현미찹쌀가루와 향현미찹쌀가루를 첨가한 우리밀국수의 제조 및 품질특성 (Preparation and Quality Characteristics of Korean Wheat Noddles Made of Brown Glutinous Rice Flour With and Without Aroma)

  • 국내에서 생산되는 우리밀의 소비촉진과 고품질의 제품을 제조하기 위해서 향현미찹쌀과 현미찹쌀가루를 우리밀가루에 $10{\sim}30%$ 첨가하여 국수를 제조하고 그 품질특성을 조사하였다. 향현미찹쌀과 현미찹쌀가루의 평균 입자크기는 $12.38{\sim}15.59\;{\mu}m$로 고운 분말상태였고 우리밀가루와 큰 차이는 없었다. Farinograph 결과 향현미찹쌀가루와 현미찹쌀가루의 첨가량이 증가할수록 반죽의 수분흡수율은 각각 증가, 감소하였다. 반죽의 안정도, 형성시간 및 점탄성은 첨가물의 함량이 증가할수록 감소하는 경향을 나타냈다. 향현미찹쌀을 첨가한 국수는 대조군과 비교하여 명도는 증가하고 황색도는 감소한 반면에 현미찹쌀가루를 첨가한 국수는 반대의 결과를 나타냈다. 향현미찹쌀과 현미찹쌀을 우리밀에 20%농도까지 첨가하였을 때의 조리특성은 대조군과 거의 차이를 나타내지 않았다. 관능검사결과 향현미찹쌀의 첨가량이 30%, 현미찹쌀은 20%까지 첨가한 국수가 대조군과 외관, 맛 그리고 전체적인 기호도에서 비교적 높은 평가를 받았다.

홍어 분말을 첨가하여 제조한 만두피의 품질특성 (Quality Characteristics of Mandupi with Skate (Raja kenojei) flour)

  • The purpose of this study was to investigate the effects of skate (Raja kenojei) flour on the functional and sensory characteristics of Mandupi. Mandupi samples were prepared with wheat flour along with the addition of different amounts of skate flour, followed by functional measurements and sensory evaluations. According to the amylograph data, the composite skate flour-wheat flour samples had increased gelatinization temperatures with increasing skate flour content; whereas initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity were reduced. In terms of color values, L and b values decreased, but the a-value increased with increasing skate flour content. Furthermore, the addition of skate flour increased hardness, springiness, chewiness, and adhesiveness in the samples. Overall, based on sensory evaluations, the Mandupi containing 5% skate flour was preferred over the other samples.

Hydrocolloids혼합첨가 쌀면의 물리적, 관능적 특성연구 (Textural and sensory properties of rice noodle blended with of hydrocolloids)

  • Using market-selling rice flour, four rice wet noodles were prepared with three hydrocolloids: wheat flour, hydroxypropyl methyl cellulose (HPMC), and potato starch at different levels based on pre-test, and the physical and sensory properties of the noodles were measured and compared. The rice noodle with hydrocolloids showed much higher peak and final viscosity than wheat flour noodle (control). Rice noodle also showed higher hardness, cohesiveness and springiness than control in textural properties, however, the noodle with the highest hydrocolloids (wheat flour 15%, HPMC 12.5%, potato starch 17,5%) showed lowest cohesiveness and springiness values among samples. By sensory evaluation, the rice noodle with 15% wheat flour, 8.5% HPMC, 17.5% potato starch showed the highest scores in appearance, taste, texture and acceptability. HPMC in noodles seemed to influence on the noodle quality than potato starch or wheat flour. For making rice noodle, adequate level of hydrocolloids could improve noodle quality such as viscoelasticity, however, excess addition made the noodle coarse.

