased significantly (both, p<0.001) with increasing black rice flour content. From the acceptance test, the appearance, aroma and texture of the cookies with added black rice flour were significantly (p<0.001) lower than those of the wheat flour cookies. However, the taste and overall acceptance of the cookies with added black rice (lour did not differ significantly from those of the wheat flour cookies. According to the results from the sensory evaluation, the aroma, black rice flavor, crispness, graininess and color(gray-violet) of the cookies increased significantly(p<0.001) with increasing black rice flour content and those of the cookies with 30% black rice flour had the highest values among the cookies which weren't significantly different from those of the cookies with 20% black rice flour. From the above results, the optimal ratio for the addition of black rice flour to the cookies was 10% from the viewpoint of the sensory evaluation and functional components.

Quality properties of various dietary fibers as isolated soy protein (ISP) replacements in pork emulsion systems

  • This study aimed to investigate the possibility of replacing the isolated soy protein (ISP) as a binding agent for wheat, oat, and bamboo shoot dietary fibers. Dietary fibers and ISP were added to manufacturing process of pork emulsion, respectively, for investigate quality properties. Moisture contents of pork emulsion added wheat fiber-treated group was significantly higher than ISP-treated group (p < 0.05), and protein contents of dietary fiber-treated group were significantly lower than ISP-treated group (p < 0.05). Raw pork emulsion CIE a value of oat, bamboo shoot fiber-treated group were significantly lower than ISP-treated group (p < 0.05). After cooking pork emulsion CIE L value of dietary fiber-treated group were significantly higher than ISP-treated group (p < 0.05). Raw pork emulsion water holding capacity (WHC) of wheat, oat fiber-treated group were significantly higher than ISP-treated group (p < 0.05), and cooked pork emulsion WHC of wheat, bamboo shoot fiber-treated group were higher than ISP-treated group (p < 0.05). Cooking loss of ISP-treated group was significantly higher than dietary fiber-treated group (p < 0.05), and viscosity of ISP-treated group was lower than dietary fiber-treated group. Hardness of ISP-treated group was significantly lower than dietary fiber-treated group (p < 0.05); however, cohesiveness of ISP-treated group was significantly higher than dietary fiber-treated group (p < 0.05). In conclusion, dietary fiber added as binding agent to manufacturing process of pork emulsion was suitable to replacing ISP.

  • Gluten is the main functional component of wheat, and is the main source of the viscoelastic properties in a dough. One of the gluten group is glutenin, which is composed of high molecular weight (HMW) and low molecular weight (LMW) subunits. The HMW glutenin subunits (HMW-GS) have been shown to play a crucial role in determining the processing properties of the grain. They are encoded by the Glu-1 loci located on the long arms of homeologous group one chromosomes, with each locus comprising two genes encoding x- and y-type subunits. The presence of certain HMW subunits is positively correlated with good bread-making quality. The highly conserved N- and C- terminal contaning cystein residues which form interand intra-chain disulphide bonds. This inter chain disulphide bonds stabilize the glutenin polymers. In contrast, the repetitive domains that comprise the central part of the HMW-GS are responsible for the elastic properties due to extensive arrays of interchain hydrogen bonds. In this review, we discuss HMW-GS, HMW-GS structure and gluten elasticity, relationship between HMW-GS and bread wheat quality and genetic engineering of the HMW-GS.

Association of Puroindolines Genotypes and Grain Properties, Milling Performances and Physical Properties of Flour in Korean Wheats

  • Puroindoline alleles, grain characteristics, milling performances and physical properties of flour of 22 Korean wheat cultivars were evaluated to determine the influence of puroindolines genotypes on grain and flour characteristics and to provide useful information for improving milling and end-use quality in Korean wheat breeding programs. Nine Korean wheat cultivars carried with Pina-D1a/Pinb-D1a, 11 cultivars had Pina-D1a/Pinb-D1b and 2 cultivars were Pina-D1b/Pinb-D1a. Korean wheats carrying with Pina-D1a/Pinb-D1a genotypes showed lower test weight and thousand kernel weight, area and roundness of grain and hardness index in grain characteristics, lower flour yield and higher proportion of break flour in milling performances and lower average particle size of flour, ash and damaged starch content, water retention capacity, yellowness-blueness and higher lightness of flour than wheats with Pina-D1a/Pinb-D1b or Pina-D1b/Pina-D1a genotypes. Pina-D1a/Pinb-D1b genotypes showed lower 1000-kernel weight, grain area, higher average of particle size of flour, higher ash and damaged starch content than Pina-D1b/Pina-D1a genotypes. There was no difference in hardness index of grain, milling performances, flour color between Pina-D1a/Pinb-D1b and Pina-D1b/Pina-D1a genotypes. These results could present the information to improve milling quality and physical properties of flour in Korean wheat breeding programs.

Quality Evaluation of Chicken Nugget Formulated with Various Contents of Chicken Skin and Wheat Fiber Mixture

  • This study aimed to investigate the effects of various mixtures of the chicken skin and wheat fiber on the properties of chicken nuggets. Two skin and fiber mixtures (SFM) were prepared using the following formulations; SFM-1: chicken skin (50%), wheat fiber (20%), and ice (30%); and SFM-2: chicken skin (30%), wheat fiber (20%), and ice (50%). Chicken nugget samples were prepared by adding the following amounts of either SFM-1 or SFM-2: 0%, 2.5%, 5%, 7.5%, and 10%. The water content for samples formulated with SFM-1 or SFM-2 was higher than in the control (p<0.05), and increased with increasing the concentrations of SFM-1 and SFM-2. The addition of SFM-1 and SFM-2 had no significant effect on the pH of the samples. The lightness value of uncooked chicken nuggets was higher than that of cooked chicken nuggets for all the samples tested. Chicken nuggets formulated with SFM-1 and SFM-2 displayed higher cooking yields than the control sample. The hardness of the control sample was also lower than the samples containing SFM-1 and SFM-2. The sensory evaluation showed no significant differences between the control and the samples containing SFM. Therefore, the incorporation of a chicken skin and wheat fiber mixture improved the quality of chicken nuggets.

Hydrocolloids혼합첨가 쌀면의 물리적, 관능적 특성연구 (Textural and sensory properties of rice noodle blended with of hydrocolloids)

  • Using market-selling rice flour, four rice wet noodles were prepared with three hydrocolloids: wheat flour, hydroxypropyl methyl cellulose (HPMC), and potato starch at different levels based on pre-test, and the physical and sensory properties of the noodles were measured and compared. The rice noodle with hydrocolloids showed much higher peak and final viscosity than wheat flour noodle (control). Rice noodle also showed higher hardness, cohesiveness and springiness than control in textural properties, however, the noodle with the highest hydrocolloids (wheat flour 15%, HPMC 12.5%, potato starch 17,5%) showed lowest cohesiveness and springiness values among samples. By sensory evaluation, the rice noodle with 15% wheat flour, 8.5% HPMC, 17.5% potato starch showed the highest scores in appearance, taste, texture and acceptability. HPMC in noodles seemed to influence on the noodle quality than potato starch or wheat flour. For making rice noodle, adequate level of hydrocolloids could improve noodle quality such as viscoelasticity, however, excess addition made the noodle coarse.
