  • Since immemorial time Panax ginseng has been known as therapeutic, tonic, prophylactic and restorative agent in ancient Korea, China and Tibet and at present time is also used as a food supplement by Western societies (6). Various ginseng preparations in a form of powders, teas, tinctures or extracts, very often mixed with other substances are recommended for attenuation of degenerative processes caused by aging or fatigue, as well as for treatment of various disorders and diseases in several organs (e.g. circulatory and nervous system, liver, kidney). One of the most commonly known properties of ginseng is its possibly positive influence on physical and mental performance and general well being. Because of these adaptogenic properties promoting vitality and resistance to stress ginseng is considered as an ergogenic aid. During almost 40 years in many laboratories attempts have been made to find out whether ginseng can be 'a remedy for today's problems'. The present work is focused on the results obtained in human studies and concerning an influence of ginseng root extracts on exercise and mental performance.

  • In Korea, the health authorities and food industry emphasize the need of sanitary food production, which in mainly resulted from the recent growing of consumer's interest in the safety of food. For the reason, development of a new alternative technology to chemicals, currently used for decontamination and disinfestation, has become and urgent task in the domestic and worldwide food industry. Furthermore, the improvement of quality and manufacturing process of processed food is a requisite for winning the competition in export fields. Irradiation technology being practically applicable in the food industry has been well established on the basis of more than 40 years of R&D work in the fields of the increasing availability of food-stuffs, sanitary food production and quarantine treatment in the food trade. The wholesomeness of irradiation foods has been officially approved in 38 countries, of which 30 countries are commercially utilizing food irradiation technology. The first commercial irradiator in Korea(18.5PBq:500k{TEX}$Ci^{60}${/TEX} Co, max. cap; 4MCi) was established at Yeoju-gur, Kyung Ki-do with the technical assistance of Korea Atomic Energy Research Institute in June 1987. As of 1996, thirteen irradiated food groups (over 25 items)have been domestically approved for human consumption and an industrial irradiation facility is also available. IPA Analysis according to the Attributes of the Franchise Coffee Shop Selection of College Students in Busan (부산지역 대학생의 프랜차이즈 커피전문점 선택속성에 따른 IPA분석)

  • The aim of this study was to provide strategic implications for the coffee market in which competition got severer through IPA analysis based on the attributes of selection of a specialized franchise coffee shop. The results of a positive analysis conducted with undergraduates in their twenties were as follows: According to the evaluation of the importance of the attributes of selection of a specialized coffee shop, the most important were 'cleanliness and hygienic facilities inside the shop (6.09)' and 'taste and quality of the menu (coffee) (6.09)'. According to the performance analysis, those showing the highest performance were 'brand image (4.92)' and 'cleanliness and hygienic facilities inside the shop (4.92)'. According to the result of IPA analysis, what customers regarded as being the most important were 'taste and quality of the menu (coffee)', 'kindness of the staff', and 'cleanliness and hygienic facilities inside the shop', and, in fact, they showed great performances as well. However, 'price of the menu (coffee)' was regarded as being important but did not indicate a great performance; therefore, they showed dissatisfaction with it. Although they did not think 'environment around the shop', 'brand image', 'brand recognition' or 'interior size and scale of the shop' were important, the attributes did not appear to show great performances. Therefore, we need constant maintenance strate gies regarding the fact that consumers are considered to be very important for evaluation, and should make efforts to change the price in advance.

Texture Characteristics of Horse Meat for the Elderly Based on the Enzyme Treatment

  • Horse meat is nutritionally adequate to the elderly, but it has a comparatively hard texture in contrast to most of the food. In practice, the meat intake in the elderly is generally bated because the relatively difficult texture of the meat can diminish mastication. Thus, strategies are being developed to produce meat products remanding detracted mastication exertion and possibly exalt ingestion and nutritional stand, in the elderly. Hence, the effects of enzymes on textural characteristics of horse meat were studied, because they have well-known favorable efficacy on the meat tenderness by causing important demotion of the myo-fibrillar protein and collagen. Four treatments namely, papain, bromelin, pepsin, and pancreatin, alongside one control were invoked to the horse meat. Their effects on the texture parameters were determined. All the above enzymatic treatments significantly reduced hardness and resilience (p<0.001). These results present opportunities to produce essential fatty acids fortified horse meat with soft texture and satisfied technological characteristics. The intake of the essential fatty acids intensified horse meat could aid the elderly to get their aimed essential fatty acid demands. Results also suggest that horse meat tenderized through enzymatic processing stand for auspicious options for the comprehension of texture-revised diets in the elderly population.

  • This study attempts to deal with the form of new storytelling by contemplating the study on food-related storytelling which has been studied in earnest since 2008 and analyzing the story. In case of the study on storytelling so far, the studies on the emphasis of necessity of discovering materials and the suggest of the way of development of the menu and tourism commercialization through the story and the attitudes of customers by storytelling have been conducted. Also, this study is explained by being divided into version 1.0, 2.0, 3.0 depending on the composition of the story, and attempts to suggest new version 4.0 strategy of food storytelling which we should aim for in the future as well. This will provide the new paradigm of the field of food storytelling.

