밀 품종 혼파와 밀가루 혼합에 따른 품질 및 가공적성 분석 (Analysis of Quality and Processing Suitability of Mixed Seeding and Flour Blending between Wheat Varieties)

  • 본 연구는 국산밀의 생산량 증대와 밀가루 품질 균일성 증진을 위해 용도가 다른 금강밀과 백중밀 두 가지 밀 품종의 혼합파종 재배와 밀가루 혼합에 따른 품질과 가공특성을 분석하였고 결과를 요약하면 다음과 같다. 밀 혼파 재배에 따른 수량은 품종이 나타내는 고유 수량에 따라서만 종실 수량이 결정 되었는데, 이는 금강밀과 백중밀의 간장과 수장의 차이가 거의 없어 입지 공간의 증대에 따른 수량 증가는 없고 단순히 단위면적당 수수의 차이로만 수량이 결정된 것으로 보인다. 품질특성은 단백질 함량, 침전가, 손상전분 함량은 혼파 및 밀가루 혼합 둘 다 비율에 따라 품질의 변이의 경향이 같게 나타났고, 특히 밀가루 혼합이 더욱 예측 가능하고 비례적인 품질 변이 결과를 보였다. 밀가루 용매 보유 능력(SRC) 분석 결과 금강밀이 백중밀에 비해 물 흡수도와 손상전분이 적고 글루텐 강도와 arabinoxylan 기여도는 큰 것으로 관찰되었고, 밀가루 혼합의 시료는 비율에 따라 유의성 있게 차이가 났지만 혼파에서 얻은 밀가루는 유의적인 차이를 나타내지 못하였다. Mixograph 반죽 패턴은 금강밀이 피크 높이가 크고 밴드 넓이가 커서 단백질, 침전가, 젖산SRC 값과 같은 경향을 나타내었고, 혼파에 비해 밀가루 혼합에서 더욱 비례적으로 밴드가 변화되는 것을 관찰 할 수 있었다. 이러한 결과를 보아 생산성을 제외하고 품질 균일성을 위해서는 혼파보다는 밀가루 혼합이 더욱 유리하였고, 생산된 밀가루의 여러 가지 품질 특성을 고려 한 후 밀가루 혼합 비율을 조절한다면 원하는 가공적성을 지닌 균일한 품질의 밀가루를 안정적으로 생산 할 수 있을 것으로 판단된다.

두류와 밀 혼합 가루로 제조된 머핀의 품질 특성 (Quality characteristics of muffins made with legume and wheat flour blends)

  • 본 연구에서는 머핀의 품질향상을 위해 두류-밀(1:1) 혼합가루로 제조한 머핀의 품질특성을 살펴보았다. 두류가루를 첨가하였을 때 밀가루만으로 제조한 대조군 머핀에 비해 명도가 감소하고 적색도가 증가하였다. 두류첨가 머핀은 대조군에 비해 상대적으로 많이 존재하는 식이섬유에 의해 높은 수분함량을 나타냈으며 조단백과 조회분의 함량도 대조군에 비해 높게 나타났다. 두류가루가 첨가된 머핀은 대조군에 비해 중량이 높았으나 높이와 부피가 감소하였고 기공의 분포도 다소 불규칙적으로 나타났다. 또한 두류가루 첨가로 인하여 머핀의 경도는 증가하였고 반대로 탄력성과 응집성이 유의적으로 감소하였다. 그러나 관능적으로 두류가루를 첨가한 머핀은 색에 대한 선호도가 대조군에 비해 높았으며 전체적인 기호도는 동부가루와 녹두가루로 제조된 머핀은 대조군에 비해 낮았으나 렌틸가루와 병아리콩가루로 제조한 머핀은 대조군과 유사한 결과를 보였다. 본 연구를 통해 두류가루를 밀가루의 50%까지 대체하여 제조한 머핀의 관능특성은 대조군과 거의 유사했고 영양성은 개선되었으며 이는 두류를 활용한 기능성 제빵 제품 개발의 기초자료로 활용될 수 있을 것으로 생각된다.

마이크로웨이브 조사를 통한 알러지 저감 밀 오프리의 제과 가공적성 개선 (Enhancement of Cookie Quality by Microwave Treatment of Allergy Reaction-reduced "Ofree" Wheat Flour)