  • 국산원료(國産原料)를 활용(活用)한 복합분(複合粉)으로 빵을 만들고 그들의 품질(品質)을 조사한 바 다음과 같은 결과를 얻었다. 1) 보리빵의 제조(製造)에 있어서, 표준 밀가루빵(speciffic loaf volume, SLV : 3.3)과 동일(同一)한 formula로 제조(製造) 할 때, 그 SLV 는 1.3(물 100%)으로 아주 낮았으나 탈지대두분(脫脂大豆粉)을 10% 혼합(混合)하면 1.7(물 100%)로 증가하였다. 한편 분질개량(粉質改良)을 위한 여러 가지 첨가제중(添加劑中)에서 1.5% GMS + 0.5% CSL 의 경우가 가장 우수하였다. (SLV : 2.0, 물 100%) 이에 다시 밀가루를 혼합(混合)하면 가장 효과적(效果的)이었는 바, 보리가루의 25%를 밀가루로 대체하면 그 SLV 는 2.8(물 90%)로, 50%의 경우는 3.2(물 90%)로 증가하여 표준빵과 비슷하였으며, 빵색깔도 우수하였다. 2) 고구마빵은 baking이 끝나면 흑갈색으로 되는것이 특징(特徵)이고 탈지대두분(脫脂大豆粉) 20%를 혼합(混合)하면 그 loaf volume이 증가하며 결착제(結着劑)로서 GMS + CSL의 첨가(添加)는 효과적(效果的)이었다. (SLV : 1.9, 물 100%) 고구마가루 복합분에 밀가루를 25%와 50%수준(水準)으로 혼합(混合)하면 그 SLV는 각각(各各) 2.3, 2.6(물 90%)으로 증가하고 빵색깔이 연해지며 빵조직(組織)이 개선되었다. 3) 감자가루를 주원료(主原料)로 한 제빵은 그 분질(粉質)이 고구마가루와는 다르고 GMS + CSL의 첨가(添加) 효과가 낮았다. 옥수수가루에 의한 제빵은 쌀보리가루와는 상이한 경향이었으며, 탈지(脫脂)쌀겨가루는 제빵 원료(原料)로서 부적당하였다. 4) 원료(原料) 공급(供給)면에서 전망(展望)이 보이는 쌀보리가루와 고구마가루를 주원료(主原料)로 한 5종(種)의 복합분(複合粉), 즉 (1) 쌀보리가루+탈지대두분+밀가루 (45 : 10 : 45) (2) 쌀보리가루+탈지대두분+밀가루 (67.5:10:22.5) (3) 쌀보리가루+탈지대두분 (90 : 10) (4) 고구마가루+탈지대두분+밀가루 (40 : 20 : 40) (5) 고구마가루+탈지대두분+밀가루 (60 : 20 : 20) 으로 첨가제를 넣고 제빵한 후, 밀가루빵을 표준(So)으로 하여 관능시험(官能試驗)한 결과(結果), 평균점(平均點)의 서열은 So>(1)>(2)>(3)>(5)>(4) 이었고, Duncan's multiple range test 의 결과 (1)의 빵, 즉 보리가루와 밀가루를 동량(同量)섞고 여기에 탈지대두분(脫脂大豆粉)을 10% 혼합한 복합분(複合粉)을 주원료(主原料)로 한 빵은 그 색깔, 조직(組織), 및, 향기(香氣)등의 종합평가(綜合評價)에 있어서 밀가루빵과 유의차(有意差)가 없었다.

  • 밀가루 대체원료(代替原料)로써 쌀보리가루 또는 고구마가루를 활용한 복합분(複合粉)으로 국수를 만들고 그들의 품질(品質)을 조사하여 다음과 같은 결과를 얻었다. 1) 면대(麵帶) 및 건면(乾麵)생산에 있어서 밀가루에 대한 보리가루 대체율(代替率)은 100%까지, 고구마가루 대체율(代替率)은 70%까지 가능하였으며 품질개량제(品質改良劑)로서 glyceryl monostearate 및 sodium polycrylate의 첨가는 이들 제품의 texture 특성(特性)을 향상시켰다. 2) 면대(麵帶)와 건면(乾麵)의 texture 특성치(特性値)인 견고성(堅固性), 응집성(凝集性), gumminess는 보리가루나 고구마가루의 배합에 의하여 떨어졌으나 첨가제의 효과가 뚜렷하였고 면대(麵帶)는 견고성(堅固性) 6.2 이상, gumminess 430 이상, 건면(乾麵)은 견고성(堅固性) 6.8 이상이 필요하였다. 3) 조리면(調理麵)에 있어서 밀가루 대체(代替)와 첨가제의 사용은 texture 특성(特性)을 떨어뜨리는 경향이 있었으며 조리특성(調理特性)으로 보아 보리가루는 60%까지, 고구마가루는 40%까지 대체(代替)할 수 있었다. 4) 조리면(調理麵)의 색깔, 맛, texture에 관한 관능(官能)시험에서 20% 대체복합분(代替複合粉)은 밀가루와 5% 수준에서 유의차(有意差)가 없었으며 품질저하(品質低下)는 주로 착색(着色)에 기인(起因)하였다.