  • Yogurt, which has long been consumed as a longevity food, is characterized by a large number of lactic acid bacteria. The sales of yogurt market have increased for the past three years due to research findings that the intestinal microbial environment is closely associated with many human diseases and the well-being trend of recent consumers. The recent trends in the yogurt market have focused to low sugar content, functionalities such as enhanced immunity, and yogurt for freezing. In addition, recent yogurt products tend to be labeled for certain lactic acid bacteria having functionality in their products. Many yogurts have names of specific lactic acid bacteria on their products, such as 'Activia' and 'Bifidus'. We monitored the 'Bifidus' products in the market for reflecting its regulated counting in their products required to contain more than 10 million Bifidobacteria according to the revised lactic acid bacteria-counting test of Food Code 2015.

History of edible oils and fats industry in Korea (우리나라 식용유지 산업의 발자취)

  • In Korea, sesame oil has been used as a flavor source mainly by edible oil since ancient times, and it has been used by domestic screw pressing. In the 1960's, the demand for edible oils and fats increased significantly due to the improvement of national income and changes in food consumption patterns. In the early 1970's, a few edible oil manufacturing companies with modern solvent extraction and refining plants were established. In Korea, edible oil manufacturers account for more than 85% of employees with 50 or fewer employees. In Korea, there is a very shortage of raw materials for edible oils and fats, domestic production of edible oil is decreasing year by year and import volume is continuously increasing. While importing the edible oil bearing ingredients including soybean and extracted oil in the past, recently mainly imports crude oil and refines it in Korea. Soybean oil, palm oil and tallow account for 70~90% of total imported edible oils. Due to the recent well-being trend, the demand for olive, canola and grapeseed oils as household edible oil has increased and the production of blended oil has been greatly increased. Since the late 1980's, people have recognized edible oil and fat as a food instead of seasoning ingredient and have increased their edible oil and fat intake in Korea. Since the early 2000's, refined oil and fat products produced in Korea have been exported and is increasing every year.

  • This paper investigated the awareness and activation of food tourism festivals in Gwangju, Jeonnam Province. A survey was conducted for the visitors of the Gwangju Kimchi Festival at nearby Gwangju Jeungoe park from October 15 to 19, 2011, and finally 207 respondents were analyzed. As a results of this study, the visitors who visited the Gwangju Kimchi Festival have a lot of interest in local food and food festivals. Also, most of the visitors have much more affection for the area and the food culture developed by geographical influence. The Gwangju Kimchi festival proved to be the most popular food tourism festival in Gwangju, Jeonnam among others. There are much more food festivals than other regions in Gwangju, Jeonnam because of popularity of food festivals, a variety of food, and various kinds of food ingredients. What is necessary to activate the food tourism festivals in Gwangju, Jeonnam includes a variety of programs related to food tourism experience, the development of competitive food tourism products, and PR for well-being food of these areas.

A Study on the Effect of Taste Preference on Harmony of Coffee Food (커피음식 조화도에 영향을 미치는 맛 선호도에 관한 연구)

  • In this study, the correlation between harmony of coffee-food and taste preference was examined by conducting an investigative analysis in oilier to find out taste preference having effect on the harmony of coffee-food. As a result of study, foreign food was perceived as having average level or higher harmony in confectionery and bread in harmony of coffee-food, coffee beans were perceived as being more harmonious than a coffee mix. Korean food was perceived as average or lower harmony with coffee with s relatively high level in rice cake, traditional snacks and Hangwa, all of which are traditional desserts. In the correlation between taste preference and harmony of coffee-food, foreign food was shown well-matched with coffee as sweet and salty tastes were low; however, for sour, hitter, spicy and plain tastes, the more preference they had, the better-matched they were. As a result, taste preference had effect on harmony with coffee-food. For foreign food, it was shown that sweet and plain tastes influenced it while bitter and plain tastes did in Korean food in general.

Study on Food Culture During the Late Chosun dynasty and Japanese Colonial Period in the Novel "Toji" (소설 "토지"를 통한 구한말에서 일제강점기의 음식문화 연구)

  • This study was intended to examine the continuance and transformation of food culture during the enlightenment and Japanese ruling era by analyzing the novel of "Toji". In the novel "Toji", the chaotic political and economic situation is reflected, along with the peoples' hard lives in the latter era of the Choson Dynasty. After the full-fledged invasion of China by the Japanese, the shift to a wartime posture was accompanied by an increased need for food. This led to a rationing and delivery system for rice in the late 1930s. While it was hard for people to obtain even brewer's grains and bean-curd dregs, food distribution officers were well off. Another distinctive feature of the food culture during the enlightenment and Japanese ruling era was that foreign food and recipes were introduced naturally to Korea through the influx of various foreigners. The industry of Choson was held by Japanese monopolistic capital, as a result, Choson had equal to the role as a spending site and was only gradually left destitute. In the Japanese ruling era, there were new type of business including such as patisserie of the types of civilization in the town, and those tempted Korean people. However, the Japanese and pro-Japan collaborators dominated commercial business. Being urbanization through the modernization, it was became patronized fast food in the populous downtown, and the change of industry structure and life style greatly influenced into our food culture. Acceptance the convenient Japanese style fast food such as Udong, pickled radish made was actively accepted with a longing for the advancement civilization. After the enlightenment, many Japanese exchange students went to Tokyo to get advanced civilization and provided urban mood according to their consumption of bread, coffee, Western food, which were considered a part of the elite culture.