  • 본 연구에서는 알러지 반응 저감의 특성을 가지고 있는 오프리 밀가루를 이용하여 적절한 물리적 방법을 통해 제과적성을 개선시키고자 하였다. 오프리 밀가루는 높은 단백질 및 글루텐 함량을 가지고 있어 쿠키를 제조하였을 때 가공적성이 낮은 특징을 가지고 있다. 밀가루에 대한 마이크로웨이브 조사는 글루텐의 형성에 영향을 미친다는 보고에 따라, 본 연구에서는 오프리 밀가루에 마이크로웨이브 조사를 통해 제과 가공적성을 개선하고자 하였다. 그 결과, 마이크로웨이브조사는 오프리 밀가루의 단백질의 함량 및 글루텐 함량에는 영향을 미치지 않았지만 이를 이용하여 쿠키를 만들었을 때 퍼짐성과 균열정도가 개선되는 것을 확인 할 수 있었다. 이는 마이크로웨이브조사가 글루텐 형성에 영향을 미쳐 반죽점도를 감소시켜 쿠키의 가공적성이 개선되는 것을 확인 할 수 있었다. 하지만 과도한 열처리는 단백질의 변성을 유도하여 오히려 가공적성을 감소시켰고, 이에 따라 사용목적에 따른 적절한 처리조건을 규명하는 것이 필요하다. 따라서 이러한 연구결과를 통해 높은 단백질 및 글루텐함량을 가지고 있는 밀가루를 대상으로 적절한 마이크로웨이브와 같은 물리적 처리를 통해 가공적성을 개선하여 활용도를 높일 수 있을 것으로 예상된다.

마(Dioscorea) 첨가가 우리밀과 수입밀을 이용한 식빵 품질특성에 미치는 효과 (Effects of Added Yam Powders on the Quality Characteristics of Yeast Leavened Pan Breads Made from Imported Wheat flour and Korean Wheat Flour)

  • This study investigated the quality characteristics of yeast breads with addition of hot air-dried yam powder (HDYP) and freeze-dried yam powder (FDYP), using several physical and sensory examinations. Breads were made of imported wheat flour (IWF) or Korean wheat flour (KWF). HDPY and FDYP were added to the bread formula at three levels of 3, 5, and 7%. The addition of yam powders required an increase of water absorption. As the addition of HDYP/FDYP increased, IWF dough stickiness increased and thus handling property became inferior to the control. Especially, handling property of KWF bread dough containing FDYP was most poor among the dough samples. With HDYP/FDYP, final volumes of bread made from IWF were similar to the control when 3~5% HDYPs were added whereas loaf volumes decreased significantly as the amount of added FDYP increased, indicating volume depressing effect. In bread scoring, texture scores increased when yam powders were added that hardness, chewiness, cohesiveness and guminess of KWF bread increased as the amounts of yam powders increased. The "L" value of IWF bread crumb decreased with the addition of yam powders. From sensory evaluation using acceptability scores, the results gave us that appearance, grain, texture, flavor, taste and overall acceptability of KWF bread could be more improved with the addition of yam powders than those of IWF bread.IWF bread.

흑미가루 첨가 쿠키의 품질 특성 연구 (Quality Characteristics of Cookies with Black Rice Flour)

  • The quality characteristics of cookies containing black rice flour, which has a greater variety of functional components than wheat flour, were studied. The results of the pasting properties shows that the inclusion of black rice flour to the wheat flour-mixture did not affect the pasting temperature but increased the enthalpy, indicating that more energy is needed for the starch gelatinization. The total dietary fiber and total polyphenol content increased and the cookies color became darker and deeper with increasing black rice flour content. According to the results from TA on texture, the hardness decreased and the crispness increased significantly (both, p<0.001) with increasing black rice flour content. From the acceptance test, the appearance, aroma and texture of the cookies with added black rice flour were significantly (p<0.001) lower than those of the wheat flour cookies. However, the taste and overall acceptance of the cookies with added black rice (lour did not differ significantly from those of the wheat flour cookies. According to the results from the sensory evaluation, the aroma, black rice flavor, crispness, graininess and color(gray-violet) of the cookies increased significantly(p<0.001) with increasing black rice flour content and those of the cookies with 30% black rice flour had the highest values among the cookies which weren't significantly different from those of the cookies with 20% black rice flour. From the above results, the optimal ratio for the addition of black rice flour to the cookies was 10% from the viewpoint of the sensory evaluation and functional components.

스펠트 밀을 이용한 기능성 식빵의 관능특성 및 기호도 분석 (An Analytic Study on the Processing Quality and Flavor Preference of Spelt Wheat Bread)

  • The purpose of this study is to investigate the sensory characteristics and preference of Spelt white bread and to examine its market potential. For this purpose, the sensory characteristics of Spelt flour dough was analyzed and a questionnaire survey was conducted on the general public to grasp the preference and repurchase intention of Spelt bread. As a result of this study, the sensory characteristics of Spelt wheat dough showed that the fermentation rate was slightly higher than that of general wheat flour and the Spelt flour dough was more slightly acidic than that of general wheat flour. The result of this survey showed that Spelt flour bread had a comparative advantage in terms of digestibility, flavor and overall favorability compared to general wheat flour. For the repurchase intentions for Spelt flour bread, it was found that the intentions to buy it for health and as gifts was high. Based on this research, I expect that the studies about marketing strategy with Spelt flour bread will be done along with the development of various products.