마가루 첨가에 따른 스폰지케익의 품질 및 관능적특성 (Quality Properties and Sensory Characteristics of Sponge Cakes as Affected by additions of Dioscorea japonica flour)

  • In the fabrication of sponge cakes, wheat flour was substituted by Dioscorea Japonica flour at 3%, 6%, and 9% (C1, C2, and C3, respectively), and the sensory, physicochemical, texture properties, viable cell counts and chromaticity of the samples were investigated and compared with the control cake (C0). The addition of Dioscorea Japonica flour increased the density of the sponge cake, but decreased the size and moisture content of the cakes (C0〉C1〉C2〉C3). The pH value increased with increasing Dioscorea Japonica flour in the sponge cakes, and the microbial growth was remarkably suppressed by Dioscorea Japonica flour compared with the control. There was an increase in the chromaticity of the sponge cakes with increased Dioscorea Japonica flour in the cakes. Also, the hardness, gumminess, and chewiness were enhanced approximately two times higher than those of control by increasing Dioscorea Japonica flour. In the sensory evaluation, the addition of Dioscorea Japonica flour into sponge cakes showed a significant increment in the internal color, size/uniformity of the voids, and the sweetness, while the adhesiveness and moistness were the highest in the control. The overall preference was in the order C0〉C2〉C3〉Cl, and therefore, the substitution of 6% of wheat flour by Dioscorea Japonica was recommended in the fabrication of sponge cakes.

제조방법을 달리하여 제조한 현미가루 첨가 식빵의 품질 특성 (Quality Characteristics of Bread Made with Brown Rice Flours of Different Preparations)

  • This study was carried out to investigate the quality of bread made with different types of brown rice flours. 20% of the wheat flour from the bread recipe was substituted with the different types of brown rice flours, such as, raw brown rice flour (RBRF), soaked brown rice flour (SOBRF), and sprouted brown rice flour (SPBRF). The loaf volume of the bread: decreased by 3.2%∼7.4% with the addition of the brown rice flours. The "L" value of these breads decreased, while the "a" and "b" values increased. In terms of the texture, the SPBRF bread was the hardest on the 1st day of storage, but it was the least hard on the 5th day of storage. The RBRF bread was the least springy. The SPBRF bread was the most cohesive. The adhesiveness was not significantly different among the breads. In terms of the degree of retrogradation using the ${\alpha}$-amylase method, the SOBRF and SPBRF breads showed a little lesser degree of retrogradation than the control and the RBRF bread. In the sensory evaluation, the control bread obtained high score for crumb color and grain, while the brown rice flours breads obtained high scores for mouthfeel and taste. Overall acceptability, defined by a higher score, was higher for the SOBRF and SPBRF breads than the control bread, which was not significant. Thus, this study showed that processing rice flour was more effective than raw rice flour in substituting wheat flour.

인삼첨가 Long Life 면의 조직감과 관능적 특성 (Effects of Ginseng on Textural and Sensory Properties of Long Life Noodles)

  • The influence of ginseng on the paste or gelatinization properties by amylograph and mixing properties by farinograph of wheat flour and on quality properties color cooking quality textural and sensory properties and reducing microbial population of LL(Long Life) noodles was studied. The contents of ginseng used were from 5% to 10% based on flour weight. The viscosity property of wheat flour with ginseng was increased the initial pasting temperature but the amylograph peak viscosity were decreased in vice versa. The farinograph absorption stability and breakdown were increased by ginseng. The whiteness of Ll nodles manufactured with ginseng was lower than that of control The shear extrusion force and hardness of LL noodles manufactured with ginseng were shown much higher value than those of control. At cooking quality examination of LL noodles manufactured with ginseng weight of cooked LL noodles was decreased but volum was appeared in ice versa,. Extraction amounts of LL noodles manufactured with ginseng during cooking were much smaller than those of control Total count of microorganism of Ll noodles manufactured with ginseng were decreased during storage at 3$0^{\circ}C$ Sensory properties of cooked LL noodles which was manufactured with ginseng showed quite acceptable. Based on the cooking and sensory evaluation test addition of 7.0% ginseng to wheat flour may be suitable for processing LL noodles.

비지가루 첨가 식빵의 품질 특성 (Quality Attributes of Bread with Soybean Milk Residue-Wheat Flour)

  • 비지가루의 제빵 적성을 알아보기 위해 밀가루에 5%, 10%, 15%혼합한 빵을 만들고 비지빵의 제빵성을 향상시키기 위해 10% 비지가루 혼합분에 글루텐을 3%, 6%, 9% 첨가한 빵을 만들어 제빵 적성을 조사하고 관능검사를 실시하였다. 비지가루는 단백질 22.0%, 지방 13.2%, 탄수화물 54.3%그리고 식이섬유 27.2%를 함유하고 있었다. 영양성분이 풍부한 비지가루를 밀가루에 혼합하여 식빵을 만들었을 때 비지가루의 혼합비율이 증가함에 따라 수분흡수율, 반죽시간, 빵의 무게는 증가하였고 dough의 팽창력과 빵의 부피는 감소하였으며 10%비지가루 혼합분에 글루텐을 첨가함으로서 제빵 적성이 향상되었다. 빵의 crumb의 색도는 비지가루의 함량이 증가할수록 어두워졌으나 활성글루텐의 첨가로 밝아졌다 빵의 texture도 비지가루의 혼합비율이 높을수록 씹힘성, 경도는 증가하였으나 응집성은 차이가 없었고 활성글루텐의 첨가로 탄력성, 씹힘성, 경도는 증가하는 경 향을 보였다. 관능검사 결과 5%비지가루를 혼합하여 만든 빵은 종합적인 기호도에서 밀가루빵과 차이가 없었으며 10%비지가구 혼합분에 6% 글루텐을 첨 가하여 만든 빵은 글루텐을 첨가하지 않은 10% 비지가루 혼합분 빵보다 종합적인 기호도에서 좋은 평가를 받았다.

신육성 다수확 밀 익산370호의 원맥과 밀가루의 품질 특성 (Quality Characteristics of Wheat Flours from New Released Iksan370 with Long Spike and Domestic Wheat Cultivars)

  • Iksan370 is a long-spike wheat developed by the Rural Development Administration yielding excellent features components such as cold resistance, disease resistance, and viviparous germination. The physicochemical and material properties of the raw wheat and milled flour of Iksan370 were analyzed to derive its appropriate uses. The raw wheat of Iksan370 showed high contents of ash and proteins at 1.71% and 13.7%, respectively. Its test weight of 763.0 g/L was similar to those of other varieties and its 1,000 kernel weight was high at 45.38 g. The milled flour of Iksan370 had an ash content of 0.45%, which corresponds with a class 1 flour, and its protein content is 12.18%, corresponding with strong flour. The damaged starch was 5.41%, which was lower than that of other varieties. The average grain size was $70.67{\mu}m$ and the grain distribution was at the level of a typical hard wheat. In the farinogram, the water absorption was 58.63%, which corresponded to the level of medium flour. The development time was 7.00 minutes, which was significantly lower than those of Jokyung and Keumkang. The degree of softening was 67.00 BU, similar to those of Yunbaek and Baekjoong. Among the physico-chemical characteristics, the high protein content and typical hard wheat grain distribution of Iksan370 were similar to those of strong wheat, usually used for bread making. However, in the farinogram, the dough development time was short and the degree of softening was high. As a result, Iksan370 was expected to have poor breadmaking properties and a small volume of the final bread product due to insufficient dough durability. On the other hand, Iksan370 showed the highest maximum gelatinization viscosity at 864.00 BU. Therefore, Iksan370 is expected to show glutinous texture when used for noodles and its flour appears to be appropriate for frying powders as well.