  • The hardness of hard red winter (HRW) wheat had an effect on the yield of farina , as it positively correlated with the coarse fraction (over 34W) and negatively correlated with the flour fraction from farina milling. But it did not show any significances on flour milling from the micromilling process. The flour yields was better correlated with the break flour fraction (r=0.730 than with reduction flour (r=0.27). The farina yield was controlled by a fraction over 34W (coarse granule0. Protein was the most important single factor for the quality of cooked farina spaghetti, but not for flour milling or farina milling. On the other hand, hardness was important in the production of farina milling , whereas it did not govern spaghetti cooking quality, Environmental factors affected the quality of cooked spaghetti as much as varieties of HRW wheats. The quality of cooked farina spaghetti generally correlated with the protein in the location composites of wheats. Higher protein content wheats showed better spaghetti cooking quality.

식빵제조를 위한 국산 및 수입 밀가루의 적성에 대한 연구 (Properties of White Pan Breads made with Korean and Imported Wheat Flours)

  • 수입 밀가루와 국산 우리밀가루로 식빵을 제조하고 그 품질특성을 조사하였다. 일반성분의 수분과 조단백질 함량은 수입 밀가루가 가장 낮았고, 조회분 함량은 수입 밀가루 값이 가장 높게 나타내었다. pH 측정에서는 수입 밀가루가 가장 낮게 나타났으며, H.Y 우리밀가루가 가장 높게 나타났다. 색도는 수입 밀가루가 L, a값이 가장 낮게 나타났다. 식빵의 부피와 높이는 G.S 우리밀가루가 가장 낮았으며, 금강 우리 밀가루가 반죽수율과 비체적이 가장 높게 나타났다. 굽기 손실률은 G.R 우리밀가루가 가장 높았으며 G.S 우리밀가루가 가장 낮게 나타났다. 조직감에서는 경도(hardness)는 수입 밀가루가 가장 낮았고, 점착성(gumminess), 씹힙성(chewiness), 부착성(adhesiveness), 탄력성(springiness), 응집성(cohesiveness)은 가장 높게 나타났다. 관능평가에서는 맛과 향미에 대한 기호도의 경우 수입 밀가루보다 우리밀가루가의 모두 높은 점수를 나타내었다.

Effects of Blends of Low-Protein Winter Wheat Flour and Barley Byproducts on Quality Changes in Noodles

  • The physicochemical characteristics of fresh noodles made with blends of low-protein wheat flour and barley byproduct (BBP, $250{\mu}m$) were investigated. The crude protein contents (PC) of flour from Goso and Backjoong cultivars were 7.91% and 7.67%, respectively. PC and ${\beta}$-glucan contents from the BBP were 14.10% and 3.11%, respectively, which were higher than those in wheat flour. The water-holding capacity (WHC) of various blends was increased as a function of BBP but not gluten contents. Goso flour had the highest starch content (78.68%), with peak and final viscosities of 3,099 and 3,563 cp, respectively. Peak and final viscosities, trough, breakdown, and setback of the blends were decreased with the addition of BBP. Noodles made with Backjoong had the highest thickness score, while the hardness of noodles made with blends of Goso or Backjoong and 20% BBP were similar to those made from wheat flour only. The WHC of the samples was strongly correlated with PC, crude fiber, and ${\beta}$-glucan. The PC was not correlated with final viscosity, setback, thickness, hardness, gumminess, or chewiness.

Effect of Partial Replacement of Wheat Flour with High Quality Cassava Flour on the Chemical Composition, Antioxidant Activity, Sensory Quality, and Microbial Quality of Bread

  • In the current study, wheat flour was mixed with high quality cassava flour (HQCF) in several ratios: 90:10, 80:20, 70:30, and 60:40, and used to prepare 10%, 20%, 30%, and 40% National Root Crops Research Institute (NRCRI) cassava bread, respectively. 100% wheat bread was prepared as a control (100% wheat bread). Five bread samples were prepared per group. Antioxidant assays [i.e., 2,2-diphenyl-1-picrylhydrazyl radical (DPPH) scavenging assay, reducing power assay] revealed that the bread samples had considerable antioxidant capacities. Substitution of wheat flour with HQCF at various concentrations resulted in dose dependent decreases in the mineral and protein contents of the resulting bread samples. The crude fiber content of the bread samples was minimal, while the carbohydrate content of the bread samples ranged from 43.86% to 48.64%. A 20% substitution of wheat flour with HQCF yielded bread samples with a general acceptability that was comparable to that of 100% wheat bread. The mean bacteria counts of the bread samples ranged from $2.0{\times}10^3CFU/mL$ to $1.4{\times}10^4CFU/mL$, while the fungal counts ranged from 0 CFU/mL to $3{\times}10^3CFU/mL$. There was a positive correlation between the DPPH antioxidant activities and the reducing powers of the bread samples ($R^2=0.871$) and a positive correlation between the DPPH antioxidant activities and the flavonoid contents of the bread samples ($R^2=0.487$). The higher microbial load of the NRCRI cassava bread samples indicates that these bread samples may have a shorter shelf life than the 100% wheat bread. The significant positive correlation between total flavonoid content and reducing power ($R^2=0.750$) suggests that the flavonoids present in the lipophilic fractions of the bread samples could be responsible for the reductive capacities of the bread samples.
